Gui Valley: A High Yielding Potential and Good Processing Potato Cultivar

  • The main objective of this breeding program is to develop high yielding, disease resistance and good processing potato cultivar. 'Gui Valley' is a clonal selection resulting from a cross between 'ND2471-8' and 'Cona'. It has medium plant height and light green foliage. 'Gui Valley' has medium flowering habit and light pink flowers. 'Gui Valley' is a medium maturing potato cultivar and tubers are smooth, yellow skin, light yellow flesh, long-oval tuber shape, distinct red eyes with medium depth and medium dormancy. It has high level of tuber uniformity and good keeping quality. 'Gui Valley' demonstrates resistance to potato virus Y (PVY), soft rot, but moderately susceptible to late blight and common scab. It is also resistant to most of the internal and external physiological disorders particularly dehiscence, hollow heart and internal brown spot. The specific gravity of 'Gui Valley' is significantly higher (1.097) than that of 'Shepody' (1.078). 'Gui Valley' has suitable for processing mainly French fries and chips. This cultivar has high level of tuber uniformity and capable of yielding 37.6 $t{\cdot}ha^{-1}$, which is 18.2% higher than the control potato cultivar 'Shepody' under optimum agronomical practices.

가열조리에 따른 냉동식품의 아크릴아마이드 함량조사 (Investigation of Acrylamide Contents in Frozen Foods According to the Cooking Method)

  • 본 연구는 가열하여 섭취하는 냉동식품 중 빵류 20건 및 서류가공품 30건과 식품접객업소의 조리식품 중 감자튀김 20건을 대상으로 가열조리에 따른 아크릴아마이드 함량을 분석하였다. 에어프라이어를 이용한 냉동식품의 조리 전·후 아크릴아마이드 함량과 식품접객업소 조리식품의 아크릴아마이드 함량을 LC-MS/MS를 이용하여 분석하고 비교하였다. 아크릴아마이드 함량은 에어프라이어 조리 후 빵류 4건에서 0.167-0.401 mg/kg, 서류가공품 24건에서 0.071-0.694 mg/kg으로 나타났으며, 식품접객업소 조리식품은 모든 제품에서 0.118-0.977 mg/kg으로 나타났다. 이 중 국내 아크릴아마이드 권장규격인 1 mg/kg을 초과한 제품은 없었다. 하지만 유럽연합의 benchmark level (0.5 mg/kg)을 초과한 냉동 제품 3건을 튀김기 조리법으로 가열 조리하였을 때, 서류가공품 1건이 국내 권장규격을 초과하여 1.83 mg/kg으로 검출되었다. 아크릴아마이드에 대한 국내 노출량이 증가하는 추세이므로 아크릴아마이드 저감화를 위해 지속적인 평가와 관리가 필요한 것으로 판단된다.

서울 일부 지역 중학생의 아토피피부염 및 천식에 대한 인식과 간식 섭취 실태 (Recognition of Atopic Dermatitis, Asthma and the Snack Intake Status among Middle School Students in Seoul)

  • The aim of this study was to acquire information related to recognition of atopic dermatitis, asthma, and snack intake status among middle school students in the Seoul area. The survey was carried out by self-questionnaires on 535 students in the 2nd and 3rd grade (88 Patients: atopic dermatitis and asthma group and 428 Control: healthy group). All data were analyzed using SPSS (version 13.0) software. The results were as follows: Among patients, females (61.4%) had a significantly higher prevalence of symptoms than males (38.6%) (p<0.001). Body mass index was not significantly different between the patients and Control group. The most common source for obtaining information about atopic dermatitis and asthma was 'TV or radio' (38.4%), followed by 'family members or relatives' (27.3%) in patients, but 'Internet' (22.2%) was most common in the control group (p<0.05). Although awareness of atopic dermatitis and asthma was similarly low between the two groups, patients had a higher percentage of correct answers on atopic knowledge (p<0.05). However, there was no significant difference in knowledge of asthma between the two groups. Frequency of snack intake was significantly lower in patients (p<0.05), and consumption of sundae, fried food, liquefied fermented milk, hamburger, pizza, and french fries was also significantly lower (p<0.05). The reason of selecting snacks was mainly 'taste' in both groups. In conclusion, education regarding atopic knowledge and appropriate snack selection is necessary for students with atopic dermatitis or asthma.

Assessing the children's views on foods and consumption of selected food groups: outcome from focus group approach

  • The food choices in childhood have high a probability of being carried through into their adulthood life, which then contributes to the risk of many non-communicable diseases. Therefore, there is a need to gather some information about children's views on foods which may influence their food choices for planning a related dietary intervention or programme. This paper aimed to explore the views of children on foods and the types of foods which are usually consumed by children under four food groups (snacks, fast foods, cereals and cereal products; and milk and dairy products) by using focus group discussions. A total of 33 school children aged 7-9 years old from Selangor and Kuala Lumpur participated in the focus groups. Focus groups were audio-taped, transcribed and analyzed according to the listed themes. The outcomes show that the children usually consumed snacks such as white bread with spread or as a sandwich, local cakes, fruits such as papaya, mango and watermelon, biscuits or cookies, tea, chocolate drink and instant noodles. Their choices of fast foods included pizza, burgers, French fries and fried chicken. For cereal products, they usually consumed rice, bread and ready-to-eat cereals. Finally, their choices of dairy products included milk, cheese and yogurt. The reasons for the food liking were taste, nutritional value and the characteristics of food. The outcome of this study may provide additional information on the food choices among Malaysian children, especially in urban areas with regard to the food groups which have shown to have a relationship with the risk of childhood obesity.

