A Literature Review Regarding a Myeon-related Ingredients, Recipes and Characteristics in Korean Books published from the 1400's to the 1800's (1400-1800년대 문헌연구를 통한 전통 면식(麵食)의 재료와 조리법 및 특성 고찰)

  • The study aims to perform a literature review regarding Korean traditional myeon (noodles)-related ingredients and recipes. A total of 45 myeon recipe data out of 9 books, documented in Korea from the 1400's to the 1800's was analyzed by ingredients and contents. As a result, it turned out that Korean traditional noodles were made with various ingredients including petals, vegetables and meat in addition to grain flour, and that they existed in various types in addition to long and thin noodles. As for main noodle-making ingredients, glutinous millet, buckwheat, mug beans, elms, beans, wheat and millets were used in diverse ways, and as for noodles soups, fermented soy bean sauces (Korean Jang), broth, omija and seeds (sesame, perilla) were used. In particular, noodles, soups and garnish materials were selectively combined and harmonized to advance noodle foods. In conclusion, traditional Koran noodles were precious foods considered to be healthy foods aimed to pray for longevity, and such diversified food ingredients as noodles, soup and garnish have been harmonized to advance recipes. Healthfulness and characteristics of traditional noodles are expected to contribute to exploring noodle-based Korean food culture contents and developing food industries.

Evaluation of Composition and Antioxidant Activity form Zizyphus jujuba Fruits and Leaves Extracts for Development Medicinal Food (약선개발을 위한 대추과육과 잎 추출물의 일반성분 및 항산화활성 평가)

  • This study was performed to evaluate proximate composition and antioxidant activity in extracts from Zizyphus jujuba fruits (ZF), leaves (ZL), mixture of them (ZM) and fermented mixture (FZM) for development medicated food. The contents of total carbohydrate and free sugar in ZF were 82.37 and 64.18 g/100 g, highest contents among all the extracts. The contents of free sugar in ZL was 19.39 g/100 g, but FZM was 10.01 g/100 g lower than ZL. The concentrations of total polyphenolic compounds in 1 mg/$m{\ell}$ concentration were 90.96 ${\mu}g$/mg for ZL, 22.39 ${\mu}g$/mg for ZF, 83.67 ${\mu}g$/mg for ZM, 70.92 ${\mu}g$/mg for FZM. DPPH radical scavenging activity at 1 mg/$m{\ell}$ concentration was 51.07% for BHT, 46.32% for ZL, 39.54% for ZM, 34.68% for FZM. ZF did not express activity. SOD like activity at 1 mg/$m{\ell}$ concentration was 67.16% for BHT, 75.33% for ZL, 17.42% for ZF, 68.22% for ZM, 59.81% for FZM. The antioxidant activity of the fruits of Z. jujuba (ZF) prominently lower than that of the leaves (ZL), but a mixture of leaves and fruits enhanced the antioxidant activity. And fermentation is not enhanced the antioxidant activity of extracts Z. jujuba

Screening of Dietary Fiber Degradation Enzyme for Making Sweet Potato Soju by Vacuum Distillation (감압증류법의 고구마소주 제조를 위한 식이섬유 분해효소의 선별)

  • Sweet potato soju(SPS) has been made by vacuum distillation because sweet potato contains much fibrous materials which give high density to sweet potato mash. Generally, the SPS made by vacuum distillation has soft flavors and tastes. If the viscosity of sweet potato mash could be decreased by degradation enzyme, the process and production of SPS making by the method of vacuum distillation may be simplified and easier to distil the fermented sweet potato. Because the fibrous materials of sweet potato contains pectin with methoxyl group, methanol can be produced by fibrous degradation enzyme. For appling the fiber degradation enzymes to sweet potato mash for making SPS, the enzyme should be needed to degrade fibrous material without producing methanol. Special two fibrolytic enzymes are selected from 26 kind of commercial enzymes for the simplified and easier production of sweet potato soju by vacuum distillation, The selected enzyme A and X can degrade the fibrous material pectin of sweet potato without producing methanol. Although the different companies have produced the enzymes, same cellulase has been prepared from Trichoderma. reesei. The viscosity of sweet potato mash treated by the enzymes is decreased by 3 times with comparison to the viscosity of sweet potato mash of control group. The methanol concentration in the vacuum distilled SPS treated with the enzymes is 0.16%. The concentration is similar to that of commercially distilled SPS(0.15%). The result may suggest that the selected cellulases, A and X, can be used to make SPS by vacuum distillation.

