Pesticide residual characteristics in Strawberry, treated by drenching under hydroponics (관주처리에 따른 양액재배 딸기의 농약잔류 특성)

  • Strawberries are one of the main commodities in Korea and have been exported over 40 million dollar. Because the strawberry cultivation using hydroponics has increased, treatment of pesticide by drenching draw interest recently. However, detailed researches for drenching treatment of pesticide are limited, which results in difficulties in proper pesticide applications in agricultural fields. To activate use of drenching and improve safety in agricultural products, In this study, time-dependent residual characteristic of pesticides were compared with between different applications of pesticides in strawberries. The characteristics of azoxystrobin, prochloraz and thiamethoxam were investigated with drenching treatment at different applications: the time of treatment, concentration etc. at hydroponic cultivation for 40 days. Azoxystrobin and prochloraz were not detected at 14 day after application. Thiamethoxam was detected from 0.02 to 0.85 mg/kg. Crop uptake of pesticides was strongly affected with octanol-water partition coefficient and solubility in water. Residual amount in crops are highly dependent on the concentration of active ingredient of pesticides.

Improving Solubility through Carboxymethylation of Different-sized Endosperm, Bran, and Husk Rice Powders

  • The surfaces of different-sized endosperm, bran, and husk rice powders were modified using carboxymethylation. Carboxymethylation was carried out using aqueous alkalization and neutralization. After the carboxymethylation process, the centrifuged products were milled and classified by size: particles passed through sieves of 45, 106, and $300-{\mu}m$ width. The effect of carboxymethylation on physical properties such as solubility and dispersibility of endosperm, bran, and husk particles were studied. Overall, carboxymethylation increased solubility of the particles, while size reduction increased dispersibility. In particular, carboxymethylation created good aqueous suspensions by minimizing interparticle agglomeration. Our results show that the combination of size reduction and carboxymethylation improves solubility and dispersibility, resulting in better stability of the suspension. This study may be helpful for expanding the use of rice and its byproducts as ingredients in a variety of food and beverage applications.

  • In the course of this research, we developed FRIS(Food Replica Information System), which calculates calories and nutrient values of foods in a very simple and interesting manner, and experienced of application to some communities. We expect that individuals will have opportunities to raise their consciousness of food, nutrients, and healthy living by participating in FRIS. 154 kinds of commonly consumed Korean foods were selected and one serving sized food replicas, having the same shapes, size, and color as the real foods, were constructed with attached bar code labels. An application program with food replicas and bar code was also developed in order to provide information on calories and nutrient values for people's meals or selected foods based on survey results of housewives' requirements related to foods and nutrients. FRIS should be a basic tool in nutrition education and consultation. Its applicability would vary according to the nutritionist's flexibility and contents of developed application programs. Technical stability should be strengthened and more useful contents of application prograln be added to spread the use of the system. Additionally, in future research, more delicate models should be developed and an analytical method should be applied to examine the effects of FRIS to individual behavioral changes in their eating habits.

Effects of Heating Time and Temperature on Functional Properties of Proteins of Yellow Mealworm Larvae (Tenebrio molitor L.)

  • Although the yellow mealworm (Tenebrio molitor L.) is a promising alternative protein source, the effects of processing conditions on functional properties are unclear. In this study, a protein extract of yellow mealworm larvae (PEYM) was subjected to different heat temperature ($55^{\circ}C$, $75^{\circ}C$, and $95^{\circ}C$) with different time (20, 40, and 60 min) to evaluate the functional properties and protein oxidation. Different heat temperature treatment significantly affected the exposure of surface hydrophobicity of the proteins and protein molecule aggregation, which reached maximum levels at $95^{\circ}C$ for 60 min. Protein oxidation was inversely proportional to the temperature. Both the highest carbonyl value (1.49 nmol/mg protein) and lowest thiol value (22.94 nmol/mg protein) were observed at $95^{\circ}C$ for 60 min. The heating time-temperature interaction affected several functional properties, including solubility, emulsifying potential, and gel strength (GS). Solubility decreased near the isoelectric point (pH 5 to 6). As the temperature and heating time increased, emulsifying properties decreased and GS increased. The oil absorption capacity and foaming properties decreased and the water absorption capacity increased. These results confirmed that PEYM is a suitable source of proteins for processing and applications in the food industry.

