초석잠 분말을 첨가한 두부의 항산화 활성 및 품질 특성 (Antioxidant Activities and Quality Characteristics of Tofu Supplemented with Chinese Artichoke Powder)

  • This study is conducted to investigate the effects of Chinese artichoke powder on the antioxidant activities and the quality characteristics of tofu. Tofus are being prepared with different amounts of Chinese artichoke powder in ratios of 0, 0.2, 0.4, 0.6 and 0.8% according to the soy milk quantity. According to the increasing contents of Chinese artichoke powder, the yield and turbidity of tofus are significantly increased (p<0.001) whereas the pH levels of tofus are significantly decreased (p<0.001). In terms of color, the L, a and b values are significantly decreased with increasing Chinese artichoke powder concentrations (p<0.001). From the texture profile analysis of the tofus, the chewiness, gumminess and cohesiveness of tofus are significantly decreased (p>0.01) according to the levels of added Chinese artichoke powder content. The contents of isoflavones such as daidzin and genistin are significantly increased with increasing concentrations of Chinese artichoke powder (p<0.001). The microstructure of tofus is being examined by SEM (Scanning Electron Microscope). In the sensory test, the sample which contains 0.4% of Chinese artichoke powder is ranked significantly higher (p>0.001) than the other groups according to several sensory parameters such as appearance, color, flavor, taste, texture and the overall preferences.

Association between taste perception, nutrient intake, and mental health in young Japanese women

  • BACKGROUND/OBJECTIVES: Taste perception is influenced by both nutritional factors and psychological factors. This study was undertaken to measure the 4 basic taste perceptions, nutrient intake, and mental health, and to examine the factors that affect insensitive taste perception in young Japanese women. SUBJECTS/METHODS: Young women in their late teens and twenties were enrolled as subjects. Taste perception was measured by applying the filter-paper disc method over areas of the chorda tympani nerve. Nutritional status was evaluated using brief, self-administered diet history questionnaires. The index of nutritional status was based on the 2015 Japanese dietary reference intakes. Mental health was assessed using the Japanese translation of the Profile of Mood States short version. This study was approved by the ethical committee at Osaka University. RESULTS: The normal taste perception group (four basic tastes [sweet, salty, sour, and bitter] identified as normal taste perception) comprised 55.4% of the subjects, while the abnormal taste perception group (more than 1 abnormal taste perception was perceived, regardless of flavor) comprised 44.6% of the subjects. There were no significant differences in nutrient intake (except manganese) and mental health between the normal and abnormal taste perception groups. Subjects who took 5 mg to less than 7.1 mg zinc per day were at significantly decreased risk of insensitive taste perception compared to subjects who consumed less than 5 mg zinc per day [Regression coefficient 0.831, 95% confidence interval 0.694-0.996]. CONCLUSION: The present results suggest that insensitive taste perception could be associated with zinc deficiency in young women in their late teens and twenties.

Effect of ultrasound treatment on the quality properties of chicken breast meat and the broth from Korean chicken soup (Baeksuk)

  • This study investigated the influence of ultrasound treatment on the quality properties of chicken breast meat and the broth from Korean chicken soup (Baeksuk). In this study, the internal temperature, malondialdehyde content, textural profile, color, dry matter, protein content, phenolic content and sensory properties of chicken breast meat broth from chicken soup with ultrasound treatment were analyzed. The chicken, plants, salt, and water were vacuum packaged in a retort pouch. The chicken soup was manufactured with ultrasound treatment (45 kHz and $1.6W\;cm^{-2}$) in a water bath at $85^{\circ}C$. The texture properties, color, and lipid oxidation of the chicken breast meat from the chicken soup were not affected by the ultrasound treatment. There was no significant difference in the lipid oxidation in the broth of the chicken soup between the control and ultrasound treatment. The dry matter and crude protein contents of the broth were significantly increased by the ultrasound treatment. The broth flavor of the chicken soup manufactured with the ultrasound treatment received a higher score than that of the control in the sensory analysis. There were no differences in the sensory properties of the chicken breast meat from the chicken soup between the control and ultrasound treatment Therefore, the broth quality of the chicken soup can be improved by heating with ultrasound treatment. Additionally, to apply ultrasound technology to the production chicken breast meat and the broth from chicken soup, it is necessary to further study the quality characteristics of the breast meat and broth according to various frequencies and strengths.

