Treatment of Swine Manure by Vermicomposting - Mixed Treatment of swine manure with food wastes - (Vermicomposting에 의한 돈분의 처리 -음식물 쓰레기와의 혼합처리-)

  • The effects of the mixture ratios of swine manure and food wastes when vermicomposed on earthworm(Eisenia foefida) growth, the production amounts and the chemical properties of casts for plant growth media were evaluated to optimal mixture ratio. Earthworms were grown in swine manure, substituted with 0%, 20%, 40%, 60%, 50% and 100% food wastes. All of earthworm grown in swine manure substituted with 60%, 80%, and 100% food wastes died, therefore the process of swine manure substituted with 60%, 80%, and 100% food wastes by vermicomposting were impossible in this experiment. Worm cast produced from swine manure substituted with 0%, 20% and 40% food wastes after vermicomposting sufficiently contained required quantities of available phosphorus, exchangeable potassium, exchangeable magnesium, and cation exchange capacity. The survival rates of earthworm in swine manure substituted with 0% and 40% food wastes was significantly higher than those in swine manure substituted with 20%, 40% food wastes. Casts weight and proportion of casts weight in 100% swine manure were significantly higher than those in swine manure substituted with 20% food wastes, but was no significant difference between those in swine manure substituted with 40% food wastes. Therefore 100% swine manure was estimated to be superior than the others treatments. However an adequate mixture ratio of food wastes for processing mixture of swine manure by vermicomposting was estimated to be 40%. Because there was no significant difference in mean flesh weight, increasing rate, casts weight, proportion of casts weight, and reduction rate of volatile solids among 3 treatments and survival rate and conversion efficiency(CE) in swine manure with substituted 40% food wastes were significantly higher than the other treatments.

The Effect of Environmental Campaign on the Recognition of Environmental Problem and the Execution of Environmental Protection in Foodservice (단체급식소에서의 환경운동이 환경문제 인식도와 환경보호 실천도에 미치는 영향)

  • Environmental pollution induced by food wastes is considered as one of very serious problems in the world, and it is the most important to reduce the production of food wastes. In this study, environmental campaign for reducing food waste was conducted by applying various campaign methods using such as a bulletin board, intra-network, slogans & posters and news letters, as well as some systems such as penalty and prize in a business & industry foodservice. We investigated customers' recognition and execution degree before and after environmental campaign for the purpose of analyzing the changes of customers' attitude by the campaign. The subjects of this study had generally high level of recognition of environmental problem(3.09 point) compared to the execution degree(1.88 point)(Max. 5 points), implying necessity for the induction of actual execution of food wastes reduction by continuous environmental campaign. After environmental campaign, the recognition of environmental problem related to food wastes was significantly increased from 3.09 point to 3.29 point (p<0.001), and the execution degree for food wastes reduction was also greatly increased from 1.88 to 2.70 point (p<0.001). These changes indicated that campaign for food wastes reduction has raised customers' recognition and execution for environmental protection.

Effect of Education Experience (Home, School, and Mass Media) on Reducing Practice Behavior of Food-related Wastes (가정, 학교, 대중매체의 교육경험이 식품쓰레기 감량 실천 행동에 미치는 영향)

  • The purpose of this study is to observe the influence education experience (home, school, and mass media) on reducing practice behavior(purchasing, using, disposing and leading) of food-related wastes. The study also sought to promote strategy and suggest effective activation plans for the vitalization of behavior of reducing food-related wastes. The study subjects were 412 adult consumers who answered a structured questionnaire. The main findings are as follows: First, the scores of home education experience were 3.61±0.71, which was the highest, and 3.45±0.74 for school education experience, which was the lowest. Second, according to factor analysis, the reducing practice behavior of food-related wastes was converged purchasing, using, disposing and leading behavior. The scores of disposing behavior were 3.79±0.67, which was the highest, and 2.87±0.82 for leading behavior, which was the lowest. Third, the common variables influencing the reducing practice behavior(purchasing, using, disposing and leading) of food-related wastes were home education and mass media and the powerful variable influencing was home education. The results of this study can be used as basic data for the development of educational programs for effective food-related waste reduction.

