꽃차의 소비자 구매 행태 및 지불의사에 대한 연구 (A Study of the Consumer's Purchase Behavior and Willingness-to-Pay on Flower Tea)

  • The objective of this study is to propose the motivation of the analysis on consumer's purchase behavior and willingness-to-pay for flower tea. Therefore, we survey the purchase behaviors on flower teas as compared with leaf teas such as green teas. We also analyze the willingness to purchase and pay for such teas. The reasons for consuming flower teas are 'flavor', 'beauty/diet', 'health', consecutively. Consumers prioritize 'safety', 'quality', 'price', and 'design' when purchasing flower teas. Nevertheless, it is also essential to consider 'flavor' as a quality factor. It is necessary to differentiate the process and marketing strategies for the development of flower teas.

Effects of Oxygen Scavenging Package on the Quality Changes of Processed Meatball Product

  • Processed meatball products were packaged in a passive package without oxygen scavenger as 1 control and 3 active packages of which have PP-based oxygen scavenger master batch materials (OSMB) of 40, 80, and 100%(w/w) in the middle layer and stored at 23 and $30^{\circ}C$ up to 9 months. Quality changes of packaged products were evaluated by measuring the oxygen concentration of the headspace in containers, thiobarbituric acid (TBA), color, and flavor. The oxygen concentration of the package having 100% OSMB was lower than those of 40 and 80%. The color changes and TBA values of the meat ball in the package containing 100% OSMB were the least among the treatments. Using principal component analysis (PCA), the control showed more flavor change than the packages containing oxygen scavenger. As a result, all active packages could extend the shelf life of the meatball products compared with that of the passive package.

꽁치 어육을 이용하여 제조한 어묵의 품질 특성 (Quality Characteristics of Fish Cake made with Saury (Cololabis saira) Fishmeat)

  • The purpose of this study was to investigate the overall preference of saury fish cake made. To reduce off flavor of saury and improve sensory properties of saury fish cake, different types of spices (ginger, garlic, basil and rosemary) and different types of vegetables (onion, carrot, paprica, cabbage and hot pepper) were added, after which sensory properties were evaluated. The results of preference test showed that ginger, rosemary, and onion scored the highest in terms of taste, and overall preference. Moisture, hardness and gumminess of saury fish cake with vegetables was reduced but increased during storage. On the other hand, cohesiveness and resilience were reduced. Finally, ginger and rosemary showed the lowest off flavor taste. Saury fish cake made with onion and hot pepper scored the highest in the preference test.

표고버섯분말 첨가 파스타의 제조조건 최적화 (Optimization of Pasta with the Addition of Letinus edodes Powder)

  • The study aimed to determine the optimal mixing ratio of two different amounts of Letinus edodes powder and egg for preparation of pasta. The complete analysis was conducted using the Design Expert 7 program (State-Easy, Minneapolis, MN). Response surface methodology revealed 10 experimental points, including two replicates for L. edodes powder and egg. L. edodes pasta formulation was optimized using rheology. Lightness and redness displayed a lineal model pattern, whereas yellowness was represented by a quadratic model. The sensory evaluation parameters of texture, color, flavor, appearance and overall quality showed significant differences for color (p<0.01), flavor (p<0.05), texture (p<0.05) and overall quality (p<0.05). All sensory parameters showed significant values in a quadratic model. The optimum formulations processed by numerical and graphical optimization were determined as 15 g of L. edodes powder and 37.5 g of egg.

배추김치 발효에 미치는 냉이의 첨가 효과 (Effect of Capsella bursa-pastoris (L.) Medicus on fermentation of Kimchi)

  • This research was performed to investigate the potential use of Capsella bursa-pastoris (L.) as an ingredient to improve the biological function and flavor of kimchi. The quality characteristics were studied for kimchi with or without Capsella bursa-pastoris (L.) Medicus (CBM kimchi) during fermentation for 25 days at $10^{\circ}C$. The pH changes of CBM kimchi were slower than those of control but did not show any significant difference after addition of Capsella bursa-pastoris (L.) Medicus during fermentation. The titratable acidity of CBM kimchi was higher than that of control. The log number of total bacteria was lower about 1.5 $log_{10}$ cycle in CBM kimchi than in control during fermentation. However, lactic acid bacteria did not show significant difference between CMB kimchi and control. Sensory qualities of kimchi such as color, taste, flavor and overall acceptability were significantly improved by addition of 3% Capsella bursa-pastoris (L.) Medicus(p<0.05).

Volatile Components in the Soy Sauce Manufactured by Bacillus Species and Fused Yeast

  • To develop a method appropriate for mass production in a factory, we manufactured soy sauce with Bacillus species SSA3-2M1 and fused ST723-F31 at $30^{\circ}C$ with aeration of 1/3 vvm for 40 days. The flavor components extracted from the manufactured soy sauce were fractionated to neutral, acidic, basic and phenolic fraction and identified by GC-mass. Among the 60 kinds of identified flavor components, 16 and 23 components were detected in traditional Korean soy sauce and soybean paste, respectively. There were three peak regions that smelled like soy sauce with the GC sniffing test of flavor components and 2, 6-dimethyl pyrazine, benzaldehyde, 2-methoxy phenol, phenol and benzeneethanol which were identified as character impact compounds of traditional Korean soy sauce and soybean paste were identified in the region that smelled like soy sauce. It is therefore considered possible to achieve mass production of soy sauce with standard quality by Bacillus species SSA3-2M1 and fused ST723-F31 in the factory.

