To analyse the royal marriage of Yi-Dynasty, the authors studied 'Kuk Hon Geong Rea', which is a historical record, published in 1749(King Yong-Jo), on the usage of marriage articles in the royal family. The essential steps or articles described in the record were as follows, Royal marriage of King : Wedding presents, black and red silks from the bridegroom's to bride's, proclamation of Queen and wedding ceremony(納采) (納徵) (冊妃) (親迎 尊雁 同牢). Microbiological method using a 96-well microplate reader for folate assay was established, and folate intake and blood folate concentrations of 23 female college students were assessed. To evaluate folate intake, dietary data were collected by a 3-day weight food record, and serum and RBC folate concentrations were measured by the new method. The coefficient of variation for the new method was less than 10%. Mean daily folate intake of the subjects was 126.7${\mu}g$ which is only 50.7% of the RDA. The mean concentrations of serum and RBC folate were 7.46ng/ml and 294.4ng/ml, respectively, which were within the normal range. These results indicate that folate intake seems to be underestimated due to incomplete food composition database. Therefore, folate database should be appropriately in order to asses folate intake accurately.
The purposes of this study were to: a) investigate the percentage distribution and the time spent of dietetic activities and b) estimate dietitian's staffing needs in employee foodservices. In 6 employee foodservices, the dietetic activities were analyzed by work sampling methodology. The results of this study were as follows: 1. The percentage distributions of dietetic activities, delay and non-dietetic activities were 79.06, 20.39, and 1.55%, respectively; 2. The major activities of dietitians in employee foodservice were production management 21.00%, purchasing management 16.73%, record keepig 14.40%, and menu management 6.30%, 3. The total labor time per week was 3,310 min (55.16 hr) and specially the time spent on 13 dietetic activities was 2,626 min (43.77 hr). 4. The time spent per week on major activities of dietitians such as production management, purchasing management record keeping, and menu management were 693.93, 554.83, 483.99, and 205.22 min, respectively.
식품으로부터의 유해물질 노출 평가를 위해 개발한 식생활 조사지의 신뢰도와 타당도를 평가하고자 216명을 대상으로 식생활 조사를 2회 반복 실시하여 비교하였고, 3일 식사기록 결과와도 비교하였다. 1) 식품 구매 시 주로 사용하는 용기에 대해 동일한 응답을 한 비율은 전체 식품 평균 73.5%였다. 상대적으로 포장 용기가 다양하지 않은 식품에 대한 구매 용기 응답 일치도가 높게 나타났으며, 판매 시 다양한 포장 용기를 사용하는 식품에 대한 구매 용기 응답 일치도는 낮게 나타났다. 2) 식품 보관 시 주로 사용하는 용기에 대한 응답 일치도는 평균 71.9%였다. 가공된 식품을 구매하여 보관하는 식품에 대한 보관 용기 일치도가 높았으며, 조리 후 보관을 하는 식품에 대한 용기 일치도는 낮게 나타났다. 3) 주로 사용하는 조리방법에 대한 응답의 일치도는 평균 83.0%였다. 조리방법이 다양한 식품들에 대한 일치도가 낮게 나타났으며, 조리하지 않고 그대로 먹는 식품에 대한 일치도가 높게 나타났다. 4) 식품섭취빈도조사를 2회 실시하였을 때, 평균 상관계수가 0.71 (range: 0.50~0.83)이었고, 2차 식품섭취빈도조사와 식사기록법의 식품 섭취 횟수의 평균 상관계수는 0.21(range: 0.04~0.48)이었다. 5) 식품섭취빈도조사와 식사기록법으로 산출된 각 식품군별 식품 섭취 횟수를 사분위수로 나누었을 때 모든 식품군의 일치 및 근접 일치도의 합은 50% 이상이었다. 6) 본 연구에서 개발한 조사지는 식생활 항목의 신뢰도가 높고, 섭취빈도의 순위를 분류하는 타당도가 높으므로, 대규모 역학조사에서 질적인 노출수준 평가에 활용할 수 있을 것으로 사료된다.
The relationship between food and nutrient intake, glycemic index (GI), glycemic load (GL), and body weight was investigated with high school girls residing in Seoul. As subjects, 159 girls were divided into a normal weight (NW) group (18.5 kg/$m^2$$\leq$ BMI < 23 kg/$m^2$, n = 110) and an overweight (OW) group (BMI $\geq$ 23kg/$m^2$, n = 49) by body mass index (BMI). The food and nutrient intake data obtained by the 3-day food record were analyzed by Can pro 3.0 software. Anthropometric measurements were collected from each subject. Daily dietary GI (DGI) and dietary GL (DGL) were calculated from the 3-day food record. Body weights and BMI of NW were 52.4 kg and 20.4 kg/$m^2$ and those of OW were 65.2 kg and 25.4 kg/$m^2$, respectively. Total food, animal food, and other food intakes of NW were higher than those of OW, and vegetable food intakes of NW were lower than those of OW. Sugars intake of NW was significantly higher than OW. Nutrient intakes were not different between the two groups. Dietary fiber, calcium, and folate intakes of NW and OW were under 65% of the dietary reference intakes (DRIs). Major food sources of energy intake for both groups were rice, pizza, ice cream, pork, instant noodle, and chicken. Mean adequacy ratio (MAR), an index of overall dietary quality, was higher in NW (0.82) than in OW (0.80). Mean daily DGI of NW and OW was 66.5 and 66.4, respectively. Mean daily DGL of NW and OW was higher in NW (162.0) than in OW (155.9). DGI and DGL adjusted to energy intake were not significantly correlated with anthropometric data.
