  • This study is about choice attribution of customers make in food and beverage events. The researcher provided practical plans to uplift food-related enterprises and activate management through surveys and positive analyses, targeting customers who use food services. First of all, all event plans must include customer demands, social changes, special qualities of the business, and market research. Second, low demand season must be customers will be induced to the events. Third, prediction for market variable and solutions must be thoroughly examined and plans should look into the future to maintain a long period of time. Fourth, sufficient communication between planners and employees should be made before the event starts, so that food and beverage businesses can gain trust and quality of event services.Fifth, immaterial service and visible goods/menus in business of food and beverage events must be closely matched. Sixth, menus introducing a variety of merchandise, quality of nutrition and health of the business should be developed. Also, events from countries(regions) should be hold to create a market of cultural exchange. Seventh, for hereafter event plans, feedbacks are needed concerning customers needs and demands through customer care, after the food and beverage events. Eight, faculty management for convenience, kindness, safety, and life preserver accommodations in parking areas must be made, as automobiles are necessaries for people in Mycar era. The ninth, off-line and on-line care through on-line business construction and production of homepage must be done, due to the fact that even the well-made events are bound to fail if they are not delivered to the customers.

  • This study can realize customer satisfaction by planning in the advance and progresses event to business relation employee and event host and event participation customer of banquet event and mutually between in preparation checking process understand and I wished to explain that revisit is high. Specially, customer discovered that they are more satisfied to enfilade circle when banquet event preparation, progress recognized higher quality of service by plan. Furthermore, was expose that customer satisfaction for enfilade won improves relation quality because constructs trust about enfilade circle and banquet event, and customer loyalty degree to banquet hall. These study finding is presenting suggestion point of inside marketing that can affect to Saengjone of tissue because enfilade circle satisfaction can influence in customer possession in view of plan checking for enfilade won. Therefore, studied relation that exert effect that customers who use banquet event in this study are some in contents and customer satisfaction of plan, customer revisit that is late.

  • The main purpose of this study is to propose that Beverage sales should be step-up in Family Restaurant. To achieve the purpose of this study theoretical and empirical approaches were used. In review of theoretical background, basic concepts and characteristics of beverage were studied. For empirical study, three Family Restaurant in Korea was selected and analyzed the beverage sales which classified to Liquor, Beer Wine and Non-alcoholic beverage. Based on it, I suggest a plan of beverage sales step-up of Family Restaurant as follow. First, keep the appropriate valance of the whole item: non-alcohol and alcohol item. Second, develop the menu should be effect beverage sales. Third, through the promotion and event the restaurant should derive the customer to purchasing behavior. Fourth. server can accommodate and offer the information of food and beverage menu that can evoke the customer's attention.

  • The concept of food and beverage space in modern society is changing into complex space where various experiences are provided. With the increase of food service brands, those brands are getting standardized. Providing more differentiated experience and service became an element of competition to companies. The flagship stores among stores presented by companies have much influence on promotion and sales. Thus, it would be necessary to provide integrated service by adopting service design process for the differentiated design of such experiential space. The objective of this study is to examine the satisfaction of service design of food and beverage flagship stores. By creating a checklist to evaluate the space through the theoretical consideration of flagship stores and service design, the satisfaction of service design of food and beverage flagship stores was analyzed. Through the survey with users of the case space, it was possible to check the satisfaction of the service design elements applied to the food and beverage flagship store space. The satisfaction with service design was evaluated through the 5point scale. When the average point was high, the satisfaction with service design elements was high. In the results of the analysis, regarding the spatial composition of flagship stores, the overall interior/exterior atmosphere should contain the image of the company. As flagship stores compose space that can express various event space and company itself on top of the space for sales, they should present the spatial composition differentiated from other general commercial spaces. The significance of a study on service design of flagship stores is to show positive effect on flagship store space. In the future, it would be necessary to have comparative analysis on domestic and foreign cases applied with the service design process, and also to analyze the strategies in the aspect of service design.

Communication Effect of Sports Sponsorship Activities of Food and Beverage Companies (식음료 기업의 스포츠 스폰서십 활동의 커뮤니케이션 효과)

  • The purpose of this study is to provide basic data to identify the communication effect of food and beverage companies' sports sponsorship activities and to find out the communication effect of food and beverage companies' active sports sponsorship activities. To this end, a survey was conducted on 300 people who participated and watched sports competitions hosted by food and beverage N companies in January, and 267 copies were used for statistical analysis to obtain the following results. First, it was found that sports sponsorship had a positive effect on corporate attitude. Second, among the factors of sports sponsorship, image enhancement, promotion, and promotion were found to have a positive effect on product attitude, but event contribution did not affect product attitude. Third, it was found that corporate attitude had a positive effect on product attitude. Fourth, corporate attitude was found to have a positive effect on purchase intention. Fifth, product attitude was found to have a positive effect on purchase intention.

