  • To assess the food habits, nutrient intake and diet quality of preschool children aged 1 to 6 in Pusan by their meals and snacks, dietary survey was conducted with 176 subjects by a questionnaire and 24hr recall method. 63.1% of the subjects often skipped meals and 72.1% of those skipped breakfast in the main. 94.5% had snacks over once per day. The mean energy intake was 1406.4kcal, with 57.7% of energy intake being supplied by carbohydrate, 13.7% by protein, 28.6% by fat. 54.9%, 71.7% and 26.5% of intakes of protein, calcium and iron were supplied respectively by animal food. Most of iron intake came from plant origin. The percent of calcium intake from animal origin was low significantly in a group aged 4 to 6(p<0.05). The mean intakes of calcium, iron and niacin of total subjects were below Recommended Dietary Allo wance(RDA) for Koreans. The mean intakes of iron and niacin of a group aged 1 to 3 were below RDA as well as those of energy, caicium, vitamin B2 and niacin of the group aged 4 to 6. For calcium, iron, vitamin A, niacin and vitamin C, proportions of subjects with intake levels less than 75% of RDA were all over 36%. For most nutrients, proportions of subjects with intake levels less than 75% of RDA were higher in the group aged 4 to 6 than in the group aged 1 to 3. Nutrient adequacy ratios(NAR) were the lowest in iron in case of the group aged 1 to 3 and in calcium in case of the group aged 4 to 6. NAR of iron increased and that of vitamin B2 decreased significantly along increase age(p<0.05). The mean adequacy ratios(MAR) were 0.82 for total subjects, 0.83 for the group aged 1 to 3 and 0.80 for the group aged 4 to 6. The indexes of nutritional quality(INQ) of calcium, iron and niacin of the group aged 1 to 3 were below 1 as well as those of calcium, vitamin B2 and niacin of the group aged 4 to 6. Both of the age groups received 31.6~59.0% of daily intakes of energy, fat, calcium, phosphrous, vitamin B2 and vitamin C from snacks. So snacks clearly play an important role in dietary intake. Both of the NARs of most nutrients and MAR were higher in snacks than in three meals. The INQs of calcium and iron from three meals and those of iron, vitamin A, vitamin B1 and niacin from snacks of the group aged 1 to 3 were all below 1. The INQs of calcium and vitamin B2 from three meals and those of vitamin A and niacin from snacks of the group aged 4 to 6 were all below 1. In conclusion, nutritional characteristics were different between the two age groups. More attention should be paid to improve adequacy of nutrient intake through meals. And dietary management for snacks is needed especially in the group aged 1 to 3.

  • This study was aimed at comparing the dietary patterns of university female students according to their residence type. As for subjects, one hundred and twenty students of Kongju national university were chosen as a total. They were devided into three groups ; those who live in family home, or university dormitory, or self-boarding house. In this study, intakes of food and nutrient and dietary behaviors of each group were investigated through two-day food records and questionnaire. The result was that mean daily intakes of calcium and iron were lower than RDAs in all groups. According to residence type, subjects of family home and self-boarding seemed to have more serious problem in the nutrients mentioned above considering the proportions of less than 2/3 of RDAs. Especially, iron status was poorer than any other nutrients in the aspects of this proportion and food source. Iron was taken largely from vegetable foods which were recognized as a source of low bioavailability of iron. The average distribution ratios of breakfast, lunch, dinner and snack to total calorie intake was 22, 29, 30 and 19. Thus, it proved that breakfast tended to be more negligent than any other meals, and that snack was an important means to give nutrients for subjects. This meal pattern might be one of the factor for the decrease of the dietary quality. Processed foods were founded to be an important source for providing nutrients. Percentages of calorie, carbohydrate and fat consumed by processed foods to total nutrients. Percentages of calorie, carbohydrate and fat consumed by processed foods to total nutrients intake were 30.6, 29.5 and 46.2. However, other nutrient intakes from processed foods such as vitamin and mineral were small. And processed foods which give nutrients were mainly cereal products like ra myon, bread, and milk and milk products. Consequently, processed foods seemed to be selected as a combinient substitute food which supply calorie to fill their hunger. According to the living type, dormitory students had them more frequently than any other groups. Food habit score was within the category of poor or fair. Particularly, the score of self-boarding students was the lowest of groups(p<0.05). The major dietary problems were small or overating, missing meal and irregular eating. The degree of these problems was a little different among groups(P<0.01). Nineteen kinds of food were consumed per day, and family home and self-boarding students had foods less variously than dormitory students(P<0.05). Proportions of skipping breakfast, lunch and dinner were 20.8, 12.5 and 8.3%. Accordingly, breakfast was missed more often than any other meals. And self-boarding students missed breakfast more often than any other groups. As a conclusion, subjects should take more calcium and iron, and eat diverse foods to improve their nutritional status. And it is also necessary that breakfast should be regarded more importantly, and that processed foods should be taken considering nutritional balance. In view of residence type, subjects of family home or self-boarding had more dietary problems than dormitory subjects. Thus, these results suggest that university female students might have low ability of meal management, and dietary patterns were different by their residence type. Therefore, nutrition education for them should be carried out with respect to dewelling environment.

