The food attitudes of 285 Korean female students attending a secondary school in Seoul were examined with respect to the 5 food groups of the Korean Food Tower : grain products, vegetables and fruits, meat, milk, and fats and sweets. An instrument with 22 items was utilized to measure food attitudes toward the five food groups. The items were categorized into five factors through factor analysis to obtain a description of the participants' food attitudes. The five factors are conscious choice of food, health concerns, economics and time influence, interest in foods, and foods that energize. Several facts emerged from examining the food attitudes. The most evident was their response to the items concerning the influence of economics and time on food choice, which the majority consider not limiting their food consumption. Most participants gave favorable responses for vegetables and fruits on all the five factors, but gave unfavorable responses for meat group and fats and sweets in health concerns. They also gave favorable responses for“foods that energize”for all except fats and sweets. Four of the total 25 relationships among food intake (five groups) and food attitudes (five factors) were found to have significant positive correlations (p < .01). To assess the food intake and diet quality by the interrelationship of DDS and DVS of high school girls, this dietary survey was conducted with 253 subjects living in Iksan and Seoul areas using a 24-hour recall method. The average amount of total food intake was 1,133.2 g, with 79.9% of food intake being supplied by vegetable food and 20.1% by animal food and higher in Seoul area. The food consumed most frequently was rice, green onion, garlic, soy sauce, sesame oil, onion, and Kimchi. The food consumed in the largest amounts were rice(303.3 g), milk(62.2 g), and Kimchi(53.4 g). Diet quality was assessed by food group pattern, dietary diversity score(DDS), and dietary variety score(DVS). When investigating the consumption pattern of major five food groups(grain, meat, dairy, fruit, vegetable groups), nobody consumed all five food groups in each meal. The groups most frequently missing were fruits and dairy products. The average number of food consumed per day was 12.1(DVS) and Iksan area scored lower(11.7) on DVS than Seoul area(12.6). The higher DDS and DVS of subjects were, the more MAR and NAR of energy, calcium, vitamin A and C increased. The number of major food groups(DDS)(p<0.01, P<0.05) and that of food items (DVS)(p<0.01) correlated positively NAR(nutrient adequacy ratio) and MAR (mean adequacy ratio) significantly.
To assess the food intake and diet quality of Koreans living in rural areas with discriminative environment, this dietary survey was conducted with 553 subjects living in five different rural areas using a one-day, 24-hour recall method. The average weight of total food intake was 1066g, with vegetable and animal food comprising 83.75 and 16.3% of total food intake, respectively. The average daily food intakes of residents in the five areas were 985g, 1005g, 1028g, 1318g, and 964g, and were significantly different(p<0.001). Residents of Ulju consumed the largest amount of food, 1318g. The total number of food items consumed was 336. The foods consumed in largest amounts were rice(223g), Korean cabbage-Kimch'i(111g), and soybean curd(41g). The foods consumed most frequently were rice, Korean cabbage-Kimchi, green onion and garlic. When investigating the consumption pattern of the major five food groups, only 5% of subjects consumed all five groups. The groups most frequently missing were dairy products and fruits. The average number of foods consumed per day was 16.8, but differed significantly by area(p<0.001). The number of major food groups (DDS, dietary diversity score) and that of food items(DVS, dietary variety score) correlated positively with NAR (nutrient adequacy ratio) and MAR (mean adequacy ratio). People with a DDS of above 4 or DVS of above 20 met two-thirds of the recommended dietary allowance for most nutrients. When assessing the dietary quality of subjects using DDS and DVS, many people appeared not to have a desirable food intake. dietary guidelines should be made considering the nutritional characteristics of different areas to improve the health of people living in those areas.
This study was undertaken to investigate the relationship between body mass index and the food habits of college students. For this purpose, 1030 students of Seoul National University were asked to fill out the questionnaires for the food habit and weight control. Actual weights were also measured, on the spot. The results obtained were as follows. 1. Average height and weight were 173.15 cm, 63.83 kg for male, and 160.52 cm, 52.73 kg for females. The prevalence of underweight, normal and overweight was 32.3, 61.7, 5.5%, respectively. 2. Food habit scores of obese females were lower than normal or underweight females. Male subjects did not show significantly different scores among three groups. 3. Female obese subjects have lower scores than the other groups on the balanced intake of five basic food groups and on the regular meal intakes. Male obese subjects have cholesterol-rich food and animal fat more frequently than normal and underweight males. Male underweight subjects have lower food habit scores on the balanced intake of five basic food groups. 4. Males want to gain weight slightly and females want to lose 4.65 kg weight. All females want to lose weights. Obese males and females want to lose 10 kg weights.
