계란의 콜레스테롤 함량 조절 기술에 관한 고찰 (A Review on Controlling Technology of Cholesterol Contents in Eggs and Egg Products)

  • 콜레스테롤의 섭취와 심장질환과의 밀접한 상관관계에 대한 일반인들의 인식도가 첨차로 높아지면서, 계란과 같이 콜레스테롤의 함량이 높은 식품으로부터 콜레스테롤을 제거한 저콜레스테롤 계란이나 무콜레스테롤 계란에 대한 요구는 자연발생적인 현상이라고 할 수 있겠다. 저콜레스테롤 계란을 생산하는 데는 두 가지 방법이 있을 수 있다. 첫 번째 방법은 닭으로부터 콜레스테롤 함량이 낮은 계란을 직접 생산하는 것이다. 이것은 닭의 사료 조성을 변화시키거나 콜레스테롤의 흡수, 배설 및 합성과정을 저해시키는 약물을 닭에게 투여한다든지 혹은 닭의 품종이나 계통을 유전적으로 선발, 개량하거나 닭의 산란주기, 나이, 계란의 크기 등을 관리함으로서 이루어질 수 있다. 두 번째 방법은 일반란에 흡착제, 식물성 기름, 효소, 용매 및 초임계액체 등을 직접 처리함으로서 저콜레스테롤 계란을 생산하는 것이다. 이들 방법은 제각기 장단점을 지니고 있어서 최우선의 한가지 방법만을 선택하기는 어렵다. 즉, 사양학적 방법에 따른 저콜레스테롤 계란의 생산은 그 생산방법이 매우 노동집약적이며, 콜레스테롤의 제거율(30∼50%)도 두 번째 방법(80∼90%)에 비해 상당히 낮은 편이다. 반면에 두 번째 방법에 의한 저콜레스테롤의 생산법은 제거율이 매우 높은 편이나, 일부 방법은 인체에 안정성의 문제와 관능적 품질이 매우 저조해지는 단점이 있어서 문제가 되고 있다. 따라서 가까운 장래에 이와 같은 문제점이 해결, 보강된 저콜레스테롤 계란 및 계란 제품의 생산방법에 대한 연구가 더 많이 이루어져야 할 것으로 사료된다.

Growth performance and blood profiles of Hanwoo steers at fattening stage fed Korean rice wine residue

  • The aim of this study was to investigate the effects of Korean rice wine residue (RWR) on the growth performance and blood profiles of Hanwoo steers in the fattening stage. In situ and in vivo experiments were conducted to analyze rumen fermentation characteristics and total tract digestibility, respectively. Three cannulated Hanwoo steers (mean body weight: 448 ± 30 kg) were used in both analyses. The growth performance of 27 experimental animals in the fattening stage (initial body weight: 353.58 ± 9.76 kg) was evaluated after 13 months of feeding. The animals were divided into three treatment groups (n = 9/group). The treatments comprised total mixed ration (TMR) only (CON), TMR + 10% RWR (10% RWR), and TMR + 15% RWR (15% RWR). The diets of equal proportions were fed daily at 08:00 and 18:00 h based on 2% of the body weight. The animals had free access to water and trace mineral salts throughout the experiment. Supplementation of 15% RWR significantly decreased (p < 0.05) the rumen fluid pH compared with the control treatment, but there was no significant difference in the total volatile fatty acid concentration. It also significantly increased (p < 0.05) dry matter digestibility compared with the other treatments. The total weight gain and average daily gain of the animals in the RWR-supplemented groups were significantly higher (p < 0.05) than those in the control group. Furthermore, the feed intake and feed efficiency of the RWR-supplemented groups were higher than those of the control group. Supplementation of RWR did not affect the alcohol, albumin, glucose, total cholesterol, triglyceride, and low-density lipoprotein concentrations, and aspartate aminotransferase and alanine transaminase activities in the blood; these parameters were within the normal range. The high-density lipoprotein and creatinine concentrations were significantly higher in the 15% RWR group, whereas the blood urea nitrogen concentration was significantly higher in the 10% RWR group than in the other groups. These results suggest that TMR with 15% RWR can serve as an alternate feed resource for ruminants.

