국내 채소류와 과일류의 비타민 B6 함량 (Vitamin B6 Content of Vegetables and Fruits Cultivated in Korea)

  • The purpose of this study was to determine the difference in vitamin B6 content according to the varieties, regions, and harvest times of vegetables and fruits in Korea using high performance liquid chromatography. We verified the accuracy of the analytical method with standard reference material 1849a and achieved reliability for internal analysis quality control with a mixture of cereal, whole wheat, and flour. As a result of the analysis, vitamin B6 contents (㎍/100 g) were 6.9~86.5 in peppers, 5.1~17.2 in paprika, 4.4~5.0 in strawberries, 4.0~52.9 in tomatoes, 7.7~7.8 in Chinese cabbage, 17.3~23.3 in radishes, 13.4~37.6 in apples, 2.3~12.7 in peaches, and 3.7~12.7 in grapes. In general, the difference in vitamin B6 content showed by varieties, harvest times, and regions. Peppers showed the most difference as 79.6 ㎍/100 g among the varieties, and apples showed a difference as 22.8 ㎍/100 g by regions. According to the harvest times in grape 'Mihwang', there was a difference of 7.5 ㎍/100 g. We will collect an amount of nutritional data on various food materials, and continue to build a reliable and integrated nutritional database. And then the database will be used in the 10th revision of the Korean Food Composition Table.

우리 국민의 나트륨 및 칼륨 섭취량 평가: 식품별 영양성분 함량 DB와 한국형 총 식이조사 기반 추정량 비교 연구 (Dietary sodium and potassium intake of Koreans estimated using 2 different sources of their contents in foods, Food & Nutrient Database and the Korean Total Diet Study : a comparative study)

  • Objectives: Based on the results from the Korean Total Diet Study (KTDS), the sodium (Na) and potassium (K) intake of Koreans were estimated and compared with intake estimates from the Food & Nutrient Database (FNDB), as in the Korea National Health and Nutrition Examination Survey (KNHANES) to verify the validity of these estimates. Methods: One hundred and thirty-four representative foods (RFs) covering 92.5% of the total food intake of Koreans were selected, and 228 pairs of corresponding 'RF x representative cooking method' were derived by reflecting the methods used mainly in terms of frequency and quantity in their cooking. RF samples were collected from three cities with a larger population size in three regions (nine cities) nationwide, and six composite samples were made for each RF, considering its regional and/or seasonal characteristics. One thousand three hundred and sixty-eight 'RF x representative cooking method' pair samples were prepared, and the Na and K contents were assessed using inductively coupled plasma atomic emission spectrometry (ICP-MS). The Na and K intake of the Korean population was estimated by linking the content with the food intake data from the 7th KNHANES. Results: The mean Na and K intake of Koreans were 2,807.4 mg and 2,335.0 mg per person per day, respectively. A comparison with the Na and K intake from KNHANES, including only RFs of KTDS, showed comparable results with less than 5% variation. While the contribution and ranking of food items to Na intake were similar between KNHANES and KTDS, there were differences in K intake. This was attributed to the large discrepancies in the K content of rice and coffee between KTDS results and the values in the 9th Revision of the National Food Composition Table used in KNHANES. Conclusions: The Na and K intake of Koreans estimated based on the KTDS, which performed nutrient analysis on samples prepared to a 'table-ready' state using foods of the representative collection, was similar and comparable with that of KNHANES. This supports the validity and usefulness of FNDB-based nutrient intake estimation at the population level. The list of nutrients studied in KTDS is expected to be expanded, allowing for intake estimation of nutrients with currently insufficient or absent information in the FNDBs in use.

  • The iron content of 178 food items were analyzed by ICP to provide database to calculate dietary intake of iron in Korea. The analysis data showed significant deviations of iron contents in some food items compared with Food Composition Table of KRNI which is most widely used at present. Three day dietary intake records were collected from 96 female college students to estimate mean daily iron intake and bioavailability of dietary iron. Mean daily intake of total iron in the study subjects was 13.2mg and heme iron intake was 0.94mg, 6.7% of total iron intake. BGioavailability of dietary iron was calculated by two methods. Total absorbable iron was calculated by the method of Monsen, body iron storage of the subjects being estimated with serum ferritin concentrations, was 1.21mg and bioavailability of dietary iron was thus 9.3%. Bioavailability calculated with the method by Hallberg was 11.22%. Two values of dietary iron bioavailability of the present study are lower than the reported values in adult women consuming typical western diets but within the range estimated for vegetarians. Considering high prevalence of iron deficiency based on serum ferritin concentrations and low bioavailability of diet in young adult Korean women, more efforts should be made to increase the content and bioavailability of iron in diet of Korea adult women.