The hypoglycemic effects of five Korean wild vegetables, Aralia continentalis (A. con.), Castanea crenata (C. cre.), Xanthium strumarium (K, str.), Alisma canaliculatum (A. can,) and Eupatorium chinense var. simplicifolium for tripartium (E. tri) which have been utilized for the traditional remedies were investigated in this study. Diabetes mellitus was induced in male Sprague-Dawley rats by injections of streptozotocin (STZ) into the tail veins at a dose of 45 mg/kg. Five groups of STZ-induced diabetic rats were fed one of each experimental diet containing 10% of the Korean wild vegetable powder and normal and STZ-control rats were fed the control diet for five weeks. The body weight change, feed efficiency ratio (FER) and organ weights were compared. The plasma levels of glucose, protein, cholesterol, HDL-cholesterol, triglyceride, free fatty acid, and aminotransferase activity were determined. Mineral (Ca, K, Mg, Na, Cu, Fe, Mn and Zn) contents of the Korean wild vegetables were analyzed. The body weight gain was higher in normal, C. cre., A. can. and E. tri. groups than in the diabetic control group. The FER of C. cre., A. can. and E. tri. groups was significantly higher (p.<0.05) than that of diabetic control group. Liver weight was heavier in A. con., X. str. and A. can. groups compared with the diabetic control group. The weights of kidney were lighter in all five Korean wild vegetable groups than in the diabetic control group. After five weeks, the plasma glucose level tends to be decreased in A. con., A. can. and E. tri. groups. Plasma cholesterol level was decreased the Korean wild vegetables except for X. str. group. Plasma HDL- cholesterol level was significantly higher in A. con., A. can. and E. tri. groups compared with the diabetic control group. Plasma triglyceride and free fatty acid levels were significantly higher in X. str. group compared with the diabetic control group. Mineral contents were higher in E. tri. (Ca, K, Na and Fe). The results suggest that the intakes of A. con., A. can. and E. tri. have a hypoglycemic effect in diabetic rats showing the possibility as the valuable food resources for the prevention of diabetic mellitus.
To study effects of methanol extract of prosomillet on lopid metabolism , five groups of male Sprang-Dawley rats weighing 116$\pm$9 g were fed test diets for four weeks. The five diets consisted of one low fat(5% w/w) diet containing starch as carbohydrate source(normal) and four high fat diets(15% w/w) containing 40.5%(w/w)sucrose(control) and additional 80% nethanol extractof prosomillet at the levels of 0.3% and 1%(w/w) or prosomillet powder at the level of 20%(w/w). Serum level of total cholesterol was a little higher but that of triglyceride was 41% lower in 20% (w/w) prosomillet powder group than in the control group. The cholesterol levels of two Liver cholesterol levels were lower and phospolipid levels higher in all three prosomillet powder group . Fecal excretionof bile acid was most increased in the prosomillet powder group among all five test groups. Acitivity of liver microsomal 3-hydroxy-3-methylglutaryl coenzyme A (HMG CoA) reductase was significantly lower in 0.3% methanol extract fed group than the control and also appeared to be reduced in 1% extract fed one, wherease those of 20 cholesterol 7$\alpha$-hydroxylase were not different among the five groups. Activities of liver cytosilic glucose-6-phosphate dehydrogenase(G6PDH) and malic enzyme were decreased in 0.3% prosomillet methanol extract and 20% powder groups. The results indicate that in addition to fiber, certain active components in prosomillet have potential to exert hypolipidemic effects via regulating hepatic cholesterogenesis and lipogenesis.
