안정제첨가가 Frozen yogurt 질감에 미치는 영향 (Effects of stabilizers on the texture of Frozen yogurt)

  • The present study was attempted to investigate and to evaluate various hydrocolloids as a stabilizer in improving texture of the frozen yogurt. Four kinds of hydrocolloids used in this study were CMC (carboxymethyll cellulose), PGA(propylene glycol alginate), LMP(low methoxyl pectin), and the combination of LBG(locust bean gum) and GG(guar gum). The viscosity of frozen yogurt mixes did not show any significant differences among four samples at 5$^{\circ}C$. However, as the temperature increased up to 50$^{\circ}C$, theviscosity of frozen yogurt mixes containing CMC, LMP, PGA decreased drastically except frozen yogurt containing the combination of LBG+GG. The overrun of frozen yogurt containing each hydrocolloid gradually increased and reached to about 53, 50, 54, and 35%, respectively, after 40 min of operating ice cream freezer. As the result of sensory evaluation in the texture of frozen yogurt and melt-down quality, the sample containing LMP was described as the most coarce & icy, crumbly, and sand-like characters. On the other hand, PGA sample was evaluated as not being icy, crumbly, but being chewy and soft in texture. However, any significant differences among four samples were not shown in melt-down quality.

Texture and Sensory Properties of Cream Cheese and Cholesterol-removed Cream Cheese made from Whole Milk Powder

  • This study was aimed to compare the texture and sensory properties of Cream cheese and cholesterol-removed Cream cheese made from the whole milk powder (CRWMP) during storage at $7^{\circ}C$ for 4 wk. The cholesterol reduction by crosslinked ${\beta}$-CD was about 92% in CRWMP. In texture studies, hardness, gumminess, and chewiness had increased during the storage period of 4 wk in both cheeses, irrespective of treatment. In the sensory properties, cooked milk flavor was found to have decreased, whereas sourness had increased with increasing storage period of 4 wk in whole milk powder Cream cheese. On the basis of our results, we conclude that the cholesterol removal in CRWMP does not cause any adverse effect on the texture and sensory properties of Cream cheese made with whole milk powder.

Blanching, Chemical Dipping, 냉동방법 및 저장기간이 냉동 양송이의 품질에 미치는 영향 (Effects of Blanching, Chemical Dipping, Freezing Methods and Storage Period on Quality of Frozen Mushrooms)

  • Blanching시간, chemical dipping, 냉동방법 및 저장기간이 냉동양송이의 texture, 색깔 및 수율에 미치는 영향을 연구한 결과는 다음과 같다. Whole mushroom의 경우 5분간 blanching한 것은 1-2분간 blanching한 것 보다 shear press값이 현저히 높았으며, 저장기간이 연장됨에 따라 shear press값이 매우 유의성 있게 증가했다. 그러나 냉동방법은 texture에 유의성 있는 영향을 주지 않았다. Sliced mushroom의 경우 blanching시간이 길어짐에 따라 shear press 값이 증가하기는 하나 유의성은 없었으며, 저장기간이 연장됨에 따라 texture가 현저히 tough 해짐을 알 수 있었다. 그리고 시료의 texture를 관능적으로 측정한 결과는 대체적으로 shear press 결과와 유사한 경향을 보였다. Chemical dipping 방법은 blanching 시간을 짧게하여 냉동양송이의 수율을 높히면서 저장중 색깔의 변화를 방지하는데 효과적이었으며, 특히 whole mushroom의 수율은 상당히 증진시킬 수 있었다. Sliced mushroom의 경우는 blanching time을 2분이하로 단축시키면 rotary slicer로 절단작업을 할 때 조직이 부스러져 생기는 중량손실이 증가하므로 2분 또는 그 이상의 blanching time이 필요했다.