Preparation of High GABA-Enriched Yeast Extract by Non-Saccharomyces Yeasts Isolated from Korean Traditional Fermented Soybean Product

  • High GABA-enriched yeast extract, for various nutritionally and pharmaceutically important functional foods, was prepared using a novel isolate of Debaryomyces hansenii JBCC541. Under optimized conditions, GABA conversion rates are significantly enhanced up to 7.55 g/l by D. hansenii JBCC541, increasing their synthesis yield 40 times. The total amino acid content of the prepared yeast extract was 10733.86 mg/l (257.36 mg/g), consisting of alanine, lysine, glutamine, leucine, and valine as the primary amino acids. The GABA content was significantly enhanced up to 6790 mg/l (162.80 mg/g) in the presence of glutamic acid, with approximately 10-fold higher GABA production. Flavor amino acids were also highly enhanced, indicating that the prepared yeast extract might be useful for preparing various functional and sensuous foods. Our results were promising as a GABA-enriched yeast extract preparation tool ensuring a suitable food material level with the potential for functionally enhanced food industrial applications.

  • Structured lipids are lipids in which the composition and/or positional distribution of fatty acids have been chemically or enzymatically modified from their natural biosynthetic form. Because structured lipids have desired nutritional, physicochemical, textural or physiological properties for applications in processed foods, functional foods, or nutraceuticals, many research activities have been aimed at their commercialization. The enzymatic production of structured lipids using lipases as the biocatalysts has a big potential in the future market due to the specificity or selectivity of the lipases. This article introduced some examples of specialty structured lipids that have been enzymatically produced and have been utilized as commercialized products. The commercialized products include medium- and long-chain triacylglycerols, human milk fat substitutes, cocoa butter equivalents, trans-free plastic fats, low-calorie fats/oils, and health-beneficial fatty acid-rich oils.

Olfactory Stimulation by Fennel (Foeniculum vulgare Mill.) Essential Oil Improves Lipid Metabolism and Metabolic Disorders in High Fat-Induced Obese Rats

  • In this study, odor components were analyzed using gas chromatography/mass spectrometry (GC/MS) and solid-phase microextraction (SPME), and odor-active compounds (OACs) were identified using GC-olfactometry (GC-O). Among the volatile compounds identified through GC-O, p-anisaldehyde, limonene, estragole, anethole, and trans-anethole elicit the fennel odor. In particular, trans-anethole showed the highest odor intensity and content. Changes in body weight during the experimental period showed decreasing values of fennel essential oil (FEO)-inhaled groups, with both body fat and visceral fat showing decreased levels. An improvement in the body's lipid metabolism was observed, as indicated by the increased levels of cholesterol and triglycerides and decreased levels of insulin in the FEO-inhaled groups compared to group H. Furthermore, the reduction in systolic blood pressure and pulse through the inhalation of FEO was confirmed. Our results indicated that FEO inhalation affected certain lipid metabolisms and cardiovascular health, which are obesity-related dysfunction indicators. Accordingly, this study can provide basic research data for further research as to protective applications of FEO, as well as their volatile profiles.

  • Immunosensors are of great interest because of their potential utility as specific, simple, label-free, direct detection means and provision of reduction in size, cost and time of analysis comparing with conventional immunoassay. In the last two decades, many reports have been published on the use of immunosensors for a wide range of applications to clinical diagnostics, pharmaceutical chemistry, environmental monitoring, biotechnology and food industries. There are also numerous transduction techniques developed such as electrochemical techniques, piezoelectric crystal, and surface plasmon resonance receiving much attention for the direct monitoring of immune reactions at solid surfaces.   • Nanotechnology is considered the most important technological advancement in recent years, and it is utilized in all industries due to its potential applications. Almost all of the industries (food, agriculture, medicine, automotive, information and communication technologies, energy, textile, construction, etc.) reorganize their future in the light of nanotechnological developments. As the most important source of income of countries, the agriculture industry increases the use of nanotechnology products gradually as a solution to the problems encountered. Reducing the use of agricultural inputs (pesticides, herbicides, fertilizers, etc.) by increasing their efficiency utilizing nano-carriers, detecting the environmental conditions and development of the crops in the field simultaneously by making use of nanosensors, reducing the sample volume and the amount of analyte used thanks to nanoarrays, effective treatment of water resources through nano-filters, accelerating the development of crops by using nanoparticles are the prominent nanotechnological applications in the agriculture industry. This review presents information on the benefits of the recent developments in nanotechnology applications in the agriculture industry.

  • Metal-oxide-based semiconductor gas sensors are widely used because of their advantages, such as high response and simple sensing mechanism. Recently, with the rapid progress in sensor networks, computing power, and microsystem technology, sensor applications are expanding to various fields, such as food quality control, environmental monitoring, healthcare, and artificial olfaction. Therefore, the development of highly selective gas sensors is crucial for practical applications. This article reviews the developments in novel sensor design consisting of sensing films and physical and chemical filters for highly selective gas sensing. Unlike conventional sensors, the sensor structures with filters can separate the sensing and catalytic reactions into independent processes, enabling selective and sensitive gas sensing. The main objectives of this study are directed at introducing the role of various filters in gas-sensing reactions and promising sensor applications. The highly selective gas sensors combined with a functional filter can open new pathways toward the advancement of high-performance gas sensors and electronic noses.