This study was conducted to develop a computerized food frequency questionnaire (FFQ) for assessing nutritional status of women of child-bearing age. Computerized food frequency questionnaire (FFQ) that reflect intakes of energy, carbohydrate, fat and protein was developed for women of child-bearing age. This FFQ is composed of 61 foods or food groups containing 192 dish items. To estimate of energy intake easily, we have developed a computer program that can be viewed on a computer screen in an actual size of dish items. Nutrient intakes of the last three months by the FFQ was validated with comparing the result of a 3-day diet record through 92 college students aged from 20 to 30. The level of energy, carbohydrate and sodium of estimating by the FFQ method was significantly higher than the level of a 3-day diet records method (p < 0.01). Pearson's correlation coefficients between the two methods were 0.50 for carbohydrate (p < 0.01), 0.55 for energy (p < 0.01) and 0.56 for protein (p < 0.01). Spearman's correlation coefficients were 0.53 for carbohydrate (p < 0.01), 0.55 for energy (p < 0.01) and 0.52 for protein (p < 0.01). The percent of subject in the lowest quartile in a 3-day diet record belonged to the first and second lowest quartile in food frequency questionnaire is 78.2% in energy, 91.3% in carbohydrate, 78.2% in protein, 69.5% in fat. Also, the percent of subject in the highest quartile in a 3-day diet record belong to the first and second highest quartile in food frequency questionnaire is 78.3% in energy, 73.9% in carbohydrate, 82.6% in protein, and 73.9% in fat. On the whole, the result of this study seemed to be in good agreement with other studies. Therefore, the FFQ developed by this study is considered to be a reliable tool to assess nutrients and food intakes for women of child-bearing age.
The aim of this study was to evaluate the food and nutrient intakes in 5th to 8th grade school boys and girls. A total of 1,333 students were recruited from 1 elementary and 1 middle school, both located in Seoul. The data on food and nutrients intake were collected by 3-day food record. The food intake was calculated as the percentage of total energy intake according to 21 food subgroups. The consumption of noodles, and meat's products (including ham and sausage) groups were higher in 7th and 8th grade than 5th and 6th grade. On the other hand consumption of vegetables and milk & its products groups were lower in 7th and 8th grade. As results, calcium, riboflavin, and vitamin C intakes were lower in 7th and 8th grade students. Dietary patterns by cluster analysis resulted in $77\%$ of subjects with traditional pattern based rice and kimchi, and $23\%$ with modified pattern. All students regardless of grades showed high fat intake, above 20 percent energy intake from fat, and high cholesterol intakes. In conclusion, there was significant difference between 5th and 6th grade primary school students and 7th and 8th junior school students regarding food and nutrient intakes; It should be necessary to provide proper nutrient education and monitoring in order to establish good dietary profile.
This work is a report about the first record of alcid species, Thick-billed Murre (Uria lomvia) in Korea. Four individuals of Thick-billed Murre captured by crab net were obtained in Deajin Port and near the Munam Port. three individuals of Thick-billed Murre searching food were observed at an area two miles away from Munam-Port. We describe characters of Thick-billed Murre with illustrations.
The purpose of this survey was to investigate the status of dietitians' food service management in the elementary school lunch program. 386 dietitians in Kyungsangnamdo and Ulsan that participated in this survey, 350 dietitians were selected for analysis. The main results of this study are as follows. The most important item they consider was nutrition(42.5%), preferences(37.8%), budget(17.0%) in the menu planning. The standardized recipe was used in 92.8% of school dietitians. It turns out that 90% of them survey the price once per month, while twice per month for the cases having much more studnets or having longer career record. 70.8% use the computer program(Lunch) which was developed at Kyungnam, its use increases as longer as they have career record. 'Error occur' 75.7%, 'not knowing how to use' 13.6%, 'familiar with manual work' 7.8%, 'no computer' 2.9%, that's why they don't use the program. Food check up was done 82.5%. Amount of food after lunch was measured 'always' 67.6%, 'often' 30.0%, 'never' 2.4% and 'mostly by eye measure' 59.3%', 'always by scale' 22.7%, 'always by eye measure' 18.8%.