Iron sulfate and molasses treated anthocyanin-rich black cane silage improves growth performance, rumen fermentation, antioxidant status, and meat tenderness in goats

  • Objective: This study investigated the effects of feeding anthocyanin-rich black cane treated with ferrous sulfate and molasses on animal performance, rumen fermentation, microbial composition, blood biochemical indices, and carcass characteristics in meat goats. Methods: Thirty-two Thai-native×Anglo-Nubian crossbred male goats (14.47±2.3 kg) were divided equally into two groups (n = 16) to investigate the effect of feeding diet containing 50% untreated anthocyanin-rich black cane silage (BS) vs diet containing anthocyaninrich black cane silage treated with 0.03% ferrous sulfate and 4% molasses (TBS) on average daily gain (ADG) and dry matter intake (DMI). At the end of 90 d feeding trial, the goats were slaughtered to determine blood biochemical indices, rumen fermentation, microbial composition, and carcass characteristics differences between the two dietary groups. Results: Goats fed the TBS diet had greater ADG and ADG to DMI ratio (p<0.05). TBS diet did not affect rumen fluid pH; however, goats in the TBS group had lower rumen ammonia N levels (p<0.05) and higher total volatile fatty acid concentrations (p<0.05). Goats in the TBS group had a higher (p<0.05) concentration of Ruminococcus albus but a lower (p<0.05) concentration of methanogenic bacteria. The TBS diet also resulted in lower (p<0.05) thiobarbituric acid-reactive substances concentration but higher (p<0.05) total antioxidant capacity, superoxide dismutase, catalase, glutathione peroxidase, and glutathione reductase concentrations in blood plasma, while having no effect on plasma protein, glucose, lipid, immunoglobin G, alanine transaminase, and aspartate aminotransferase. Meat from goats fed the TBS diet contained more intramuscular fat (p<0.05) and was more tender (p<0.05). Conclusion: In comparison to goats fed a diet containing 50% untreated anthocyanin-rich black cane silage, feeding a diet containing 50% anthocyanin-rich black cane silage treated with 0.03% ferrous sulfate and 4% molasses improved rumen fermentation and reduced oxidative stress, resulting in higher growth and more tender meat.

Nutrient Utilization, Body Composition and Lactation Performance of First Lactation Bali Cows (Bos sondaicus) on Grass-Legume Based Diets

  • A study on energy and protein utilization, and milk production of Bali cows on grass-legume diets was carried out using 12 first lactation cows (initial BW $263.79{\pm}21.66kg$) during a period of 16 weeks starting immediately post calving. The animals were randomly allotted into 4 dietary treatment groups R1, R2, R3 and R4, receiving from the last 2 months of pregnancy onwards, graded improved rations based on a mixture of locally available grass and legume feed ad libitum. R1 contained on a DM basis 70% elephant grass (PP, Penisetum purpureum) plus 30% Gliricidia sepia leaves (GS), R2 was 30% PP plus 55% GS supplemented with 15% Hibiscus tilliactus leaves (HT, defaunating effect), R3 and R4 were 22.5% PP+41.25% GS+11.25% HT+25% concentrate, where R3 was not and R4 supplemented with zinc di-acetate. TDN, CP and zinc contents of the diets were 58.2%, 12.05% and 18.3 mg/kg respectively for R1, 65.05%, 16.9% and 25.6 mg/kg respectively for R2, 66.03%, 16.71% and 29.02 mg/kg respectively for R3 and 66.03%, 16.71% and 60.47 mg/kg respectively for R4. Milk production and body weight were monitored throughout the experimental period. In vivo body composition by the urea space technique validated by the body density method and supported by carcass data was estimated at the start and termination of the experiment. Nutrient balance and rumen performance characteristics were measured during a balance trial of 7 days during the 3rd and 4th week of the lactation period. Results indicated that quality of ration caused improvement of ruminal total VFA concentration, increments being 52 to 65% for R2, R3 and R4 above R1, with increments of acetate being less (31 to 48%) and propionate being proportionally more in comparison to total VFA increments. Similarly, ammonia concentrations increased to 5.24 to 7.07 mM, equivalent to 7.34 to 9.90 mg $NH_3-N/100ml$ rumen fluid. Results also indicated that feed quality did not affect DE and ME intakes, and heat production (HP), but increased GE, UE, energy in milk and total retained energy (RE total) in body tissues and milk. Intake-, digestible- and catabolized-protein, and retained-protein in body tissues and milk (Rprot) were all elevated increasing the quality of ration. Similar results were obtained for milk yield and components with mean values reaching 2.085 kg/d (R4) versus 0.92 kg/d (R1) for milk yield, and 170.22 g/d (R4) vs 71.69 g/d (R1), 105.74 g/d (R4) vs 45.35 g/d (R1), 101.34 g/d (R4) vs 46.36 g/d (R1) for milk-fat, -protein, and -lactose, respectively. Relatively high yields of milk production was maintained longer for R4 as compared to the other treatment groups. There were no significant effects on body mass and components due to lactation. From the relationship $RE_{total}$ (MJ/d)=12.79-0.373 ME (MJ/d); (r=0.73), it was found that $ME_{m}=0.53MJ/kgW^{0.75}.d$. Requirement of energy to support the production of milk, ranging from 0.5 to 3.0 kg/d, follows the equation: Milk Prod. ($Q_{mp}$, kg/d)=[-2.48+4.31 ME($MJ/kg^{0.75}.d$)]; (r=0.6) or $Q_{mp}$=-3.4+[0.08($ME-RE_{body\;tissue}$)]MJ/d]; (r=0.94). The requirement for protein intake for maintenance ($IP_m$) equals $6.19 g/kg^{0.75}.d$ derived from the relationship RP=-47.4+0.12 IP; (r=0.74, n=9). Equation for protein requirement for lactation is $Q_{nl}$=[($Q_{mp}$)(% protein in milk)($I_{mp}$)]/100, where $Q_{nl}$ is g protein required for lactation, $Q_{mp}$ is daily milk yield, Bali cow's milk-protein content av. 5.04%, and $I_{mp}$ is metabolic increment for milk production ($ME_{lakt}/ME_{m}=1.46$).

