Quality Characteristics and Biological Activities of Traditionally Fermented Ginseng Wine

  • The objectives of this study were to determine the quality characteristics, antioxidant activity, and cytotoxicity of fermented ginseng wine at each fermentation step. In the first mash with and without ginseng, viable cell counts (total cell, lactic acid bacteria, and yeast) were maximum between 2 to 4 days of fermentation. At the beginning of fermentation, Brix and ethanol contents, and titratable acidity increased, while pH decreased rapidly. At 3 days of fermentation of the second mash with ginseng, the viable cell counts were similar to those without ginseng and then continually decreased. At the end of fermentation, the pH of the second mash with ginseng was 4.00, lower than the pH of the second mash without ginseng, which was 4.35. Alcohol contents of second mashes with and without ginseng were 12.2 and 11.8%, respectively. In the aging period of ginseng and rice wines, the pH, titratable acidity, Brix, and ethanol contents did not change markedly. The results of sensory evaluation showed that fermented ginseng wine had good flavor and high acceptability. In the 1,1-diphenyl-2-picrylhydrazyl radical scavenging activity assay, fermented ginseng wine ($IC_{50}$: 0.394 mg/mL) showed higher antioxidant activity than fermented rice wine ($IC_{50}$: 0.884 mg/mL). The butanol fraction of fermented ginseng wine exhibited weak cytotoxic activity against P388 and HeLa cell lines.

홍삼 농축액과 쌀막걸리의 동시 발효를 통한 홍삼 식초의 제조 및 품질평가 (Manufacture of the Red Ginseng Vinegar Fermented with Red Ginseng Concentrate and Rice Wine, and its Quality Evaluation)

  • 홍삼 특유의 prosapogenin 성분을 극대화 시키기 위해 홍삼의 증숙, 건조 및 추출 공정을 최적화하여 식초에 첨가할 홍삼 농축액을 제조하였다. 농축액을 0-1%의 범위로 첨가한 홍삼 발효 쌀 식초의 경우 정치 배양 20일차에 초산발효가 종료 되었으며 홍삼 농축액의 함유량이 높을수록 pH 감소속도가 늦고 감소량 또한 control에 비해 적음을 확인 할 수 있었다. 산도의 경우 농축액 농도 별 초산 생성 속도에는 차이는 있으나 농축액 함유량이 산도 변화 량에 큰 영향을 미치지 않았다. 1%의 홍삼 농축액을 후 첨가한 식초의 경우 71.75 mg/g의 조사포닌 함량을 가진 반면에 0-1% 범위의 농축액을 주모에 첨가하여 초산 발효를 동시에 진행한 경우 발효 진행 중 상당한 조사포닌 손실이 있음을 확인하였다. 이 두 식초를 가지고 관능검사를 진행한 결과 향기, 맛 및 전체적인 평가에서 농축액과 초산발효를 동시에 진행시킨 홍삼발효식초가 더 좋은 선호도를 나타내었다.

도토리의 탄닌 성분이 약주의 저장성에 미치는 영향 (Effect of Tannic Substances from Acorn (Quercus acutissima Carruthers) on the Storage Quality of Rice Wine)

  • 도토리 약주의 저장 중 성분을 대조구와 비교 분석한 결과 660 nm에서 흡광도 값이 초기 0.116에서 $4^{\circ}C$로 저장 10일 후에는 급격히 감소하여 $0.06{\sim}0.075$로 낮아졌고 대조구는 감소폭이 작아서 도토리 성분이 약주의 청징화에 효과적이었다. 유기산 함량은 대조구에 비해 적었다. GLC에 의한 유기산 정량 결과 lactic, succinic, citric, malic, oxalic 및 fumaric acid의 순이었으며 탄닌 성분인 gallic acid 함량은 0.39 mg%이었다. 도토리 약주의 농축액을 lard에 첨가하여 POV를 측정한 결과 9일 후에 대조구는 $265\;meq\;kg^{-1}$ lard로 증가된 반면에 도토리 약주는 $2{\sim}3\;meq\;kg^{-1}$ lard로서 거의 그대로 머물러 있었으므로 항산화효과가 인정되었다. 저장기간 중 도토리의 탄닌성분에 의한 술의 청징화와 산도저하의 방지에 효과가 있었다.

  • Investigated kinds and utilization frequency for traditional food and Particular food to systematize Gwangju city and Chollanamdo area traditional food culture. Awareness for traditional food had pride because taste is various, and did that must use much when was festive day. Investigation subject were feeling necessity about accession, development of traditional food, and manufacture of traditional food, succession did that must take charge in home. Characteristic of taste for Gwangju city, Chollanamdo food was deep taste. Difference between variable was significant that age, religion that have pride about traditional food, attainments in scholarship, monthly income that used time much traditional food, degree that give from traditional food to snack is age, attainments in scholarship, years of married life, religion, reason that give snack to traditional food is daughter-in-law order, kind of traditional food that give to snack is age, monthly income mouth, opinion about accession and development of traditional food is age, religion, daughter-in-law order, reason that must inherit and develop traditional food is attainments in scholarship, time that eat much traditional food is attainments in scholarship, a person, medium that learn cuisine of traditional food is age, opportunity that is been interested to traditional food is age, attainments in scholarship, years of married life. By utilization rate of food-tasting food subdivisions of the season, used much by rice-cake soup, fermented rice punch, order of cake made from glutinous rice New Year's Day, by herbs, Gimgui, Ogokbap's order January Full Moon Day on the lunar calendar. By a cake made in the shape of a flower, azalea honeyed juice mixed with fruits as a punch order to Samjitnal, by beans panbroiling, dropwort raw order Buddha's Birthday, Tano Festival uses Charyunbyeong and used Tteoksudan in Yudu and used much by young chicken soup with ginseng and other fruits, watermelon order period of midsummer heat. Used songpyon and fermented rice punch in Full-moon Harvest Day, and Junggujeol used Chrysanthemum griddle cakes made in flower Pattern, and red-bean gruel taken on the winter solstice, and Nappyeongjeolsik was utilizing Goldongban. Pyebaek food utilization ratio was high the utilization rate by chestnut, jujube, chicken, wine order. The contributiveness food utilization rate was high the utilization rate by rice cake, dried croaker, fruit, oil-and-honey pastry order. The large table food utilization rate was high the utilization rate by fermented rice punch, fruit, steamed short-ribs order.
