  • BACKGROUND/OBJECTIVES: The incidence of thyroid cancer has increased in many countries, including Korea. International differences in the incidence of thyroid cancer may indicate a role of diet, but findings from previous studies are inconclusive. Therefore, we aimed to investigate the roles of nutrients in thyroid cancer risk in Korean women. SUBJECTS/METHODS: We conducted a case-control study comprising 113 cases and 226 age-matched controls. Nutrient intake was assessed using a validated food frequency questionnaire, and the association between nutrient intake and thyroid cancer risk was estimated using a logistic regression model. RESULTS: We found that high calcium intake was associated with a reduced risk of thyroid cancer (OR [95% CI] = 0.55 [0.35-0.89]). Significant associations were observed among subjects who were older than 50 years, had low BMI, and had low calorie intake. However, other nutrients included in this study did not show any significant associations with thyroid cancer risk. CONCLUSION: This study suggested a possible protective effect of calcium on thyroid cancer risk. Well-designed prospective studies are required to confirm these findings.

  • The influence of feed allowance on intake and nutrient utilization by Barbari goats given green maize (Zea mays) and potential feeding value of left-overs were studied. The goats were offered food at 3 levels to give left-overs of about 20% (T-1), 35% (T-2) and 50% (T-3) DM of offered amount. A marked effect of refusal rate on intake and digestibility of nutrients was found. The DMI, g/kg $W^{0.75}$ increased from 39.86 in T-1 to 50.91 and 66.55 g in groups T-2 and T-3, respectively. Allowing selective consumption at higher levels (T-2 and T-3), the intake of TDN and DCP from green maize was found not only to meet the maintenance requirement but provided surplus energy and protein for substantial production. The variability in diet selectivity between goats under different treatments was pronounced. As the level of food excess increased to T-3, the left overs had a higher IVDMD and crude protein and decreased cell wall constituents (p<0.05). Considering the substantial increase in intake and digestibility from feeding green maize at high allowances to goats, further studies are needed to develop practical feeding strategies.

  • This study was a qualitative investigation into the food security and food variety among the rural elderly. For the qualitative data collection, nineteen elderly people who lived in Yangpyeong-gun were interviewed individually. Food security and variety was evaluated based on accessibility and affordability. The participants seemed to have difficulty preparing their own meals and eating with their families or others. The frequency of vegetable intake was found to be high, as vegetables were available through cultivation. However, in terms of diversity, the intake of meat and milk, which are sources of protein and calcium, was found to be significantly low. This has to do with very poor physical accessibility. A lack of nutrition education was identified as the biggest reason for not following dietary therapy despite having a pre-existing disease condition. Therefore, for the elderly in Yangpyeong-gun, it is suggested that a basic nutrition policy for food supply that can increase their actual intake is more essential than education on cooking and nutrients. Moreover, periodic nutrition education or a regular counseling system for dietary therapy through local public health centers may help improve the health of the elderly.

  • The study deals with the empirical research on the condition of nutrient intake of low income class which be represented by urban slum and rural area, with the analysis of the factors which might influence on the prevalent condition of nutrient- intake. The method of the research was based on the spot-survey with questionaires. The result is that the levels of nutrient-intake are below the standard requirement level of nutrients in both of urban slum and rural area. The level of nutrient intake in urban slum lies in approximately 50% of the standard requirement level and 80% of the standard requirement level in rural area. The extent of malnutrition was explained in terms of the amount of calorie, protein, calcium and iron. More than half of the population in the community are below the standard requirement level of the nutrient- intake. The problem of malnutrition was serious in urban slum than in rural areas, which made a good contrast with the result of Peru study. Deficiency in calcium was most serious. The factor analysis of the prevalent condition of malnutrition in low class suggests that 1) The function of local market in supplying food is not so effective in the sense that the quality of the foods purchased id the local market is poor. 2) Low level of knowledge, the consequent ignorance and the indifference to the nutrition and the low income led to malnutrition. The level of income and the education were significantly correlated to the nutrient-intake.

