  • We investigated five neonicotinoid pesticide residues (acetamiprid, clothianidin, imidacloprid, thiacloprid, thiamethoxam) in fruit vegetables and estimated the exposure of neonicotinoid pesticide residue through fruit vegetable consumption using a deterministic approach. Two hundred forty samples of eight fruit vegetables cultivated in Korea were analyzed for their pesticide residue contents. Acetamiprid had the highest detection frequency and the highest residue level in pepper. However, all pesticide levels detected didn't exceed national MRLs. The results using a deterministic approach showed that for chronic and acute study of all neonicotinoid pesticide residues, the exposure was about 50 times lower than toxicological endpoint values. It is necessary to understand that the exposure assessment in this study using a probabilistic approach should be regarded as a important knowledge in the decision-making process.

  • This study supplies basic data to develop a greenhouse model for reducing the damage to single-span greenhouses caused by strong winds and heavy snow. Single-span plastic greenhouses are predominantly used for growing crops in Korea. Thus, the safety wind speeds for single-span greenhouses were calculated and compared with the actual wind speeds and snow depths over a period of 8 years in different regions to analyze the structural safety of single-span greenhouses. The unit wind load and unit snow load were applied to different designs of single-span greenhouse according to the cultivated crop to achieve a structural analysis. As a result, the maximum section force for the wind and snow load was greatest for leaf and root vegetables, where the safety wind speeds for single-span greenhouses according to the cultivated crop were 17.7 m/s(leaf vegetables), 20.2 m/s (fruit vegetables), and 22.3 m/s (root vegetables). Thus, the single-span greenhouses were not found to be safe for the wind load in most regions, except for Hongcheon, Icheon and Sungju. Plus, the safety snow depths for single-span greenhouses according to the crop were 8.8 cm (leaf vegetables), 9.4 cm (fruit vegetables), and 11.8cm (root vegetables). Thus, when comparing the safety snow depths with the actual snow depths, the single-span greenhouses were not found to be safe. Therefore, to improve the safety of single-span greenhouses, the structures need reinforcement by reducing the interval between rafters or increasing the size of the pipes. However, additional research is needed.

  • The ethanol extracts of mixed vegetables (Bioactive Vegetables, BV), mixed fruits (Bioactive Fruits, BF) and their liquid formulation (Chungpae Plus , CP) were evaluated for their antioxidative and antigenotoxic activities. They were shown to possess the significant free radical scavenging effect against 1,1-diphenyl-2-picryl hydrazine (DPPH) radical generation and were revealed to show the inhibitory effect of lipid peroxidation as measured by malondialdehyde (MDA) formation although the potencies were not higher than those of vitamin C. They did not possess any pro-oxidant effect on bleomycin-Fe(III) dependent DNA degradation, whereas vitamin C showed strong pro-oxidant effect. Furthermore, oral administration of BV and BF inhibited micronucleated reticulocyte (MNRET) formation of mouse peripheral blood induced by KBrO3 treatment in vivo. CP also showed significant inhibition under same experimental condition. Therefore, the liquid formulation (CP) containing BV and BF may be a useful natural antioxidative and antigenotoxic agent by scavenging free radicals, inhibition of lipid peroxidation and protecting chromosomal damage.

  • A survey on Korean families′purchase of fresh fruits and vegetables was conducted to increase understanding of families′food decision making. Two hundred ninety seven families with at least one elementary-school age child were selected from four elementary schools to complete a questionnaire during April, 2001 in Gyeongju, Korea. Descriptive statistics, Chi-square test, T-test, and ANOVA statistics were used to analyze the data. The major findings are as follows: Families bought fresh fruits and vegetables at the public markets or the farmer′s markets and a large supermarket most frequently in both summer and winter. Families grew produce by themselves and bought them from farmers directly least frequently in both summer and winter. Families whose housewives had less than middle school education brought fruits and vegetables from Agricultural Co-ops and grew thens by themselves more frequently compared to those who had higher education. On the other hand, families whose housewives had graduated from 4 year college bought fruits and vegetables from large supermarkets more frequently compared to those who had lesser education. "Quality"and "safety production"of fruits and vegetables and "clean environment of store"were the three most important factors when they decided the place to buy fruits and vegetables. "Being treated as a valuable customer" and "ease of finding things"were the two least important factors. Families whose housewives were in their thirties valued "cleanness of the store"and "being treated as a valuable customer"important factors when they decided the place. Families whose housewives had less than middle school education thought that price, availability of public transportation, and availability of locally grown food were the important factors for deciding the place compared to those who had higher education. The price was the factor which low-income families thought important for decision making on the place to buy fruits and vegetables.