초미세 다시마 분말을 활용한 즉석 어묵 면 제조기술연구 (Study on Instant Fish Cake Noodle Manufacturing Techniques Using Ultra-fine Powdered Kelp)

  • 다시마를 첨가한 건어묵 면의 수분함량의 평균값은 3.71±0.12%이었으며 수분활성도는 0.185-0.332로 다시마 분말함유량이 증가할수록 수분활성도가 낮아졌다. 재수화도는 다시마 분말함유량이 3%와 5%일 때, 각각 1.49, 1.77 g water/g solid로 대조군에 비해 증가하였다. 색도 측정결과 녹색계열의 다시마 분말함유량이 증가할수록 명도, 적색도 및 황색도 값이 낮아지는 결과를 볼 수 있었다. TPA를 이용한 조직감분석에서는 다시마 분말의 함유량이 증가할수록 탄력성은 증가하였고 경도와 씹힘성이 낮아졌다. 관능검사 결과로 5% 다시마 분말을 첨가한 어묵 면이 조직감, 맛, 전체적인 기호도 평가에서 가장 높게 나타났으며 면발의 단단함에 대한 강도에서는 다시마 분말의 함량이 많아질수록 낮은 결과를 나타내었다.

Nuclear Magnetic Resonance (NMR)-Based Quantification on Flavor-Active and Bioactive Compounds and Application for Distinguishment of Chicken Breeds

  • The purpose of this study was to use 1H nuclear magnetic resonance (1H NMR) to quantify taste-active and bioactive compounds in chicken breasts and thighs from Korean native chicken (KNC) [newly developed KNCs (KNC-A, -C, and -D) and commercial KNC-H] and white-semi broiler (WSB) used in Samgye. Further, each breed was differentiated using multivariate analyses, including a machine learning algorithm designed to use metabolic information from each type of chicken obtained using 1H-13C heteronuclear single quantum coherence (2D NMR). Breast meat from KNC-D chickens were superior to those of conventional KNC-H and WSB chickens in terms of both taste-active and bioactive compounds. In the multivariate analysis, meat portions (breast and thigh) and chicken breeds (KNCs and WSB) could be clearly distinguished based on the outcomes of the principal component analysis and partial least square-discriminant analysis (R2=0.945; Q2=0.901). Based on this, we determined the receiver operating characteristic (ROC) curve for each of these components. AUC analysis identified 10 features which could be consistently applied to distinguish between all KNCs and WSB chickens in both breast (0.988) and thigh (1.000) meat without error. Here, both 1H NMR and 2D NMR could successfully quantify various target metabolites which could be used to distinguish between different chicken breeds based on their metabolic profile.

늙은 호박(Cucurbita moschata D.) 가루 첨가량에 따른 호박편의 품질특성 및 저장성 (Quality Characteristics and Storage Properties of Hobakpyeon with Different Amounts of Pumpkin (Cucurbita moschata D.) Powder)

  • The objective of this study was to investigate the effects of different amounts of pumpkin powder on the quality characteristics of hobakpyeon using physicochemical and sensory properties, as well as on its retrogradation rate during storage. As the amount of pumpkin powder increased, the following effects on the quality characteristics were observed: moisture and amylose contents decreased while protein content increased (p<0.05), and in vitro protein digestibility (IVPD) decreased (p<0.05). Levels of slowly digestible starch and resistant starch fractions increased, while the content of rapidly digestible starch decreased. The starch digestion index and rapidly available glucose content also decreased. Among the physical properties, the L-value decreased while the b-value increased (p<0.05). Texture profile analysis revealed that all textural properties except adhesiveness decreased, and presented significant differences in hardness and chewiness (p<0.05). Sensory properties such as color, flavor, and sweetness increased while others such as wetness and chewiness decreased (p<0.05). Effects on the physicochemical properties during refrigerated storage were also compared between the control and 9% hobakpyeon (9%HP). According to the results, moisture content gradually decreased in the 9%HP compared to the control. Amylose content significantly increased in 9%HP whereas no significant changes were observed in the control. In both types of hobakpyeon, IVSD decreased significantly, showing higher values in 9%HP, whereas mechanical hardness increased, showing lower values in 9%HP. The L-value decreased significantly in the 9%HP whereas no significant changes were observed in the control. In conclusion, the above results suggest that hobakpyeon with low IVSD may be obtained by the addition of 9% pumpkin powder, and also showed that pumpkin powder delayed the rate of retrogradation in 9%HP during storage.