Comparison of Effects of Chaff and Sawdust on Aerobic Composting of Food Wastes (음식물쓰레기의 호기성 퇴비화에 있어서 왕겨와 톱밥의 영향에 관한 비교 연구)

  • This study was performed to compare the effects of chaff and sawdust as bulking materials on temperature, pH, weight and volume reduction and salinity in aerobic composting of food wastes. Volume ratios of food wastes to chaff in reactor of Control, Ch-l, Ch-2, Ch-3 and Ch-4 were 4:0, 4:1, 4:2, 4:3 and 4:4, respectively. Volume ratios of food wastes to sawdust in reactor of Control, Sd-l, Sd-2, Sd-3 and Sd-4 were 4:0, 4:1, 4:2, 4:3 and 4:4, respectively. Reactors were operated for 24 days with 1 hour stirring by 1 rpm and 2 hours aeration per day. The lowering of the volume ratio of food wastes to chaff and sawdust resulted in the reaction at higher reaction temperature and the elongation of the high temperature reaction period. The lowering of the volume ratio of food wastes to chaff and sawdust resulted in faster pH increase. In the volume ratio of 4:3 and 4:4, pH increased faster in food-chaff mixtures than in food-sawdust mixtures. The lowering of the volume ratio of food wastes to chaff and sawdust resulted in faster steady state in the weight reduction rate and the volume reduction rate. The weight reduction rates of chaff mixtures were higher than those of sawdust mixtures, but the volume reduction rates of sawdust mixtures were more higher than those of chaff mixtures. Salinity increased as composting reaction proceeded, due to reduction in mass weight. The final salinity of Control was 2.79%, and the final range of salinities of chaff and sawdust mixtures were 2.18∼2.37% and 1.86∼2.05%, respectively.

  • The objective of this study was isolation of halotolerant lactic acid bacteria for fermentation of food wastes. 5 strains of lactic acid bacteria were isolated from fermented foods. Among isolated strains, the strain 5-2 was selected according to the growth characteristics in food wastes containing medium. The selected strain 5-2 was identified as Pediococcus acidilactici based on its biochemical characteristics.

The Systematic Study on Reduction of Food Waste Products(I) -Survey on Waste Rates of Frequently Consumed Korean Foods and Effect of Education on Kitchen Wastes of Institutional Foodservices - (음식물 쓰레기를 줄이기 위한 체계화 연구(I) -상용식품의 폐기율 조사와 급식소의 유형별 음식물 쓰레기량과 교육에 의한 개선효과-)

  • This research was conducted to estimate waste rates of 69 food items after pre-preparation and amounts of food wastes disposed and it's reduction effect by education in some institutional foodservices for reduction of the food wastes. The result are as follows: 1. The waste rates were 55.40% for sweet corn, 5.73% for potatoes, 19.14% for sweet potatoes, and 33.47% for chestnuts. 2. The waste rates of fruits were 0.21-49.36%. Food items with over 40% waste rate were banana, watermelon, and pineapple. 3. The waste rates of vegetables were 1.14-52.90%. The number of foods with under 10% waste rate were 14 items(red pepper, green pepper, chard, and so on), 10-20% was 9 items(perilla leaf, chinese cabbage, ginger root, and so on), 20-30% was 5 items(root of chinese bellflower, garlic, radish-leaves, burdock, welsh onion-large type), 30-40% was 3 items(shepherd's purse, head lettuce, kale) and over 40% was 3 items(water dropwort, crown daisy, mallow). 4. The waste rates were 24.30% in chicken, 9.53-13.79% in eggs, and 9.30-55.32% in fishes. The waste rates of vegetables and fishes were higher than those of other food groups. 5. There were significantly different in amount of food wastes disposed (g/person/day) to institutional foodservices (hospital>industrial institution> Korean restaurant>elementary school). The amount of food wastes disposed, especially amount in pre-preparation phase, after education for reduction of food wastes was significantly reduced. Since these study results show significant deviations in food waste rates and education effect, there should be more studies for standard waste rates of each food and systematic education method for reduction of food wastes.

