Production and Rheological Properties of the Polysaccharide from Bacillus sp. A29 (Bacillus sp. A29에 의한 다당류의 생산과 물성)

  • A bacterial strain producing highly viscous polysaccharide(A29 POL) was isolated from soil and identified sa Bacillus sp. A29. The cultural conditions of the Bacillus sp. A29 for the polysaccharide prouction were dextrin 12%, soytone 0.2%, SnCl$_{2}$ $\cdot $2H$_{2}$O 0.02%, Na$_{2}$HPO$_{4}$ $\CDOT $12H$_{2}$O 0.36%, L-alanine 0.01%, initial pH6.8, and 30$\circ $C at pH 3 FOR 4 days. Final viscosity of the culture broth was 65, 000 cp and then the amount of produced polysaccharide was 8.3 g/l. A29 POL was composed of glucose and xylose. A29 POL showed high viscosity at low concentration(0.1%) and in the presence of the salts such as NaCl or CaCl$_{2}$. A29 POL showed high viscosity acid condition and at alkali condition and high pseudoplasticity in the presence of a NaCl or CaCl$_{2}$. It was shown that the viscosity at high temperature(80$\circ $C) was decreased but it was recovered at low temperature (20$\circ $C. A29 POL was able to from film and gel in the presence of MgSO$_{4}$ $\CDOT $7H$_{2}$O, Na$_{2}$CO$_{3}$ \CDOT $H$_{2}$O, MnSO$_{4}$ $\CDOT $ 7H$_{2}$O. A29 POL had anionic charge.

  • This study was carried out to evaluate the rheological properties of cake flour with 3% of commercial multi-emulsifiers(P company, W company, O company) based on flour. Rheological properties were analyzed by Falling number, RVA, Alveograph and Farinograph. In Falling number, viscosity of cake flour with multi-emulsifiers was increased. In RVA, initial pasting temperature was increased by adding multi-emulsifier except for W company. and peak viscosity, final viscosity and setback were increased but breakdown was decreased. In Alveogram, P and P/L value were decreased but L and G value were increased. In Farinogram, water absorption was decreased but dough development time was increased and stability was increased except for P company.

  • Stability of the moving historic sites have something to do with the degree of easiness of work as well as physical property of polymer product. These agents should be able to use without the effect of outer environments like water or low temperature and must have stability during progress of working the peel off Urethane pre-product from Epoxy surface. So, we synthesized low viscosity epoxy resin and hardener with best physical quality and separation media for the moving of historical sites. These products have very good tension strength, adhesion strength, low viscosity and various physical properties that the users want. Particularly, separation media products have good separation of Urethane pre-products surface and Epoxy final product surface.

Physicochemical Characteristics of Acid Thinned and High Pressure Treated Waxy Rice Starch for Yugwa (Korean Rice Snack) Production

  • The acid modification of waxy rice starch was conducted to improve the yugwa production process. The intrinsic viscosity, paste viscosity, and differential scanning calorimetry characteristics of acid modified starch were measured, and bandaegi and yugwa prepared from acid modified starch were evaluated. The intrinsic viscosities of acid thinned starches were 1.48, 1.27, 1.15, and 0.91 mL/g after reaction times of 1, 2, 3, and 4 hr, respectively. The gelatinization enthalpy was reduced from 16.3 J/g in native starch to 15.8, 15.3, 14.7, and 14.5 J/g in acid thinned starches as the time of acid thinning increased. The peak viscosity and final viscosity decreased with increasing the time of acid thinning, but the pasting temperature was slightly increased in acid thinned starches. The hardness of bandaegi from acid thinned starches under high pressure greatly decreased relative to the control, typical yugwa. Yugwa from acid thinned starch under high pressure maintained a homogeneous structure containing tiny and uniform cells similar to that of native waxy rice starch used for typical yugwa. Acid thinning under high pressure appears to be a good alternative to the existing steeping process for better yugwa quality.

Quality Characteristics of Sulgidduk Prepared with Ulmus Cortex Powder (느릅나무 유피분말을 첨가한 설기떡의 품질 특성)

  • Sulgidduk samples made with additions of 1, 2, 3, 4, and 5% Ulmus cortex powder, and a control, were examined for quality characteristics such as moisture content, color, gelatinization properties, textural characteristics, and consumer acceptance, in order to determine the optimal ratio of Ulmus cortex powder in the formulation. The moisture contents among the samples were not significantly different, ranging from 40.57 to 42.37%, and increased as the Ulmus cortex powder content increased. For the color values, lightness decreased and yellowness and redness increased with increasing Ulmus cortex powder content. With regard to the gelatinization properties, peak viscosity (P), trough viscosity (T), final viscosity (F), breakdown, and consistency increased with increasing amounts of Ulmus cortex powder. Pasting temperature, time to peak viscosity, and setback presented decreasing tendencies with the additions of Ulmus cortex powder. For the textural characteristics, increasing Ulmus cortex powder content presented decreases in hardness, springiness, and chewiness however, adhesiveness, cohesiveness, and gumminess were not significantly different among samples. In the consumer acceptance test, the scores of all evaluated characteristics decreased as the ratio of Ulmus cortex powder increased. However, the intensity ratings for the 1 and 2% Ulmus cortex powder samples showed the opposite effect, obtaining fairly good scores. In conclusion, the results indicate that adding $1{\sim}2%$ Ulmus cortex powder to Sulgidduk is optimal, providing good physiological properties and reasonably high consumer acceptability.