  • 세계보건기구(World Health Organization)는 식료품에 함유된 NaCl을 낮출 것을 권하고 있으며, 식품 내 NaCl 수치 감소시키는 것은 중요한 연구분야가 되었다. 염화나트륨(sodium chloride, NaCl)의 과다 섭취는 고혈압, 골다공증, 뇌졸증, 신장결석, 심혈관계 질환 등의 다양한 질병과 직접 또는 간접적으로 많은 연관되어 있다. 산업국가에서는 치즈등의 가공식품을 통해 많은 양의 소금을 섭취하고 있기 때문에, 치즈 내 NaCl의 함유량 감소에 대한 연구가 진행 중에 있다. 따라서 최근에 치즈 내 NaCl의 함유량을 감축하기 위한 많은 방법들이 이용되고 있다. NaCl은 치즈 내에서 방부제 역할을 하며, 식품의 풍미를 높이고, 치즈의 주요 기능적 특성을 담당하기 때문에, 치즈의 품질에 영향을 주지 않으면서 치즈에 함유된 NaCl을 감소하는 것은 쉽지 않다. 대체방법을 사용하지 않고, 치즈에 함유된 NaCl을 감축시키는 연구가 진행되어 왔지만, NaCl 감소 시에 발생하는 식품의 관능적 특성, 유동학 및 안정성 문제들이 보고되고 있다. 지금까지의 연구 결과에 의하면 식품 내 NaCl을 감소시키는 방법으로는 NaCl 대체(NaCl substitution)라고 불리는 방법이 있으며, 이 방법은 NaCl을 부분적으로 다른 염분(염화칼륨, 염화마그네슘, 염화칼슘)으로 대체함으로써 식품에 함유된 NaCl 수치를 감소시킨다. 실례로 자연치즈에 함유된 NaCl을 KCl로 대체하였을 때 치즈의 특성, 특히 맛에 변화와 안정선에 문제가 야기되었다. 반면, 가공치즈에 함유된 NaCl을 KCl로 대체하였을 때, 치즈의 특성이 큰 영향을 받지 않았기 때문에, 이 방법을 사용하여 치즈에 함유된 NaCl의 수치를 감소시킬 수 있는 가능성이 높다는 것을 나타냈다. 이와 같은 결과는 자연치즈 내의 NaCl 함량을 감축하기 위해서는 치즈에 함유된 NaCl의 역할, NaCl과 건강문제, NaCl 감소 방법, 다른 염분(특히 염화칼륨으로 NaCl 대체하는 방법)을 사용하는 방법 등에 관한 더 많은 향후 연구가 많이 필요하며, 적극적으로 진행되어야 할 것이다.