Enzymatic Activity and Amino Acids Production of Predominant Fungi from Traditional Meju during Soybean Fermentation

  • To investigate the effect of the predominant fungal species from Korean traditional meju and doenjang on soybean fermentation, the enzymatic activity and amino acid production of twenty-two fungal strains were assessed through solid- and liquid-state soybean fermentation. Enzymatic activity analyses of solid-state fermented soybeans revealed different enzyme activities involving protease, leucine aminopeptidase (LAP), carboxypeptidase (CaP), glutaminase, γ-glutamyl transferase (GGT), and amylase, depending on the fungal species. These enzymatic activities significantly affected the amino acid profile throughout liquid-state fermentation. Strains belonging to Mucoromycota, including Lichtheimia, Mucor, Rhizomucor, and Rhizopus, produced smaller amounts of total amino acids and umami-producing amino acids, such as glutamic acid and aspartic acid, than strains belonging to Aspergillus subgenus circumdati. The genera Penicillium and Scopulariopsis produced large amounts of total amino acids and glutamic acid, suggesting that these genera play an essential role in producing umami and kokumi tastes in fermented soybean products. Strains belonging to Aspergillus subgenus circumdati, including A. oryzae, showed the highest amino acid content, including glutamic acid, suggesting the potential benefits of A. oryzae as a starter for soybean fermentation. This study showed the potential of traditional meju strains as starters for soybean fermentation. However, further analysis of processes such as the production of G-peptide for kokumi taste and volatile compounds for flavor and safety is needed.

빈대떡의 재료혼합비율의 최적화 (Optimizing Ingredients Mixing Ratio of Mungbean Pancake)

  • 영양성과 경제성 및 내외국인에게 선호도가 높은 빈대떡에 대한 40대이상의 소비자들의 기호도와 물성으로 재료혼합비율을 반응표면 분석법으로 최적화하였다. 먼저 전통적 방법으로 조리된 빈대떡의 재료 혼합비율을 최적화 한 뒤, 오징어와 대두를 단백질 대체재료로 사용한 개량빈대떡의 흔합비율을 최적화하였으며, 또한 이들의 영양적인 품질을 평가하여 단백질 재료의 대체에 따른 개량빈대떡의 품질의 변화를 알아본 결과는 다음과 같다. 빈대떡 재료의 3가지 요인변수(전통빈대떡, $X_{1}$ : 녹두, $X_{2}$ : 돼지고기, $X_{3}$ : 혼합채소 ; 개량빈대떡, $X'_{1}$ : 돼지고기, $X'_{2}$ : 오징어, $X'_{3}$ : 대두)의 변화에 따른 기호도의 관능적 특성($Y_{1}$ : overall acceptability, $Y_{2}$ appearance, $Y_{3}$ : color, $Y_{4}$ : flavor, $Y_{5}$ : hardness)인 반응변수의 변화를 분석한 결과, 전통빈대떡의 경우 녹두 : 돼지고기 : 채소의 비율이 0.55 : 0.13 : 0.32로 돼지고기 비율이 현저히 낮고 녹두 비율이 높은 것이 선호되었으며, 이때 예상되는 관능치는 6.7로서 양호하였다. 이를 돼지고기 대신 오징어와 대두로 부분 대체한 개량빈대떡의 경우는 돼지고기 : 오징어 : 대두의 비율이 0.03 : 0.42 : 0.55로 대두의 비율이 높은 것이 선호되었으며, 예상점수는 6.5로 전통빈대떡과 같은 정도로 양호하였다. 구성 식재료가 물성적 특성에 미치는 영향은 전통빈대떡의 경우, 녹두와 돼지고기양이 증가할수록 탄력성, 응집성을 비롯한 모든 물성 특성치가 증가한 반면, 채소양이 증가에 따라서는 경도와 부착성을 비롯한 대부분의 물성치가 감소하다가 최소점에 도달하였다. 개량빈대떡에서는 오징어 대체량이 많아짐에 따라 대부분의 물성치가 높아진 반면, 대두양이 많아질수록 대부분의 물성치는 낮아졌다. 최적비율 빈대떡의 영양학적인 평가는 개량빈대떡이 전통빈대떡보다 조단백, 조지방, 총열량이 낮았고 회분양은 높았으며, TBA value와 갈변도는 높았지만, 단백질 효율도 유의적으로 높게 나타나 단백질급원을 대두와 오징어로 대체하여 기대했던 긍정적 효과를 얻을 수 있었다. 이와 같이 혼합물 실험계획법에 의한 반응표면분석으로 목표세대의 기호도에 맞춘 다양한 맛의 전통식품을 상품화 한다면,우수한 전통 식생활문화를 계승 발전시키는 동시에, 전통음식의 세계화가 촉진될 것으로 생각된다.

