  • The aim of this study was to evaluate the nutritional status of elementary and middle school students by gender with an emphasis on comparison of nutritional intake between weekday and weekend. Survey construct included one 24-hour diet recall and two diet records, short food frequency questionnaire, and anthropometry. Eating behaviors and nutritional intake were largely different for four groups divided by age and gender: ME, FE, MM, and FM. Frequency of consumption of healthful foods was significantly higher in the ME and FE groups. The highest and lowest scores for frequency of eating with parents were observed in the FE and FM groups, respectively. The amount of consumption of food groups was lower on weekends than on weekdays and this trend was more prominent in elementary schoolers compared with middle schoolers. In terms of food group consumption as well as energy and nutrient intake, the ME group showed the greatest differences between weekday and weekend, followed by FE, MM, and FM, in descending order. A significantly higher amount of potassium, phosphorus, and calcium was consumed on weekdays than on the weekend in the ME and FE groups. The amount of energy and nutrient intake was smallest in the FM group; however, the difference between weekday and weekend was minimal as well. In comparison of the subjects' energy and nutrient intake with their Korean Dietary Reference Intakes values (%KDRI), the MM group showed the most undesirable results for energy, protein, dietary fiber, vitamin A, vitamin $B_1$, vitamin $B_2$, niacin, vitamin $B_6$, calcium, and zinc. Overall, findings indicated that nutritional intake status may differ between weekday and weekend for elementary and middle schoolers by gender, suggesting that youth may benefit from nutritional education programs that stress the impact of gender and weekend effect on their dietary intake.

  • Food habits and Korean food utilization patterns were surveyed from 188 Koreans residing in New Zealand and Malaysia by using a questionnaire. Forty seven percent of the respondents answered that Korean food should be succeeded as its traditional form. Most subjects had strong pride for Korean traditional food. Kimchi was the most frequently consumed side dish followed by Chigaes (stew), broiled meat, Tubu (bean curd), broiled fish, Tangs (soup), and Noodles. While Kimchies were prepared by the respondents themselves, Doenjang and Kochujang were sent from the relatives in Korea or purchased from the market. The changes in food consumption pattern after emigration depended on the availability of food items in residing country. Korean style meal (cooked rice and side dishes) was eaten by 51% respondents for breakfast and by 78.2% for supper. Ramyon was the most frequently consumed instant food. Eating out frequency was much higher in the residents in Malaysia than the ones in New Zealand. This study showed that Koreans residing in foreign countries have the consciousness trying to succeed Korean traditional food culture, and their food consumption pattern partly depends on food availability and socio-cultural properties of the residing country.

  • Purpose: In this study, factors of metabolic syndrome and nutritional status were examined according to gender and occupations using the 2013 Korea National Health and Nutrition Examination Survey (KNHANES). Methods: This study was conducted on 1,750 workers (male : 892, female : 858) aged between 30 and 64, who participated in a health survey, health examination, and nutrition survey using the 6th 2013 KNHANES. Occupations were classified into white collar and blue collar workers, and nutrient intake was analyzed using a food frequency questionnaire. Analysis of complex sample design data through SPSS 19.0 was used for analysis. Results: The prevalence rate of metabolic syndrome among blue collar (35.1%) was higher than that among white collar workers (26.8%) in male subjects (p < 0.05) as well as in blue collar (24.8%) compared to white collar workers (8.9%) in female subjects (p < 0.001). Intake frequency per week, considering one portion by food category, showed significant differences in cooked rice (p < 0.05) and bakeries and confectioneries (p < 0.05) in make workers as well as stew and casserole (p < 0.01) and fruits (p < 0.05) in female workers. With regard to nutrient intake by occupation and gender, white collar workers consumed a greater amount of nutrients (not including total energy intake) compared to blue collar workers in both male and female workers. With regard to nutrient adequacy ratio (NAR) and mean adequacy ratio (MAR) according to gender and occupation, white collar workers showed higher numbers than blue collar workers in both male and female subjects. Conclusions: This study examined the prevalence rates of metabolic syndrome and nutrient intake according to gender and occupation. In both male and female subjects, blue collar workers showed higher prevalence rates compared to white collar workers, and their diet quality was worse than white collar workers' diet quality. Considering this result, customized nutrition education according to gender and occupation should be provided to workers to prevent diseases.