Comparison of Effects of Rice Straw and Sewage Sludge Cake on Aerobic Composting of Food Wastes (음식물쓰레기의 호기성 퇴비화에 있어서 볏짚과 하수슬러지케이크가 미치는 영향에 관한 비교 연구)

  • This study was performed to compare the effects of rice straw and towage sludge cake as bulking materials on temperature, pH, weight and volume reduction, porosity, C/N ratio, salinity, and conductivity in aerobic composting of food wastes. Volume ratios of food wastes to rice straw in reactor control, RS-1, RS-2, RS-3 and RS-4 were 4:0, 4:1, 4:2, 4:3 and 4:4, respectively. Weight ratios of food wastes to sewage sludge rake in reactor control, SL-1, SL-2, SL-3 and SL-4 were 4:0, 4:1, 4:2, 4:3 and 4:4, respectively. Reactors were operated for 24 days with 1 hour stirring by 1 rpm and 2 hours aeration per day. The values of pH of food waters, rice straw and sewage sludge cake were 4.39, 7.40 and 5.79, respectively. The lowering of the volume ratio of food wastes to rice straw resulted in the high reaction temperature and the fast weight and volume reduction rates. The lowering of the weight ratio of food wastes to sewage sludge cake resulted in the slow weight and volume reduction rates. C/N ratio in control was larger than that in rice straw containing reactors, and that in rice straw containing reactors was larger than that in sewage sludge cake containing reactors. Salinity and conductivity in reactors were condensed and increased by reaction days.

A Study on the Nutritional Values and Variations of Food Wastes according to Seasons and Sources (계절별 및 배출원별 남은 음식물의 영양적 가치 평가)

  • An experiment was conducted to determine the nutritional values and variations of food wastes according to seasons and sources. Food wastes were sampled monthly from Feb. to Aug. at gathering sites from home kitchens, school restaurants and Korean food restaurants. chemical analyses revealed that crude fiber and NaCl contents were in the range of 5.41∼10.36 and 3.67∼5.40%, respectively, and the variations were especially high in summer. Ash content was highest in spring. With regard to the sources, the wastes from Korean food restaurants was highest in ash, calcium and phosphorus. On the other hand, crude fiber and fat were highest in the waste from house kitchens and NaCl in those from school restaurants.

  • After the introduction of Volume-based Waste Fee System for municipal wastes, the disposal of food wastes became an issue in society. As this reason, recycling food wastes facilities play an important role such as converting of food waste into animal feed or composting of food waste. Therefore, there is need of efficiency measurement of the facilities to reduce the inefficiency of factors. The purpose of this paper is to make a reasonable suggestion for the improvement of inefficient recycling food wastes facilities. This paper assesses the relative efficiency of recycling food wastes facilities by examining the relationship between inputs and outputs in 41 facilities using data envelopment analysis(DEA). The result shows that 4 facilities whose values of CCR efficiency are 1, and 10 facilities whose values of BCC efficiency are 1, RTS indicates IRS of 17 facilities and CRS of 6 facilities.

A study on the physico-chemical characteristics of municipal solid wastes generated in the sunchon city (순천시 생활쓰레기의 계절별 조성 및 물리·화학적 특성에 관한 연구)

  • To provide successful treatment policy and to apply sources for establishing plan, municipal solid wastes quantity was investigated as physical and chemical characteristics from Sunchon city. Results are like following after checking out characteristics by seasons, type. The average specific weight of municipal solid wastes is $219kg/m^3$ for combustible wastes, $391kg/m^3$ for non-combustible. Food wastes of combustible wastes contained moisture of 38.1% as standard of moisture weight per real weight, 49.6% moisture is contained in non-combustible wastes except food wastes moisture. Moisture, volatile and ash are contented by 16.9%, 68.1% and 15.0% in combustible wastes except food wastes. That means combustible wastes are available a refuse incineration. The low calorific value of only combustible waste is 2,962kca1/kg that is good for refuse incineration.