3D 프린팅 기술을 활용한 치매노인 전용 영양(수분)보충 식품섭취용기 개발 (Development of 3D Printed Snack-dish for the Elderly with Dementia)

  • 본 연구는 전반적 신체기능 소실, 음식 섭취량의 만성적 저하의 특징을 갖는 치매노인에서 만성적 영양불량 해소에 도움을 줄 수 있도록 수분이나 영양소의 보충을 위한 스낵 개념의 식품을 제공하는 맞춤형 용기를 개발하고자 하였다. 아이디어 창출 협의체 구성 후 선행연구 탐색 및 브레인스토밍을 통하여 포도 모양의 디자인이 적합하다고 판단하였다. 드로잉 스케치와 점토모형 제작 후 시제품 제작을 위해 개인니즈를 충족시키며 소규모 제작에 적합하다고 알려진 3D 프린팅 기술을 적용하였다. 3차원 설계는 3D CAD 소프트웨어 SolidWorks을 이용하였고 한국인의 영양소섭취기준과 관련 선행연구 및 기존 연구결과를 종합하여 용기 당 최대 수분제공량 및 수치를 결정하였다. 필라멘트를 녹인 뒤 층층이 쌓아올리는 출력 방식(FDM) 3D 프린터(DP200)를 사용하였고 식품용기 위생과 안전을 고려하여 사전유해물질 인준이 확인된 옥수수 전분 유래 PLA 필라멘트를 이용해 출력하였다. 용기 당 수분을 기준으로 수분 섭취기준대비 30%를 충족하는 285 mL를 설정하였다. 제작 크기를 고려하여 포도 알맹이는 총 6개로 결정되었다. 알맹이 1개당 47.5 mL의 수분제공이 가능하였는데, 이를 통해 반지름 2.25 cm의 반 구로 설계하였다. 이때 사이 간격을 4 mm로 설정하였다. 사용 시 안전사고 예방을 위해 조작이 쉽고 모나거나 뾰족하지 않은 외형을 갖추며 위생을 위한 뚜껑도 설계하였다. 인지기능이 저하된 치매노인이 해당 용기를 사용할 때 흥미를 느끼고 식사섭취 중 교육 교구로 응용될 수 있도록 뚜껑과 포도 알맹이 바닥면에 숫자를 각인하여 최종 출력 및 조립하였다. 조립 시 수동 작업이 요구된 점은 3D 프린팅 기술의 대표적 장점인 편리성에 반하는 점으로 향후 보완논의가 필요하다고 사료된다. 신체기능이 퇴화되어 만성적으로 섭취량이 제한된 치매 노인에게 단순 섭취 증량을 권고하기에는 무리가 있으므로 맞춤형 영양중재 실시는 상당히 중요하다. 따라서 추후 연구를 통해 개발된 치매노인 전용 식품섭취용기의 만족도 분석을 실시하고 영양밀도를 높인 전용 음식 개발 과정이 논의되어야 하겠다. 4차 산업 핵심기술인 3D 프린팅을 연구에 적용하여 아이디어 구현에 정확도와 편의성이 확인되었으나 관련 기술수준에 따라 발생하는 비용 지출과 외부 전문가 의존에 대한 한계점은 향후 해결이 필요한 부분이라 사료된다. 추후 영양중재 도구개발 시 연구 다양성을 위해 식품영양 전공자에게 해당기술의 융합교육을 통한 자급 활용 빈도를 높이고 진입장벽을 낮추기 위한 다방면의 시도가 필요하겠다.

신생아 세균성 뇌막염의 원인균에 따른 치료와 예후 (Treatment and Prognosis according to Causative Organisms in Neonatal Bacterial Meningitis)

