Food Consumption Culture heed on the Evaluative Criteria Pattern of Eating (식사 평가기준 유형으로 본 음식소비문화)

  • This research reviews the characteristics of consumption oriented culture of post modern society and describes the food consumption culture based on the evaluative criteria pattern in eating in Ulsan Metropolitan City. The subjects consisted in 217 full-time housewives and 129 cooks. The evaluative criteria of eating scale with 4 components - the eating atmosphere factor, the preference factor, the quality factor and the table factor- is described and interpreted in the context of consumption oriented culture. 4 clusters were decided through cluster analysis; preference and quality pursuing type, high involvement type, consumerism culture pursuing type and low involvement type. Among socio-economic variables, the evaluative criteria pattern of eating was significantly associated with occupation. The results of factor analysis and cluster analysis proved that the full-time house wives and cooks in Ulsan Metropolitan city showed the propensity to consumption oriented culture in food consumption culture.

A Comparison of Cluster and Factor Analysis to Derive Dietary Patterns in Korean Adults Using Data from the 2005 Korea National Health and Nutrition Examination Survey (군집분석과 요인분석 이용한 우리나라 성인의 식사패턴 비교 분석 - 2005년도 국민건강영양조사 자료 이용하여)

  • The purpose of this study was to explore dietary patterns and compare dietary patterns using cluster and factor analysis in Korean adults. This study analyzed data of 4,182 adult populations who aged 30 and more and had all of socio-demographic, anthropometric, and dietary data from 2005 Korean Health and Nutrition Examination Survey. Socio-demographic data was assessed by questionnaire and dietary data from 24-hour recall method was used. For cluster analysis, the percent of energy intake from each food group was used and 4 patterns were identified: "traditional", "bread, fruit & vegetable, milk", "noodle & egg", and "meat, fish, alcohol". The "traditional" pattern group was more likely to be old, less educated, living in a rural area and had higher percentage of energy intake from carbohydrates than other pattern groups. "Meat, fish, alcohol" group was more likely to be male and higher percentage of energy intake from fat. For factor analysis, mean amount of each food group was used and also 4 patterns were identified; "traditional", "modified", "bread, fruit, milk", and "noodle, egg, mushroom". People who showed higher factor score of "traditional" pattern were more likely to be elderly, less educated, and living in a rural area and higher proportion of energy intake from carbohydrates. In conclusion, three dietary patterns defined by cluster and factor analysis separately were similar and all dietary patterns were affected by socio-demographic factors and nutrient profile.

Food Related Lifestyle Profiles and Organically Processed Foods buying Behaviors : Applying a Person-centered Approach (식생활 라이프스타일 프로파일과 유기가공식품 구매행동 연구 : 사람중심 접근법을 중심으로)

  • Although food related lifestyle has been widely discussed over the last ten years, the majority of research on food related lifestyle has been only conducted in terms of a variable-centered approach. But, recently there is a growing body of research on food related lifestyle profiles over the last three years from the view of a person-centered approach. This study conducted both a cluster analysis and a latent profile analysis (LPA) to identify the patterns of potential food related lifestyle customer profiles based on the five components on the sample of customer, who bought organic products (n=509). The results of each statistical analysis showed both quantitatively and qualitatively different types of food related lifestyle customer profiles even though there were similar types of profiles identified in common between these two analyses. These various profiles were then compared with customer's level of buying behaviors (e.g., buying attitude and buying intentions). Results showed that food related lifestyle profiles with respect to the high level of interesting in dietary life in terms of health and safety are associated with the higher level of buying behaviors. Based on the results, implications for food related lifestyle literature, practices and future research are discussed.

A Conjoint Analysis of Consumer Preferences for Traditional Cheeses in Turkey : A Case Study on Tulum Cheese

  • In this study, consumer preferences toward traditional cheeses were investigated with Tulum cheese sample which is one of the traditional cheeses of Turkey. Type of milk used for Tulum cheese making was identified as the most important factor, followed by Tulum cheese's texture, price, salinity, fat content, origin and flavour. The ideal Tulum cheese profile for the overall consumers was made with cow milk, a hard texture, a price of 20 TL per kg, a low salt cheese, a full fat cheese, the regional cheese which belongs to Izmir region and a mild-flavoured cheese.A cluster analysis revealed there were two clusters with different ideal product profiles. Cluster 1's ideal Tulum cheese comprised a soft texture, a mild-flavoured cheese, a cheese made with cow milk, a full fat cheese, a low salt cheese, the regional cheese which belongs to Izmir region and a price of 10 TL per kg. Cluster 2 differed from cluster 1 in that its ideal Tulum cheese was a hard textured cheese and priced at 20 TL per kg. The consumers in cluster 2 were less price sensitive than those in cluster 1. In addition to, the consumers in both segments are ready to pay extra money for regional Tulum cheese versus non-regional Tulum cheese. We found that the older ones were more willing to pay as compared to younger individuals. Young people are critical target consumers for Tulum cheese marketers. The findings on cluster 1's ideal Tulum cheese of this study could therefore provide guidance to marketing managers.