Genetic improvement of potato plants

  • Genetic improvement in potato can be carried out through several approaches, as sexual crosses, somatic hybridization, mutation and genetic engineering. Although the approach is different, but the goal is the same, to get a superior cultivar. Mutation and genetic engineering are very interesting methods for genetic improvement of potato plants. Mutation by gamma-ray irradiation have been performed to get some new potato cultivars which are more resistant to disease and have higher productivity. We have carried out a mutation of some potato cultivars and obtained some excellent clones to be potentially released as new superior cultivars. By the mutation method, we have released one potato cultivar for the French fries industry, and we registered one cultivar of potato for chips, and two cultivar for vegetable potatoes. Actually we are doing multi-location trial for three clones to be released as new cultivars. Through genetic engineering, several genes have been introduced into the potato plant, and we obtained several clones of transgenic potato plants. Transgenic potato plants containing FBPase gene encoding for fructose bisphosphatase, have a higher rate of photosynthesis and higher tuber productivity than non-transgenic plants. This result suggests that FBPase plays an important role in increasing the rate of photosynthesis and potato tuber productivity. Some transgenic potatoes containing the Hd3a gene are currently being evaluated for their productivity. Over expression of the Hd3a gene is expected to increase tuber productivity and induce flowering in potatoes. Transgenic potato plants containing MmPMA gene encoding for plasma membrane ATPse are more tolerant to low pH than non-transgenic plants, indicating that plasma membrane ATPase plays an important role in the potato plant tolerance to low pH stress. Transgenic potato plants containing c-lysozyme genes, are highly tolerant of bacterial wilt diseases caused by Ralstonia solanacearum and bacterial soft rot disease caused by Pectobacterium carotovorum. Expression of c-lyzozyme gene plays an important role in increasing the resistance of potato plants to bacterial diseases.

LC/ESI-MS를 이용한 Acrylamide의 정성확인 및 정량분석 (Quantitative Analysis and Qualification of Acrylamide Using LC/ESI-MS)

  • Acrylamide, difficult to analyze by GC and GC/MS due to the polarity and low volatility, was analyzed by LC/ESI/MS in the study. Acrylamide its(molecular weight 71amu) showed m/z=72 $(M+H)^+$ and high peak intensity at 22V in SIR mode. The mass spectrum ratios of acrylamide for qualitative identification had m/z=72 in precursor ion and m/z=55 in products ion, respectively. Those ratios at 30V in SIR mode ranged from 1: 1.4 to 1:1.17 despite various acrylamide concentrations. The ion intensity ratios of acrylamide $(m/z=72,\; [M+H]^+)$ to acrylamide isotopes $(m/z=73,\;[M+H]^+)$ ranged from 100 : 3.57 to 100 : 3.92. The results verified theoretical mass spectrum ratio that was 100:3.82. The linearity of standard calibration curve was y : 520.584x + 1815.26 with $r^2=0.99.$ In quality assurance and quality control, the recovery rate ranged from 81.64 percent to 90.97 percent and relative standard deviation was less than $10\%$ with 5 repeated injections at individual standard calibration solutions. The method was applied to analyze acrylamide in food at grocery stores. Snacks made of potatoes showed the highest acrylamide concentration followed by products made of French fries, wheat, and corn.

Dietary Patterns in Relation to Prostate Cancer in Iranian Men: A Case-Control Study

  • Background: Prostate cancer is the most frequently occurring cancer among males in economically developed countries. Among the several risk factors that have been suggested, only age, ethnicity, diabetes, and family history of prostate cancer are well-established and primary prevention of this disease is limited. Prior studies had shown that dietary intake could be modified to reduce cancer risk. We conducted a hospital-based, casecontrol study to examine the association between dietary patterns and prostate cancer risk in Iran. Materials and Methods: A total of fifty patients with prostate cancer and a hundred controls underwent face-to-face interviews. Factor analysis was used to determine the dietary patterns. Multivariate logistic regression was used to estimate odds ratios (ORs) and 95% confidence intervals (CIs). Results: We defined two major dietary patterns in this population: 'western diet'(high in sweets and desserts, organ meat, snacks, tea and coffee, French fries, salt, carbonated drinks, red or processed meat) and 'healthy diet' (high in legumes, fish, dairy products, fruits and fruit juice, vegetables, boiled potatoes, whole cereal and egg). Both Healthy and western pattern scores were divided into two categories (based on medians). Higher scores on Healthy pattern was marginally significantly related to decreased risk of prostate cancer (above median vs below median, OR =0.4, 95%CI=0.2-1.0). An increased risk of prostate cancer was observed with the higher scores on the Western pattern (above median vs below median, OR=4.0, 95%CI=1.5-11.0). Conclusions: The results of this study suggested that diet might be associated with prostate cancer among Iranian males.