  • 목 적 : 신생아 세균성 뇌막염은 임상 증상이 비특이적이며 여러가지 신경학적 후유증을 남길 수 있는 질환으로 본 저자들은 원인균 특히 그람 양성균과 음성균에 의한 뇌막염을 비 교 분석하여 치료 및 예후의 개선을 도모하고자 본 연구를 시행하였다. 방 법 : 1991년 1월부터 1996년 6월까지 중앙 길병원 신생아 중환자실과 소아과 병동에서 뇌척수액 검사상 균이 배양되었거나 latex agglutination test상 균이 밝혀진 24례를 대상으로 후향적으로 분석하였다. 결 과 : 1) 환아의 분포는 남아 17명, 여아 7명이었고, 그람 양성균에 의한 뇌막염 환아의 평균 출생 체중과 재태 기간은 $2.91{\pm}0.79kg$, $38.4{\pm}2.74$주, 그람 음성균군에서는 $3.30{\pm}0.90kg$, $37.7{\pm}3.33$ 주로 두 군간에 유의한 차이는 보이지 않았다. 2) 선행 요인으로는 미숙아, 태변 착색, 조기 양막 파수, 산모 당뇨병, 임신성 고혈압 등이 있었으며, 임상 증상 및 증후로는 발열, 경련, 수유량 감소, 대천문 팽대 등이 있었고, 증상 발현 시기는 조기 발현형이 11례(그람 양성균 4례, 그람 음성균 7례), 지연 발현형이 13례 (그람 양성균 7례, 그람 음성균 6례)였다. 3) 원인균은 그람 양성균이 11례로 coagulase-negative staphylococci와 group B streptococci가 각 3례, Staphyolococcus aureus와 Streptococcus viridans가 각 2례, enterococci가 1례가 있었으며, 그람 음성균은 13례로 Escherichia coli가 7례, Klebsiella pneumoniae가 3례 Pseudomonas aeruginosa, Acinetobactor, Emterobacter가 각 1례씩 있었다. 4) 뇌척수액 검사상 백혈구 수치는 그람 음성균군에서 통계적으로 유의하게 높았으나 단백 수치와 당 수치는 두 군간에 통계적으로 유의한 차이를 보이지 않았다. 5) 뇌초음파 검사상 그람 양성균군에서는 7례(63.6%)에서, 그람 음성균군에서는 10례 (76.9%)에서 비정상 소견을 보였으나 두 군간에 뇌초음파 검사상 비정상 소견의 빈도에 있어서는 통계적으로 유의한 차이를 보이지 않았다. 6) 항생제 감수성 검사에서 그람 양성균군에서는 penicillin계통, 1세대 cephalosporin, vancomycin에, 그람 음성균군에서는 amikacin과 3세대 cephalosporin에 대해 비교적 높은 감수성을 보였다. 7) 사망율(병원내 사망이나 hopeless discharge)은 20.8%(5례)였으며, 예후는 그람 양성균 군과 그람 음성균군에서 통계적으로 유의한 차이를 보이지 않았다. 결 론 : 신생아 세균성 뇌막염은 그람 양성균과 그람 음성균 간의 빈도와 예후의 차이는 보이지 않았고 예후가 불량하므로 세균성 뇌막염이 의심되는 환아에서는 적극적인 치료가 필요하리라 사료된다.

신생아의 조기수유에 관한 실험적 연구 (An Experimental Study on the Early Feeding of Infants)

