This study was designed to observe the effects of the fish oil and some seed oils on the improvement of the lipid composition in rats. In order to induce the triglyceridemia in the rats of the Sprague-Dawley, 12% coconut oil and 3% each of olive oil, lard, fish oil, perilla oil, corn oil, red pepper seed oil and evening primrose oil were administered to the rats for tweets. Total cholesterol concentrations of serum were lower in the fish oil, perilla oil and corn oil groups and by for higher in the red pepper seed oil and evening primrose oil groups than in the olive oil group(control group). HDL-cholesterol concentrations were a little higher in the red pepper oil and evening primrose oil groups. In the ratio of HDL-cholesterol concentrations to total cholesterol concentrations, all groups were higher percentage than the control group. Cholesteryl ester concentrations of serum were high in n-6 PUFA rich red pepper seed oil and evening primrose oil group. In the ratio of cholesteryl ester concentrations to total cholesterol, all groups(70.0~74.4%)were higher than the control group(62%). Phospholipid concentrations of serum were low in the fish oil and perilla oil groups and triglyceride concentrations were remarkably lower in the fish oil and evening primrose oil groups than in the control group. LCAT activities of serum were higher in the lard group than in the control group, but lower in the other groups.
The Crude ginerol from ginger was collected to investigate the possibility of application to food products as a natural antioxidant. The antioxidant activity of gingerols according to fatty acid composi-tion of several oils, were examined by measuring peroxide value(POV). The induction period(If) of fish oil, sdybean oil, lard and palm oil was 5.0, 17.0, 38.4 and 57.6 hours respectively by measuring POV during storge at $85^{\circ}C$. The relative antioxidant effectiveness(RAE) of gingerol group was lard ; 219, soybean oil; 176, fish oil; 160 and palm oil; 146%, while the RAE of'BHT group was lard; 238, palm oil; 158, soybfan oil; 132 and fish oil; 122%.

Phospholipid(PL), phosphatidylcholine(PC) and phosphatidylcholine free PL(PCF) were extracted from squid viscera and the antioxidant effects of each fraction on the oxidation of refined fish oil were evaluated. Polyunsaturated fatty acid contents were the highest in PC(46.7%) followed by PL(44.8%) and PCF(40.9%). The effects of each phospholipid fraction on stabilizing fish oil were compared by incubating at 40$^{\circ}C$ for 10 days. At the initial period(2 days), changes in peroxide value did not show any significant difference ; however, as incubation time was extended, PC fraction showed the strongest antioxidant activity. PL and PCF added to fish oils also resulted in increased stability against oxidation. Antioxidative effect of PC at the 5% level was equivalent to 0.05% BHT, 1% catechin and 1% tocopherol.

Objective: Long chain n-3 polyunsaturated fatty acids (PUFA) exert positive effects on human health. The long chain n-3 PUFA of pork can be increased by adding fish oil to the diet. Due to the cost and availability of fish oil an alternative source must be found. Methods: This study evaluated the effect of five dietary oils on meat quality, fatty acid composition and lipid stability. The five diets contained 1% palm oil (Control), 1% soya oil, 1% linseed oil, 1% fish oil, and 1% Echium oil, respectively. The trial consisted of 60 gilts, randomly allocated to five groups. Results: All color parameters, extractable fat content, fat free dry matter, and moisture content of the m. longissimus muscle were unaffected by dietary treatment. Consumers and a trained sensory panel could not detect a difference between the control samples and the Echium oil sample during sensory analysis. Samples containing higher levels of PUFA (soya, linseed, fish, and Echium oil) had higher levels of primary and secondary lipid oxidation products after refrigerated and frozen storage. However, these values were still well below the threshold value where off flavors can be detected. The Echium oil treatment had significantly higher levels of long chain PUFA than the linseed oil treatment, but it was still significantly lower than that of the fish oil treatment. Conclusion: Echium oil supplementation did not increase the levels of n-3 to the same extent as fish oil did. The result did however suggest that Echium oil can be used in pig diets to improve muscle long chain n-3 fatty acid content without any adverse effects on meat quality when compared to linseed, soya, and palm oil.