An Analysis of Food Consumption Patterns of the Elderly from the Korea National Health and Nutrition Examination Survey (KNHANES Ⅴ-1) (2010년 국민건강영양조사(제5기 1차년도) 자료를 이용한 노인들의 식품섭취 패턴 분석)

  • The purpose of this study was to identify food consumption patterns of the elderly and factors affecting them to improve their dietary health. Data from 1,172 elderly subjects (over 65 years old) from the fifth Korea National Health and Nutrition Examination Survey (KNHANES V-1) were used in our analysis. Validity and reliability analyses of food consumption frequency allowed the identification of seven factors: fruits, foods for Korean style meal, instant foods, alcohols, carbohydrate-rich snacks, vegetables, and legumes/mixed grains. Food consumption patterns were classified into four groups (according to the food consumption frequency) using cluster analysis. Cluster 4 showed a significantly higher food consumption frequency and Cluster 3 had a relatively high overall food consumption frequency but lower alcohol consumption frequency compared to the other clusters. Cluster 2 was characterized by a generally low food consumption frequency but a significantly higher alcohol consumption frequency. Cluster 1 showed a generally low food consumption frequency; however, the consumption frequency of legumes/mixed grains was higher than Cluster 2. Further analysis showed that the food consumption patterns of the elderly were affected by variables such as gender, age, town, economic status, education level, family type, and frequency of eating out. We conclude that a proper nutritional education program should be conducted to address specific dietary problems for each elderly segment.

Antibiotic Resistance and Bacterial Biofilm Formation by Staphylococcus aureus Strains Isolated from Various Foods (식품에서 분리한 황색포도상구균의 항생제 내성 특징 및 균막 형성)

  • Staphylococcus aureus is a major human pathogen that produces a wide array of toxins, leading to a number of adverse symptoms. We examined 275 strains of Staphylococcus aureus isolated from various foods between 2006 and 2008 for antimicrobial susceptibility. At least 259 (94.2%) of the tested strains showed antibiotic resistant properties, and 106 (40.7%) of them showed multiple antibiotic resistance. Eleven of the tested strains were resistant to oxacillin and mec A-positive. Moreover, oxacillin-resistant strains were significantly more likely to be multi-drug resistant (p < 0.01). Of the 275 isolates tested, 24.4% were noted as being positive for slime production and 30.5% were positive for biofilm assay. Antibiotic resistance was not associated with a significantly higher prevalence of biofilm formation. Twenty strains were classified using the DiversiLab system. Most of the strains could be classified into 2 clusters and 4 unique types. All 10 mec A-positive strains (cluster I) were grouped together into the same sub-cluster. Cluster II (6 strains) was not found to be resistant to oxacillin in this study. Although the prevalence of methicillin-resistant S. aureus in food is currently low, the risk of its transmission through the food chain cannot be disregarded.

Genetic Characterization of the Urease Gene Cluster in Photobacterium sp. Strain HA-2 Isolated from Seawater (해수에서 분리한 Photobacterium sp. Strain HA-2가 보유하는 요소분해효소 유전자의 유전적 특징)

  • In this study, we cloned and sequenced the 15,204-bp DNA region containing the gene cluster for urease production from the chromosome of the environmental Photobacterium sp. strain HA-2. We identified 15 open reading frames (ORFs) and the G+C content was 40.3%. The urease gene cluster of Photobacterium sp. strain HA-2 consisted of seven genes, namely, ureDABCEF and ureG. There were five ORFs of urease genes in the opposite direction, which were homologous to the nickel transport operons (nik) of Vibrio parahaemolyticus and Escherichia coli. The genetic organization and sequences of the urease genes of Photobacterium sp. strain HA-2 resembled those found in Vibrio fischeri and V. parahaemolyticus.

Microstructure of Fat Free Plain Set-type Yogurt Containing Folic Acid

  • The objective of this study was to investigate the microstructure of folic acid-contained yogurt. Folic acids (25 and 50%) were added to milk preparation prior to pasteurization, then starter culture was added. The microstructure of yogurt containing folic acid was determined by the size of cluster of casein micelle using scanning electron microscopy and transmission electron microscopy. The cluster of casein micelle in yogurt containing folic acid were showed larger size than in control (p<0.05). In addition of 50% of folic acid, cluster of casein micelle per unit area was exhibited the highest number among tested yogurts. From these results, folic acid concentration of yogurt may be affected by mouth-feel of yogurt texture as well as the aggregation of casein micelle.

  • Recent developments in ICT technology have increased interest in the care and health of pets such as dogs and cats. In this paper, cluster analysis was performed based on the component data of pet food to be used in various fields of the pet industry. For cluster analysis, the similarity was analyzed by analyzing the correlation between components of 300 dogs and cats in the market. In this paper, clustering techniques such as Hierarchical, K-Means, Partitioning around medoids (PAM), Density-based, Mean-Shift are clustered and analyzed. We also propose a personalized recommendation system for pets. The results of this paper can be used for personalized services such as feed recommendation system for pets.