식품 데이터 정규화를 위한 쌀 음식의 건물중 기반 영양 편차 고찰 (A Study on Dry Weight-Based Nutritional Deviations in Rice Foods for Normalization of Food Data)

  • 동일한 재료를 사용하고, 식품명이나 음식명이 같음에도 불구하고 동일한 중량에서 식품의 영양성분이 편차를 나타내는 경우가 많이 있다. 그 원인은 조리 방법과 조리 공정에 따른 음식의 수분함량과 깊은 관계가 있다. 개인의 건강 맞춤형 식단을 설계하고, 정확한 열량과 양분을 공급하기 위해서는 조리 공정이나 조리 방법에 영향을 받지 않는 음식 데이터의 표시 방법이 필요하다. 이 연구에서는 동일한 식자재나 식품이 함수율의 차이로 인해 다른 식자재나 식품으로 분류됨으로 데이터베이스의 복잡성과 활용측면의 어려움이 증가하는 문제를 개선하기 위해 건물중(乾物重) 기반의 식품 데이터 표시를 제안하고자 하며, 이를 위해 식품재료로서 쌀의 특징과 쌀을 재료로 한 다양한 쌀 가공 식품의 물성에 대하여 수분의 변화에 따른 주요 영양성분의 변화를 고찰하고, 이를 통해 식품 데이터를 정규화 하기 위한 예시로서 쌀의 건물중 기반 영양 표시를 제안하고자 하였다. 동일한 재료로 가공된 32종의 쌀 가공 식품 데이터는 수분 분포에 있어 1.1~95%, 에너지량은 20~415kcal, 단백질은 0.3~9.1g, 지질은 0.1~3.9g, 탄수화물은 4.4~91.0g의 범위로 매우 넓은 영역에 분포하고 있다. 그러나 수분영향을 제거하고 고형물로 환산한 쌀가공 식품의 100g 당 영양성분은 에너지량의 최대값과 최소값의 범위는 376.9~421.1kcal, 단백질의 최대값과 최소값의 범위는 4.3~12.6g, 지질의 최대값과 최소값의 범위는 0.1~4.1g, 탄수화물의 최대값과 최소값의 범위는 80.5~95.1g 로 나타났다. 수분 중량을 포함한 음식의 영양성분 데이터에 비해 최대값과 최소값, 데이터의 표준편차가 90%이상 감소하고, 정규화되는 경향을 나타내었다.

국민건강영양조사 자료를 이용한 가공식품 데이터베이스 구축 (Development of processed food database using Korea National Health and Nutrition Examination Survey data)

  • 본 연구는 가공식품의 섭취량이 증가하는 현실에서 국민건강영양조사 자료를 통한 정확한 영양소 섭취량 산출을 위해 국민건강영양조사의 원자료 중 최근 5년간 (2010~2014) 등장한 가공식품 4,858건에 대한 영양성분 DB를 구축하고, 이를 제6기 1차 년도 국민건강영양조사 (2013년) 자료에 적용하여 영양소 14종의 섭취량을 산출하여 구축한 DB에 대한 유용성을 검토하였다. 가공식품의 영양성분 DB 구축을 위해 국내 국가기관에 신고된 가공식품 목록 8,785건, 반조리 식품 자료배합비, 국내 국립기관에서 발간된 식품성분표 1종, 제조사 및 인터넷 등을 통해 수집된 자료를 모아 가공식품에 대한 수준별 DB를 구축하였다. 매칭 식품과 유사 식품 DB를 모두 적용 후 가공식품 섭취량은 505.8 g (30.8%)로 추정되었으며 총섭취량에 대한 기여율은 각각 에너지 29.5%, 탄수화물 27.0%, 단백질 36.7%, 지방 26.5%, 식이섬유 16.1%로 나타났다. 또한 DB 적용 후 대부분의 영양소 섭취량이 유의한 차이를 보여 구축된 DB의 유용성을 보여준다고 사료된다. 나트륨의 경우 가공식품으로 부터의 섭취량이 DB 적용 전 후 2,527.6 mg에서 3,006.2 mg으로 증가하였다. 국민건강영양조사자료의 영양소 섭취량 추정에 필요한 에너지 및 영양소 14종에 대한 국내 분석값 자료가 거의 없는 현실에서 본 연구는 DB 구축을 위한 계산값이나 대체값의 원칙을 세우고 문서화하여 가공식품 DB 구축을 위한 틀을 만들어 향후 DB 구축, 유지, 확대 등 식품영양 DB의 체계적 관리의 기초를 제공하였으며 국민건강영양조사자료를 이용하여 가공식품을 통한 영양소 섭취량 추정을 했다는 측면에서 의미가 있다고 사료된다. 향후 지속적이고 체계적인 가공식품 DB 구축과 관리가 필요하다.

