The effects of gamma irradiation (1, 3 and 5 kGy) and packaging methods (air and vacuum) on the growth of microorganisms contaminated in beef was investigated during storage at different temperatures (-20, 4 and $25^{\circ}C$). The initial microbial population of beef was $8.0{\sim}10^2\;CFU/g$ in total aerobic bacteria, $2.0{\times}10^2\;CFU/g$ in total lactic acid bacteria, $8.0{\times}10^1\;CFU/g$ in molds, $6.0{\times}10^2\;CFU/g$ in Pseudomonas sp. and $7.0{\times}10^2\;CFU/g$ in coliforms, respectively. Gamma irradiation at 5 kGy completely eliminated pathogenic bacteria in beef. Gamma irradiation at such dose and subsequent storage at less than $4^{\circ}C$ could ensure hygienic quality prolong the microbiological shelf-life resulting from the reduction of spoilage microorganisms. The different packaging methods of beef caused negligible changes in the growth of microorganisms during storage.
This study was performed to investigate the antimicrobial effect of the Cutellaria baicalensis George extracts against food-borne pathogens. First, the Cutellaria baicalensis George was extracted with methanol at room temperatures, and fractionation of the methanol extracts from Cutellaria baicalensis George was carried out by using petroleum ether, chloroform, and ethyl acetate, and methanol respectively. The antimicrobial activity of the Cutellaria baicalensis George extracts was determined using a paper disc method against food-borne pathogens and food spoilage bacteria. The ethyl acetate extracts of Cutellaria baicalensis George showed the highest antimicrobial activity against Staphylococcus aureus and Shigella dysenteriae. The synergistic effect has been found in combined extracts of Cutellaria baicalensis George and Portulaca oleracea as compared to each extracts alone. Finally, the growth inhibition curve was determined using ethyl acetate extracts of Cutellaria baicalensis George against Staphylococcus aureus and Shigella dysenteriae. The ethyl acetate extract of Cutellaria baicalensis George showed strong antimicrobial activity against Staphylococcus aureus at the concentration of 4,000 ppm. The 4,000 ppm of ethyl acetate extract from Cutellaria baicalensis George retarded the growth of S. aureus more than 24 hours and Shigella dysenteriae up to 36 hours. The ethyl acetate extracts of Cutellaria baicalensis George has been shown the antimicrobial effect against Staphylococcus aureus and Shigella dysenteriae.
In order to examine the antimicrobial effect on dairy processing facilities and products, Prunus mume extinct (PME) was applied to the pilot plant system of dairy industry and yogurt, PME showed thermal and pH stability in the wide spectrum of temperature ($40{\sim}150^{\circ}C$) and pH ($4{\sim}10$) and remarkable antimicrobial activities against dairy spoilage microorganisms. As the result of aseptic treatment of dairy processing facilities with PME microbial colony including coliform bacteria was not detected canpore to those detected in the control. In the level of PME concentration which inhibit the growth of putrefactive microorganisms we could produce yogurt with good scores of sensory evaluation.