  • This research was conduced to 1) examine the influence of milk group intake on the dietary, considering dietary diversity and nutrient adequacy, 2) identify which foods truly contribute to the intake of specific nutrients 3) point out the dietary problems of this age group. The subjects were 664(male 357, female 307) healthy toddlers of the ages of 12-36 months, who had neither been taking any medicine-type supplements nor had any diseases that affect the dietary intakes, chosen among the outpatients of university and private hospitals in Seoul and Kyonggi province during Mach-August, 1999. The 24 hour recall method and CAN Pro(food analysis program) were used to analyze the amount of nutrient intake. The grouping of the subjects for the analysis by monthly age was based on the 98 Korean Child growth standard. The results that the milk group intake showed significant negative correlations with the grain group(r=-0.194, p<0.01), the vegetable group(r=-0.115, p<0.01) and the fruit group(r=-0.125, p<0.01). It also showed that the more the milk group intake, the lower the Dietary Diversity Score(r=-0.131, p<0.01), and the more the intake of raw milk, the more dificient the intake of iron(r=-0.211, p<0.01), vitamin A(r=-0.169,p<0.01), vitamin B$_1$(r=-0.078, p<0.05) and vitamin C(r=-0.187, p<0.01). Foods contributory to nutrient intake for of 12-14 months of were mostly infant formula, and the contribution ratio was high. In the age of 15-17 months, the subjects obtained most of the nutrients from raw milk., liquid-type yoghurt, soybean milk, cooked rice, etc. As for iron intake, the age of 21-23 month obtained the most from ionic drinks, and 24-29 months from raw milk, chocolate cakes, ionic drinks, etc. Though the NAR(Nutrient Adequacy Ratio) and MAR(Mean Adequacy Ratio) generally tended to increase accordingly with the DDs, as for nutrients Ca, vitamin A, vitamin B$_1$, and vitamin C the NAR marked the highest when the DDS marked the lowest(due to infant formula). And for iron, even when the DDS was 5 the NAR value was low. Im conclusion, the more the milk group intake, the lower was the dietary diversity. High dependency on infant formula and others from milk group over the age of 12 months proved to result in a decrease of nutritious solid food intake, iron deficiency and a low dietary diversity score, which can lead to an unbalanced diet. Therefore, nutrition education towards mothers/caretakers of toddler is of urgent need, in order to reduce the fluid milk group intake of low nutritional density and to provide various solid foods the children. • The purpose of this study was to examine the effect of temple food intake on health improvement. The survey was conducted from September to October 2013. The subjects in this study were 46 adults who participated in short-term 'Temple Stay' program. Every meal was prepared according to prearranged temple food menu, and it was provided to subjects for 4 weeks. Dietary intake, anthropometric measurements and biochemical parameter were measured and nutritional & health status were analyzed to find the effect of the program. Nutrients content of the temple food was sufficient to dietary reference intake while content of fat, fiber, vitamin A and calcium from the meal was significantly higher than the subjects' usual diet. Mean body weight, BMI and blood pressure (systolic and diastolic) related with obesity and hypertension decreased after the program. The index referring to liver function and cardiovascular disease risk such as serum ALT, ${\gamma}$-GTP, TG and LDL decreased while HDL increased thereby showing positive effect. The above results anticipate that temple foods with an affirmative effect in improving health status have a potential benefit that can be applied to general food service. Further detailed study might provide information in developing healthy diet for a corresponding clinical problem.