  • Aiming to investigate nutrient intake and food habits influenced by smoking for female college students in Seoul, the questionnaire survey for 763 students was carried out. The results of the survey was summarized as follows: 1. 9.7% of students were found as the current smokers and 18.9% of students had experienced of smoking, however stopped smoking at present(experienced smokers) respectively. 2. In the current smokers, they started smoking with friends at the first (58.9%), alone (27.4%), and with seniors (11.0%) respectively. The psychological frustration (52.2%), curiosity (28.4%) respectively motivated smoking behavior at the beginning. The most had smoking usually at the entertaining place such as restaurant. Only 6.4% of current smokers consumed more than 10 cigarettes daily, and 55% of current smokers inhaled deeply into the lung while they smoked. Even 26% of current smokers explained their intention of not smoking after marriage, and also about 95% of current smokers explained to stop smoking in the case of pregnancy. 3. It was found as the fact that the school age, economic status, and parental smoking affected their prevalence of cigarette smoking. The higher their schoolage, the higher smoking showed; the more their money spent and the lower father smoking showed ; the more their money spent and the lower father's educational level, the higher smoking showed; the more drink, the higher smoking showed. 4. The value evaluation of cigarette smoking also affected the prevalence of cigarette smoking. Of the students recognized advantageous parts of smoking, the prevalence of cigarette smoking was higher. 5. Logistic regression analysis was to determine the most effective factor which determined prevalence of cigarette smoking. The most effective factor was value evaluation of cigarette smoking. The order of effective factors was health value of cigarette smoking, their drinking capacity and the value evaluation of change in body weight due to smoking and smoking's advantages. 6. Cigarette smoking showed signs of affecting to food habits. In the case of smoking, the missing rate of taking regular meals was higher, and the frequency rate of taking regular meals was lower. Also, smokers took meals less regularly. Even the smokers took less candy than non-smokers, however, smokers liked to take more coffee, alcohol, and hot tasting food than non-smokers. 7. Smoking seemed to affect the nutritional status. It was found that smokers took many kinds of nutrients insufficiently, therefore their calory intake by age was not reached to RDA.

  • The purpose of this work was to study the relationships between dietary intake and serum lipid profile in 293 adult subjects (mean age: $45.9{\pm}0.7$, men: 163, women: 130) who visited health promotion center. The anthropometric and biochemical blood indices were measured, and nutritional intakes were assessed using a food frequency questionnaire method. The subjects were divided by three groups in accordance with a standard for treating hyperlipidemia; those who had blood cholesterol levels above 240 mL/dL or triglyceride levels above 200 mL/dL were put into the risk group (Risk), while those with blood cholesterol levels below 200 mL/dL and triglyceride levels below 150 mL/dL were put into the control group (Control). Subjects who were between the two groups in terms of blood cholesterol and triglyceride levels were put into the borderline group (Borderline). Risk group showed significantly higher body mass index, body weight, waist circumference, and fat content compared to control group. The levels of calorie, carbohydrate, fat, and protein intake were significantly higher in the risk group than control group. There were significantly positive correlations between dietary calorie, carbohydrate, fat, and protein intake and blood triglyceride concentration. The blood HDL-cholesterol concentration had negative correlation with carbohydrate intake. These results suggested that overeating may be one of important factors affecting hyperlipidemia in Korean adults.

