This study was intended to identify the main factors responsible for the decline in purchase of imported agricultural and fish products after Japan's nuclear power plant accident in 2011 and to compare the effects on imported agricultural produce and imported fish products. Logit model and multiple regression model analyses were performed using consumers' survey data. Psychological and qualitative factors reflecting consumers' food safety awareness and purchasing preferences, which were extracted by Factor analysis, were included as the models' explanatory variables, along with socio-demographic and economic factors. The Logit estimation showed aged, married, and low-income households had significantly higher probability of reducing their purchases of imported agricultural and fish products. However, the multiple regression results pointed out that the actual rate of decrease of imported agricultural and fish products purchases were more significantly affected by non-socio demographic factors such as past experience of purchasing imported agricultural and fish products, future intention to purchasing Japanese agricultural and fish products, and the ratio of imported to domestic agricultural and fish products before the nuclear accident, as well as consumers' feeling of food insecurity and their purchasing preferences. Moreover, the results showed that Korean consumers have reacted more sensitively to the decline in imported fish products than imported agricultural produce after the nuclear accident based on the marginal effects of various socio-demographic and economic factors.
The Purpose of this study is to consolidate the management status of Saggoson in the Choson period by literature research, and examined latest status by field investigation. During the Choson period, there were fish distributors such as Saggoson and Kakju. Saggoson took charge of fish distribution from the fishing ground to the land, and handed over the fish to Kakju who sold over them to the whole country: This distibution system of fish was started from and adapted to the yellow-corvenia fishery of Westhern Sea. There were two resons far this. One was that these fish were. caught much from vast fishing grounds and had a very strong demand, for which professional disributors were needed. The thor was that because fishermen had very limited capital, they had to supply the money for fish production from capitalists like Kakju whom they agreed to sell fish directly to. By this time, it was thought that the fish distibution system for the Westhern Sea fishery was determined by the background and tradition. Meanwile, Saggoson, which has been working far a long time in Westhern Sea, is placed in changing circumstances. That is, small scale fishery Saggoson deals with will be getting fewer, because the big scale reclamation projects in this area threatens the fishery's existence. Also, Saggoson, presently, might be forced to become more efficient in its distribution in the future. In this situation, the management status of a Sggoson in the past and present needs to be consolidated and investigated through this study.
This paper is to analyze the past and present consumption pattern of fishes aquacultured in marine waters and thus to draw the policy direction to enhance the competitiveness of marine fish aquaculture in Korea. At present, the volume of meat consumption is surveyed to be more than that of marine fish, but it is revealed that fish consumption will become more increasing in the future according to the rise of the income. The survey shows that the consumption of fish is highest in the fall, and among the various patterns of consumption, live fish, so-called susi, is surveyed to be highly dominant. It is revealed that fish is enjoyed because of the special savor, diverse nutrients, and the prevention of adult diseases. Natural fish Is revealed to be more preferred to aquacultured one due to the sticky flesh quality and the low probability of the remained after the production process antibiotics, so that it is necessary to enhance the taste quality and make a clean cultivation to capture more market demand. Consumption of high-quality fish seems to become high in more than middle class and consumption of fish are estimated to increase in the future, more than that of meat if income level of the people increases. Also, if we try to make our high-quality fish become popular among the public and competible with the imported fish from abroad, it is recommended that they must lower production price by cost reduction and try to differentiate it by taste and environmental safety, etc. It was revealed that the significant factor in demand function for fish is income and it is almost the only factor affecting that demand. The effects of six kinds of phosphate complex on the water holding capacity (W.H.C) and protein solubility of hair tail, yellow tail runner and dried pollack meat paste were investigated and animal meat(pork, chicken and hare meat complex) The formulation of six kind of phosphate complex employed to this experiment were made by mixing several phosphate such as sodium polyphosphate, sodium pyrophosphate, sodium acid pyrophosphate, potassim pyrophosphate, sodium ultra-meta-phosphate, sodium-tetra-phosphate and monoglyceride at different mixture ratio Among the six kinds of phosphate complex, phosphate B complex which was formulated by mixing sodium polyphosphate 40%, sodium pyrophosphate 30%, sodium tetra mata phosphate 10%, sodium ultra meta phosphate 10% was most effective on enchanging the W H. C, and protein solubility of hair tail, yellow tail runner dried pollack meat past and in case of pork, chicken and hare meat paste. Phosphate C complex which was formulated by mixing sodium polyphosphate 50%. sodium pyrophosphate 30%, sodium tetra meta phosphate 10%, potassium pyrophosphate 10%, was more effective them other phosphate complex, and thief optimum addition level was 0.5% respectively in weight of fish meat paste. Texture characteristics such as hardness, cohesiveness and springiness value of Kamaboko(fish meat and pork, chicken, hare meat complex past meat product) were evaluted as best when 0.5% of Phosphate B complex was added The optimum cooking condition of Kamaboko to get good texture was heating for 20 minutes at 12$0^{\circ}C$.
An ayu (Plecoglossus altivelis) farm in Korea recently experienced an epidemic of vertebral column deformities where about 90% of fry displayed a vertebral column that was grossly opaque along either the cranial part of the column or its entire length. Abnormal fish were lordotic, scoliotic and/or kyphotic about midway down the spine. Examination of serial sections of whole fish showed only histological lesions in the vertebral column and suggested some disturbance in the early development of the vertebral centrum. Such abnormalities included a frayed spinal or notochord sheaths with irregular thickening and compression, mal-absorbed notochord cells, thickening of around cell layer and hypercellularity on both facets of the notochord sheath. No parasites, fungi, or bacteria were detected. While this lesion has only been reported once in the past, this is the first report of histopathological findings.