한국인의 총당류 섭취실태와 급원식품에 대한 연구 -2001년과 2002년도 국민건강영양조사 자료를 이용하여- (Dietary Intakes and Food Sources of Total Sugars from Korean National Health and Nutrition Examination Survey 2001-2002)

  • This study aimed to assess the total sugar intake for Korean and to identify major food sources contributing to those food components. Korean adults aged over 20 years old from the Korean National Health and Nutrition Examination Survey (KNHANES) 2001 and 2002 were selected. The data were analyzed to obtain nationally and seasonally representative information on the health and nutritional status of the Korean. Forty food groups were used in identifying food sources of total sugar and energy intake. Total sugar contents of foods in the KNHANES data sets were estimated by food code matching technique with Release 18 of the USDA National Nutrient Database for Standard Reference. Sample weighted means, standard errors, and population percentages were calculated using SAS and SUDAAN. The mean total sugar intake of the Korean was 60.3g in 2001, 40.9g in spring 2002, 45.7g in summer 2002, and 52.1g in fall 2002, which were 30-44% of intake of US people. Fresh fruit was identified as the most significant food source for total sugar intake in Korean population in all age groups and all seasons. The next major food sources following fresh fruits were candy/jelly/syrup/honey, coffee/coffee caream, vegetables, Kimchi, soft drinks, milk, fruit juice, cookie/cracker/cake, and vegetable juice/grain juice, which showed similar results through the seasons. While carbonated soft drink was the most significant food sources for total sugar or added sugar intakes for US people. The total sugar intakes were significantly higher in women, higher educational level, and residing in metropolitan area. As intake of total sugar increased, intakes of protein, fiber, calcium, phosphorus, iron, Vit A, B1, B2, C, niacin showed significantly increased, while high intakes of added sugars showed low intakes of some micronutrients in the US people. Percentages of people who consumed nutrients below EAR were less in higher total sugar intake group than in lower intake group. From these results, we can conclude that the food consumption habits including the total sugar intake of Korean people seems relatively good so far. More reliable database of total sugar and added sugar composition tables in public domain should be established in the future, and also more researches about total sugar and added sugar for Koreans should be continued.

성인 여성의 미량무기질(Fe, Zn, Cu, Mn, Se, Mo 및 Cr) 섭취량 - 분석치와 계산치의 비교 - (Dietary intakes of Fe, Zn, Cu, Mn, Se, Mo, and Cr of Korean adult women - Comparison between the data from analyzed and calculated -)

  • The previous studies on the intake of trace elements performed in Korea were only concerned about major elements like Fe, Zn or Cu. There is little data about the intake of minor elements like Mn, Se, Mo or Cr. And most of the data were obtained by calculation using Food Composition Tables or by analysis using atomic absorption spectrophotometers (AAS). The purpose of this study, therefore, was to evaluate the dietary intake of seven trace elements, Fe, Zn, Cu, Mn, Se, Mo, and Cr of Korean adult wonmen and to compare the data between analyzed using ICP-MS (or ICP-AES) and calculated by the CAN-Pro (or Food Composition Table). A total of nineteen adult women participated voluntarily in this study and collected one-tenth of the foods that they consumed for three consecutive days. Analyzed intake of Fe of the subjects was $6.94{\pm}2.18$ (calculated, $18.87{\pm}4.50$) mg/day, that of Ze was $9.35{\pm}4.95$ (calculated, $8.35{\pm}2.87mg/day$), that of Cu was $1.18{\pm}0.26\;(1.11{\pm}0.32mg/day)$, that of Mn was $3.69{\pm}0.69\;(2.83{\pm}1.68mg/day)$, that of Se was $41.93{\pm}9.28$ (calculated, $27.58{\pm}6.97{\mu}g/day$), that of Mo was $134.0{\pm}49.1{\mu}g/day$, and that of Cr was $136.5{\pm}147.9{\mu}g/day$. The analyzed Fe intake of the subjects did not meet Estimated Average Requirement (EAR) nor Recommended Intakes (RI) for Korean women aged 20-29 years old. However, the analyzed intakes of the other six elements, Zn, Cu, Mn, Se, Mo, and Cr, seemed to meet each of the respective RIs. The analyzed Fe intake was significantly lower than the calculated one, in fact by 2.72 times, however, the analyzed intakes of the other elements, Mn and Se, were significantly higher and those of Zn and Cu were similar than each of the calculated ones. The difference of the data between analyzed and calculated intakes indicates that it is necessary to set up database on trace element contents of foods of the Food Composition Table and the CAN-Pro so as to have accuracy.

