Differences on Perceptions and Attitudes towards Food Safety Based on Behavioral Intention to Prevent Foodborne Illness among Middle School Students in Seoul (서울 지역 중학생들의 식중독 예방의도에 따른 식품안전 인식 및 태도 차이)

  • The purpose of this study was to investigate differences in the perception and attitudes of middle school students toward food safety between those who possess high behavioral intentions to prevent contracting a foodborne illness and those who do not. The survey collected 871 usable data from several middle schools in Seoul, Korea in July 2007. Using six behavioral intention measurement items, a two-step cluster analysis approach was conducted resulting in a strong intention group and a weak intention group. Perception and attitudes toward foods safety were different between the two groups. Students with strong behavioral intentions to prevent foodborne illness tended to possess a stronger perception and attitude toward various food safety issues. Students with strong intentions were more certain of consumer's right to purchase safe foods, more concerned about foodborne illness and food safety, believed that the government should put more efforts toward establishing a safe food chain, possess more distrust for food suppliers, were more aware of specific foodborne illness pathogens, had more food safety education/training, and washed their hands more frequently than those with less strong intentions. No significant differences were found between the groups but,overall, chemical residues and food additives were perceived as more harmful and more serious food safety issues than those of foodborne illness pathogens despite that microorganisms are the main cause of foodborne illness outbreaks in schools. Participants seemed to underestimate the importance of temperature control for preventing foodborne outbreaks. Several implications and suggestions on how to improve the behavioral intentions of middle school students to prevent possible foodborne illness were provided.

A Study on the Consumption Behaviors Regarding Red Pepper Paste according to the Food-related Lifestyles of Housewives (주부들의 식생활 라이프스타일에 따른 고추장 소비 행태에 관한 연구)

  • The purpose of this study was to investigate consumption behaviors regarding red pepper paste according to the food-related lifestyles of housewives. Data were collected from 210 housewives living in the Gyeongnam region of Korea through a self-administered questionnaire on November, 2008. Frequencies, factor analysis, Cronbach's alpha, cluster analysis, one-way analysis of variance, and chi-square tests were conducted using SPSS v. 14.0. Food-related lifestyles were categorized into one of five factors: popularity-seeking type, health-seeking type, convenience-seeking type, safety-seeking type, and taste-seeking type. In addition, the respondents were divided into four groups by cluster analysis: safety-seeking group, convenience-seeking group, popularity-seeking group, and taste-seeking group. The chi-square tests revealed that there were significant differences in awareness regarding how to prepare red pepper paste, the reason for buying it at the market, where to buy it, where to obtain information regarding it, the most important factor considered when buying it, and the reason for dissatisfaction with it at the market.

Adulterated Food Management Characteristics according to Dietary Lifestyles among Adolescents (청소년의 식생활 라이프스타일 유형에 따른 불량식품관리 특성)

  • Objectives: Adulterated food education in adolescence period is very important because dietary management related to food safety is not made in a short period. This study aimed to identify dietary lifestyle factors which drive adulterated food management among middle and high school students. Methods: Data was collected from 270 middle and high school students in Daegu using a self-administered questionnaire in March and April of 2015. Data was analyzed using frequency analysis, one-way analysis of variance, ${\chi}^2$-test, factor analysis, reliability analysis, regression analysis, and cluster analysis. Results: The results of factor analysis indicated that adulterated food management awareness was classified into necessity, difficulty, and food purchasing anxiety. The adulterated food management capability was sub-grouped into environmental grasp, food identification, cooking hygiene, and situation management. The adulterated food management efficacy composed of management confidence, action intention, and knowledge. Dietary lifestyle comprised of gustation, family, and health factors after factor analysis, and it consisted of all seeking group, gustation seeking group, family seeking group, health seeking group, and family and health seeking group after cluster analysis. The gustation, family and health factors were significantly affected the factors of awareness, capability and efficacy of adulterated food management (p < 0.05). The frequency of health conditions, helping with meal preparation, and the times of eating out were significantly different according to seeking groups of dietary lifestyle (p < 0.01). The scores of awareness, capability and efficacy of adulterated food management of family and health seeking group were significantly higher than the other seeking groups (p < 0.05). Conclusions: This study suggests that adulterated food management education programs should account for gustation, family and health factors of dietary lifestyle to be effective for adolescents.

  • This study aimed to examine the establishment of the fish-paste processing industrial cluster in Busan. In order to successfully promote the fish-paste processing industrial cluster in Busan, first of all, it is required to implement various fish-paste processing related infra-structures and foundations. In addition to this, the agreements among fish-paste processing related organizations and businesses are inevitable to secure plans of inter-working with fisheries policies, to make efficient conditions for the stable supply of raw materials, and to pursue various supports from central and local governments for a viable development of fish-paste processing business companies in Busan.

