Phase Morphology and Foaming of Polypropylene/Ethylene-octene Copolymer Blends (폴리프로필렌/에틸렌옥텐 공중합체 블렌드의 상분리 구조 및 발포 특성)

  • Polypropylene (PP) exhibits many beneficial properties such as low density high thermal stability, chemical resistance, good processability and recyclability. However, only limited research has been done on expanded polypropylene (EPP). In this study, we were trying to prepare EPP with chemical blowing agent. Ethylene-octene copolymer (mPE) was melt blended with PP to enhance melt fluidity of PP at processing temperature and to make more flexible foamed material. Prior to foaming, phase morphology of PP/mPE blends were investigated to examine the effect of phase morphology on the foaming ratio and cell structure of foams. Phase morphology of PP/mPE blends were affected by the content of mPE and mixing torque ratio. At the same composition, it was affected by mixing rpm. High blowing ratio and stable cell structure were obtained in the blend which has the continuous PP matrix with dispersed droplets of mPE.

Influence of sugar alcohol and enzyme treatment on the quality characteristics of soy ice cream (당알콜과 효소의 종류가 대두아이스크림의 품질특성에 미치는 영향)

  • The effects of bromelain and $\alpha$-chymotrypsin treatments on the functional properties(foaming capacity, foaming stability, emulsifying capacity, and emulsifying stability) of soy protein isolate(SPI) and the addition of various sweeteners(sucrose, sorbitol, xylitol) on the quality attributes(viscosity, overrun ratio, melt-down property, and sensory characteristic) of soy ice cream were studied. SPI was more effectively hydrolyzed with $\alpha$-chymotrypsin than bromelain, resulting in a better foaming and emulsifying capacity. Adding xylitol could significantly improve the viscosity, overrun and melt-down property of soy ice creams while the effect was the lowest in the sucrose addition. Bromelain treatment caused a lower apparent viscosity of SPI suspension compared with $\alpha$-chymotrypsin treatment and untreated. The overrun ratios of the soy ice cream prepared with bromelain and $\alpha$-chymotrypsin treated SPI were 18.9∼25.9% and 24.9∼40.3%, respectively as a result of freezing with agitation for 20 min in an ice cream maker. Comparatively, untreated SPI could bring only 15.8∼21.4% overrun ratios after operating for 15 min. The bromelain treatment caused high melt-down tendency of the product while soy ice cream with untreated SPI showed an opposite trend. In sensory characteristics, no significant differences in the strength of beany flavor were noted among the samples. Sweetness, bitter taste, icy feel, and mouthfeel of the product were greatly affected by the enzyme-treatment of SPI. Soy ice cream added with xylitol after $\alpha$-chymotrypsin treatment was the most acceptable among all samples.

  • This study was undertaken to find out the effect of heating time and temperature, pH and NaCl concentration on heat sensitivity of egg albumen during heat treatment. Sharp increase of the turbidity and rapid decrease of the foaming power were observed when egg albumen was heated at above $60^{\circ}C$. Egg albumen became opaque when it was heated at $60^{\circ}C$ for above 13 minutes or at $65^{\circ}C$ for above 5 minutes. The turbidity was markedly increased at below pH 7 and the foaming power was largely decreased at around pH 4.0 by the heat treatment ($60^{\circ}C$, 5 min). The foam stability was slightly decreased at alkaline pH range by the heat treatment (60t, 5 min). The addition of NaCl up to 0.3M decreased the turbidity. There was no effect of NaCl addition on the foaming power, but the foam stability was decreased by the addition of NaCl at above 0.2M before and after the heat treatment ($60^{\circ}C$, 5 min).

A Study on the Functional Properties of Camellia(Camellia japonica L.) Seed Protein Isolate (분리 동백단백의 기능적 특성)

  • This study was carried out to investigate the functional properties such as nitrogen solubility, emulsifying property , foaming capapcity , water and oil absorption of Camellia (Camellia japonica .) seed protein isolate in condition of distilled water and 0.5M NaCl solution at pH 2.0∼10.0. Nitrogen solubility of Camellia protein isolate in distilled water showed the minimum value at pH 4.0 and increased at pH lower or higher than the isoelectric point(pH 4.0). It was 90.0 %at pH 10.0 Nitrogen solubility of 0.5M NaCl solution showed a similar pattern with that of distrille dwater but was higher than that of distilled water except pH 2.0 and pH 10.0. Emulsifying activity of Camellia seed protein islate showed the minimum value at pH 4.0, but was higher at ether value of pH. Emulsifying stability of protein isolate was stable by heat treatment for 30min, at 80℃ and increased in 0.5M NaCl solution more than that of distille dwater. Foaming capacity of Camellia seed protein isolate in distill3ed water showed the minimum value near the isoelectric point, While it changed little at other values of pH. Foaming stability slowly decreased as, but didn't make a significant difference as time was delayed . Oil absorption was 1.4ml per a sample of 1g and water absorption was 0.9ml per a sample of 1g. The former was higher than the latter . The content of total amino acid of Camellia protein isolate was 43.67% and the major total amino acid of Camellia protein isolate was 43.67% and the major total amino acid was in the order of glutamic acid , arginine, aspartic acid, and leucine.