  • This study was performed to evaluate the nutrient intake status according to coffee intake among Korean female college students. Two-hundred subjects were asked for their daily coffee intake using a questionnaire. Daily intakes of nutrients and food groups were calculated 3-day food records. The mean height and weight of the subjects were 161.6cm and 51.2kg. The mean daily intake of coffee and milk were 0.5 and 0.6 cups, respectively. When nutrient intake was compared to RDA for Koreans, intakes of energy, iron, vitamin A were short of recommendations. The mean intakes of calcium, sodium, vitamin B$_2$ in BMI<20 group were significantly higher than those in BMI $\geq$20 group. The mean intakes of calcium and phosphorous in no-coffee group were significantly higher than those in $\geq$2 cup-coffee group. The mean intake of beverage and others significantly increased as the level of coffee intake was increased. However, intake of milk and its product decreased. There were significantly negative correlation between coffee and calcium intake, and positive correlation between milk and calcium intake. These results indicate that coffee consumption decreases calcium intake because of decrement of milk and its products. Therefore, it could be suggested that there is increased need for nutritional education on proper eating patterns for female college students.

  • This study was conducted to investigate the relationship between lactational capacity and intakes of energy and energy-yielding nutrients. Food consumption, intakes of carbohydrate, protein, fat and energy and quantity and proximate composition of milk of 11 lactating Korean mothers were determined at 1, 2 and 3 months postpartum longitudinally. Food consumption was estimated using a 24-hour recall method ; intakes of energy and energy-yielding nutrients were calculated according to the Food Composition Table. Daily milk production was estimated using a 72-hour test-weighing method ; protein, fat, lactose and energy concentrations were analyzed. Average intakes of energy and protein were 1974$\pm$386㎉/day and 67.0$\pm$12.3㎉/day, these were 73% and 74% of the Korean Recommended Allowances, respectively. Average milk yield was 720.1$\pm$123.3ml/day containing energy 59.6$\pm$9.5㎉/dl, protein 1.1$\pm$0.1g/dl, fat 2.7$\pm$0.8g/dl, and lactose 6.3$\pm$0.3g/dl. No relationship existed between the intakes of carbohydrate, protein, fat and energy and the quantity and proximate composition of the milk. However, the intakes of energy, carbohydrate and vegetable protein were inversely related to the concentrations of energy and lactose in the milk. This result indicates that lactational capacity may be affected by the other factors excluding intakes of energy and energy-yielding nutrients and a high intake of energy may not guarantee optimal lactational capacity.

  • This study was aimed to investigate the relations between self-selected intake of 3 macronutrie-nts and body weight gain and body fat accumulation in male rats given three isocaloric diets differing carbohydrate protein and fat contents concurrently. Also the effect of dietary restriction was observed. Forty two male rats of Sprague-Dawley strain weighing 68.7$\pm$6.1g were randomly divided into 2 groups and were allowed to have foods from 3 different cups for 8-hours a day or ad libitum, After 12 weeksthey were decapitated and their brains were quickly removed and frozen until they were assayed for serotonin and its metabolite 5-HIAA The carcass was dried at 105$\pm$2$^{\circ}C$ and measured the contents of body water and body fat. The animals chose a moderately high and constant carbohydrate level and showed the increase of percent protein intake with age and great individual variations. Protein in the diet seemed to trigger appetite and increase food intake which resulted in higher weight gains and in more fat deposition in the body. The concentration of brain serotonin did not show any correlations with the intake of nutrients. the accumulation of body fat and the gain of body weight.

  • The goal of this study was to determine the nutritional value and nutrients provided by each meal and snack of consumed by university students. Subjects were randomly selected from volunteer students at five universities in Ankara. A sample of 400 students (167 female and 233 male) aged between 19 and 24 years participated in this study. A questionnaire designed to assess general characteristics, anthropometric measurements, and 24 hours dietary records was administered using face to face interviews. According to body mass index classifications, 69.5% of male students, and 77.7% of female students were found to be in the normal weight categories. Overweight categories were found to be 25.1% and 5.6% for males and females, respectively. Breakfast and lunch were the most frequently skipped meals, with a total of 47.7% of students skipping breakfast and 25.2% skipping lunch. The percentages of energy deficiency were found to be 78.4% in males, and 81.1% in females. Dinner was the main meal for consumption of energy and the other nutrients, except saturated fatty acids, for both genders. Also, dinner was the largest contributor of energy in both genders. Students ate more bread, cereals, and meat at dinner than during the other meals and snacks. Fruit was consumed more during snacks than at the other meals by all students. It was concluded that students need more nutritional information about healthy nutritional habits, adequate intake of nutrients, and ideal body weights.
