시판우유(市販牛乳)의 식품영양학적(食品營養學的)인 조사연구(調査硏究) (A Food and Nutritional Survey on Bottled Market Milk in Seoul City Area)

  • Food and nutritional survey was made on two kinds of milk (one: 30 samples of bottled milk, the others: 30 samples of prepared milk), which are bottled market cow milk in Seoul city to examine the general ingredients, adulteration and degeneration. The results of survey indicated that the bottled milk delivered to home is relatively better than the prepared milk from the view point of food and nutrition. Moreover the quality of the prepared milk is poor because of adulteration through adding water or skim milk powder in order to increase quantity, consequently the prepared milk is under the nutritional standard. However it indicated that some of the bottled milk are rather inferior from the view point of food and nutrition, so certain measure is required for improving the quality of bottled and prepared milk. Most of the bottled milk and the prepared milk containing Coli-form bacteria have a possiblity to harm the citizen's health as a medium of infectious disease, such a fact is really serious problem from the view point of the national health, considering the general trend of milk consumption increase. It is urgent for us to take a scientific inspection on the sanitary management and take a formidable measure in handling of milk.

한국사회에서 과학기술 시티즌십의 현주소와 전망: <과학기술에 대한 시민의식 조사> 결과 분석을 중심으로 (The State of Scientific Citizenship in Korea: Centered on the analysis of the citizen's perception survey on the science and technology)

  • 이 글은 <과학기술에 대한 시민의식조사>의 결과를 분석하여 한국사회에서 과학기술 시티즌십, 전문지식권력, 거버넌스의 전반적 경향성과 특징을 파악하는 것을 목적으로 하고 있다. 또한, 이를 바탕으로 과학기술 시티즌십의 현주소를 진단하고, 그 미래를 전망하고자 한다. 이를 위해 먼저, 설문조사 대상으로 선정된 13개의 이슈 중 11개를 생식기술, 원자력, 기후변화와 에너지, 식품위험, 정보통신 등 5개 세부 분야로 묶고, 각 분야의 경향성과 특징을 분석한 후, 해석과 함께 그 함의를 도출하고 있다. 그런 다음, 각 분야에서 이루어진 분석결과를 토대로 전반적 경향성을 모두 여섯 가지로 종합하고 있다. 결론에서는 앞선 분석과 해석을 바탕으로 과학기술 시티즌십의 미래를 전망하고 있다.

노년층의 라이프스타일과 프랜차이즈 레스토랑 선택행동의 관계 및 구전의도의 조절효과에 관한 연구 (A Study of the Effect between Senior Citizen Lifestyle Choice Behavior on Franchise Restaurants - Mediating Effect of Word of Mouth -)

  • 본 연구에서는 노년층의 라이프스타일이 프랜차이즈 레스토랑의 선택속성이 얼마나 영향을 끼치는지 측정하였다. 그리고 구전의도가 노년층의 라이프스타일과 프랜차이즈 레스토랑의 선택속성 사이에서 어떤 영향을 끼치는지 측정하였다. 연구 결과, 첫째, 노년층들의 라이프스타일의 하위변수인 외향적, 개방형, 진보형, 미래 지향형 활동 4가지를 변수로 설정하였다. 그 결과, 외향적(${\beta}=.463$, p<.001), 개방형(${\beta}=.132$, p<.001), 진보형(${\beta}=.150$, p<.001), 미래지향적(${\beta}=.320$, p<.001)로 종속변수인 프랜차이즈 레스토랑의 선택속성에 대하여 모두 유의한 정(+)의 영향관계가 있는 것으로 분석되었다. 둘째, 조절변수인 구전의도가 추가된 2단계 모형에서는 구전의도의 추가로 인한 설명력의 증가는 0.1%이고, 이에 대한 F=147.556(p<0.01)로 설명력의 증가로 2단계 역시 유의적으로 나왔다. 조절효과를 검증하는 상호작용항들이 추가로 들어간 3단계에서는 '노년의 라이프스타일${\times}$구전의도'의 추가적인 투입으로 인한 설명력의 증가는 0.5%이고, 이에 대한 F=82.987(p<0.01)로 조절효과는 유의적으로 나왔다. 노년의 라이프스타일과 구전의도의 개별적인 조절효과를 보면 미래적${\times}$구전의도는 유의적인 정(+)의 영향력이 있었고, 또한 외향적${\times}$구전의도는 유의적인 부(-)의 영향력이 있었다.

  • The objectives of this study were to find development process and strategies for school lunch program using environmentally friendly agri-products (EFA). In order to improve the quality of school lunch program from elementary school to high school, the demand of EFA is increasing step by step such as a parent's association and the citizen group. For that reason, establishment by regional ordinance for school lunch program using EFA is rapidly expanded throughout the country. To develop school lunch program using EFA, we have to consider WTO regulations and product reliable EFA under the demand-supply stabilization. Moreover, environmentally friendly agri-policy to be more focused on the promotion the consumer's interests and food safety need.