  • Surface activities of four potassium N-acyl-N-methyl-${\beta}$-alaninate including surface tension, foaming power, foam stability, emulsifying power and dispersion power were measured respectively, and critical micelle concentration(cmc) was evaluated. Consequently these anionic surfactants with long chain acyl amide showed good emusifying power of O/W type, foaming, foam stability and dispersion effect.

  • The effects of irradiation on the functional and structural characteristics of soy protein isolates were studied. Soymilk was irradiated at 1, 5, and l0kGy, after which soy protein isolates were prepared. The functional properties of soy protein isolates were examined including solubility, emulsion capacity and stability, foam capacity and stability, structural properties as represented by SDS-PAGE pattern, and secondary and tertiary structures. The solubility and emulsion capacity were increased by radiation treatment at 1kGy however the values were adversely affected again as dosage was increased above 5kGy. As irradiation dosage increased, an increase of foaming capacity at 1kGy and a decreasing turnover afterwards were also noted in foaming capacity, although the differences were not statistically significant. The SDS-PAGE pattern showed fragmentation and aggregation of protein molecules as affected by irradiation in proportion to the dosage increase. The results of CD and fluorescence spectroscopy revealed increased aperiodic structure contents with the dosage increase. It was assumed that irradiation dosagefrom 5 to l0kGy could initiate minimal denaturation of protein in various foods compared to general heat treatment.

Properties of Acylated Mungbean Whole Globulin (Acyl화에 의한 녹두 Whole Globulin의 특성에 관한 연구)

  • The objective of this study was to improved the limited functional characteristics of mungbean whole globulin. The mungbean whole globulin was acylated with succinic and acetic anhydride, and the functional properties of acylated protein were investigated, The results obtained ware as follows. 1. The UV-absorption spectra of acylated whole globulins with that of the succinylated 74% whole globulin as large blue shift of the absorption maximum and minimum wavelength from 275 nm to 269 nm, respectively. 2. The mobility of acylated whole globulin were increased on PAGE pattern, and degree of mobility was particularly remarkable in case of succinylation, 3. The water absorption capacity of whole globulin was increased by acylation. The most increased rate of whole globulin was 174,02% from succinylated 74%. The oil absorption capacity of whole globulin was increased by acylation The most increased rate of whole globulin was 165.41% from acetylated 81.77%. 4. The bulk density of whole globulin was decreased by acylation. and the greater the extent of acylation, the smaller the bulk density. 5. The foaming capacity and stability of whole globulin was increased by acylation, and remarkably high in 74% succinylated whole globulin. In contrast, however, the foaming capacity and stability of native and acylated whole globulin were decreased by heat treatment.

  • This study was peformed to improve extraction of insoluble proteins and to evaluate funtional properties of abolished proteins by the phytase produced by Asporgillus sp. The optimum pH, temperature, treatment time and unit of the enzyme for extraction of protein were pH 4.0~5.0, $50^{\circ}C$, 8~10 hrs and 120 units. The foaming capacity and foaming stability of sesame meal protein after enzyme treatment were virtually unchanged as compared to control. The emulsion capacity and emulsion stability of sesame meal protein was higher than control. Oil absorption as well as water absorption capacities of sesame meal protein were higher than control.

  • This study reports the improvement of mechanical properties of Al2O3 porous ceramics from colloidal suspension with the addition of carbon fiber by direct foaming. The initial colloidal suspension of Al2O3 was partially hydrophobized by surfactant to stabilize wet foam with the addition of carbon fiber from 2 to 8 wt% as stabilizer. The influence of carbon fiber on the air content, bubble size, pore size and pore distribution in terms of wet foam stability and physical properties of porous ceramics were discussed. The viscosity of the colloidal suspension was increased giving solid like properties with the increased in carbon fiber content. The mechanical properties of the sintered porous samples were investigated by Hertzian indentation test. The results show the wet foam stability of more than 90% corresponds to compressive loading of 156.48 N and elastic modulus of 57.44 MPa of sintered sample with 8 wt% of carbon fiber content.

Surface-Active Properties of Sodium bis-Alkyl Sulfonatosuccinate (술폰화된 호박산 알킬에스테르류의 계면성)

  • Recently, there has been considerably interested in the development to new functional gemini type anionic surfactant, sodium bis-n-alkyl sulfonatosuccinate, had been synthesized through the addition reaction of sodium bisulfite to bis-n-alkyl maleate, in which water was azeotropically distilled by adding benzene to the reaction system, gave a good yield. All the surface activities including krafft point, surface tension, emulsion power and foaming were measure and cmc was evaluated in dilute solution. This results showed a lower ability in $27{\sim}30dyne/cm$ than single-chain surfactant with $32{\sim}35dyne/cm$ to surface tension. Also its cmc value much smaller in $(6.5{\sim}10){\times}10^{-4}mca{\ell}/{\ell}$ than single-chain surfactant with $(40{\sim}45){\times}10^{-4}mca{\ell}/{\ell}$ concentration. In foaming ability and foam stability of gemini surfactant had especially a good ability in approximately $100{\sim}150ml$, and in emulsing power they exhibited a good emulsing phase and stability, and Krafft points were $0{\sim}10^{\circ}C$.