In order to control or kill insects and pests, control ripening, and delay spoilage, kiwifruits were irradiated with gamma rays at 0.1, 0.3, and 0.5 kGy. Vitamin C, hydrogen donating activity, sugar content, organic acid content, texture, chromaticity, and sensory qualities were examined in the fruits over 2 weeks of storage at 20$^{\circ}C$. Vitamin C content and hydrogen donating activity decreased during the storage period, but they were not reduced by the irradiation process. Total sugar and reducing sugar contents increased as the storage period increased; however, these were also unaffected by irradiation. Organic acid content significantly decreased as a result of irradiation, and all samples had decreases in organic acids over the storage period. Hardness decreased with the storage period as well as with increasing doses of irradiation. In terms of Hunter's color values, irradiation increased the $L^*-\;and\;a^*-$ values in the initial storage period, but it did not have any significant effect on these values during the 2 weeks of storage. When compared with control samples, the irradiated samples had lower color and overall acceptability scores just after irradiation (week 0). However, during the storage period, the irradiated samples had higher scores for smell, taste, texture, and overall acceptability than the control. In conclusion, based on the results, gamma irradiation up to 0.5 kGy is the recommended treatment to maintain the overall quality attributes kiwifruit.
Spoilage yeast was isolated from spoiled rice-syrup and identified by Microbial Identification system (MIDI) as Zygosaccharomyces bailii based on composition of fatty acids exhibiting carbon skeleton of 16:0, 16.1 $({\Delta}cis\;7)$, 18:2 $({\Delta}cis\;9)$, 18:1 $({\Delta}cis\;9)$, and 18:1. Increase in sugar content $(1^{\circ}brix)$ resulted in decreased moisture concentration (1%), and water activity decreased from 0.72 to 0,63 when sugar concentration increased from 77 to $83^{\circ}brix$. Yeast showed very slow growth during three weeks post-inoculation in rice-syrup at 17 and $79^{\circ}brix$, and maximal level of Z. bailii was found at 6 and 10 weeks storage at 15 and $25^{\circ}C$, respectively. At over $81^{\circ}brix$ its growth slowly decreased at beginning of storage, indicating rice-syrup could be preserved safely at above $81^{\circ}brix$ sugar content without Z. bailii contamination.
The primary objective of this study was to investigate the effects of the bacteriocin-producing heterofermentative lactic acid bacteria (LAB) and acid-resistant yeast isolated from Mukeunji, a Korean ripened kimchi on shelf-life extension and quality improvement of sourdough. According to gene sequence analysis the heterofermentative LAB that showed the antimicrobial activity against bread-spoilage Bacillus strains were identified as Leuconostoc mesenteroides LAS112, Lactobacillus brevis LAS129, and L. mesenteroides subsp. dextranicum LAB137. In addition, the yeasts that were able to grow at acidic pH were identified as Pichia membranifaciens YS05, Pichia fermentans YS19, and Pichia anomala YS26. During sourdough fermentation the levels of acetic acid and bacteriocin produced by L. brevis LAS129 strain were higher than those of L. mesenteroides LAS112 and L. mesenteroides subsp. dextranicum LAS 137 strains, whereas LAS112 strain produced the highest levels of lactic acid. The maximum bacteriocin activity (640 AU/g) against Bacillus subtilis ATCC 35421 was obtained in sourdough fermented by mixed culture of L. brevis LAS129 and P. membranifaciens YS05 or P. anomala YS26. After 24 h of fermentation at $30^{\circ}C$, the viable cell counts of LAS129 ($10^9CFU/g$) in sourdough were higher than those of the YS05 or YS26 ($10^7CFU/g$). Meanwhile, the viable cells of bread-spoilage strain in sourdough fermented with these strains were significantly (P < 0.05) lower than the control group.
The aim of this research was to estimate the effect of temperature and develop predictive models for the growth of total viable cells (TVC) and Escherichia coli (EC) on chicken breast under aerobic and various temperature conditions. The primary models were determined by Baranyi model. The secondary models for the specific growth rate (SGR) and lag time (LT), as a function of storage temperature, were developed by the polynomial model. The initial contamination level of chicken breasts was around 4.3 Log CFU/g of TVC and 1.0 Log CFU/g of E. coli. During 216 h of storage, SGR of TVC showed 0.05, 0.15, and 0.54 Log CFU/g/h at 5, 15, and $25^{\circ}C$. Also, the growth tendency of EC was similar to those of TVC. As storage temperature increased, the values of SGR of microorganisms increased dramatically and the values of LT decreased inversely. The predicted growth models with experimental data were evaluated by $B_f$, $A_f$, RMSE, and $R^2$. These values indicated that these developed models were reliable to express the growth of TVC and EC on chicken breasts. The temperature changes of distribution and showcase in markets might affect the growth of microorganisms and spoilage of chicken breast mainly.
Quality changes of sausages in refrierated storage for 60 days were investigated. Nine types of sausages produced in Korea were stored at 4$^{\circ}C$(3~5$^{\circ}C$), and then chemical, microbiological, and sensory characteristics were evaluated on every 10 days. The proximate analysis showed considerable variation in fat (23.97%, 17.10~30.20%) with less variation in moisture (51.96%, 48.10~56.30%) and protein (12.96%, 11.40~13.95%), pH value decreased over time averaging from 6.31 to 6.22 with no significant difference. Water activity was consistent over refrigerated storage averaging 0.95. Volatile basic nitrogen (VBN) values were still within 20 mg% though VBN for all types significantly increased over time (p<0.05). Thiobarbituric acid (TBA) values were well below 1.0 though TBA showed significant differences among storage periods (p<0.05). Standard plate counts (SPCs) significantly increased during storage (p<0.05) while coliform group was not counted in all cases. SPCs reached 104 CFU/g in two types after 50 days' storage and were below 105 CFU/g in all types after 60 days' storage. Instrumental texture analysis showed that springiness, adhesiveness, and hardness signficantly decreased over time (p<0.05) while no change was observed in external color. significantly decreased over time the 60-day storage period (p<0.05) while cohesiveness, chewiness and gumminess did not change. Lightness, redness and yellowness of the internal Hunter color significantly decreased over time (p<0.05) while no change was observed in external color. Sensory profile showed that flavor, taste, texture and overall acceptable after 60 days' storage at 4$^{\circ}C$. However, the shelf-life of the samples should be decided in the consideration of the growth rate other spoilage flora coupled with the bacterial growth after 50 days' storage.

The chemical composition of fish feeds(mackerel, gizzard shad, shrimp and formula feed) were analyzed and compared with those of untreated and irradiated (5 kGy) feeds, and the effects of gamma irradiation (5 kGy) and butylated hydroxyanisole (BHA, 200ppm) on feeds spoilage were investigated by determination of thiobarbituric acid (TBA) value and peroxide value for 14 days at $20^{\circ}C$, $4^{\circ}C$ or $-20^{\circ}C$. Crude protein, crude lipid, crude fiber, crude ash and nitrogen free extract were not significantly changed by gamma irradiation with the dose of 5 kGy. Immediately gamma irradiation increased the initiative oxidation of feeds as expected. But BHA was found to be greatly effective in minimizing the radiation-induced peroxidation (p<0.05). The TBA value and peroxide value increased with the elapse of the storage period. The level of lipid oxidation was increased depending on the rise in storage temperature. But the additions of BHA inhibited the lipid oxidation (p<0.05).

This study was carried out to investigate the qualities of Saururus chinensis Baill. rhizomes and it content of active ingredient accenting to the storage methods. As the storage period increased the rates of weight loss, rotten rhizomes and the number of sprouts increased. Refrigerator storage resulted in the lowest weight reduction and sprouts rates, while storage in soil-filled box in a store-house was most effective in reducing spoilage rate. Five lignans from rhizome were determined by HPLC Retention time ranged $18{\sim}36$ minutes and showed saucernetin sauchinone, manassantin A, saucerneol D, and manassantin B in that order. Regardless of storage methods, the lignan content was lower after 120 days than after 30 days of storage, and increased manassantin B, manassantin A, saucernetin sauchinone, and saucerneol D in that order.