This study was conducted to investigate the effects of dietary lipid source and level on growth performance, blood parameters, fatty acid composition and flesh quality of sub-adult olive flounder Paralichthys olivaceus. Eight experimental diets were formulated to contain 5% squid liver oil (SLO), 5% linseed oil (LO), 5% soybean oil (SO), a mixture of 1% squid liver oil, 2% linseed oil and 2% soybean oil (MIX), no lipid supplementation with high protein level (LL-HP), 10% squid liver oil (HL-SLO), a mixture of 1% squid liver oil, 4.5% linseed oil and 4.5% soybean oil (HL-VO), and 1% squid liver oil with high starch level (LL-HC), respectively. Two replicate groups of fish (average initial weight of 296 g) were fed the diets for 17 wks. After 5 wks, 11 wks and the end of the feeding trial, five fish from each tank were randomly sampled for analysis of body composition. At the end of the feeding trial, final mean weight of fish fed the LL-HP diet was significantly (p<0.05) higher than that of fish fed the HL-VO diet, but did not differ significantly from those of fish fed the SLO, LO, SO, MIX, HL-SLO and LL-HC diets. Fish fed the LL-HP diet showed significantly higher feed efficiency than fish fed the LO, HL-SLO and HL-VO diets. Feed efficiency of fish fed the LO, SO and MIX diets were similar to those of fish fed the SLO and HL-SLO diets. Fish fed the HL-SLO diet showed significantly higher total cholesterol content in plasma compared with other diets. Fatty acid composition of tissues was reflected by dietary fatty acid composition. The highest linoleic (LA) and linolenic acid (LNA) contents in the dorsal muscle were observed in fish fed the SO and LO diets, respectively, regardless of feeding period. The highest eicosapentaenoic acid (EPA) content in the dorsal muscle was observed in fish fed the LL-HP and LL-HC diets after 11 and 17 weeks of feeding, respectively. Fish fed the SLO and HL-SLO diets showed higher docosahexaenoic acid (DHA) content than that of other treatments after 11 and 17 weeks of feeding, respectively. Dietary inclusion of vegetable oils reduced n-3 HUFA contents in the dorsal muscle and liver of fish. The n-3 HUFA contents in tissues of fish fed the SLO and HL-SLO diets were higher than those of fish fed other diets, except for the LL-HP and LL-HC diets. Hardness, gel strength, chewiness and cohesiveness values of dorsal muscle in fish were significantly affected by dietary lipid source. The results of this study indicate that fish oil in fish meal based diets for sub-adult olive flounder could be replaced by soybean oil and linseed oil without negative effects on growth and feed utilization.

The residual oil concentrations in seawater and sediments were investigated along the Taean coast of Korea, following the Hebei Spirit oil spill, which occurred on 7 December 2007. The oil concentration in seawater ranged from 0.059 to $0.866\;{\mu}g/L$ for the tidal flat culture grounds and from 0.016 to $0.943\;{\mu}g/L$ in the fish cage areas in 2008. These were dominated by the seawater temperature relationship. Polycyclic aromatic hydrocarbons (PAHs) in sediments were also analyzed and the concentrations ranged from 3.4 to 509.7 ng/g dry weight. The average PAH level was higher in seawater from the Sinduri area than the Padori area, while the average PAH level in sediments was higher in Padori. The diagnostic ratio of PAHs was investigated to determine the origins of the PAHs. The PAHs in the Seongam area, which was not affected by the oil spill, are of pyrolytic origin, while the PAHs in Padori and Sinduri were of petrogenic origin. The residual oils in the areas affected by the oil spill tended to decrease over time, except in summer. The oils in pore water remained 6- to 16-fold higher, as compared to the seawater overlying the tidal flat, implying that residual oils will continue to influence the affected region for the foreseeable future.