생활쓰레기 문제에 대한 소도시 시민의 의식조사 (Consciousness of Citizens for the Issue of the MSW(Municipal Solid Waste))

  • This study was carried out to investigate and analyze the citizen's attitude for the issue of the municipal solid wastes in Miryang city. The waste generation rate was decreased by 56% compared with 1991, and 71.8% of generated wastes were treated by landfill method. 61.6% among respondents were contacted waste problem by TV and the majority of respondents felt seriousness of food-waste problem. The majority of people felt that waste discharge decreased after "volume-base charge system" and 71% of total respondents were burdened down with use of volume-base charge envelope. The greater part of citizens answered that they experienced damage due to wastes and satisfied with the collection system but they recognized the necessity of the establishment of collection system and increase of cleaners must be nessary.

선택성 소비지출의 변동을 통한 소비"패턴"고찰 (An Analysis of Discretionary Consumption Expenditure)

  • This paper attempts to investigate and analyze the change of the proportion of discretionary consumption expenditure (DCE) of main consumer goods among total household expenditure from 1964 to 1986 in Korea by reorganizing various data, particularly "Annual Report of Citizen's Household Experditure in Sooul".The result of the author's analysis can be summarized as follows. 1. The analysis shows that while the proportion of DCE in food has been increased during this period as the Korean economy developed, the value of income elasticity for beverages, liguor, out-door eating and processed food products which consist of major part of food, has been successively decreased. And also, though the absolute value of income elasticity for grain products has been increased, its proportion among total expenditure has been successively decreased. From these trends, we can conclude that general consumption pattern has a tendency to change from dependence on main grain products to the more utilization of out-door eating or processed food products. 2. The ratio of DEC of furnitures to housing expenditure has played a role of indicator of business cycle, reflecting the consumers' psychological expectation fro general economic trend. 3. In case of the proportion of DCE of clothes, there has been no great change. 4. As for as DCE of sundry expenditure is concerned, there has been no-great change in The proportion itself/ However. as the ratio of sundry expenditure to total household expenditure has been greatly increased, expenditure for leisure disproportionately increased. 5. The proportion of total DCE in total consumption expenditure, as in the case of housing, has been increased, which coincided exactly with business cyele appeared during this period. In fact, when Korea economy experienced a severe recession in 193 and 1980, that proportion deeply went down respectively, and again went up after those years. Accordingly, we can generalize that the size of DCE deperds on the formation of consumer's psychological expectation toward economy, which confirms George Katona's early proposition.

어메니티에 기초한 친환경농업 경작지의 경관특성요소 분석 (An Analysis of the Landscape Character in Environment Friendly Cultivated Land Based on Rural Amenity)

  • This research is focused on not only cultivated land as an important factor which represented the agricultural district, but also details of the research in the landscape of cultivated land. Moreover, we also focused on the cultivated land operating environmental friendly agriculture which took a lot of interest among the landscape of the cultivated land. The reason is, we judged environmental friendly agriculture is not only the simple purpose only for manufacturing food but also the key role for preserving their environment and landscape, and making sustainable agriculture. For this reason, our research treats the analysis that operating environmental friendly landscape has what kinds of different factors in landscape characteristic compare with other general agricultural methods. Plus we selected evaluating both the degree of citizen's presence and the degree of rural residents's importance in those factors as a mainly research matter. We drew out the landscape of cultivated land and concerning factors by analyzing policies(ESA, CSS, CTE, MFSP, ACL, etc) concerned with overseas agricultural landscape to deduct landscape Character factors in internal cultivated land. Based on eleven items of landscape factors in cultivated land deducted by documents research, we started to conduct field studies during MAY. 7th. 2004 $\sim$ JUL. 8th, DEC. 1th $\sim$ 3th reaching 32 villages and concerned institutes to deduct the factors in landscape characteristic in agricultural cultivated land in detail. We analyzed degrees of importance and preference in citizen and rural residents classified by 5 province of the whole country to evaluate the landscape Character factors in environmental friendly agriculture deducted by field research and 21 documents including extra items such as a scene of duck grazing by the duck techniques which is very popular way among internal environmental friendly agriculture, gardening space composed around farm and furrow on slope ground formed by unique topology in hilly country. The research period was progressed for 20 days from MAY. 28th. 2005 $\sim$ JUN. 17th. This research is the result that cultivated land landscape as a detail item holding agricultural environment especially, it is also meaningful result in environmental friendly agriculture as a basic research, because it is not only a value of simple food producing but also very effective role in both landscape and environmental parts.