볶은 쌀보리를 혼합한 녹차의 휘발성 향기성분 (Volatile Flavor Components in Green Tea Blended with Parched Naked Barley)

  • 중작녹차를 효율적으로 이용하여 좋은 향미와 기능성을 가진 차를 만들기 위해 덖은 쌀보리에 중작녹차를 혼합하였다. 쌀보리녹차의 휘발성 향기성분의 추출은 Likens and Nickerson형 추출 장치를 사용한 동시증류추출방법에 의해 완수였으며, 그 농축된 추출물은 GC (Gas chromatography)와 GC-MS (Gas chromatography - mass spectrometry)에 의해 분석되었다. 3-methylbutanal, 2-methylbutanal, 그리고 2,5-dimethyl pyrazine 등의 화합물이 쌀보리로부터 분리, 동정되었다. 그리고 녹차에서는 ${\alpha}$-terpinolene, indole, ${\beta}$-ionone 등을 포함한 화합물을 분리, 동정하였으며, 또한 쌀보리와 녹차를 혼합한 쌀보리녹차에서는 2,5-dimethyl pyrazine, indole, 3-ethyl-2,5-dimethyl pyrazine 등을 포함한 화합물들이 분리, 동정되었다. 그 결과로부터 일반 중작녹차보다 볶은 쌀보리와 녹차를 혼합한 쌀보리녹차가 관능적으로 더 좋은 향미를 주는 요인으로 작용하는 것 같았다.

전자코와 전자혀를 이용한 시판 증류주의 향미특성 분석 (Flavor Analysis of Commercial Korean Distilled Spirits using an Electronic Nose and Electronic Tongue)

  • 시판 증류주 13종을 선정하여 전자코, 전자혀를 이용한 향기패턴과 맛패턴을 분석하였다. 전자코 분석 결과, 원재료에 따라 증류주의 향기성분이 구분됨을 확인하였다. 원재료가 좁쌀인 증류주가 향기 성분이 가장 많으며 쌀의 함량이 적고 보리가 함유된 증류주가 향기성분이 가장 적었다. 또한 오크통에서 숙성시킨 원액을 100% 사용한 경우 향기성분이 뚜렷하게 구분됨을 보였다. 따라서 숙성재에 의해 증류주의 향기성분이 구분될 것으로 예측된다. 시판 증류주를 전자혀로 분석한 결과, 증류주는 단맛과 쓴맛 보다는 신맛, 감칠맛, 짠맛으로 시료간의 차이가 구분되었다. 본 연구를 통하여 전자코와 전자혀가 증류주 모니터링에 활용이 가능한지 여부를 확인하고 분석한 시판 증류주의 향미특성 결과를 추후 증류주 개발 및 품질관리에 이용하고자 한다.

식용 돼지췌장 리파제가 저급지방산 생성과 체다치즈 풍미향상에 미치는 영향 (Effects of Food Grade Porcine Pancreatic Lipase on the Production of Short-Chain Fatty Acids and its Contribution)

  • 식용 돼지췌장 리파제를 두 가지 함량으로 치즈제조시 혼합하여 $7^{\circ},\;13^{\circ},\;21^{\circ}C$에서 숙성시켰다. GC 분석결과 효소처리한 치즈에서는 Control에서 보다 훨씬 많은 양의 저급지방산이 생성되었다. 돼지췌장 리파제를 많이 넣어 $21^{\circ}C$에서 숙성시킨 치즈의 경우 1주 후에 medium flavor 치즈, 3주 후에 거의 sharp flavor 치즈가 특별한 결함없이 생산되었다. 또한 이 효소를 조금 넣은 치즈에서는 양호한 질의 치즈가 많았는데, $7^{\circ},\;13^{\circ},\;21^{\circ}C$에서 3주부터 15주의 숙성기간 중 medium과 sharp flavor 치즈가 생산되었다. 통계분석에 의하면 체다풍미와 caproic acid의 함량에서, 또 체다풍미와 butyric acid, caproic acid 혼합함량 상호관계에서 유의성이 있었다. 적합한 조건을 사용한다면 돼지췌장 리파제는 체다치즈의 숙성을 촉진시키는데 사용 가능한 것으로 사료된다.

개체동결 굴(Crassostrea gigas) 엑스분을 이용한 굴 풍미계 과립조미료의 제조 및 품질특성 (Processings and Quality Characteristics of the Oyster Crassostrea gigas Granular Flavor Seasoning from IQF Oyster Extract)

  • The pacific oyster Crassostrea gigas has a desirable taste and flavor that differs from those of other fish and shellfish. In order to develop a high value-added product from individually quick-frozen oyster extract (IQFOE), we prepared an oyster granular flavor seasoning (OGS) from IQFOE and characterized its qualities. The OGS was prepared by granular molding and fluidized bed drying with inosine monophosphate (IMP, 0.1%), yeast extract powder (1.4%), tangle extract powder (0.6%), monosodium glutamate (MSG, 5.0%), microcrystalline cellulose (0.6%), lactose (27.5%), salt (33.0%), spray-dried IQFOE (22.5%) as a powdered materials, and IQFOE ($Brix\;25^{\circ}$, 7.0%), soy sauce (0.4%) and water (1.7%) as a liquid materials. The moisture, crude protein, pH and salinity of the OGS were 3.4%, 12.5%, 6.50 and 32.0%, respectively. Especially, the OGS revealed very higher amino-N content (1,856.0 mg/100 g) than that (1,291.2-1,610.2 mg/100 g) of other commercial flavor seasonings. In taste-active compounds, free amino acid contents was 1,359.0 mg/100 g, and major ones were glutamic acid, taurine, hydroxyproline, glycine, lysine, phosphoserine, proline in order. And OGS showed good organoleptic qualities for taste, odor and general preference compared with commercial flavor seasonings on a local market.