Effect of Black Raspberry Wine to Testosterone in Sprague-Dawley Rats Administrated with Methoxychlor (Methoxychlor투여 흰쥐에 있어서 복분자 술이 Testosterone에 미치는 효과)

  • The study was conducted to investigate per oral (PO) effects of Black raspberry wine on testosterone levels in Sprague-Dawley rats oral administrated with Methoxychlor in order to establish the experimental clinical model for evaluating the influences on the sexual hormones of SD-Rat administrated with Methoxychlor(MET), it was dissolved in acetone and olive oil (1:19), which was administrated orally at doses of 200mg/kg body weight/ day for 7days. Black raspberry wine of 13% alcohol concentration, was prepared from ripen fruits of Rubus coreanus fermented with Saccharomyces cervisiae. PO administration of Black raspberry wine for 15 week produced dramatic increases of serum testosterone levels. Increase in the testosterone level was observed, using gamma counter with 125I testosterone, starting from 1 week post administration. Maximum increase in testosterone level was observed at 4 week post administration, 5.18${\pm}$0.76ng/mL, which was 10.1 times higher than before and at 15 weeks post administration it was recorded as 1.67${\pm}$0.19ng/mL indicating Black raspberry wine as an effective phyto-testosteronic beverage of the future.

  • Bean sprouts have been one of the vital food for our ancestor for a long time. They were also hardy wild plants or first-aid medicine for needy people. Even nowadays they are served at table. For examples, bean curd, bean-curd dregs, bean sprouts, soybean paste, fermented soybeans, hot pepper paste, and soy are our daily food. Moreover bean sprouts are widely favored at the age of the well-being. Bean sprouts for a recover from a hangover, soybean paste for the prevention of cancer, beans leaf as the best well-being food for a diet, and so on. Thus the paper explains the origin of bean sprouts and their application as a food or medicinal stuff with the analysis of the various and wide-spread records.

A Study about Characteristic of the Medicinal Herbs Added in the Traditional Korean Liquor (전통주에 이용되는 한약재의 특성 연구)

  • Objective : The aim of this study is to analyze medicinal herbs, the ingredients of traditional Korean liquor, focusing on efficacy in the traditional Korean medicine. Through this study, for vitalizing traditional Korean liquor market, the researchers attempt to explain the superiority of traditional Korean liquor and the advantages of using herbs to brew alcoholic beverages. Method : We conducted a research targeting traditional Korean liquors in domestic market from July through september 2012, and finally 70 kinds of liquor were selected and analyzed. Results : Among traditional liquors, fermented liquors are most common. When comparing regions of brewery, the central region of Korea, Gyeonggi-do and Chungcheongnam-do, is major brew area. 37 liquors contain just one medicinal herb. followed 10 liquors contain two medicinal herbs. The most frequently used medicinal herb is Ginseng Radix. And Lycii Fructus, Schisandrae Fructus, Angelicae Gigantis Radix and Chrysanthemi Indici Flos are well used medicinal herbs to brew traditional liquors. In the classification of efficacy of medicinal herbs, tonifying and replenishing medicinal herbs are most popular as ingredients in the traditional alcohols, astringent medicinal herbs, exterior releasing medicinal herbs and heat clearing medicinal herbs are also frequently used. Investigation of tastes and properties of the herbs, it reached a conclusion as below: sweet taste is most common, followed by sour taste and bitter taste. Warm property is account for 50% approximately, followed by cold property. Conclusion : Medicinal herbs have been widely used in the traditional Korean liquor. It came out into the open that the liquor with medicinal herbs is very good for our body in terms of longevity and invigoration. However, liquor consumers concern about not only the efficacy but also the taste, scent and color. Therefore, further study about these things would be required to demonstrate the superiority of the traditional Korean liquor.

Distribution of poly-${\gamma}$-glutamate (${\gamma}$-PGA) producers in Korean fermented foods, Cheongkukjang, Doenjang, and Kochujang

  • Poly-y-glutamate (${\gamma}$-PGA) has great potential as a biodegradable polymer in a broad range of industrial fields such as food, cosmetics, medicine and water treatment. In order to isolate ${\gamma}$-PGA producers that are suitable for specific industrial applications, 653 Bacillus-like strains were isolated from 439 varieties of three Korean fermented foods, Cheongkukjang, Doenjang, and Kochujang, which were collected from different regions across Korea. A very high level of ${\gamma}$-PGA production was demonstrated in 4.7%, 1.8%, and 3.0% of the Bacillus-like strains isolated from Cheongkukjang, Doenjang, and Kochujang samples, respectively, which produced a viscous substance to such extent that it overflowed to the lid of the plate on the glutamate-dependent ${\gamma}$-PGA production plates. On glutamate-independent ${\gamma}$-PGA production plates, 5.1%, 5.9%, and 6.1% of Bacillus-like strains isolated from Cheongkukjang, Doenjang, and Kochujang samples, respectively, showed high production. The maximum ${\gamma}$-PGA production yields were 32.5 g/L and 5 g/L, depending on the purification methods in the glutamate-dependent media, with the higher yield resulting from a simple precipitation of ${\gamma}$-PGA by either methanol or ethanol and dialysis. The viscous substance produced by each strain showed different morphological characteristics, suggesting that isolated ${\gamma}$-PGA producers could produce various types of ${\gamma}$-PGA.