The Consumption Behavior and Perceptions of Environmentally-friendly Agricultural Products According to the Lifestyles of Housewives in the Jeonbuk Area (전북지역 주부의 라이프스타일에 따른 친환경농산물의 구매행태 및 인식에 관한 연구)

  • The principal objective of this study was to evaluate the consumption behavior and perceptions of environmentally-friendly agricultural products (EAPs) according to the lifestyles of housewives in the Jeonbuk area, Korea. Self-administered questionnaires were collected from 267 housewives. Frequency analysis, chi-square, one-way ANOVA, factor analysis, and cluster analysis were used to analyze the data. Three clusters were obtained from the cluster analysis of LOHAS and wellbeing-related lifestyle: Cluster 1 "LOHAS-pursuit group", Cluster 2 "wellbeing-progress group", Cluster 3 "Utility-pursuit group". Of the housewives who were of LOHAS-pursuit group, about 50% were over 40 years old and had a professional job with a high household income. They had a high level of understanding about EAPs and purchased the highest percentage of EAPs among the groups. The housewives who were of the wellbeing-progress group, over 83% were between the ages of 30 and 40. Their consumption behaviors were very similar with that of the LOHAS-pursuit group, but the household income was lower. Of the housewives who were of the utility-pursuit group, about 63% under 30 years old. Their household income and level of understanding about EAPs were the lowest among the groups. They less interest in EAPs in comparison with other groups. For housewives' to choose EAPs properly, information and consumer education on these products, according to their lifestyles is necessary.

Factors Affecting Bone Mineral Density by Dietary Pattern Group for Some Korean College Women (일부 우리나라 여대생의 식사 패턴군에 따른 골밀도에 영향을 미치는 요인 분석)

  • To investigate the effects of dietary patterns on bone mineral density and its biochemical markers among Korean healthy college women for 2 years, 34 female college students were recruited through convenience sampling. Bone mineral density was measured using Dual Energy X-ray Absorptiometry (DEXA) twice at baseline and two years later. Osteocalcin and parathyroid hormone were measured in fasting serum and N-teleopeptides of type collagen (NTx) in urine. Dietary intake was assessed by 24-hour recall method 8 times with average 4-month interval. Dietary patterns with percent energy of each food group using cluster analysis were classified into two groups. The first cluster (n = 16) was characterized with high consumption of bread, snack, fast foods, beverage and considerable of rice so it was determined as 'Modified dietary pattern group'. The second cluster was characterized with high consumption of rice and kimchi so determined as 'Traditional dietary pattern group'. There were no significant difference of age, menarcheal age, body mass index but percent of body fat by pattern groups. The traditional group showed higher value of bone mineral density among lumber spine and all femur sites at baseline and 2 years later but it was not significant after adjusted for percent of body fat. Serum osteocalcin and urine NTx was higher among the traditional group at baseline than the modified group. There were similar proportions of carbohydrate:fat:protein between groups but significantly higher intake of protein, iron, vitamin A among the traditional group. In conclusion, there were two distinctive dietary patterns among Korean college women. There was difference of bone mineral density and its biochemical markers between two patterns. Further research would be necessary to explore the relationship between dietary patterns and health risks for larger-sized and various populations.

An Analysis on Characteristics of High Sodium Intaker and Affecting Factors (나트륨 고섭취자의 특성 및 섭취 영향 요인에 대한 분석)

  • The objective of this study is to analyze characteristics of high sodium intaker and factors affecting sodium intake using the Korea National Health and Nutrition Examination Survey (KNHANES). For this study we used two statistical methods, the cluster analysis and one-way analysis of variance (ANOVA). Cluster analysis was used to classify groups of sodium intake. For the analysis of the factors affecting sodium intake, we applied the ANOVA. The average daily intake for Korean is about 3,783 mg sodium per day; this amount is high than recommendation of the WTO. The demographic characteristics of people with higher sodium intake were found to be men more so women, and younger men with a higher education. Height, weight and size of a person's waistline were also characteristics of those with higher sodium intake. Also worker, smoker, those without a hypertension diagnosis, as well as those with a higher the drinking rate and higher eating out frequency tended to have a higher intake of sodium. The Ministry of Food and Drug Safety (MFDS) had established a plan to reduce sodium intake to 3,500 mg per day to 2020. To achieve this goal, it is necessary to educate people about high sodium intake, particularly those at higher risk, according to the results of this study. Through these efforts, the social costs of high sodium intake could be reduced, improving national health.

Purification of Pig Muscle Stem Cells Using Magnetic-Activated Cell Sorting (MACS) Based on the Expression of Cluster of Differentiation 29 (CD29)

  • The muscle stem cells of domestic animals are of interest to researchers in the food and biotechnology industries for the production of cultured meat. For producing cultured meat, it is crucial for muscle stem cells to be efficiently isolated and stably maintained in vitro on a large scale. In the present study, we aimed to optimize the method for the enrichment of pig muscle stem cells using a magnetic-activated cell sorting (MACS) system. Pig muscle stem cells were collected from the biceps femoris muscles of 14 d-old pigs of three breeds [Landrace×Yorkshire×Duroc (LYD), Berkshire, and Korean native pigs] and cultured in skeletal muscle growth medium-2 (SkGM-2) supplemented with epidermal growth factor (EGF), dexamethasone, and a p38 inhibitor (SB203580). Approximately 30% of total cultured cells were nonmyogenic cells in the absence of purification in our system, as determined by immunostaining for cluster of differentiation 56 (CD56) and CD29, which are known markers of muscle stem cells. Interestingly, following MACS isolation using the CD29 antibody, the proportion of CD56+/CD29+ muscle stem cells was significantly increased (91.5±2.40%), and the proportion of CD56 single-positive nonmyogenic cells was dramatically decreased. Furthermore, we verified that this method worked well for purifying muscle stem cells in the three pig breeds. Accordingly, we found that CD29 is a valuable candidate among the various marker genes for the isolation of pig muscle stem cells and developed a simple sorting method based on a single antibody to this protein.
