효모의 종류를 달리하여 제조한 동결 농축 청수 와인의 품질 특성 (Quality Characteristics of Cheongsoo Grape Wine by Freeze Concentration Fermented with Different Yeasts)

  • The objective of this study was to investigate the quality characteristics of Cheongsoo wine using freeze concentration fermented with 5 kinds of yeast strains (Saccharomyces cerevisiae EJ18, EJ30, HK22, HK32 and Fermivin). We compared the characteristics, volatile flavor component and physiological activity of 5 wines. The freeze concentration can increase the sugar concentration in grape juice by reducing its water content and the alcohol content of freeze-cententrated Cheongsoo wines ranged between 15.0~15.8%. The pH of wines ranged from 2.92 to 2.94 and the total acidity and soluble solid of wines ranged from 12.40~13.27. °Brix. The major organic acid in the wines was tartaric acid (4.49~5.11 mg/mL) and malic acid (7.00~7.97 mg/mL). It contains higher functional compounds in wine fermented with yeast (EJ18, EJ30, HK22, HK32) than wine fermented with fermivin. α-glucosidase and tyrosinase inhibitory activity had the highest values (78.87% and 62.25%) in wine fermented with HK22 and EJ18 yeast, respectively. 16 volatile flavor compounds (alcohols, esters, ketones, acids, and others) were detected in the Cheongsoo wines by freeze concentration. These results provide useful information that the quality characteristics of wine developed by the freeze-concentration method using grapes cultivated in Korea.

방사선조사에 의한 한국산탁주 및 약주의 shelf-life 연장에 관한 연구 (Studies on radiation preservation of fermented Korean rice-wine (Tak Joo and Yak Joo))

  • The rapid deterioration of fermented rice-wine, called Tak Joo and Yak Joo, is one of the serious problems for brewing and marketing in Korea. In this study the biochemical and microbiological investigations have been performed for extension of shelf-life of the rice-wine by the method of combined heat and radiopasteurization. Major microflora in this wine is proved as Saccharomyces cereoisiar, which is destroyed by h-at treatmznt ($70^{\circ}C$, 10 min.) combined with gamma-irradiation of 240 K, rads doses. The changes of chemical constituents of them were investigated during the storage period at room temperatures of summer days($33^{\circ}C$). The results of sensory test for gamma-irradiated rice-wine with lower doses show no significant unfavourable off-odor nor color change compared with the fresh rice-wine. Therefore, it is revealed that the combined process makes possible extension of shelf-life of fermented rice-wine in markets without any deterioration and loose of its particular tastes at least for three weeks.

감술제조에 관한연구 (Studies on Persimmon Wine)

  • The possibility of wine making from soft and dried persimmon and the effects of treatment for persimmon on the quality of wine have been investigated. Soft persimmon was pretreated by two method of heat and hydrochloric acid treatment. Fermentation mash was composed of 12% persimmon and 15% of sucrose and was fermented at 17$^{\circ}C$ for 36 days. The fermentation using persimmons which were untreated and treated by acid was not successful because of contamination caused by lactic acid and acetic acid bacteria. Acidity of the fermented broth produced from boiled dried acid treated and untreated persimmon was 4,4, 5.0, 5,8 and 13.5ml(0.1N NaOH/10ml broth) respectively. Ethanol concentration of the fermented broth produced from boiled dried acid treated and untreated persimmon was 11.2, 10.0, 9.4 and 6.1% v/v respectively. The wine fermented for 28day's fermentation using boiled persimmon as substate had the best quality and stability. After 36day's fermentation using boild persimon following composition was obtained: 4.65% of total sugar 3.65% of reducing sugar 0.03mg/ml of protin 0.17$\mu$/ml of amino acid and 13.02 $\mu$g/ml of pectin. The pH and yeast cell of the boiled persimmon broth were 3.4 and 5.75 logCFU/ml. Fermented wine using dried persimmon had aslo good quality but the fermentation rate was slow.

시판 와인 효모에 대한 복숭아주의 발효 특성 (Characteristics of Peach Wine with Different Commercial Yeast Strains)

  • This study investigated the effects of different commercial yeast strains on the characteristics of peach wine. Peach fruit was inoculated with Fermivin, K1-V1116, EC-1118, D-47 and AR2. Peach wines fermented with the D-47, K1-V1116, and AR2 strains showed faster fermentation than wines fermented with the other strains. Wine fermented with EC-1118 had the lowest titratable acidity and highest pH. The ethanol content of wines fermented with different commercial yeast strains was in the range of 13~14%. In sensory evaluation, the wine made with EC-1118 showed the highest overall scores in color and acceptability.