Preference and intake frequency of high sodium foods and dishes and their correlations with anthropometric measurements among Malaysian subjects

  • This study investigated the preference and intake frequency of a list of 15 commonly available high sodium Malaysian foods/dishes, dis cretionary salt use, and their possible association with demographics, blood pressures and anthropometric measurements among 300 Malaysian university students (114 males, 186 females; 259 ethnic Chinese, 41 Indians; 220 lean, 80 overweight). French fries and instant soup noodle were found to be the most preferred and most frequently consumed salty food, respectively, while salted fish was least preferred and least frequently consumed. Males had a significantly higher intake frequency of at least 6 of the salty foods, but the preference of most salty foods was not significantly different between genders. Ethnic Chinese significantly preferred more and took more frequently traditional and conventional Malaysian foods like asam laksa (a Malaysian salty-sour-spicy noodle in fish stock), salted biscuits and salted vegetable, while Indians have more affinity and frequency towards eating salty Western foods. Body Mass Index was significantly negatively correlated with the intake frequency of canned/packet soup and salted fish while waist circumference was significantly positively correlated with the preference of instant noodle. Also, an increased preference of potato chips and intake frequency of salted biscuits seemed to lead to a decreased WHR. Other than these, all the other overweight/obesity indicators did not seem to fully correlate with the salty food preference and intake frequency. Nevertheless, the preference and intake frequency of asam laksa seemed to be significant negative predictors for blood pressures. Finally, increased preference and intake frequency of high sodium shrimp paste (belacan)-based foods like asam laksa and belacan fried rice seemed to discourage discretionary salt use. In conclusion, the preference and intake frequency of the high sodium belacan-based dish asam laksa seems to be a good predictor for ethnic difference, discretionary salt use and blood pressures.

  • 스웨덴에서 발암 가능성이 높은 물질 아크릴아마이드가 굽거나 튀긴 음식에서 검출되었다고 발표한 후 아크릴아마이드에 대한 연구가 전세계적으로 진행되고 있다. 본 연구에서는 국내 식품에 대한 모니터링을 위해 다양한 식품을 선택하여 327개 식품을 분석하였다 모티터링 결과 원료식품은 ND-17 ppb, 밥은 ND-14 ppb, 떡은 ND-<10 ppb, 빵은 <10-33 ppb, 유탕면은 ND-27 ppb, 영유아식은 ND-15 ppb, 후렌치 후라이는 141-1,118 ppb, 뻥튀기 누룽지 강냉이 및 건빵은 15-587 ppb,단백질 식품은 ND-<10 ppb, 포테이토 칩, 포테이토 스낵은 278-3,277 ppb, 크래커, 스낵, 비스킷은 13-459 ppb, 시리얼은 <10-236 ppb, 차 및 음료는 ND-24 ppb, 커피는 394-1026 ppb, 초콜릿은 13-30 ppb, 사탕, 캐러멜은 ND-34 ppb, 통조림은 ND-20 ppb, 버터, 마가린 및 유제품은 ND-<10 ppb, 장류은 ND-60 ppb, 소스는 ND-51 ppb, 기타(땅콩, 호두)는 ND-13 ppb 범위의 아크릴아마이드가 검출되었다 국내 제품의 아크릴아마이드 함량은 외국에서 분석된 아크릴아마이드 함량과 비슷하였다.

Comparison of Dietary Habit and Food Consumption among Elementary School Students with or without Rhinitis and Sinusitis

  • Rhinitis and sinusitis are among the most common medical conditions in Korea, as well as Western societies. Environmental factors may influence both rhinitis and sinusitis; however, the role of dietary factors in rhinitis and sinusitis is not clear. The present study aims to compare the dietary habit, food consumption frequency, and food preference of elementary school students with or without rhinitis and sinusitis. The demand of their parents for an education program for the dietary prevention against rhinitis and sinusitis was also examined. The survey was conducted with a total of 200 subjects recruited from two elementary schools located in Gyeonggi area of Korea. The subjects consisted of 101 students with rhinitis and/or sinusitis (RS group) and 99 without rhinitis and sinusitis (control group). The students of the RS group were more likely to have habits of eating-out and street food use, to consume bean, peanut, walnut, almond, yogurt, egg, snack, and French fries frequently, and to prefer the types of foods prepared by stir-frying and deep-frying than the control group. The parents who recognized 'school nutrition teachers or food/nutrition-majored specialists' as the most appropriate educator for the dietary education program in the RS group (48.5% of their parents) were less than those in the control group (67.7% of their parents). The present study suggest that students with rhinitis and/or sinusitis may be different from those without the disease(s) in their dietary habit, frequently consumed foods, and preferred type of foods. More epidemiological, intervention, and laboratory studies are needed in order to elucidate the role of dietary factors in the development and prevention of rhinitis and sinusitis, which will have a significant implication to public health.