The combustion characteristics, ignition delay, p-t, dp/dt, Q-t of diesel oil and fish oil blended diesel oils was investigated according to pressure and temperature in a constant volume combustion bomb. The results are as follows: 1) The influence of temperature and pressure on the ignition delay was almost constant in high temperature, regardless of the blending rates, and the ignition delay was shortest in the 60% blend. 2) The maximum pressure was high in order of with pure diesel oil, with the 20% blend and the 60% blend. 3) The rate of pressure rise was high in order of with pure diesel oil, with the 20% blend and the 60% blend. The rate of maximum pressure rise was significantly higher with pure diesel oil than with two blends. 4) The amount of accumulative heat release was large in order of with pure diesel oil, with the 20% blend and the 60% blend.
Twenty college women were led experimental diet which composed ot basal diet plus different kinds of dietary rats at 27% Cal. Equal amount of 13.5g of corn oil, perilla oil or fish oil was supplied for 2 weeks as a source of n6 linoleic acid(LA). n3 $\alpha$-linolenic acid (LL). or n3 EPA + DHA. respectively. Plasma total Chol level was reduced by perilla and fish oils, significantly only by fish oil. Plasma Chol level was rather increased by corn oil(P<0.05), but was decreased by double amount of corn oil supplement. Therefore, hypocholesterolemic effect of fatty acids was in the order of n3 EPA+DHA>n3 LL>n6 LA and influenced by the degree of fat unsaturation. Plasma TG level was also significantly decreased by n3 EPA+ DHA and increased by n6 LA. Hypotriglyceridemic effect of fatty acids was also in the order of n3 EPA + DHA> n3 LL>n6 LA and influenced by the unsaturation. However, the reduction of plasma TG was more influenced by the fatty acid structure rather than the fat unsaturation. There were no significant effects on lipoprotein pattern 3nd chemical compositions of lipoprotein by different dietary PUFAs. but fish oil diet significantly increased the relative proportion of HDL-Chol. In conclusion. cholesterol- lowering effect of dietary PUFAS seemed to be a function of total fat unsaturation but hypotriglyceridemic effect seemed to be more linked to the ratty acid structure rather than the degree of unsaturation. The hypolipidemic effect of n3 PUFAs was significant so that fish oil or perilla oil may have important nutritional applications in the prevention and treatment of atherosclerotic disease.
Experiments on the process development for the concentration of polyunsaturated fatty acid (PUFAs) such as eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA) from fish oil by using acyl chain specificity of Candida cylindracea lipase were performed. Five kinds of oils were hydrolyzed with Candida cylindracea lipase. Among then, Candida cylindracea lipase just had low activity on the PUFAs-rich fish oil. After the hydrolysis of fish oil, free fatty acid was removed and fatty acid components of glyceride mixtures were analyzed. When the hydrolysis was about 70%, the DHA content in the glyceride mixture was about three times more than that in the original fish oil. The EPA and stearidonic acid contents in the glyceride mixtures, however, were similar to that of the original fish oil. In this work, these results showed that the concentration process of PUFAs by using the acyl chain specificity of Candida cylindreacea lipase was effective in producing glycerides that contained a high concentration of PUFAs in good yield.
This study was conducted to investigate the effects of different dietary lipid sources on the growth, feed utilization, body composition and tissue fatty acid profile of olive flounder Paralichthys olivaceus. Five isonitrogenous and isocaloric diets were formulated by adding various lipid sources including soybean oil (SO), eicosapentaenoic acid triglyceride (EPATG) and ethyl ester (EPAEE) forms, docosahexaenoic acid triglycerides (DHATG) and a 1:1 blend of soybean oil and DHATG. Triplicate groups of fish ($6.8{\pm}0.01g$) were fed one of the experimental diets to apparent satiation twice daily for 8 weeks. Fish fed the DHATG diet had the highest growth, protein efficiency ratio and feed efficiency values which were significantly higher than those fed the SO and EPAEE diets. Whole body proximate composition and somatic parameters were not influenced by the dietary treatments. Muscle of fish fed with SO diets were rich in 18:1n-9, 18:2n-6 and 18:3n-3, whereas those of fish fed with EPATG, EPAEE and DHATG diets were rich in n-3 highly unsaturated fatty acids (HUFA). These findings indicated that the inclusion of n-3HUFA oils in olive flounder feed could be beneficial for the fish while simultaneously increasing the concentration of beneficial n-3HUFA in fish fillets destined for the human consumer.