  • The newborn human is the only mammalian whose mother does not have a food supply ready for it's offspring at birth. From two to four days usually elapse before the mother's supply If milk appears, and during this period, some kind of artificial feeding should be supplied to the infants. Because of this factor, there has been continued debate fog the past hundreds of years as to when the first feeding should be started Accordingly, many experiments were carried out by scholars and because of these, Pre-lateral feedings were believed to be necessary. Many types of pre-lateral feedings were tried and the conclusion was reached that glucose water was the best food for the first infants'feedings. Traditionally, This has been started 12 hours after birth. The causes for the 12 hours delay were thought to (1) provide rest for the infants: (2) prevent regurgitation ana vomiting which tended to be prevalent during this tine: (3) in cases of low weight infants, prevention of aspiration pneumonia. From recent studies of newborn physiology and as pediatric medicine has been rapidly advancing, many studies hare been carried out concerning the improvement of infant nutrition and the early feeding of infants has been emphasized. This author believes it would be very beneficial to try two different kinds of feedings for the infant. (1) experimental feedings ana (2) comparative feeding, and during this period to investigate and compare the infants blood sugar level, hematocrit, gamma globulin level weight changes and to observe the infant reaction ill order to search for a more desirable feeding program. This study was conducted from January to March 1974 with data related to 40 healthy newborn infants (male 21, female 19: weight, 2.79∼4.20㎏ : gestation, 39∼40 weeks) born at Ewha Womens University Hospital and the results obtained were as follows : 1. At time of birth the blood sugar level from the cord sample averaged 88.99㎎/100㎖, but the blood sugar level rapidly dropped after 2 to 3 hours and reached the lowest point after 10 to 11 hours (54.48㎎/100㎖) and rose again by the 24 hour time period (76.80㎎/100㎖). Changes in the blood sugar level of the experiments: groups and the compare-five group was not significantly different until the 6 to 7 hour period, but by the 10 to 11 hour period the blood sugar levels of the experimental group (49,10㎎/100㎖) and the comparative group (49.70㎎/100㎖) were lower than the remainder of the experimental groups. 9. There ware no significant weight changes between the two groups. Average weight at birth was 3.35㎏, but at the 24 hours period birth weight averaged 3.29㎏. (1.8% reduction of birth weight). It continually lowered until at 48 hours, average weight was 3.26㎏ (2.7% reduction from birth weight.) 3. Hematocrit readings showed no significant difference between the groups. Hematocrit, the average value at birth, was 28.07% and abruptly elevated to average 64.35% at the 2 to 3 hour period, then slowly lowered to an average of 59.67% at the 6 to 7 hour period, 55.10% at the 10 to 11 hour period, ana 53.70% at the 24 hour period. 4. At birth, average gamma globulin value averaged 1,39㎎/100㎖. and at the 24 hour period averaged 1,52㎎/100㎖ revealing no significant difference between the two feeding groups. 5. Such factors as voiding, passing of meconium, regurgitation and vomiting showed no significance between the two feeding groups. However, the number of infants voiding and passing meconium in the experimental groups during the first 12 hours was slightly greater. In general there was an increased tendency for regurgitation and. vomiting among a small group of the infants during the first 24 hours which thereafter decreased. 6. Fluid intake averaged 24.38cc at the first feeding and increased to average 30.48cc at the third feeding and further increased to 73. 00cc at the fifteenth feeding. Finally it was suggested that the most reasonable method of early feeding is to give less than 25cc of 5% glucose water and/or 8% powdered milk at 8 to 9 flours after birth in order to prevent hypoglycemia and dehydration.

한대(漢代) 이전의 의적(醫籍)을 통한 '포제(炮制)'의 연구 (A Study on processing of medicinal on medical books of before Han(漢)dynasty)

  • We derived following result by organizing research about processing of medicinal of before Han(漢) dynesty. The human being intake of natural substance for the purpose of treatment was what happened later than the use of natural substance as food. According to the record of by the early years of Shang(商) dynasty, we can assume that we cooked food with water and fire. The reason why there is no appearance of common production that can be included under the name of 'Tang Ye(湯液)' in the medical record discovered from Ma Wang Dui(馬王堆) is because 'Tang Ye' was yet developed. However, as the presentation of format of medicine process, there was gradual formation of medicinal fluid concept. There are quite of records on major details of cloth manufacture like washing and selection, grinding, processing of medicine from the recordings of "Wu Shi Er Bing Fang(五十二病方)", "Yang Sheng Fang(養生方)", "Za Liao Fang(雜療方)" discovered at Ma Wang Dui. It used words like 'Ze(擇)', 'Qu(去)' for the selection and 'Jiu(酒)', 'Zhuo(濯)' for the wash as a process method before cloth manufacture. When filter the processed medicine, it used words like 'Zhuo(捉)', 'Suo(索)', 'Jun(浚)' and used 'Yin Gan(陰乾)', 'Bao(暴)', 'Yang(暘)' for dry. The 'cutting(切削)' that crushes the medicine used different names based on the properties of medicines. The most frequent crush is 'Ye(冶)' and it means the powered medicine after dry. There was thermal process of mild fire(微火) and heating of 'Wen(溫)'. There are many states of medicine seen from the medical record discovered at Ma Wang Dui so they can be said as original medicine. 藥末劑 is relatively commercialized type then. Here, it includes later 湯劑 but there was no name such as 'decoction(湯)' or 'decoction of medical ingredients(湯液)'. Also, 'Fu Ju(㕮咀)' is the transformation of what was 'Fu Qie(父且)' at "Ja Liao Fang" of medical books of Ma Wang Dui with time flow. The original meaning of 'Fu Qie(父且)' is 'Fu Zu(斧俎)' and it means the crushing medicine with axe. The most important thing among the medical books of Han dynasty is "Shen Nong Ben Cao Jing(神農本草經)" and "Shang Han Za Bing Lun(傷寒雜病論)" of Zhang Zhong Jing(張仲景). "Shen Nong Ben Cao Jing" mentioned the dry method of medicine, collection and process production time, cooked and uncooked use of medicine and there are several types of medicine. Other than those, it mentioned 'Seven methods of combining herbs(七情合和)' to address cautions for combining medicines. Therefore, the 'processing of medicinal' in east Han dynasty period entered the theoretical step. However, there is only little recording on cloth manufacture of detailed medicine. From the "Shang Han Za Bing Lun" of Zhang Zhong Jing, the development in the way of 'processing of medicinal' reveled the cloth manufacture for each medicine. This tradition is continued until today and so it presents the development of purpose of 'processing of medicinal' is to greatly present the effect of medicine and to reduce the side-effect.