Origanum vulgare and Thymus vulgaris Extract Usability to Improve Silage Hygienic Quality and Reduce Mycotoxin Concentrations

  • Silage is one of the main feed components of ruminants around the world and can make up about 50-80% of the rations of dairy cows during the winter. The aim of this study was to evaluate the usability of oregano (Origanum vulgare L.) and thyme (Thymus vulgaris L.) aqueous and ethanol extracts to improve the hygienic quality of perennial ryegrass, red clover and blue alfalfa silage samples and estimate their effect on mycotoxins concentrations. Under laboratory conditions, 63 silage samples (21 perennial ryegrass, 21 blue alfalfa, 21 red clover) were fermented with inserted aqueous and ethanol extracts of oregano and thyme and two commercial inoculants with mesophilic lactic acid bacteria. After 96 days of fermentation, in silage samples were established fermentation parameters, microbiological status and mycotoxins concentrations. It was determined that the best results for achieving hygienic quality of perennial ryegrass and red clover silage samples was by insertion of aqueous and ethanol extracts of oregano and thyme. In blue alfalfa samples, the best results of silage hygienic indicators were determined by inserting aqueous and ethanol extracts of oregano. Aflatoxin B1 (AFB1), deoxynivalenol (DON), zearalenone (ZEA) and T-2 toxin concentrations in perennial ryegrass, red clover and blue alfalfa silage samples were best reduced by inserting aqueous and ethanol extracts of oregano and thyme. The present study shows that these extracts can be used to improve silage hygienic quality, reduce mycotoxins concentrations and thus ensure the wellness of cattle.

Effect of Various Fungi on the Aflatoxin Productivity in tile Culture of Asp. Flavus (진균류(眞菌類)의 상호작용(相互作用)에 의한 Aflatoxin 생성능(生成能)에 관(關)한 연구(硏究))

  • This study was attempted to know that the interactions of various fungi, and methionine and $MgSO_4$ introduced as the substrate of culture media for fungi were affected to produce aflatoxins by Asp. flavus. 5 different fungi were isolated from the fermented soybean mash and were cultured in Chemically Defined medium (C. D. media) and soybean mash at $25^{\circ}C$ for 10 days. (1) It was confirmed that Asp. flavus produced aflatoxins in the C. D. medium and soybean mast, but that Asp. niger, Asp. oryzae, Asp. awamori and Asp. terreus did not produced them respectively. (2) Asp. flavus cultured with Asp. niger did not produce aflatoxins in C. D. medium, but produced in soybean mash, in other hand, Asp. flavus with other fungi except Asp. niger produced aflatoxins in C. D. medium and soybean mash. (3) The growth of fungi were more prosperous in the seperate culture than in the mixed culture. (4) In the C. D. medium added 20% of cultured medium of Asp. niger, Asp. flavus did not produce aflatoxins but other cultured medium did not prohibit the production of aflatoxins by Asp. flavus. (5) On the contrary, $MgSO_4$ increasing the productivity of aflatoxins by Asp. flavus in the C. D. medium, methionine known as one of precursor of aflatoxins did not affected the increasing productivity with significance.

Biological Activities and Chemical Characteristics of Monascus-Fermented Korean Red Ginseng (홍국발효홍삼의 이화학적 특성 및 생리활성)

  • This study investigated the biological activities and chemical characteristics of Monascus-fermented Korean red ginseng (MFRG). The comparative activities of water, ethanol, and methanol extracts from MFRGE and Korean red ginseng (RG) were tested in vitro of anti-oxidative models of linoleic acid peroxidation by thiocyanate and thiobarbituric acid (TBA) methods and DPPH ($\alpha,\alpha'$-diphenyl-$\beta$-picrylhydrazyl)radical scavenging activities. In addition, measurements of their bioactive total phenolic compounds and minerals, and extract yield, were obtained. The extract yield of each solvent extracted from MFRG and RG was aqueous by 6.58% and 5.83%, ethanol by 0.62% and 0.98%, and methanol by 1.27% and 3.04%, respectively. Total phenolic compounds were higher in all solvents extracted from MFRG than those from RG. Major mineral contents (ppm) of MFRG and RG were K by 16,936 and 22,386, Ca by 2,310 and 3,693, Mg by 2,703 and 2,647, respectively. The DPPH radical scavenging activities were higher in all solvents extracted from MFRG than those from RG, however, all these extracts exhibited a relatively low level of radical-scavenging activity compared to the butylated hydroxytoluene (BHT). In antioxidative activities determined by TBA method using linoleic acid peroxidation, 70% methanol extract from MFRG and RG showed the highest antioxidative activity at a concentration of 0.1%. These results may provide the basic data to understand the biological activities of bio-active materials derived from MFRG.