  • The author examined the origins, the course and the period of introduction of 94 types of vegetables and fruits mainly used in Korea. Then, based on it, the author looks into the relationship between food culture in Korea and those in the Silk Road. Among the vegetables and fruits, 57 types are not originated from Korea 17 types of stem and leaf vegetables, 9 types of root and fruit vegetables. 7 types of fruits, 6 types of seed, 6 types of pomes, 2 types of berries and grapes, and 1 type of nut. Their origins are spread in Europe, Southwest and South Asia but interestingly, they are located near or along the Silk Road. Therefore, it can be presumed that the vegetables and fruits were introduced into Korea from its neighboring countries by way of the Silk Road even before the Three Koreas Period and they were eaten widely in the Joseon Dynasty. Thus, the Silk Road helped some of the vegetables and fruits used in Korea to be introduced into Korea and eventually, contributed to diversifying Korean food culture. The cultural exchange is not one-way but two-way communication and the cultural exchange through the Silk Road is no exception. It is certain that by way of the Silk Road, foods and recipes were introduced into Korea from other countries but at the same time, Korean foods and recipes were propagated to other countries. In the future, more researches and studies should be conducted to find out how the foods and recipes are exchanged among the countries by the way of the Silk Road.

  • Korean diet is high in plant foods but also high in salted vegetables. World Cancer Research Fund (WCRF) recommends consumption of fruits and vegetables excluding salted vegetables for prevention cancer. This study aimed to analyze relations between intakes of salted and non-salted vegetables and socioeconomic factors, providing a data for targeted groups in promotion of fruits and vegetables consumption. Dietary and socioeconomic status data of the 5,400 subjects over 30 years of age from the 2005 Korea National Health and Nutrition Examination Survey (KNHANESIII) were used. Dietary intake data from KNHANESIII was obtained by one day 24-hour recall method. Mean daily intakes of salted vegetables, non-salted vegetables and fruits of subjects were 151 g, 237 g, and 71 g respectively. Mean daily intake of salted vegetables was significantly higher in men than women for daily amount (173 g vs. 133 g) as well as percentage of total food intake (9.9% vs. 9.6%). Subjects living in rural area consumed more salted vegetables. Salted vegetables as percent of total food were lower in subjects with higher education levels (p < 0.001). Intakes of non-salted vegetables were significantly affected by age and gender. Intake levels of fruit were significantly higher in younger groups, in females, and subjects with higher income and education levels (p < 0.05). Average intake of fruits and non-salted vegetables was 307 g, lower than WCRF recommended level of 400 g for personal guideline. Intake of salted vegetables was positively correlated with sodium intake (Pearson's correlation coefficient, r = 0.43) but less so with potassium (r = 0.16) and other micronutrients intake (r < 0.1). On the other hand, non-salted vegetables had higher correlations with potassium (r = 0.45), carotene (r = 0.38), vitamin A (r = 0.37), iron (r = 0.34) and low for sodium (r = 0.13). Fruits intake was highly correlated with vitamin C intake (r = 0.46). Proportion of subjects satisfying WCRF personal guideline of fruits and non-salted vegetables was 25.7%. Results of this study indicate that intake of salted vegetable is considerably high among Koreans, and it is highly correlated with sodium intake and less so with other micronutrients.

  • There is only limited evidence for the association between fruit and vegetable consumption and mental health in Korea. This study examined the relationship between fruit and vegetable consumption and mental health according to physical activity among Korean adult women. Based on data of the Korean National Health and Nutrition Examination Survey (2014-2016), a total of 5,332 participants were included in this analysis. With increasing fruits and vegetables consumption, the prevalence of depressive mood was significantly decreased (p for trend=0.0248). The prevalence of stress perception (p for trend=0.0422) and the prevalence of depressive mood (p for trend=0.0300) were decreased with increasing fruit consumption. The prevalence of depressive mood was significantly decreased when fruit and vegetable consumption (p for trend=0.0370) and fruit consumption (p for trend=0.0356) were increased for those Korean women with low intensity of physical activity. For the obesity group (Body mass index 25 kg/㎡), the prevalence of depressive mood was decreased with increasing fruit and vegetable consumption (p for trend=0.0111) and increasing fruit consumption (p for trend=0.0165). In conclusion, fruit and vegetable consumption were associated with mental health according to physical activity among Korean adult women. Further prospective studies are warranted to explore the association between fruit and vegetable consumption and mental health among Korean adult women.

  • This study investigated associations between healthy dietary practices and the odds of prediabetes among Korean adolescents. The data of 1,624 adolescents aged 12 to 18 who participated in the 2017-2021 Korea National Health and Nutrition Examination Survey were analyzed. Healthy dietary practices were defined according to Health Plan 2030 criteria, and prediabetes was defined as a fasting blood glucose level of 100-125 mg/dL. After controlling for confounders, adjusting odds ratios and 95% confidence intervals (CIs) for prediabetes were determined for different healthy dietary practices using multivariable logistic regression analysis. Compared with adolescents who engaged in healthy dietary practices, those who did not had a 1.63-fold (95% CI: 1.12-2.37) higher odds of prediabetes. In addition, adolescents who did not consume ≥500 g of fruit and vegetables daily and those who refrained from reading nutritional fact labels, which are both sub-indicators of healthy dietary practices, had a 1.66 (95% CI: 1.05-2.62) and 1.58-fold (95% CI: 1.06-2.37) higher odds of prediabetes, respectively, than those who did. Increasing the proportion of adolescents engaging in healthy dietary practices, such as consuming ≥500 g of fruit and vegetables daily and reading nutritional fact labels when selecting food, is imperative.