  • This study was conducted to investigate the effects of green tea or coffee consumption on the serum lipids profiles. This study analyzed data of 1,343 participants (753 males and 590 females) among the people who underwent medical check-up. The subjects were divided by three groups as pattern of green tea or coffee consumption. Anthropometric measurements, biochemical analysis and nutrient intake using a food frequency questionnaire were performed. There were no significant differences among groups in height, % body fat, waist circumference, and body mass index. There was no significant difference among groups in energy intake. Fat intake was significantly higher in green tea and coffee group than the control group in men subjects. The intakes of dietary Fe, vitamin A, $\beta$-carotene, and folate was the lowest in coffee group (p<0.05). The intakes of dietary fat was the highest in coffee group in male subjects (p<0.05). Serum concentrations of total cholesterol and LDL-cholesterol were green tea< control< coffee group in order by multivariate analysis after adjusting for confounding factors. The serum concentrations of total cholesterol and LDL-cholesterol were significantly lower in green tea group than coffee group by multivariate analysis after adjusting for confounding factors (p<0.05). However, there was no significant difference in the serum concentrations of total cholesterol and LDL-cholesterol between green tea and control group. These results suggest that green tea consumption didn't show positive effects in preventing hyperlipidemia but coffee consumption showed negative effects in hyperlipidemia.

  • Gallstone composition has changed over the past decades in the Korean with a prominent increase in the prevalence of cholesterol gallstone. This trend is possibly due to the westernization of dietary habits. The purpose of this study was descriptive of GB patient's health related eating behaviors and nutrient consumption patterns. One hundred and six gallstone patients who have had cholecystitis surgery enrolled in this study. Anthropomertic indices, such as height, weight, waist circumference, and hip circumference were measured and calculated BMI and WHR. As the biomarker, TC, TG, LDL-C, HDL-C, FBG level and SBP/DBP were measured and analyzed the relationship with GB stone formation. The structured checklist of health related eating behavior and the semiquantitative food frequency questionnaire after pre-test was used in the face to face interview study. The mean age was $54.9{\pm}13.3$ and gallstone disease was more frequent in the fifties and sixties. Mean BMI was $24.3{\pm}2.8$ in males, and $23.4{\pm}3.9$ in females, the average of waist circumference was $91.1{\pm}7.0cm$ in males and females were $85.4{\pm}9.6cm$. The WHR of men and women was $0.93{\pm}0.0,\;0.90{\pm}0.1$, respectively. The obesity and overweight trend was observed in gallstone patients. The mean blood sugar was researched at $114.5{\pm}35.0mg/dL$. And the ratio of both symptoms DM and gallstone was 26.4%. The rate of dramatic eating repast was significantly higher in the females (p<0.01). Males tended to more frequently consume meat, of high fat content meats and greasy food consumption when eating out. The CPF ratio was 57:16.5:26.5. There was a significant positive correlation between WC and energy (r=0.252, p<0.05), carbohydrate (r=0.255, p<0.05) and niacin (r=0.227, p<0.05). In addition, carbohydrate were significantly correlatied with TC (r=0.230, p<0.05). BMI appeared positive in correlation of protein (r=0.201, p<0.05) and fat (r=0.205, p<0.05). These findings provide a little association that dietary habits are related with cholesterol gallstone formation.

  • The purpose of this study was to investigate the association between insulin resistance and cardiovascular disease risk factors in Korean type 2 diabetes patients. The subjects were 429 (male: 218, female: 211) type 2 DM patients visited DM clinic, and they were classified into quartiles based on $K_{ITT}$ index (%/min, Insulin Tolerance Test). Anthropometric and biochemical characteristics, and dietary intakes by Food Frequency Questionnaire were assessed. The means of waist circumference, fat mass, percent body fat and abdominal fat thickness were significantly higher in the lowest quartile (the most insulin resistant group) than in the highest quartile (the least insulin resistant group) of $K_{ITT}$ index (%/min)(p<0.05), For hematological values, the lowest quartile showed significantly higher fasting blood glucose, HbA1c, C-peptide, insulin, triglyceride, ApoB/apoA-1 ratio and C-reactive protein compared to the highest quartile (p < 0.05). Moreover, $K_{ITT}$ index (%/min) was negatively correlated with waist circumference, fat mass, percent body fat, abdominal fat thickness and fasting blood concentrations of glucose, HbA1c, C-peptide, insulin, cholesterol, triglyceride, ApoB/apoA-1 ratio and C-reactive protein (p < 0.05). Nutrient intakes were not significantly different among the quartile groups of $K_{ITT}$ index (%/min) and also not correlated with insulin resistance, however, they showed correlation with obesity parameters (BMI, waist circumference, waist-hip ratio, vat mass, abdominal fat thickness), which were strongly associated with insulin resistance. In conclusion, cardiovascular disease risk would be higher as the insulin resistance grows in Korean type 2 DM patients, and nutrient intakes would affect to the insulin resistance through the effect on anthropometric parameters.