This study was performed to evaluate effects of dietary variety scores (DVS) and dietary diversity scores (DDS) on the nutritional quality of the diets of Korean college students, and to examine the association between food group intake patterns and nutritional adequacy. This study examined the relationship of dietary diversity scores (DDS), dietary variety scores (DVS), and food group intake patterns with nutrient intakes using 24-hour recall data (n=.358). The .DDS was calculated from the sum of each of the five food groups consumed as a score of 'I'. DVS was determined by counting the number of food items consumed daily. Food group intake patterns were expressed with the presence or omission of five major food groups-dairy, meat, grain, fruit, and vegetable. The four most prevalent food group patterns and the proportion of the population reporting them were as follows; no dairy and fruit, $23\%;\;no\;dairy,\;20\%;$ no dairy, meat, and fruit, $15\%$; all food groups, $14\%$. Even though the DDS or DVS was higher, the majority of this study population failed to meet the Korean RDA for calcium in both genders and iron in women. Higher DVS scores $(\geq31)$, within all DDS groups, were associated with the largest proportion of individuals consuming more than $75\%$ of the Korean RDA for selected nutrients. The consistency of these results indicates that screening diets to evaluate the overall dietary variety and variety among the major food groups including food group intake patterns provide meaningful information about their quality.
The objective of this study was to compare the electrolytes contents in skeletal muscles of two different groups of rats, one for control fed 20% casein diet, and the other experimental group recovered from 7% casein diet as protein restriction feeding for two weeks at the beginning of this experiment. Two different comparison criteria were used in this study, one for comparison between animals at the same age groups and the other between groups weighing same body weight as the control groups. Food consumption of animals for experimental and control groups were ad libitum. Following measurement and samples were collected: body weight, five different muscles-anterior tibialis (A.T.) extensor digitorium longus (E.D.L.) soleus, plantaris, gastrocnemius-for electrolytes and protein analysis. The experimental groups showed lower body weight than that of control group. Same trend was showen in protein content in five different muscles. Magnesium and potassium content in four muscles except gastrocnemius showed lower and sodium higher in experimental groups than those in control group at fourteenth day, after recovery from protein restriction, electrolytes content change showed differently in four muscles. Magnesium and potassium contents were increased as protein content in diet. Sodium content decreased as one week intake of recovery diet started, thereafter it was rather slowly increased. Phosphorus content in gastrocnemius at the second week in experimental group was slightly lower than that of control group, and it recovered rapider while at the same body weight group it was higher in experimental group.
Fat and sugar reduced yellow layer cake system was developed with varied replacement level of 30%, 60%, and 90% for AD(amylodextrin) and 10%, 30%, and 50% for PD(polydextrose). Physicochemical and sensory characteristics were investigated and optimum replacement level was also decided using response surface methodology. Sample groups of PD10AD30 had significantly the lowest specific gravity and viscosity, indicating the stable batter system with high air incorporation. Sample groups with PD10AD90 showed the highest volume index and were not significantly different from those of the PD10AD30. Sensory results indicated that PD30AD30 were significantly the most springy and moist, and the least hard of all sample groups. Sample groups with PD10AD90 had the least adhesiveness value. To establish the optimum substitution level using RSM, the restriction level was set up as moistness over five point, hardness under five points, and adhesiveness under four points. The optimum substitution level was 20% for PD and 88% for AD.
This study demonstrates that red yeast rice exhibits radical scavenging and antihypercholesterolemic activities in rats fed cholesterol. Sprague-Dawley male rats were divided to five dietary groups (normal, chol-control; and M-1, M-2 & M-3 administered 150, 300, and 500 mg/kg red yeast rice, respectively) and fed their respective diets for 4 weeks. No significant differences in food efficiency ratio (FER) were found among the five groups. The weight of perirenal fat pads decreased with increasing amounts of red yeast rice supplementation. There was a significant decrease in the levels of cholesterol in M-3 group fed red yeast rice with 500 mg/kg compared to those in the chol-control, M-1 and M-2 groups (p<0.05). Among the rats fed the cholesterol-enriched diet, all groups fed red yeast rice showed higher concentration of the HDL cholesterol, but lower concentration of the LDL cholesterol than those of the chol-control group. The scavenging activity of the methanol extract from red yeast rice was increased with increasing amounts of the extract. The glutathione content in the normal group and in the M-3 group were higher than that in the other groups. The M-3 group showed similar hepatic glutathione contents to those of the normal group. These results suggest that red yeast rice may be safe and effective for lowering serum levels of total and LDL-cholesterol, ratio of non-HDL/HDL, and severity of experimental atherosclerosis.
