서비스요인이 재이용의도에 미치는 영향 : 급식만족도의 매개효과를 중심으로 (Service Factor is Effect on Revisiting for Old People : Centering around Mediator Effect for Feeding Satisfaction)

  • 본 연구는 서울시 Y구의 노인복지관 및 종합사회복지관에서 운영하고 있는 경로식당의 서비스요인(위생상태, 종사자, 편리성, 음식, 접근성, 환경, 사회적 관계)이 재이용의도에 미치는 영향력과, 이 과정에서 급식만족도가 갖는 매개효과를 파악하고자 하였다. 연구대상은 경로식당을 이용하는 65세 이상 노인으로, 총 310명이 최종 유효표본으로 적용되었다. 분석은 SPSS 19.0을 활용하였고, 연구결과 첫째, 인구사회학적 특성 중 임대주택/기타, 서비스요인의 모든 요인이 급식만족도에 영향을 미치는 것으로 나타났다. 둘째, 인구사회학적 특성 및 서비스요인, 급식만족도와 재이용의도의 관계를 파악한 결과, 인구사회학적 특성 중 학력, 서비스요인 중 모든 요인이 재이용의도에 영향을 미치는 것으로 나타났다. 셋째, 인구사회학적 특성 및 서비스요인과 재이용의도의 관계에 있어 급식만족도의 매개효과를 검증한 결과, 서비스요인 중 종사자와 급식만족도가 재이용의도에 정(+)의 영향을 미치는 것으로 나타났다. 따라서 경로식당 서비스의 질적 제고 및 만족도 향상을 위한 각 지자체의 지속적인 관심과 투자, 노력이 요구되며, 나아가 급식환경 개선을 위한 다각적 방법이 모색되어야 할 것이다.

호텔종사자의 전공학습이 직무성과에 미치는 영향 자기 효능감의 매개효과 (The Effect of the Concentration of Hotel Employees on Job Performance Mediating effect of self-efficacy)

  • 본 연구는 호텔종사자를 대상으로 입사 전 전공관련 학습이 자기효능감에 어떠한 영향을 미치며 종사원의 직무성과간의 관계를 실증분석 하였다. 국내 L호텔을 종사원을 대상으로 설문지 300부를 배포하여 267부의 설문지를 회수하였으나 불성실한 설문지 17부를 제외하고 최종적으로 250부를 최종분석에 사용하였다. 분석결과 호텔종사자의 경우 호텔관련 전공학습은 자기효능감에 정(+)의 영향을 미쳤으며 자기효능감은 전공학습과 직무성과간 매개역할 하는 것으로 나타났다. 연구결과를 바탕으로 산학 연계 프로그램의 개발을 통한 실무형 전공학습은 호텔업계를 비롯한 타 업계의 취업 시 종사원의 업무 적응도를 높이고 나아가 종사원들의 자기효능감을 상승시켜 궁극적으로 직무 성과에 영향을 미칠 것이라 생각된다. 향후 국내 특급호텔 및 중저가호텔 종사자들을 대상으로 연구대상의 확대가 이뤄지고 인턴연계수업이 진행되는 호텔 종사원에 대한 자기효능감과 취업 후 직무성과간 연구가 이뤄지길 기대해본다.

학교급식 영양사의 감정노동이 직무스트레스에 미치는 영향 (Contribution of Emotional Labor to Job Stress of Dietitians in School Foodservice)

  • The purposes of this study were to: a) investigate personal and foodservice operational factors affecting job stress of school foodservice dietitians, b) analyze the contribution of emotional labor to job stress of school foodservice dietitians. A survey was conducted from May 2 to June 13, 2008 to collect data from school foodservice dietitians (N=546). 206 questionnaires were returned completed, and 15 improperly-completed questionnaires were excluded. Finally, 191 questionnaires were used for final statistical analysis (usage rate : 34.98%). The results of the study were as follows. First, personal variables significantly affecting dietitians' job stress were 'monthly bills(p<0.05)' and 'total length of time in school foodservice (p<0.05)'. Second, foodservice operational variables affecting dietitians' job stress were 'school level (p<0.05)', 'type of school foodservice management (p<0.01)', 'number of meal service times (p<0.05)', 'total number of meals served per day (p<0.001)', 'number of meals served per day for students (p<.001)', 'number of meals served per day for teachers (p<0.001)', and 'number of foodservice staff (p<0.001)'. Third, emotional labor was found to contribute significantly to the job stress of dietitians in school foodservice (p<0.001). It was found that as dietitians experience more emotional labor at work, more job stress is experienced. Stress management is a very important and meaningful contributor to foodservice quality as well as to personal well-being for workers in school foodservice. Therefore, it is proposed that management of emotional labor is essential for stress management. Further, emotional labor and job stress should no longer be considered a personal matter, but rather should be approached systematically in all aspects of a school foodservice organization.