살구즙을 첨가한 건식 쌀가루 행병의 품질 특성 연구 (Quality Characteristics of Haengbyeong using Dry Rice Flour added with Raw Apricot Juice and Steamed Apricot Juice)

  • 본 연구는 살구즙의 처리방법(생살구즙과 찐살구즙)과 첨가량(0, 20, 40, 60%)을 달리하여 건식 쌀가루를 이용한 행병을 제조하였으며, 수분, 색도, pH, texture 분석 및 관능검사를 통해 품질 특성을 고찰함으로써 살구즙을 첨가한 행병의 최적 제조 조건을 제시하였다. 살구즙 첨가량이 증가할수록 행병의 수분 함량(p<0.001)과 pH(p<0.001)는 감소하였으며, L값(p<0.001)은 감소하였고, a값(p<0.001)과 b값(p<0.001)은 증가하였다. 첨가량이 증가할수록 경도(p<0.001)와 검성(p<0.001)은 증가하였지만, 부착성(p<0.001)과 응집성(p<0.05)은 감소하였다. 특성 차이조사 결과, 외관 특성에서는 살구즙 첨가량이 증가할수록 살구색(p<0.001)과 건조함(p<0.001)도 증가하였으며, 향미특성에서는 새콤한 향(p<0.001), 시큼한 향(p<0.001), 풋과일향(p<0.001)이 살구 첨가량의 증가함에 따라 증가하였고, 맛 특성에서는 신맛(p<0.001), 시큼한 맛(p<0.001), 떫은 맛(p<0.05)이 살구즙 첨가량이 증가할수록 강하게 평가되었다. 기호도 조사 결과, 대조군과 살구즙 20% 첨가 행병에서 맛, 조직감 및 전반적인 기호도가 높게 나타났다.

솔잎 쿠키의 항산화활성 및 품질특성 (Antioxidant Activity and Quality Characteristics of Pine Needle Cookies)

  • 본 연구에서는 솔잎 분말의 첨가량을 0%, 0.5%, 1%, 3%, 5% 첨가한 쿠키를 제조하여 쿠키의 항산화 활성을 입증하고 품질특성을 측정하였다. 솔잎 분말의 총 페놀화합물 함량은 31.37$\pm$0.55 mg GAE/g이며, DPPH 유리라디칼 소거능은 100 ${\mu}g$/mL 수준에서 73.87$\pm$2.02%로 나타나 높은 항산화 활성을 보여 주었다. 제조된 쿠키의 DPPH radical 소거능을 측정하여 항산화 활성을 비교한 결과 솔잎 분말의 첨가량이 증가함에 따라 항산화 활성도 유의적으로 증가하였으며 항산화 활성을 가지는 total polyphenol 함량도 솔잎 분말 첨가량 증가에 따라 증가하였다. 또한 이들의 상관관계를 살펴보았는데, DPPH radical 소거능과 total polyphenol 함량이 양의 상관관계 r=0.989(p<0.001)를 보여주어, total polyphenol 함량이 항산화 활성에 영향을 미치는 것으로 나타났다. 항산화 활성의 기능성과 함께 제품의 적합성 판단을 위해 반죽의 밀도와 pH, 쿠키의 수분함량, 퍼짐성, 손실률, 팽창률, 색도, 조직감, 관능검사 등의 품질평가를 실시한 결과 반죽의 밀도는 솔잎 첨가량이 증가할수록 높게 나타났고, pH는 솔잎 분말 첨가량 증가에 따라 감소되었다. 쿠키의 수분함량은 솔잎분말의 첨가량 증가에 따른 유의적 차이가 나지 않았으며, 퍼짐성 지수는 첨가량 증가에 따라 감소하였고, 손실율은 유의적 차이가 없었으며 팽창률도 5% 첨가군을 제외하고는 유의적인 차이가 나지 않았다. 색도는 솔잎 분말과 쿠키를 굽는 과정에서 생기는 마이얄 반응과 카라멜반응 등의 영향으로 솔잎 분말의 첨가량이 증가할수록 L값과 b값이 낮아지고, a값이 높아졌으며 경도는 솔잎분말 첨가농도에 의존적인 결과가 나타났다. 그리고 기호도 검사에서 외관, 향, 맛, 조직감, 전반적인 기호도를 평가한 결과 솔잎 분말을 1%와 3% 첨가한 솔잎쿠키가 유의적으로 높은 기호도를 보였으며 솔잎특성 강도에서는 색과 솔잎 향, 삼킨 후의 느낌에서 5% 첨가군이 가장 강하였고 느끼한 향과 단맛, 부드러운 정도는 대조군이 가장 강하다는 결과를 얻었다. 고소한 맛에서는 0.5% 첨가군이 유의적으로 가장 높은 점수를 받았다. 이러한 결과로 보아 쿠키에 솔잎 분말을 첨가하는 것은 쿠키의 기호도를 증가시켜주고 동시에 총 페놀함량과 DPPH 라디칼 소거능을 높여주어 쿠키의 가치를 높일 수 있어 바람직할 것으로 사료되며 쿠키제조 시 솔잎분말을 3% 첨가하는 것이 바람직할 것으로 사료된다.