고구마 조직의 가열변화에 대한 반응속도론적 상수 결정 (Determination of Kinetic Parameters for Texture Changes of Sweet Potatoes during Heating)

  • 가열에 의한 품종별 고구마 조직의 변화에 대한 반응속도론적 상수를 biphasic model과 fractional conversion method를 사용하여 결정하였다. Biphasic model에 따라 고구마의 가열에 의한 조직의 변화는 2단계의 연속적인 1차 반응식으로 표시할 수 있었으며, 활성화에너지는 고구마의 품종에 따라 $71.0{\sim}75.1\;kJ/mol$$48.4{\sim}59.6\;kJ/mol$이었다. 또한 고구마의 가열에 의한 조직변화를 fractional conversion method를 사용하여 1개의 1차 반응식으로 표시할 수 있었는데, 이 때의 활성화에너지는 $67.5{\sim}75.3\;kJ/mol$로서 biphasic model에 의한 제 1단계의 반응에 대한 값과 유사한 값을 나타냈다. 이들 방법으로 결정된 반응속도론적 상수들 사이에는 kinetic compensation 효과가 있었으며, 두 방법 모두 고구마의 가열에 의한 조직변화에 대한 반응속도론적 상수들을 결정하는데 적용할 수 있음을 알 수 있었다.

  • 국수의 물성 측정에 있어서 기존의 방법들은 많은 시간을 요하고 또한 시간 경과에 따른 국수의 물성값에 오차를 주는 단점이 있다. 컴퓨터의 소프트웨어(Xtra)를 이용한 Texture Analyser로 부터 얻어낸 Texture Profile Analysis (TRA)곡선은 국수의 물성변화를 6∼8개의 상수들을 사용해서 설명할 수 있었다. 이 측정방법은 빠르고 효율적이며 시간을 단축할 수 있었다. 그러므로 국수와 파스타(pasta)의 물성 연구에는 이 방법을 도입할 것을 제시하였다.

  • Effects of laminaria powder(0.1%, 0.5% and 1.0%) on self-life and texture of bread were investigated. Added laminaris inhibited the growth of bacteria and the decrease the moisture content and pH value, and the more laminaria was add, the higher degree of inhibition of those was observed. Results of texture analysis showed that there was no significant differ each treatment and control(no added laminaria powder).

  • This study was carried out to investigate the possibility of improving texture and flavor of Dasik made of pine pollen with waxy rice flour and Angelica gigas leaf powder addition. Pine pollen Dasik was not affected in shape, flavor, texture, taste, melting degree and unpleasant flavor by add of 10% rice flour. Flavor, texture and melting degree were little bit affected by add of 30% rice flour but all items got worse with same amount of rice flour addition. Add of Angeleica leaf powder by 10% improved a little the texture while flavor was decreased.

  • Consumption pattern of Ramyon by high school students at age of 16~20 years in Kangwondo area was surveyed by questionaire. About 74% among 754 students consumed Ramyon more than once per week. Most consumers eat Ramyon because of convenience for meal substitution. They consumed Ramyon at between meals and lunch at home. The advertisement had a strong effect on the selection of Ramyon. Consumers considered that taste of soup and texture of noodle are both important quality factor of Ramyon. In terms of the texture of cooked noodle, the most desirable was chewy and hard texture. The most undesirable was swollen and mushy texture. The most desirable and undesirable taste of soup were spicy and greasy taste, respectively. At present, no significant differences in consumption pattern between sex were observed in most cases.

  • Analogs and extenders should have mouthfeel and chewing characteristics that are similar to the food they are replacing or extending. Instrumental methods can measure some of the physical properties that constitute 'texture' but only sensory methods can provide a complete description and quantification of the textural properties of a food. Instrumental methods and sensory methods for measuring texture are reviewed.

야콘 분말을 첨가한 설기떡의 품질 특성 (Quality Characteristics of Sulgidduk with Yacon Powder)

  • In this study, Sulgidduk samples were prepared with 0%, 3%, 5% and 7% yacon powder. Sulgidduk samples were then examined for quality characteristics such as moisture content, general components, color, texture profile analysis, sensory qualities, and sugar content, in order to determine the optimal ratio of yacon powder in the formulation. Regarding the general components of yacon Sulgidduk, the contents of crude protein and lipid decreased as the ratio of yacon powder increased. The L-value for color decreased, whereas a- and b-values increased. In the texture profile analysis, 7%-added yacon showed significantly lower hardness, whereas 7% yacon powder showed the highest values for cohesiveness, springiness, and chewiness. The contents of sucrose, fructose, and glucose in yacon Sulgidduk were found to be 3%, 5%, and 7% by LC, respectively. Sucrose showed a decreasing trend with increased yacon powder content, but fructose and glucose increased with increased amount of yacon powder. For sensory qualities, taste/flavor, texture, hardness, and overall acceptability were not significantly different among the 0%, 3%, and 5% yacon powder samples.