잡채를 중심으로 한 단체급식시설의 위생개선을 위한 HACCP 적용에 관한 연구 (Application of HACCP for Hygiene Control to Jabchae in Team Foodservice Facility)

  • 서울시내에 위치한 위탁급식을 실시하는 중학교에서 제공하는 음식 중 잡채의 생산공정별 각 단계에서 HACCP을 적용하여 시간, 온도, 미생물 분석을 통하여 위해 요소를 분석하고 통제하는 방법을 모색하였다. 잡채의 음식의 생산단계에서 음식의 위해 요인의 발생은 온도, 소요시간, 미생물 증식, 용기의 위생 등 복합적 요인에 기인하는 것으로 나타났고 거의 모든 원재료, 전처리 및 저장단계, 배식단계가 CCP로 설정되었다. 잡체 원재료의 미생물학적 품질은 검수단계에서 총균수($10^2$$10^{5}$ ), 대장균군수(0∼$10^3$)으로 검출되었으나 세척이나 살균과정을 거치면서 총균수는 거의 검출되지 않았으며 대장균군은 검출되지 아니하였다. 잡채 제조후 시간이 경과하면서 3시간만에 총균수가 5.1${\times}$$10^2$/g으로 증가되었다. 원재료의 철저한 검수, 전처리 과정시 교차오염의 방지와 생야채의 소독이 필수적이었고 조리과정시 세균사멸에 필요한 열장 온도를 지키며 저장과정과 조리후 급식까지 방치되는 시간을 최대한 줄여 미생물의 증식을 억제할 필요가 있었다. 또한, 급식되는 음식의 안전을 위해서는 최상의 원료구입과 음식생산단계에서의 시간단축, 적절한 온도에서의 보관, 위생적 기구사용을 통해 미생물의 증식방지 및 위생관리, 그리고 조리 종사원의 위생상태에 대한 습관화에 노력해야 함을 알 수 있었다.

서울.경기지역 보육시설 및 유치원 대상 어린이급식관리지원센터 지원 요구도 분석 (Child-Care Facility and Kindergarten's Demands on Foodservice Support by Center for Child-Care Foodservice Management (CCFSM) in Seoul and Gyeonggi-do)

  • The purpose of this study was to analyze the differences between child-care facilities and kindergartens towards the need for foodservice support by Center for Child-Care Foodservice Management (CCFSM). For this study, questionnaires were sent out from August of 2008 to April of 2009 to directors of 1,478 child care facilities and 299 kindergartens in Seoul and Gyeonggi-do via postal service. A total of 267 questionnaires were usable with 203 (13.7%) of child-care facilities and 64 (21.4%) of kindergartens. Statistical data were analyzed by SPSS 15.0 for descriptive analysis and t-test. For political and administrative support, government funding for foodservice was the highest need and hiring nutritionists was significantly different by type of facility (p < 0.01). Both child-care facilities (4.29) and kindergartens (4.41) demanded the balanced menu from CCFSM. There were significant differences of "information about food material sanitation management" (p < 0.05), "hygiene safety management method according to working process" (p < 0.05), "hygiene safety management method of foodservice facilities and equipment" (p < 0.05). In education and training contents from center, "types and methods to manage foodservice facilities and equipment" for directors, "dietary education by age" for teachers, and "the rules of personal sanitation and working process" and "gas, electricity and fire prevention" for culinary workers had the highest mean score of requirements.