  • We have studied the major food sources of minerals and vitamin based on the data from the National Nutrition Survey in 1993. The most important food sources was anchovy for calcium, spinach for vitamin A, and kimchi for vitamin C. The primary source of iron, thiamin, riboflavin and niacin was rice. Number of foods providing 90% of individual nutrient intake were 54 items for calcium, 40 items for iron, 20 items for vitamin A, 25 items for thiamin, 29 items for riboflavin, 39 items for niacin and 18 items for vitamin C. Among regions, amount of nutrients from same foods(10 more important food source) didn't show any significant differences (p>0.05) in minerals and vitamins studied. Over all rice was found to be the most important sources of minerals and vitamins.

  • A communal feeding program has been managed mostly by the Sae Ma Eul Women's club of agricultural cooperatives during busy days of farming in rural Korea and spreading rapidly throughout the country since a couple of years ago. Four communal feeding villages from 3 provinces in Korea were purposively selected. The food and nutrient intake of 524 participants were measured by the Precise-Weighing method for 3 days from October $7{\sim}16$ 1976. Total amount of food consumed per participant per two meal day was 1456 grams, greater than national average. Two meals that the communal feeding program provided to farmers under the intensive work of harvesting were supplying enough calories and all other nutrients except the riboflavin. There was a variation among CF villages but overall the nutrient intake was good and had balanced meals. This investigation is a part of the study on nutrition supported by a grant from USAID.

  • The aim of this study researchs status of the nutrient intake between male and female students and the nutrient intake by BMI. This study was done to investigate the body composition and nutrient intakes of 340 college students (170 males, 170 females) in Gyeonggi area. Weight, height, BMI, and blood pressure of these college students were measured Nutrient intake was assessed using the 24-hour recall method, and then calculated using the nutritional evaluation program [CAN Pro 2.0 professional (Korean Nutrition Society, 2002)]. Average height and weight were 176$\pm$5.1 cm, 70.60$\pm$l.l kg in male students and 162.2/$\pm$4.5 cm, 54.4$\pm$7.7 kg in female students respectively. Subjects were divided into three groups by BMI: underweight (less than 18.5), normal weight (18.5 to less than 23), and overweight (more than 23). The ratios of male and female subjects among these groups were 5.3% and 17.6% in underweight, 50% and 65.3% in normal weight, and 44.7% and 17.2% in overweight. Systolic and diastolic blood pressures were 124.0$\pm$1.5 mmHg and 76.1$\pm$14.8 mmHg in males and 1l0.l$\pm$12.9 mmHg and 70.l$\pm$10.8 mmHg in females, all in the normal range. Using nutrient values of the 7th Recommended Dietary Allowanes, the nutrient intake was calculated to Korean RDA (%). Nutrients below 75% Korean RDA were Calcium, Vitamin $B_2$, and Folate and nutrients above 100% RDA were Protein, Fe, Phosphorous, and Vitamin $B_6$. BMI showed positive correlations with body fat (%)(p<0.01) and WHR (p<0.01). Nutritional education is desirable for the improvement of dietary behaviors, body composition and nutrient intake of college students.

  • This study was performed to evaluate effects of dietary variety scores (DVS) and dietary diversity scores (DDS) on the nutritional quality of the diets of Korean college students, and to examine the association between food group intake patterns and nutritional adequacy. This study examined the relationship of dietary diversity scores (DDS), dietary variety scores (DVS), and food group intake patterns with nutrient intakes using 24-hour recall data (n=.358). The .DDS was calculated from the sum of each of the five food groups consumed as a score of 'I'. DVS was determined by counting the number of food items consumed daily. Food group intake patterns were expressed with the presence or omission of five major food groups-dairy, meat, grain, fruit, and vegetable. The four most prevalent food group patterns and the proportion of the population reporting them were as follows; no dairy and fruit, $23\%;\;no\;dairy,\;20\%;$ no dairy, meat, and fruit, $15\%$; all food groups, $14\%$. Even though the DDS or DVS was higher, the majority of this study population failed to meet the Korean RDA for calcium in both genders and iron in women. Higher DVS scores $(\geq31)$, within all DDS groups, were associated with the largest proportion of individuals consuming more than $75\%$ of the Korean RDA for selected nutrients. The consistency of these results indicates that screening diets to evaluate the overall dietary variety and variety among the major food groups including food group intake patterns provide meaningful information about their quality.