고성능 액체크로마토그래피를 이용한 국내 식품자원의 비타민 B1과 B3 함량 분석 (Determination of vitamin B1 and B3 contents in Korean domestic foods using high performance liquid chromatography)

  • 본 연구에서는 HPLC를 이용하여 국내 식품자원 135종의 비타민 B1과 B3 함량을 분석한 결과, 비타민 B1은 0.019-28.218 mg/100 g, 비타민 B3는 0.077-32.412 mg/100 g 범위로 검출되었다. 식물성 식품자원 42종 중 비타민 B1은 11종, 0.071-0.884 mg/100 g 범위로, 비타민 B3는 31종, 0.145-13.883 mg/100 g 범위에서 검출되었다. 동물성 식품자원 36종 중 비타민 B1은 27종, 0.031-10.055 mg/100 g 범위로, 비타민 B3는 34종, 0.077-32.412 mg/100 g 범위에서 검출되었다. 가공식품은 57종 중 비타민 B1은 18종, 0.019-28.218 mg/100 g 범위로, 비타민 B3는 43종, 0.089-7.072 mg/100 g 범위에서 검출되었다. 식품자원 중 비타민 B1은 가공식품인 라면스프에서 28.218 mg/100 g, 비타민 B3는 소간에서 32.412 mg/100 g으로 가장 많이 함유하고 있었다. 본 연구에서 제시된 수용성 비타민인 비타민 B1과 B3 함량 정보는 국가표준식품성분표에 기초자료로 제공되어 국민 영양 증진에 기여하고자 한다.

일부 초등학생의 식이조사 및 섭취 식품의 아연 함량 분석에 의한 식이 아연 섭취량 평가 - 충남 벽지와 도시간의 비교 - (Dietary Zinc Intake Assessed by Dietary Survey and Zinc Analysis of Foods Consumed by Elementary Schoolchildren in Chungnam Province in Korea - Comparison between Remote Rural and Urban Areas -)

  • This study was performed to compare the dietary intake and food sources of zinc (Zn), using a database of Zn composition developed in this study, between elementary schoolchildren in a remote rural area (RA, n=58, $9.9{\pm}1.7\;yrs$) and those in an urban area (UA, n=60, $9.4{\pm}1.8\;yrs$) in Chungnam province in Korea. A dietary survey for three days by food record method was performed. All kinds of foods (n=273) consumed by subjects were collected by aliquot sampling method, and the Zn content of these foods were analyzed by wet technique. The results showed that the daily mean intakes of energy, calcium, iron, and vitamin C from diet in the RA were in the range of 49-88% of the Korean DRI (KDRI), while those in the UA were similar to or greater than the KDRI, except for calcium and iron. The daily mean intake of Zn from the RA diet was $7.0{\pm}0.5\;mg/d$ ($114.1{\pm}8.4%$ of the KDRI), and $16.0{\pm}1.0\;mg/d$ ($258.3{\pm}16.3%$ of the KDRI) in that of the UA (p<0.001). The percentage of dietary intake of Zn less than 2/3 of the KDRI was 19.0% in the RA, in comparison to 1.7% in the UA. Those in the RA consumed Zn from plant foods more often than did those in the UA (p<0.001). Beef rib stew was the food source with highest Zn amount for the total subjects, followed by beef rib meat, roasted; and beef soup w/seasoned red pepper sauce. These results showed that some children in the RA had poor Zn nutrition based upon low intakes and poor food sources of Zn, while overall, children in the UA had good Zn nutrition. Therefore, those in RAs should have their Zn nutrition improved through government policy and nutrition education.

Comparison of the chemical compositions and nutritive values of various pumpkin ($Cucurbitaceae$) species and parts

  • Pumpkins have considerable variation in nutrient contents depending on the cultivation environment, species, or part. In this study, the general chemical compositions and some bioactive components, such as tocopherols, carotenoids, and ${\beta}$-sitosterol, were analyzed in three major species of pumpkin ($Cucurbitaceae$ $pepo$, $C.$ $moschata$, and $C.$ $maxima$) grown in Korea and also in three parts (peel, flesh, and seed) of each pumpkin species. $C.$ $maxima$ had significantly more carbohydrate, protein, fat, and fiber than $C.$ pepo or $C.$ $moschata$ (P<0.05). The moisture content as well as the amino acid and arginine contents in all parts of the pumpkin was highest in $C.$ $pepo$. The major fatty acids in the seeds were palmitic, stearic, oleic, and linoleic acids. $C.$ $pepo$ and $C.$ $moschata$ seeds had significantly more ${\gamma}$-tocopherol than $C.$ $maxima$, whose seeds had the highest ${\beta}$-carotene content. $C.$ $pepo$ seeds had significantly more ${\beta}$-sitosterol than the others. Nutrient compositions differed considerably among the pumpkin species and parts. These results will be useful in updating the nutrient compositions of pumpkin in the Korean food composition database. Additional analyses of various pumpkins grown in different years and in different areas of Korea are needed.