u-헬스 케어 (Ubiquitous Healthcare) 서비스를 이용한 영양교육이 직장 남성근로자의 대사증후군에 미치는 영향 (Effects of Nutrition Education Using a Ubiquitous Healthcare (u-Health) Service on Metabolic Syndrome in Male Workers)

  • 본 연구는 u-Health 기반 장비를 활용한 영양교육이 식습관 변화, 영양소 섭취, 대사증후군 위험 인자에 미치는 영향에 대해 알아보고자 하는 목적으로 수행되었다. 1) 연구 대상자는 서울 소재 사업장에 근무하는 직장인 30~50대의 청장년층의 남성으로 구성되었으며, 대부분이 기혼, 대학이상학력의 고학력자이고, 높은 흡연율과 음주율을 나타냈다. 평소 규칙적인 운동 보다는 일상생활에서 활동량이 더 높았다. 2) 영양교육 전 후에 따른 신체계측 및 혈액성분의 결과는 복부둘레, 중성지방, 이완기 혈압, 중성지방과 체지방률, 총 콜레스테롤이 유의적으로 감소하였다. 3) 측정 횟수에 따른 신체계측 및 혈액성분 결과는 측정횟수 12회 이상인 그룹에서 복부둘레와 중성지방이 유의적으로 감소하였고, 체지방률과 총콜레스테롤도 유의적으로 감소하였다. 4) 영양교육 전 후에 따른 영양소섭취 상태 및 식습관 변화는 열량의 섭취가 감소하는 경향에도 불구하고 영양교육 전보다 교육 후 식이섬유, 동물성칼슘, 칼륨, 비타민C, 엽산이 유의적으로 증가하였다. 식습관 변화에서는 '육류, 생선, 달걀, 콩, 두부 등으로 된 음식을 매일 3~4회 먹는다.'와 '김치 이외의 채소를 식사할 때 마다 먹는다.'의 문항이 영양교육 전보다 영양교육 후 유의적으로 증가하여 긍정적인 변화를 보였다. 결론적으로 u-Health 기반 장비를 활용한 영양교육이 대사 증후군 위험요인 뿐만 아니라 식습관에서 또한 긍정적인 영향을 미치는 것으로 나타났다. 또한 교육의 효과에 있어서 대상자 스스로의 동기부여가 건강의 개선에 중요한 영향을 미친다는 것을 확인할 수 있었다. 본 연구 결과 대사증후군 대상자의 식습관 및 생활습관 개선을 위해 영양교육은 필수적이며, 추후 지속적인 동기부여를 위해서는 u-Health 기반 장비를 활용한 다양한 컨텐츠 개발과 이에 맞춘 체계적인 영양교육 프로그램의 연구가 장기적인 의료비의 절감, 삶의 질 향상을 위한 맞춤형 영양관리로 발전하도록 지속적으로 진행되어야 할 것이라고 사료된다.

외식관련 전공자의 노동시장 이행 영향 요인에 대한 상대적 중요도 분석 (The Relative Importance of Factors affecting School to Work Transition in Foodservice-related Majors)

  • 본 연구의 목적은 외식관련 전공자의 노동시장 이행에 영향을 미치는 요인에 대한 상대적 중요도를 측정하고자 한다. 이러한 목적을 달성하기 위해 외식관련 전공자의 노동시장 이행에 영향을 미치는 요인들로서 개인배경, 학력, 노동시장 이행 준비노력 요인 등을 계층 2로 설정하였으며, 계층에 있는 요소들에 대한 상대 평가를 통해 각 요소들이 가지는 중요도를 산출해 내는 기법인 계층분석기법을 사용하였다. 분석결과를 살펴보면 다음과 같다. 첫째, 계층 2의 경우 노동시장 이행 준비노력의 상대적 중요도가 가장 높게 나타났다. 반면에, 4년제 대학의 외식관련 전공자의 경우, 학력 요인의 상대적 중요도가 가장 높게 나타났다. 둘째, 계층 3 중 개인배경요인의 경우 성별의 상대적 가중치가 가장 높게 나타났다. 학력 요인의 경우, 대학유형의 상대적 가중치가 가장 높게 나타났다. 노동시장 이행 준비노력 요인의 경우, 재학 중 국외 근로경험과 구직경로의 상대적 가중치가 높게 나타났으며, 직업훈련 경험의 상대적 가중치는 가장 낮게 나타났다. 셋째, 복합 가중치를 분석한 결과를 살펴보면 대학유형의 복합가중치가 가장 높게 나타났다. 향후 연구에서는 외식관련 산업체의 업종과 업태를 보다 세분화하여 영향 요인을 분석하고, 이를 토대로 전공자의 진로분야별 맞춤형 진로지도가 이루어져야 할 것이다.