A Study on the Menu Management of Betel Restaurants (메뉴 교체의 관리 방안에 관한 연구 -호텔 레스토랑을 중심으로-)

  • The rapidly changing environments of today's hospitality industry lays more and more emphasis on the management of food & beverage sector. Hotel restaurants changes their menus 2 times a year. But they tend to modify or complement old items, or imitate other restaurants'menus, rather than try new ones. In addition, the change cycles are determined without any systematic and scientific criteria. Based on the survey, a plan for managing menu change cycles is proposed. The proposed plan is summarized as follows: First, the survey result demonstrates that the appropriate frequency of menu changes is: twice a year for the fixed menu; four times for the seasonal menu; four times for the promotion menu; twice for the business menu; and, three times for the event menu. Second, under the management maintained by consistent monitoring of menu change. Third, menu change should be managed through the menu analyses on its profitability, popularity, and the potential for further growth. Fourth, menu change should be managed through the periodic investigations of the tastes and preferences of the customers. fifth, a unique system for the menu change should be constructed by analyzing of other competitive restaurants or restaurant chain stores.

A Study of the Effect of Environmental Characteristics on Overall Service Quality, and Repurchase Intentions in Korean Foodservice Firms (한식 외식업체의 환경특성이 서비스품질과 재구매 의도에 미치는 영향)

  • This study was to examine the effect of the environmental characteristics on overall quality of employee and food service in Korean foodservice firms. The four factors of the environmental characteristics of Korean foodservice firms consist of service, atmosphere, food & beverage, and event. To analyze the data collected from 414 respondents, the several statistical methods were used including frequency and descriptive analysis, factor analysis, reliability test, and multiple regression analysis. The empirical results are as follows: First, the employee service factor has a significantly positive effect on overall employee service quality. Second, the food & beverage factor has a significantly positive effect on overall employee service quality. Third, the food & beverage factor has a significantly positive effect on overall food & beverage service quality. Fourth, the event factor has a significantly positive effect on overall food & beverage service quality Managerial implications can be drawn from the present data. First, Korean restaurant managers can identify which factors of environmental characteristics influence customers' attitudes and evaluations in service encounter. Second, Korean restaurant managers can use the environmental characteristics as differentiation strategy, and allocate their resources into the activities of marketing strategy.

  • This study is to develop a strategy to prepare an improvement strategy according to the environmental change of the hotel. Currently, domestic hotels are implementing marketing through food and beverage as a countermeasure against the sales decrease, and in order to develop effective marketing plan, 5 Force Model environmental analysis and STP analysis are analyzed. 5 Force Model Environmental Analysis showed that domestic hotels are facing various difficulties such as the expansion of accommodation sharing system, the decrease of Chinese tourists due to the THAAD problem, the increase of hotels, the introduction of PMS, the increase of minimum wage, the introduction of 52 hours work week, and the increase in product preference As an STP response strategy to correspond these difficulties, it is necessary to develop products for the main customers of the hotel food and beverage, such as those in the 20s-30s, the workers, smartphones and SNS users. And also hotels should seek ways to lower price of the product to the level desired by the user to compete against substitutes. In conclusion we suggest that hotels are committed to fulfilling their role by meeting guest safety and COVID-19 compliance requirements, but a focus on immediate cleanliness and quarantine against infectious diseases, like Airbnb, will enable greater growth.

A Study on Visitor Satisfaction at Uljin Eco-Agriculture/Organic Food Expo Korea, 2005 (2005 울진 세계 친환경 농업엑스포 관람객 만족에 관한 연구)

  • The purpose of this study was to investigate Visitors' satisfaction at Eco-Agriculture/Organic Food Expo held in Uljin in 2005. The questionnaire survey with 1,120 participants was conducted at the venue for three times from July 22nd to August 15th, 2005. The evaluation considered Expo facilities and services, and motives of visit along with demographics of 1,080 valid samples. Evaluation results indicate overall satisfaction level of Expo participation was positive and 63.6% of the respondents showed intention of revisit and/or future visit to agricultural events. Expo facilities and service represented higher satisfaction level, however cost factors such as food and beverage, souvenirs and entrance fee had lower performance levels. The study outcome can help local governments and/or organizers host hallmark tourist events in planning and managing.

  • International sports events is one of the core products in the sports industry the scale of sports event business is steadily increasing. However, In terms of sports event management, knowledge and experience generated through sports events are ineffective and non-systematically managed. For this reason, unnecessary resources are wasted and trial and error are repeated in hosting, preparing and operating in sports event management. The purpose of this study is to develop a sports event management process and evaluate conformance. To accomplish the purpose of this study, developed the core processes of sports events in step by step and then applied and conformance evaluated of the designed process. Developed and evaluated sports events management processes are five Functional Area of registration, accommodation, transport, broadcasting, and food and beverage. Of these FA, 63 activities were selected and analyzed. The modeling was used as IDEF method, the conformity analysis was used as Fuzzy logic, analysis tool was used ProM.