미국외식시장에서의 한식 글로벌 창업전략 (Global Entrepreneurial Strategy of Korean Cuisine for Advancing into US Dine out Market)

  • 우리 한식은 케이팝스타 스타들의 활약과 더불어 한국문화에 대한 관심의 증대로 세계적인 관심을 받고 있다. 세계적인 음식 추구 성향도 "fast food"에서"slow food"로 바뀌면서 건강식으로 알려진 우리 "한식"에 대한 선호도가 증가하고 있다. 하지만 우리 한식은 세계인의 선호도 등에서 일본의 스시, 중국의 딤섬, 이태리의 피자나 파스타뿐만 아니라 태국, 베트남의 쌀국수, 심지어 인도네시아나 중동음식에도 뒤쳐져 있다는 평가를 받으면서 세계인의 관심에도 불구하고 비약적인 발전을 이루지 못하고 있다. 선행연구에서는 전통적인 우리의 맛과 향 등을 외국인의 선호에 맞게 변화시키는 현지화전략의 실패를 원인으로 제시하고 있다. 본 연구는 현지화전략을 통하여 미국 현지에서 성공한 현지 한식업체들의 사례연구를 통해 다음과 같은 미국외식시장에서의 글로벌 창업전략을 제시하고자 한다. 글로벌 성공창업전략으로 첫째, 한인이 아닌 현지인을 주 고객으로 하는 영업전략 둘째, 우리 전통방식이 아닌 현지인 눈높이에 맞춘 맞춤형전략 마지막으로 투철한 '창업가정신'을 제안한다.

창원시 노인의 영양지수에 영향을 미치는 요인 (Factors Affecting Nutrition Quotient for Elderly (NQ-E) for the Elderly in Changwon City)

  • The purpose of this study was to identify nutrition quotient for elderly (NQ-E) and to investigate factors affecting NQ-E of the elderly using welfare center and senior citizen's center in Changwon city. A self-administered questionnaire was conducted between June 2021 and early August 2021 for 320 elderly (≥65 years, male, n=52, female, n=268). As a result of the survey, the mean NQ-E score was 61.12, which was within the medium-high grade. The scores of balance, moderation, and dietary behavior factors were within the medium-high grade, while diversity factor was within the medium-low grade. According to the results of the Pearson's correlation coefficient analysis, NQ-E showed positive correlations with the 'with family' (p<0.01), 'education level' (p<0.01), 'health functional foods consumption' (p<0.01), 'monthly household income' (p<0.05), 'nutrition education experience' (p<0.05), 'reading nutrition labeling of health functional foods' (p<0.01), 'perception of the efficacy of health functional foods' (p<0.01), and 'the number of times of leisure activities per week' (p<0.01) and negative correlations with the 'gender' (p<0.05), 'age' (p<0.01), 'smoking' (p<0.05), and 'social frailty' (p<0.01). As a result of multiple regression analysis, 'gender' (p<0.05), 'perception of the efficacy of health functional foods' (p<0.05), 'the number of times of leisure activities per week' (p<0.05), and 'social frailty' (p<0.05) were found to be factors affecting NQ-E. Based on the results of this study, customized services by characteristic, nutrition education, and counseling for the elderly should be implemented and the development of various programs and continuous support of the community are necessary so that the elderly can carry out social exchange.

경인지역 초등학교 주변 어린이 기호식품의 미생물 오염도 및 보존료 검사 (Analysis of Microbial Contamination and Preservatives in Children's Favorite Foods Around Elementary Schools in Gyeonggi and Incheon)

  • 경인지역 초등학교 주변의 문구점과 소형 식품점에서 판매중인 조미건어포류, 빵 및 과자류, 소시지류, 당류가공품류 및 만두를 대상으로 안전성을 평가하기 위해 미생물의 오염도와 식품보존료 사용의 유무 및 함량을 조사${\cdot}$분석하였다. 총호기성균은 만두에서 가장 높은 평균 $4.81\;log_{10}\;CFU/g$의 오염도를 보였으며 그 범위는 $1.40\~6.91\;log_{10}\;CFU/g$로 높은 오염수준을 나타냈다. 대장균군은 빵 및 과자류와 조미건어포류에서 높은 오염수준인 3.73과 $5.10\;log_{10}\;CFU/g$ 오염도를 보였으며 최대 $6.60\;1og_{10}\;CFU/g$까지 검출된 제품이 있었다. S. aureus는 검사 대상 5 제품 모두에서 검출되었고 이 중 만두에서 가장 높은 $100\%(1.18\~3.31\;log_{10}\;CFU/g)$의 검출율을 보였다. B. cereus는 빵 및 과자류와 만두에서는 불검출되었고, 조미건어포류, 소시지류 및 당류가공품류에서만 각각 $20.51\%(0.70\~2.48\;log_{10}\;CFU/g)$, $50\%(0.70\;log_{10}\;CFU/g)$$11.11\%(0.30\;log_{10}\;CFU/g)$의 검출률을 보였다. E. coli와 Salmonella spp.는 모든 제품에서 검출되지 않았다. 식품보존료는 15개 제품 중 조미건어포류의 4개 제품만이 보존료의 사용 표시가 되었으나 이들 4개 제품을 포함한 13개 제품에서 보존료가 검출되지 않았으며 조미건어포류에 속하는 한 개 제품에서는 표시기준에 의거 표시된 소르빈산 $0.02\%$보다 15배$(0.30\%)$ 높은 검출결과가 나왔다. 결론적으로 경인지역 초등학교주변에서 판매되고 있는 식품은 식품의 제조단계에서부터 유통, 판매에 이르기까지 안전을 위한 관리방안이 조속히 수립되어야 한다.