가정학 전공자의 취업과 전망 (A Study of Current Employment and Future Trends for Young Home Economists)

  • The current employment status among young home economists and perspectives in occupations for prospective Home Economics graduates were explored in this study which utilized information from 17 to 21 colleges in Korea and colleges in the United States during the five years of 1977∼1981. The Home Economics content areas covered in this study were Clothing and Textiles, Foods and Nutrition, Housing and Interior Design, and Child Development and Family Life. The highest percentage of Korean graduates in Clothing and Textiles was employed either as teachers at the junior high school level or as designers in the clothing and textile industries. Quite a number of the graduates were engaged in further studies at the graduate level. Korean graduates with a master's degree were teaching at the college level and some had furthered their studies at the doctorate level either here or abroad. Koreans with a bachelor's degree in Foods and Nutrition held jobs as teachers in junior high school, dieticians at mass feeding institutions and hospitals, food scientists in food industries, and researchers in institutions. Those with a master's degree were teaching at the college level. Americans with a bachelor's degree worked as dieticians, supervisors in restaurants and institutions, extension workers, researchers at various facilities, teachers and clerks. Americans with a master's or doctorate degree were engaged in teaching at colleges or supervising at research or working as extension specialists. In general, Korean graduates were found to hold positions in less varied areas than their American counter-parts. Among forty-nine graduates those working in their professional field reported less sex discrimination that those working in other fields. The major area of employment in Housing and Interior Design or Home Management graduates in Korea was teaching while in the United States it was extension work, business, governmental work and teaching. It was suggested that in the future, career development in Korea be further explored to include extension service, research, social welfare, financial planning, business, free-lancing, funeral home, home-call, and correctional education. Interviews with executives from 6 business enterprises indicated that most of them were aware of the potential contribution home economists could make for their companies but they expressed a negative attitude towards women in general due to their short stay on the job. Jobs held by Child Development and Family Life majors with a bachelor's degree in Korea were mostly teaching positions in public, junior and senior high school. However, jobs such as nursery school teaching, working in clinical setting, business, and teaching at public, junior and senior high school predominated in the United states. Most Korean graduates with a master's degree were teaching in professional colleges while in the United Stated the job variation among the graduates was rather evenly distributed among teaching at college level, public and high school, nursery school and administration areas. Reports from 7 child development majors on the job indicated that they were paid less that secretarial workers. Only half of them were working in their major area and these expressed satisfaction with their work. Two thirds of the respondents indicated no sex discrimination. It was suggested that in the future Child Development and Family Life majors pursue employment in counseling, guidance, recreation, mass media, administration and outreach work as well as education, research and parent education in services for children, teen-agers, adults and families.

체인 패밀리 레스토랑의 고객 만족 및 고객 충성도에 미치는 요인 분석 (Analysis of the Factors Affecting Customer Satisfaction and Customer Loyalty in a Family Restaurant Chain)