  • The purpose of our study was to evaluate an association between milk consumption and bone mineral density (BMD) of female college students in Korea. The dietary data of 1,410 Korean college students living in the vicinity of Seoul area were collected through the Food Frequency Questionnaire. The mean age, height, weight and 8MI of the subjects were 20.4 years, 162.1 cm, 52.7 kg, and $20.0\;kg/m^2$ respectively. The mean intakes of energy, protein, and phosphorus were 2,398.7 kcal, 95.2 g, and 1,302.9 mg respectively, which were above their EER or Recommended Intake (RI), but the mean intake of calcium was 657.8 mg which was below its RI, and 44.0% of the subjects did not meet Estimated Average Requirement (EAR) of calcium. The daily milk consumption was 131.1 g, and the total consumption of milk and dairy product was 228.7 g. Forty five percent of the subjects consumed $50{\sim}200\;g$ of milk or dairy products. After the analysis of their dietary intakes, the subjects were divided into quintiles of total consumption of milk and dairy product, which were considered as major source of dietary calcium. Ninety two subjects from the upper quintile (UQ) and 85 subjects from the lower quintile (LQ) were selected and their bone mineral densities (BMD) of lumbar spine (L1-L4) and the femur were examined by the dual energy X-ray absorptiometry. The BMD $(g/cm^2)$of L1, L2, L3, and average of femur were 1.065, 1.150, 1.187, and 0.988 for the UQ subjects, which were significantly higher than those of the LQ subjects, 1.010, 1.090, 1.146, and 0.942 respectively. Moreover, the T-scores of the UQ were significantly higher than those of the LQ. The prevalence rates of osteopenia classified according to WHO's criterion were 12.0% in the UQ. and 20.0% in the LQ group which showed non significant. Blood levels of calcium, and phosphorus of UQ and LQ group were both within the normal range, and were not significantly different. Our results showed that UQ group presented the better status of bone mineral density and bone health. Therfore our results suggest that continuous consumption of more than one and a half cups of milk per day, which corresponds to the least amount of UQ group's consumption, would affect positively on the bone health of Korean adults.

  • Among current health-related problems, the issue of over-weight is considered one of the most important, fostering a national interest in body weight loss. In this study, an awareness of one's current body weight and previous experiences of body weight loss were analyzed according to age and gender. The subjects of the study were 720 people (male: 360 and female: 360) aged $10{\sim}60$ years with previous experiences of attempting to lose weight 1 year prior to this study. Anthropometrics, general characteristics, awareness of one’s current body weight, and the body weight loss practice were analyzed through a questionnaire. Approximately 73.2% of the subjects recognized themselves as obese, and 83.5% wished to lose weight. The older the subjects were, the frequency of attempting to lose weight was lower, and those who succeeded in losing weight maintained their reduced body weight for a longer period. Compared to male subjects, more female reported attempts of losing weight, but the period of maintaining their reduced weight was shorter. The older subjects reported a higher satisfaction rate of the weight loss methods they used, and few of them gained back the weight they lost. This phenomenon was especially more stronger among male than female subjects. From our studies, it may be concluded that attitudes concerning a person’s current body weight and body weight loss practice vary according to age and gender.
