  • Recently, social network service is developing rapidly as technology changes with new mobile dimensions and features creating positive opportunities and benefits to all users and companies. Social network services are allowing companies to expand their businesses and brands by utilizing it as a marketing tool to reach customers. This research is intended to identify major online social network services and their trends while enhancing the understanding of food service business expansion through social networking.

Indirect Network Effect and Spillover Effect in Food Delivery Platforms

  • I analyze how the food delivery market's indirect network effect and spillover effect influence the spread of food delivery platforms in different counties. This study finds that there is a positive local indirect network effect and a positive spillover effect in the adoption of the platform by examining the food delivery platform market in South Korea as of 2020. As food delivery platforms secure consumers who use them, more restaurants on the other side of a two-sided market adopt such platforms (indirect network effect). The spillover effect would allow other restaurants in a region to become more likely to adopt food delivery platforms if there are a greater number of restaurants in the region that use such platforms. This study contributes to the comprehension of technology diffusion and the marketing strategies of platform providers by providing empirical evidence of both effects.

Network Structure and Dextran Formation of Jeungpyeon Made with Yeast Starter

  • The dextransucrase activity of microorganisms which were identified as contributing to the fermentation of jeungpyeon made with yeast was measured. The dextran generated during fermentation was quantified and the viscosity changes were measured. The mechanism of network structure formation was clarified by observing the inside of the network structure over the fermentation periods ranging from 1 to 7 hr using scanning electron microscopy (SEM). The pH of jeungpyeon batter decreased significantly as the fermentation proceeded, whereas the viscosity increased. The identified lactic acid bacteria (LAB) were Leuconostoc mesenteroides subsp. mesenteroides, Pediococcus pentosaceus, Tetragenococcus halophilus, and Leuconostoc mesenteroides subsp. dextranicum. The yeast was identified as Saccharomyces cerevisiae A/Tor. Pretorien. The dextransucrase extracted from those microorganisms showed high activity. On the other hand, the amount of dextran generated from the batter increased significantly beyond 2 hr of fermentation, and the viscosity increment showed a similar trend. The SEM photos showed that the most homogeneous fine network structure was observed in the batter fermented for 2 hr. Therefore, we assumed that the dextran that was generated by microorganisms during fermentation interacted with the components of the batter to increase the stability of the network structure.

한반도 북방지역의 식량산업 클러스터 및 가치사슬 네트워크 분석 (Analysis of Food Industry Cluster and Value-chain Network in the Northern Area of the Korean Peninsula)

  • Climate changes from global warming and reduction in agricultural land result in volatility of prices of agricultural products, causing a imbalance of food market in Korea. It is necessary to develop a transnational food industry cooperation system among Korea, China and Russia that directly or indirectly affect food industry in terms of the whole industrial network. This study analyzes the value chain and linkage in the agriculture, forestry and fisheries industries in three nations. The unit structure and the industrial patterns of three nations were derived using the World Input-output Table (WIOT) from 2004 to 2014 every five years. This paper is expected to contribute to develop food security cooperation in the northern part of the Korean peninsula and to promote the mutual growth of food industry through industry linkage and cooperation.

경제통합과 농식품 교역의 국가 간 네트워크 변화 (Economic Integration and Structural Changes in the International Agro-Food Trade Network)

  • 본 연구는 무역 자유화 추세에 따라 국가 간 농식품 무역 구조의 특성이 어떻게 변화하는가를 규명한 것이다. 이를 위해 2000-2014년 동안 HS 코드 기준 농식품 4개 품목의 45개국 간 수출액 통계를 이용하고 사회네트워크 분석방법을 적용하여 교역 네트워크의 중심성 및 응집구조 등을 파악하였다. 분석결과 첫째, 지역 간 연계는 확대되고 있으나 여전히 역내 네트워크의 연결정도가 강하게 나타난다. 둘째, 경제통합 정도가 가장 높은 유럽국가들이 농식품 교역의 중심국가 위상을 차지한다. 셋째, 아시아 지역 농식품 교역에서 통합정도가 강화되는 품목은 채소 및 각종 가공식품이다. 이는 역내 경제통합이 유사한 문화권에서 비롯된 농식품 교역을 활성화시킬 것이라는 것을 유추하게 한다. 넷째, 한국이 RCEP과 TPP 등 메가 FTA에 참여할 경우 한국 농식품 교역의 네트워크 지위가 강화되며, 특히 가공식품의 경우 그 효과가 현저하게 나타난다. 이는 상이한 지역 간의 경제통합 환경을 반영하여 한국 농식품 교역의 공간정책을 수립하는 것이 무엇보다 필요함을 시사한다.