비위생리(脾胃生理)에 수용(授用)되는 황제내경(黃帝內經) 어구(語句)에 관(關)한 연구(硏究) (Studies on the phrases of Yellow Emperor's internal classic(黃帝內經) for the physiology on the spleen and stomach)

  • The research of the phrases related with physiology of stomach and spleen in the contents of Huang Di Nei Jing(黃帝內經) known as the Bible of oriental medicine will make a contribution to a deep understanding of disease of stomach and spleen and a proper clinical diagnosis and treatment of them. In this research of the most appropriate glosses recorded nine kinds of representative medical books including Huang Di Nei Jing Somoon(黃帝內經素問) of Wang Bing(王氷) were picked out: The summaries of the selected contents are as follows: 1. The word 'saliva(涎)' in 'the spleen controls saliva(脾爲涎)' can be viewed as a generic term referring to oral cavity secretion gland as well as the secretion fluid of salivary gland. 2. The phases 'a large reservoir(太倉)', barn organs', 'a reserboir of food stuff', 'a stomach as the market(胃爲之市)', etc mean the function of stomach to receive food(胃主受納). 3. The phase 'generation of five tastes(五味出焉)' means both 'the function of stomach to transform food into chyme(胃主腐熟)' and 'the channelling function of spleen.(脾主運化)' 4. The flowing of the food-Qi(食氣) into stomach brings about spreading Jung(精) into liver and then percolating Jung(精) flow into channel. The channel-Qi(脈氣) flows into lung through channel. As a result, all kinds of channels gather together in lung and Jung(精) is sent into skin and hair. The assembly of Jung(精) with skins and channels moves Qi(氣) into fu-organ and so jung(精) and mental activity(神明) in fu-organ(府) come to be in four organs(四臟). Then if Qi(氣) comes back to power balance unit(權衡) being in the state of equilibrium(權衡以平), the hole of Qi(氣口) comes to determine the matter of life and death through achieving Chun-quan-chi(-寸-關-尺). The above mentioned phrases means the digestion, asorption and transmission of food. When food is taken in stomach, Jung-Qi(精氣) comes to be over flowed upward into spleen, back into lung, finally downward into bladders through water-conduit(水道) controlled by lung. When water- Jung(水精) radiates into whole body with channels of five organs(五臟), both of them fit together with and yin-yang(陰-陽). Therefore, the grasping of the rise and decline of yin-yang(陰C-陽) is necessary to consult patients. The above mentioned phrases is properly viewed to designate the asorption, transmission and excretion of food. 5. Spleen controls flesh(脾之合肉也), the state of spleen is known by human lips, and what this means is that liver plays functions of spread and expansion(肝主疏泄). 6. The phrase 'Jung Jung'((中精)) in 'gallbladder dominates Jung jung(膽主中精)', which in one of the specific expression of 'liver plays functions of spread and expansion(肝主疏泄). 7. It is right that the phase 'The eleven organs in all are determined by gallbladder'(凡十,一臟取決於膽也) is correctly paraphrased as 'only one of ten organs, spleen, is determined by gallbladder'.(凡十,一臟取決於膽也), 8. The small intestine is an organ. which receives the materials digested and sends them out. This means that the function of transforming materials(化物) factually refers to that of separating clearity and blur(泌別淸濁). And it is also thought to have the function of ascending clearity and descending blur(升淸降濁), 9. A large intestine is a transmitting organ(傳導之官) from which a change comes out(變化出焉). the phrase 'change'(變化) in this sentence means both the intake of water and nutrition and the formation procedure of stool through excretion of mucocele.