  • New type yoghurts were prepared by fermenting milk containing puffed rice flour(PRF) with some commercial lactic acid bacterial starters. The yoghurts were evaluated for pH, tillable acidity, viscosity and color with sensory evaluation for final quality. The optimum moisture content of rice for puffing was over or less 14%. Increasing addition level of PRF, lightness decreased and, redness and yellowness increased with increasing viscosity greatly. There was no quality difference among commercial starters but pH, acidity and viscosity of yoghurt were affected. During the storage at $5^{\circ}C$, pH dropped, acidity and viscosity increased gradually. The number of lactic acid bacteria was increased until 6 days storage to $3{\times}10^8$ and dropped after on. The yoghurt containing PRF was inferior in flavor texture and taste comparing with commercial yoghurt.

  • Based upon the results of the previous work, the experiments are concentrated on the improvement of the durability of rubber coated fabrics as a rain garment material. To obtain a much lighter and durable coated fabric, several kinds of light weight cotton prints having almost equal density in warp and fillingwise were chosen. Rubber coating on these prints was made by topping and spreading process using rubber compound of various viscosity, and the physical properties of final product were analysed and interpreted in terms of adhesion and durability. The results are as follows. 1. Any noticeable difference between two coating processes was not found in terms of physical properties. 2. Base fabrics should be dipped once into a dilute rubber compound before coating operation in order to obtain a uniform adhesion and physical properties, and the optimum range of the viscosity of dipping paste are from 100 poise to 200 poise. 3. Generally, the tearing strength of the coated fabrics is inversely proportional to the adhesion. 4. It was assumed that the increase of the water proofness after water immersion on the finished material which have dense base fabric is chiefly due to the swelling of the cellulosic fiber.

Effects of Blends of Low-Protein Winter Wheat Flour and Barley Byproducts on Quality Changes in Noodles

  • The physicochemical characteristics of fresh noodles made with blends of low-protein wheat flour and barley byproduct (BBP, $250{\mu}m$) were investigated. The crude protein contents (PC) of flour from Goso and Backjoong cultivars were 7.91% and 7.67%, respectively. PC and ${\beta}$-glucan contents from the BBP were 14.10% and 3.11%, respectively, which were higher than those in wheat flour. The water-holding capacity (WHC) of various blends was increased as a function of BBP but not gluten contents. Goso flour had the highest starch content (78.68%), with peak and final viscosities of 3,099 and 3,563 cp, respectively. Peak and final viscosities, trough, breakdown, and setback of the blends were decreased with the addition of BBP. Noodles made with Backjoong had the highest thickness score, while the hardness of noodles made with blends of Goso or Backjoong and 20% BBP were similar to those made from wheat flour only. The WHC of the samples was strongly correlated with PC, crude fiber, and ${\beta}$-glucan. The PC was not correlated with final viscosity, setback, thickness, hardness, gumminess, or chewiness.

Development of the Water-borne Separation Media Polymer for a Moving Historic Sites (자기분산형 수용성 에폭시를 이용한 유구 이전용 박리제의 개발)

  • When we considered the superior ability of the semi-water soluble urethane 1st transcription and final epoxy products, the stability for moving historic sites depend on physical properties and the peel off state of separation media. In this paper, we synthesised three type of water-borne epoxy solution without using a surfactant, and investigated the peel off state, physical properties, and the state between urethane surface and epoxy surface after exfoliation. The life time of water-borne separation media is over the 60 days. When it is used the 30% solution of water-borne separation media, it made good separation of urethane pre-products surface and epoxy final product surface and no color change. The separation tension pressure is about 15~50 kg/$cm^2$ and there is no surface whitewash phenomenon. We suggest that this water-borne epoxy will be best material as separation media of low viscosity type.

Rheological Properties of Calrose Rice and Effect of Thawing Methods on Quality Characteristics of Frozen Turmeric Rice (칼로스 쌀의 유변학적 특성과 이로 제조된 냉동 강황밥의 해동방법에 따른 품질특성 변화)

  • This study investigated the rheological properties of Calrose rice flour dispersions as well as the effects of different thawing methods (steamer, smart oven, and microwave oven) on quality characteristics of frozen turmeric rice. Apparent viscosity, consistency index, and yield stress significantly increased at higher rice flour concentrations. Magnitudes of storage modulus and loss modulus significantly increased with elevation of rice flour concentration. Frozen turmeric rice thawed using a steamer had the highest moisture content and largest size (length, width, and thickness) among all thawing methods. The L values of turmeric rice after thawing using a steamer was significantly higher than those of other thawing methods. The a value of turmeric rice after thawing using a steamer was significantly lower than those of other thawing methods. Textural properties (hardness, adhesiveness, springiness, cohesiveness, brittleness, and chewiness) of frozen turmeric rice after thawing using a steamer were significantly lower than those of other thawing methods. Therefore, it can be concluded that frozen turmeric rice after thawing using a steamer might be desirable for improvement of texture.