건강기능식품의 기능성을 중심으로 한 코엔자임Q10의 항산화 기능성에 대한 체계적 고찰 (Systematic review of the effect of coenzyme Q10 on antioxidant capacity while focused on evaluation of claims for health functional food)

  • Although the functional ingredient has been evaluated by the Korea Food and Drug Administration (KFDA) based on scientific evidence, the levels of scientific evidence and consistency of the results might vary according to emerging data. Therefore, periodic re-evaluation may be needed for some functional ingredients. In this study, we re-evaluated scientific evidence for the antioxidant activity of coenzyme Q10 as a functional ingredient in health functional food. Literature searches were conducted using the Medline and Cochrane, KISS, and IBIDS databases for the years 1955-2010 with the search term of coenzyme Q10 in combination with antioxidant. The search was limited to human studies published in Korean, English, and Japanese. Using the KFDA's evidence based evaluation system for scientific evaluation of health claims, 33 human studies were identified and reviewed in order to evaluate the strength of the evidence supporting a relation between coenzyme Q10 and antioxidant activity. Among 33 studies, significant effects for antioxidant activities were reported in 22 studies and their daily intake amount was 60 to 300 mg. Based on this systematic review, we concluded that there was possible evidence to support a relation between coenzyme Q10 intake and antioxidant activities. However, because inconsistent results have recently been reported, future studies should be monitored.

A Study on Influencer Food-Content Sentiment Keyword Analysis using Semantic Network based on Social Network

  • The development of the 4th industry has increased social media, and the rise of COVID-19 has stimulated non-face-to-face services. People's consumption patterns are also changing a lot due to non-face-to-face services. In this paper, food content keywords are derived through social network-based semantic network analysis, emotions are analyzed, and keywords applied to food recommendation platforms are input. We collected food, influencer, and corona keyword analysis data through Textom. A lot of research has been done through online reviews of existing influencer content. However, there is a lack of research on keyword sentiment analysis provided by influencers rather than consumers and research perspectives. This paper uploads language and topics derived through online reviews of existing publications and subscribers, and goes beyond the limits used in marketing methods. By analyzing keywords that influencers suggest when uploading content, you can apply data that applies them to food recommendation platforms and applications.

빅데이터를 활용한 무인카페 소비자 인식에 관한 연구: 텍스트 마이닝과 의미연결망 분석을 중심으로 (A Study on the User Experience at Unmanned Cafe Using Big Data Analsis: Focus on text mining and semantic network analysis )

  • Purpose - The purpose of this study was to investigate the perception of 'unmanned cafes' on the network through big data analysis, and to identify the latest trends in rapidly changing consumer perception. Based on this, I would like to suggest that it can be used as basic data for the revitalization of unmanned cafes and differentiated marketing strategies. Design/methodology/approach - This study collected documents containing unmanned cafe keywords for about three years, and the data collected using text mining techniques were analyzed using methods such as keyword frequency analysis, centrality analysis, and keyword network analysis. Findings - First, the top 10 words with a high frequency of appearance were identified in the order of unmanned cafes, unmanned cafes, start-up, operation, coffee, time, coffee machine, franchise, and robot cafes. Second, visualization of the semantic network confirmed that the key keyword "unmanned cafe" was at the center of the keyword cluster. Research implications or Originality - Using big data to collect and analyze keywords with high web visibility, we tried to identify new issues or trends in unmanned cafe recognition, which consists of keywords related to start-ups, mainly deals with topics related to start-ups when unmanned cafes are mentioned on the network.