Quality Characteristics and Biological Activities of Traditionally Fermented Ginseng Wine

  • The objectives of this study were to determine the quality characteristics, antioxidant activity, and cytotoxicity of fermented ginseng wine at each fermentation step. In the first mash with and without ginseng, viable cell counts (total cell, lactic acid bacteria, and yeast) were maximum between 2 to 4 days of fermentation. At the beginning of fermentation, Brix and ethanol contents, and titratable acidity increased, while pH decreased rapidly. At 3 days of fermentation of the second mash with ginseng, the viable cell counts were similar to those without ginseng and then continually decreased. At the end of fermentation, the pH of the second mash with ginseng was 4.00, lower than the pH of the second mash without ginseng, which was 4.35. Alcohol contents of second mashes with and without ginseng were 12.2 and 11.8%, respectively. In the aging period of ginseng and rice wines, the pH, titratable acidity, Brix, and ethanol contents did not change markedly. The results of sensory evaluation showed that fermented ginseng wine had good flavor and high acceptability. In the 1,1-diphenyl-2-picrylhydrazyl radical scavenging activity assay, fermented ginseng wine ($IC_{50}$: 0.394 mg/mL) showed higher antioxidant activity than fermented rice wine ($IC_{50}$: 0.884 mg/mL). The butanol fraction of fermented ginseng wine exhibited weak cytotoxic activity against P388 and HeLa cell lines.

효모에 따른 참다래 'Hayward' 와인의 품질 변화 (Quality Changes in 'Hayward' Kiwifruit Wine Fermented by Different Yeast Strains)

  • 참다래로 만든 'Hayward' 와인 제조에 적합한 효모 선발을 위해서 3종의 효모에 의한 발효과정에서의 물리화학적 특성 변화를 조사 분석하였다. 사용된 효모는 Saccharomyces cerevisiae Gervin No.5 strain (GVN), S. bayanus Lavin strain EC1118 (EC1118), 그리고 S. cerevisiae Red star Davis No.796 (No.796)은 와인 발효에 가장 적합하여 상업적으로 이용되고 있는 효모이다. 이 세 효모에 의해 발효된 샘플의 당도 함량은 비슷하게 감소하였으나, 알코올 생산량만 발효 첫 주에 큰 차이가 있었다. 효모중 GVN이 13.8%로 알콜농도가 가장 높았고, 반면에 No.796과 EC1118은 각각13.0%와 12.5%로 상대적으로 알콜함량이 낮았다. 관능평가에서 GVN은 높은 산과 높은 알콜함량을 가지고 있고, 강한 풍미와 쓴맛을 가진 것으로 평가되었다. No.796은 GVN과 유사하지만 낮은 알콜함량과 함께 단맛이 있었다. EC1118은 높은 풍미, 단맛과 낮은 알콜함량으로 부드러운 맛으로 평가되었다. EC1118에 의해 발효된 와인 의 총페놀과 항산화 활성은 다른 효모보다 높았다. 따라서 본 연구에서EC1118이 최적의 효모로 선발되었다. 다른 2종의 효모를 사용한 참다래 발효 와인은 각각 다른 품질 특성을 나타내었다. EC1118효모는 참다래 발효에 가장 바람직한 특성을 가지고 있었다. 이러한 특성은 주로 총페놀과 항산화 활성과 같은 건강기능성과 높은 관능적 기호도를 가지고 있었다.

  • The objective of this study was to investigate quality properties of 'Cheonghyang' wine using different commercial yeast strains. Soluble solid content, pH level and total acidity of 'Cheonghyang' grape were $20^{\circ}Bx$, pH 3.5 and 0.66%, respectively. Total acidity ranged from 0.91~1.06% in the middle stage of fermentation and decreased to 0.77~0.82% when alcoholic fermentation finished. Alcohol content in wines ranged from 12.5% to 12.9% showing no significant difference in yeast strains. Wine fermented with Red Fruit had high volatile acid content (189.0 mg/L) whereas wine fermented with Fermivin indicated low volatile acid content (77.7 mg/L). Wines made with Montrachet, Fermivin and Aroma White had low brightness (L-value) compared to others. Results from sensory evaluation demonstrated that commercial wine yeasts, Montrachet and Fermivin, can be applied to improve sensory properties of 'Cheonghyang' wine such as aroma, acidity and transperency. On the other hand, preferences of wine fermented with EC-1118 strain containing lots of tannins and total polyphenols were significantly reduced.