Experiments were conducted to assess the quality properties of steamed fish paste by addition level, along with a fish meat replacement(dried bovine plasma). The moisture, crude protein, crude fat and ash contents evidenced partially significant difference among the controls, DBP1, DBP2 and DBP3 groups(p<0.05). The pH values of the steamed samples were higher than those of the non-steamed samples, and when the content of the dried bovine plasma as meat replacement agent was increased, the pH was increased. The water holding capacity of the steamed fish past samples, along with the replacement levels were significantly higher than in the samples without the meat replacer(p<0.05). The range of cooking loss was $5.19{\sim}5.38%$. Structural weakening of the boiled samples was significantly higher than that observed in the fried sample. Hardness and chewiness were increased slightly by the addition of bovine plasma, but gel strength evidenced a pattern of decreased in DBP1, DBP2 and DBP3 groups. The result of our sensory evaluation on taste, texture, color and overall acceptance evidenced significant differences among the controls, DBP1, DBP2 and DBP3 groups, and the sensory score of color was the highest.

Fish paste was prepared to enhance physiological functions by adding 2.5, 5 and 10% dietary fiber isolated from ascidian (halocynthia roretzi) tunic. Hardness, adhesiveness, gumminess, chewiness and shear force of the fish paste were increased with addition of the dietary fiber. Water activity and Hunter's color values of the fish paste were not significantly changed by addition of the dietary fiber. Results of sensory evaluation indicated that no difference was observed in color, texture and overall acceptance (p<0.05). However, the fish paste with 5% dietary fiber scored the highest and was generally preferred by sensory panels.
Objectives: The study aims to examine the variation over roughly the past 10 years (from 2008 to 2018) in the estimated daily dietary Pb intake (Pb-D) based on the variations of daily intake amount and Pb content in respective food groups. The following factors were considered: (1) variation of estimated value of Pb-D, (2) Pb contents in each food group and (3) the most influential food group for dietary Pb intake. Methods: Estimated values of Pb-D were taken from food consumption by the food groups reported in the Korean National Health and Nutrition Survey and the Pb content of each food group as reported in 19 previous publications. Variation from 2008 to 2018 of Pb intake was calculated from daily intake amount and Pb content in each food group. Results: The survey showed that main Pb intake sources were the food groups 'meats and poultry' and 'fish and shellfish'. These food groups showed gradually increased Pb exposure from 2008 to 2018. Estimated daily Pb intake was 42.18 to 57.68 ㎍/day for men and 30.97 to 42.54 ㎍/day for women. Both men and women showed slightly increased dietary Pb intake from 2008 to 2018. The food groups 'meats and poultry' and 'fish and shellfish' proved the highest Pb intake food groups. Estimated Pb intake from 'meats and poultry' was 8.47 to 12.98 ㎍/day and that of 'fish and shellfish' was 5.63 to 10.10 ㎍/day. Conclusion: Over the past ten years, daily Pb intake has slightly increased in men and women. The food groups 'meats and poultry' and 'fish and shellfish' might be the main variation factors of Pb intake.
Mercury (Hg) is a global environmental pollutant that has been the cause of many public concerns. One particular concern about Hg in aquatic systems is its trophic transfer and biomagnification in food chains. For example, the Hg concentration increases with the increase of food chain level. Fish at the top of food chain can accumulate high concentrations of Hg (especially the toxic form, methylmercury, MeHg), which is then transferred to humans through seafood consumption. Various biological and physiochemical conditions can significantly affect the bioaccumulation of Hg-including both its inorganic (Hg(II)) and organic (MeHg) forms-in fish. There have been numerous measurements of Hg concentrations in marine and freshwater fish worldwide. Many of these studies have attempted to identify the processes leading to variations of Hg concentrations in fish species from different habitats. The development of a biokinetic model over the past decade has helped improve our understanding of the mechanisms underlying the bioaccumulation processes of Hg in aquatic animals. In this review, I will discuss how the biokinetic modeling approach can be used to reveal the interesting biodynamics of Hg in fish, such as the trophic transfer and exposure route of Hg(II) and MeHg, as well as growth enrichment (the increases in Hg concentration with fish size) and biomass dilution (the decreases in Hg concentration with increasing phytoplankton biomass). I will also discuss the relevance of studying the subcellular fates of Hg to predict the Hg bioaccessibility and detoxification in fish. Future challenges will be to understand the inter- and intra-species differences in Hg accumulation and the management/mitigation of Hg pollution in both marine and freshwater fish based on our knowledge of Hg biodynamics.
Ethiopia is branded as the Water Tower of Africa because of its abundant inland water bodies that may be used sustainably to boost the economy. This review article's goal is to examine the current status and future potential of Ethiopia's fisheries, with a special focus on reservoirs. There are 200 known fish species (194 native, 40 endemic, and 11 exotic) in in Ethiopia's inland water. Ethiopia's fish production has increased by a factor of more than five in the past three decades (3,500 tons in 1983 to 15,681 tons in 2000 and 18,058 tons in 2010). However, fish produced in reservoirs is too low (8,059 t/year). The current fish harvests from reservoirs are significantly below the predicted potential yield, accounting for only 35% of the calculated fish production capacity. In this review, 14 potential reserves were revealed. A total of 48 fish species have been reported in these, of which 26 species (or around 54%) are present in Alwero reservoir. 19 of the 48 species that have been officially recognized belong to the Cyprinidae family and made up nearly 40% of the fish population in Ethiopian reservoirs. There has been, however, a decline in the productivity of Ethiopia's reservoir fish. Hence, actively start fishing in the numerous reservoirs that have been neglected yet, link the potential of fisheries and the benefits of the fish farming supply chain, let's begin building several other reservoirs similar to the Grand Ethiopian Renaissance Dam and beginning mechanized-based fish harvesting.
