선행연구 내용 분석을 통한 한국 음식사(飮食史) 연구의 범주 및 방법론 고찰 (Content Analysis of Previous Research to Examine Categorization and Methodology of Korean Food History Studies)

  • This study summarizes the research methods, subjects, research processes, and achievements of major researchers by analyzing previous research results on Korean food history. The goal of the current study aimed to seek the methodology and direction of 'food history research'. Literature data from 1945 to 2022 were examined. Results of excavation research on ancient food literature were divided into the following stages: the 1980s, when the foundation for 'cataloging' was laid, and the 2000s, when 'digitization' was achieved. Achievements of each period were collected, and the achievements and limitations were analyzed. Next, the research results were classified into 'Food technology history', 'Recipe change history', and 'Food culture and dietary history'. We observed that around the 2000s, anthropology and folklore research perspectives were reflected, and the research on 'history of diet' reached a turning point. Our results indicate the possibility that food history can develop as a special historical area. This could be achieved by establishing an exchange system with other disciplines and creating a systematic curriculum.

식의심감(食醫心鑑)에 담긴 식치의학 연구 (Research on Alimentotherapy in "Sikui-simgam")

  • "Sikui-simgam ("食醫心鑑", Book for Alimentotherapist)" written by Jameun, a doctor of Tang (唐) in the 9th century, propagated alimentotherapy in Korea, China, and Japan for a long time. In this study, Sikui-simgam medical theories were studied and the medicinal ingredients and types of food therapy were analyzed to understand alimentotherapy characteristics. "Sikui-simgam" is the first food therapy formulary diverged from herbal therapy forms. Various ingredients from "Sikui-simgam" show the food culture of the Tang age and report much about cooking and cultural history. Many prescriptions in the books are the origins of present-day food culture; thus, they are important clues to understand the present food culture. This book also describes actual prescriptions in detail. Various types of prescriptions with different ingredients are unique characteristics of food therapy and show the various possibilities for food therapy prescriptions. The food therapy prescriptions of "Sikui-simgam" were designed for medical specialists, as the book contains doses and incompatibilities for food therapy. Such food therapy prescriptions were used to treat diseases, so they were used with strict standards.

The Importance of Food Open Challenge Test in Atopic Dermatitis: The Comparison of Allergy History, Skin-Prick Test, and Specific IgE Detection

  • Food allergies play an important role in Atopic Dermatitis (AD). Dietary manipulation is essential in the management of AD. However, there has been a paucity of data reporting the prevalence of food allergies in AD patients in Korea. In this study, the Food Open Challenge Tests (FOCT) were conducted to investigate food allergies in AD patients. The skin-prick test and the detection of specific IgE, as well as allergy history of patient were used to detect food allergies in all AD patients. Elimination diet was conducted for two weeks prior to FOCTs. The prevalence of food allergies by FOCT is as follows: milk (67.3%); chicken (64.2%); pork (62.8%); eggs (61.0%); beef(55.4%) ; wheat (52.0%) and soybean (45.2%). Allergenic food items in Korean AD patients were different from people in other foreign countries. The seven major foods those tested positively by FOCTs were completely eliminated from the replaced diets for two weeks, and were subsequently reintroduced one at a time. Results from FOCTs were not comparable with allergy history or skin-prick tests or specific IgE detection. The sensitivity and specificity of skin-prick tests and specific IgE detection were lower than FOCTs. Allergy history, skin-prick tests, and specific IgE detection are useful for the identification of food allergen but its clinical significance differed according to food items. Therefore, we conclude that even though a 10-day delay was necessary after food challenge, FOCT is a useful and valid method to confirm food allergies and may be essential for the effective control of food allergies for treatment of AD.