복숭아 발효주 개발에 관한 연구 (Development of Peach Fermented Wine)

  • 본 연구는 '96학년도 배재대학교 교내 학술 연구비 지원으로 수행되었다. ^x Juice yield of peach "Yoo Myung" by pretreatment of various enzymes and heat was determined, and physicochemical properties of peach wine fermented by some Saccharomyces cerevisiae were also investigated. 89.2% of juice yield was showed in mixture treatment of pectinase and cellulase at 35$^{\circ}C$ for 8 hrs, 82% of yield was also showed in single treatment of pectinase and cellulase. Ethyl alcohol content of peach wine fermented by wild type Saccharomyces cerevisiae 49-2 was 14.55. However, wine from thermophilic Saccharomyces cerevisiae D-71 was excellent in taste and flavor.nd flavor.

동결 농축 Campbell Early 포도 과즙의 무가당 적포도주 발효 특성 (Characteristics of Red Wine Fermentation of Freeze-Concentrated Campbell Early Grape Juice using various Wine Yeasts)

  • Campbell Early 포도 품종은 생육 조건이 우리나라의 기후 조건에 매우 적합하며, 생과로서 향이 좋고, 오랜 기간 생과로 먹어 왔으므로 우리의 입맛에 잘 맞는 포도로서 과즙의 제조에는 적합한 특성을 가지고 있으나 당의 함량이 14-15%로서 포도주 가공을 위하여 보당을 하여야 하는 등 포도주 제조에는 다소 문제점이 있다. 국내산 포도주의 품질 개선을 위한 원료 전처리 방법으로 본 연구에서는 동결 농축 기술을 이용하여 Campbell Early 포도 과즙을 농축한 후 다양한 포도주 효모를 사용하여 무가당 포도주의 제조 시험을 행하였다. 포도주 효모로는 산업용 포도주 효모인 S. cerevisiae OC2, S. cerevisiae Fermivin, S. cerevisiae W-3를 이용하여 농축 포도 과즙의 알코올 발효를 행하면서 발효 특성과 발효 후 여과하여 제성한 포도주의 품질 특성을 조사하였다. 발효가 끝날 시점의 알코올 함량은 12.6-13.0%로 비슷하였으며 환원당의 함량은 거의 흔적 정도로 검출되었으며 pH는 약 3.6-3.7, 총산 함량은 0.6-0.7%로 모든 시험구에서 정상적으로 발효가 일어났음을 알 수 있었다. 발효 종료 후 여과한 포도주의 아세트알데히드, 메탄올, fusel oil의 함량은 식품공전에 명시된 과실주의 기준치보다 매우 낮게 나왔으며 총 폴리페놀 함량이 모든 시험구에서 1.32-1.67 mg/mL 정도를 나타내었다. 각 시험구의 포도주는 모두 농축으로 인하여 진한 색을 띄었고 특히 적색을 나타내는 520nm에서의 흡광도가 높았으며 이는 색도인 L, a, b 값을 통해서도 확인하였다. 관능 검사를 실시한 결과는 색은 S. cerevisiae W-3 포도주가 가장 우수한 것으로 나타났으며 향과 맛은 S. cerevisiae OC2 포도주에서 가장 우수한 점수를 받았으며 전반적인 기호는 S. cerevisiae Fermivin 포도주가 가장 우수한 것으로 나타났다.

Analysis and Comparison of Volatile Flavor Components in Rice Wine Fermented with Phellinus linteus Mycelium and Regular Commercial Rice Wine

  • This study identified and compared the volatile flavor components of two commercial rice wines: one fermented using the mycelium of Phellinus linteus and a regular commercial rice wine. The volatile flavor components were isolated from the infusions by Porapak Q (50-80 mesh) column adsorption. The concentrated aroma extracts were then analyzed and identified by GC and GC-MS. Thirty-four kinds of flavor components were identified in the mycelium-fermented rice wine, including 11 alcohols, 8 esters, 3 ketones, 6 acids, 3 hydrocarbones, and 4 others. In the regular commercial rice wine, 36 kindss of flavor compounds were identified, including 9 alcohols, 6 esters, 4 ketones, 6 acids, 9 hydrocarbones, and 2 others. Therefore, the data indicate that the primary flavor components in the rice wines were alcohols and esters.