  • Purpose - When it comes to first impressions of family restaurants, people basically think of the following factors: cozy, a refreshing space, indoor lighting, atmospheric music, the best-quality service through mutual interactions with employees, birthday events, follow-up customer management, brand image, and many others. Focusing on such family restaurants characteristics, with consumption experience and customer satisfaction determined as mediator variables, this study looks into the selection factors that affect customer loyalty when choosing a family restaurant. Subsequently, the study conducts an empirical analysis of these selection factors with the greatest influence. Research design, data, and methodology - This study analyzed 200 total surveys of family restaurant customers including college students, workers, housewives, and others. The survey was conducted over two weeks in May 2014. For statistical processing, SPSS 21 was used for factor analysis and reliability analysis as well as AMOS for structural equation analysis. In terms of a variable that would influence either consumption experience or customer satisfaction at the restaurants, the study introduced the concept of customer equity. The study designed a model based on a hypothesis developed using the following factors: customer encounter service value, customer convenience value, brand equity, relationship equity, and other factors defined as components of customer equity by Rust et al. (2000) determined as independent variables as well as with customer experience and customer satisfaction set as mediator variables. The hypothesis, after all, assumed that customer loyalty would be positively (+) influenced. Results - The analysis results from the study reported that brand value, customer encounter service value, and relationship value have positive (+) effects on consumption experience and customer satisfaction. However, as for customer convenience value, this turned out not to have a statistically significant influence on consumption experience and customer satisfaction. In regard to a relation between consumption experience and customer satisfaction, the results showed that the former affects the latter, and in terms of intervening variables, both of these appeared to have a positive (+) effect on customer loyalty. Conclusions - This study suggests that family restaurants should look for strategies that focus on how to promote customer relationships. For example, restaurants could try birthday events or discount events to achieve this goal. Since the study ended up realizing relatively low levels of suitability and statistical significance, the path of the study changed. After all, in order to increase suitability and statistical significance, the study had to eliminate factors such as service quality and others and for this reason the study was unable to conduct the analysis as initially planned. In addition, the data samples of the research were mainly gathered from students, which made it hard to say that the analysis was carried out on samples from every different group. Future research should analyze the characteristics of each group of customers for factors affecting customer satisfaction and customer loyalty in the family restaurant chain.

일부 벽지 농촌 가정 주부의 식생활 관리 실태 조사 (A Survey on the Meal Management Attitudes of Housewives Who Had Elementary Schoolchildren in a Remote Rural Country in Korea)

  • This study is performed to examine the meal management attitudes of housewives who had elementary schoolchildren in the remote rural areas(RA: n = 318, $37.2{\pm}0.3$ years of age) in comparison to those in their vicinity urban area(UA: n = 349, $36.9{\pm}0.2$ years of age) in the Chungnam province in Korea. The subjects were asked to fill out the questionnaire on their attitudes of meal management for their families. The results obtained in this study were as followings: (1) Most husbands of the subjects had a farming job in the RA while they had salaried workers in the UA(p<0.001). Education levels of both subjects and their husbands were lower in the RA than in the UA. Nuclear families were dominated by both groups, however single parent-family and step parent-family were more prevalent in the RA than in the UA. (2) in terms of ways of getting foods such as grains, meats, eggs, vegetables and fruits, the RA housewives relied more often on self-production than did the UA housewives(p<0.001). (3) The frequency of purchasing unprocessed foods was lower in the RA than in the UA(p<0.001). The RA housewives purchased the convenient foods such as instant noodles(p<0.05), ready to eatsoups(p<0.001), retort pouch foods(p<0.05) and instant teas(p<0.05) more frequently than did the UA housewives, while tuna, canned in oil(p<0.01), milk and their products(p<0.001), soybean products(p<0.001) and snacks(p<0.01) were purchased less often by the RA housewives. (4) Family members except housewives engaged more often in meal preparation in the RA than did those in the UA(p<0.001), which was more strongly observed for dinner. The time spent in preparing the dinner was shorter in the RA than in the UA(p<0.001). (5) The degrees of endeavor to provide the subjects' offspring with balanced meal(p<0.001) and nutrition education(p<0.01) were lower in the RA than in the UA. The RA housewives had more difficulty for performing meal management because of 'over work-related fatigue', 'insufficient money to purchase foods' and 'far distance from grocery' than the UA housewives(p<0.001). The RA housewives had lower score on nutritional knowledge(p<0.001) and wanted more strongly nutritional knowledge to improve the quality of family's meal than did the UA housewives(p<0.01). Therefore, the RA housewives had various problems regarding meal management such as 'over work related to fatigue', 'food-purchasing inconvenience', 'low economic status of family' and 'lack of nutritional knowledge'. As a consequence the RA housewives relied on cheap convenient foods more often in order to prepare the meal easily than did the UA housewives. These findings emphasize the need in the RA for nutrition education for housewives and a range of nutrition policies that focus upon the social and economic determinants of food choice within families to improve the nutritional status of the RA residents.