식초 산업의 발전사와 최근 현황 (History and current status of vinegar industry development)

  • With the discovery of metabolic mechanisms of alcohol fermentation and acetic acid fermentation in the 1800s and 1900s, the history of traditional vinegar became a turning point for changing to the history of science and technology. Since then, innovation in vinegar production has occurred, and the era of full-scale mass industrialization has opened. The most modern method, submerged fermentation, has improved the vinegar production process to produce much higher quality vinegar and provide vinegar with high productivity and quality uniformity. Innovative research for vinegar production is underway as various approaches have been developed to increase fermentation efficiency, reduce costs, and shorten fermentation time due to the trend of combining existing technologies and advanced technologies. Now that the development of the vinegar industry is currently focused on vinegar engineering, multidisciplinary approaches in various fields such as microbiology, chemistry, food technology, process engineering, and molecular biology are needed.

뉴욕 맨해튼 한국 음식점의 초기 역사 - 1960년대~1970년대를 중심으로 - (Early History of Korean Restaurants in Manhattan, NY - Focused on 1960's~1970's -)

  • The purpose of this paper was to research the history of Korean restaurants in Manhattan, NY in the 1960's-1970's. These Korean restaurants were the pioneers in the globalization of Korean food. It is assumed that 'Mi Cin' was the first Korean restaurant in Manhattan and opened on March $1^{st}$, 1960. In the 1960's, it is estimated that there were four Korean restaurants in Manhattan. In the 1970's, the number of Korean restaurants increased to more than 18, and their main menu items were divided into three types: Korean fusion menu such as 'Lunch Special' for American customers, beef barbecue menu for American and Korean customers, and Korean traditional menu for increasing Korean immigrants.

동아시아의 쌀과 밀 관련 식품의 언어 비교 (A comparative study on the language of food related to rice and wheat in East Asia)

  • This paper aims to compare the language of food related to rice and wheat in Korean, Chinese and Japanese. These three countries in East Asia are very close in terms of geography, history, and culture. As of language, Korean and Japanese are classified as a same language family, while Chinese, to another. However, since three countries have been sharing Chinese character and words composed of it, there are many alike things in their languages. It is natural that food and the language of food are shared in neighboring areas. Among many food, I will explain the names of rice and wheat and the details of the names of various food made of them. In particular, rather than a simple comparison, the language of food is analyzed in the viewpoint of migration. And I will look into the names of food not only in relation to language, but also in culture, society and history.

  • The "ShikLyoChanYo", written in 1460 by JunSoonYi (全循義), master court doctor in JoSeon (朝鮮) Dynasty, is the very first specialty publication of Korean dietary treatment existing today. Both Chinese and Korean scholars have assumed that this book had been lost long time ago. In November 2003, however, a Korean philologist found a version of the book, Yangyang (襄陽, a district name in Korea), and this book has attracted a lot of interest of Korean traditional medical science and agricultural science since then. This paper is to dissert the document of food therapy from the book with profound document study and statistical analysis in the fields of traditional Chinese medicine and traditional Korean medicine on dietetics. It completes the study of the application of all the dietetic treatments according to symptoms of diseases and all the plants and medication applied to cure chronic conditions that are clinically examined for the purpose of food therapy. A general survey on sundry records related to this food therapy of the "ShikLyoChanYo" has been done to make this dissertation and it carried out a statistic analysis of all the dietetic mixing technique of all plants and medication. Among other symptoms of illnesses from the book, there are 7 frequently addressed ailments chosen from the aspect of food therapy - a stroke, a disease diagnosed by thirst, a serious cough, an ache resulting from numbness, a disease relating to stomach, blurry vision and weak hearing, and a drinking related disease. This part is to discuss these illnesses and how to cure them with food based on its characteristics and rules of application.

식품 알레르기에서 특이 IgE 검사의 유용성 및 해석 (Clinical Significance and Interpretation of Allergen-Specific IgE Testing in Regard to Food Allergy)

  • Food allergy is an adverse reaction that occurs after ingesting food and is caused by an aberrant immune response. Taking a detailed medical history is the most important part of diagnosing food allergies. When an immunoglobulin E (IgE)-mediated food allergy is suspected, food-specific IgE testing can confirm the diagnosis. Allergen skin-prick tests or serum tests for specific IgE should be considered as the first line of testing, and depending on the offending food, a further prick-to-prick test with fresh food or a component-resolved diagnostic test may be helpful. Interpretation of the results should be based on the patient's medical history.
