This study analyzes flavor ingredients according to types of whisky and maturation periods based on total 40 different types of whisky that are mainly distributed to Korea via imports. Whisky was classified into four categories based on origin, and also into different categories based on maturity period, ingredients such as fusel alcohol, fatty acid, and fatty acid esters and proportion of patterns were analyzed. As a result of an analysis for fusel alcohol, high qualified types of alcohol including 3-methylbutanol, 2-methylbutanol, iso-butanol, and 1-propanol were detected from all Scotch whiskys, America whiskys, and Canadian whiskys. In particular, the proportional sum of 3-methylbutanol and 2-methylbutanol, and the sum of 3-methylbutanol and 2-methylbutanol/iso-butanol were regarded as core factors to determine each type of whisky. Acetaldehyde, ethyl acetate, and acetic acid increased as maturation and storage period became longer. As a result of the fatty acid and fatty acid ethyl ester analysis, the major fatty acids were dodecanoic acid and decanoic acid, both with detection of octanoic acid and hexanoic acid. However, dodecanoic acid, decanoic acid, and octanoic acid were lower than the detectable limit in American and Canadian whiskys, showing a unique phenomenon that hexanoic acid was detected only in very small amounts. Malt Scotch whisky showed higher significance than blended Scotch whisky, making it possible to classify types of whisky. Fatty acid ethyl ester contents showed significance with fatty acid either. In addition, changes in the whiskys based on maturation period were confirmed via proportions of fatty acids and fatty acid ethyl esters. In general, the proportion of fatty acids and fatty acid ethyl esters decreased as the storage period increased. This study provided basic data to classify types of whisky based on maturation periods by analyzing the proportion of flavor ingredients such as fusel alcohols, fatty acids, and fatty acid ethyl esters.
In these days, according to increased environmental regulations, to reduce the VOC content in paints and inks efforts are now in progress. A lot of research have progressed hydrocarbon solvents substitute with vegetable oil or ester in the printing ink but it is restricted to use vegetable oil in the inks because of high molecular weight and viscosity. Oil ester currently developed for printing inks still have some drawbacks, but overall the printability and print quality when using ester than hydrocarbon solvents are showing good results. Thus, in this paper, I studied about the properties variation of the varnish and inks according to vegetable ester, after I reacted vegetable ester using the vegetable fatty acid and ethyl alcohol, butyl alcohol. The compared in order of average molecular weight by the GPC method, rheological properties were found by rotational rheometer, and emulsion behavior were compared by high speed emulsification tester.
Ethanolysis of squid viscera oil with immobilized lipase was investigated for reducing the free fatty acid contents and enhancing the function of the oil by stepwise addition method of Shinmada[1]. Tendency of oil variation during Ethanolysis showed increased content of diglyceride, monoglyceride and fatty acid ethyl ester with reduced free fatty acid contents. The oil composition was analyzed using GC-FID and compared before and after ethanolysis. Structural analysis of the lipid was performed by HPLC-UV spectrophotometer during ethanolysis. The transformed oil was thought to has suitable properties for functional oil production.
Enzymatic ethanolysis of fish oil with immobilized lipase was investigated for reducing the free fatty acid contents and enhancing the function of fish oil. Ethanolysis reactions were carried out in erlenmeyer flask (25ml) containing a mixture of squid viscera oil and 99.9% ethanol using 1% (based on w/w squid viscera oil) immobilized lipase. The reaction mixtures were incubated at $50^{\circ}C$ and shaken at 100rpm. Ethanol was added into the mixture by stepwise addition method of Shinmada[9]. Measurement of free fatty acid molar amounts was studied by Acid Value. Tendency of oil variation during transesterification was studied by TLC method. Enzymatic ethanolysis composed diglyceride, monoglyceride and fatty acid ethyl ester with reducing free fatty acid contents. Also, selective ethanolysis by Lipozyme TL-IM and Lipozyme RM-IM mostly did not react at the sn-2 position of squid viscera oil. Lipozyme RM-IM was more suitable enzyme to reduce the free fatty acid contents by ethanolysis than Lipozyme TL-IM. Squid viscera oil was transformed into suitable properties (5 in Acid Value) for functional fish oil production.
Antioxidant effect of several antioxidative components on the high purity $\alpha$-linolenic acid(HALA; ALA, 78.1%) ethyl ester concentrated from perilla oil were investigated by measuring weight-gains and peroxide value(POV) during storage at 5$0^{\circ}C$, 23$^{\circ}C$ and 4$^{\circ}C$. Amounts of antioxidant components were 0.2g/kg HALA ethyl ester for sesamin, sesangolin and butylated hydroxytolune(BHT), and 0.1g/kg for sesamol and 100g/kg for ether extracts from perilla seed. The oxidative stability of HALA ethyl ester was particularly increased by adding sesamol, ether extracts and BHT, but sesamin and sesangolin scarcely showed an antioxidant effect. POV on the HALA ethyl ester added sesamol and ether extract was less than 15.0meq/kg by 9 weeks of storage at 23$^{\circ}C$. However, in the case of low temperature storage at 4$^{\circ}C$, all the samples estimated showed less than 7.0meq/kg in POV by 5 months. Consequently, sesamol and ether extracts were recognized as available antioxidant components on the HALA ethyl ester from perilla oil.
One known effect of long chain n-3 polyunsaturated fatty acids is their ability to decrease plasma triglycerides. However, identification of the specific n-3 fatty acids and the underlying mechanisms responsible for this change remains uncertain. This present study was designed to evaluate the effects of moderate levels of dietary docosahexaenoic acid (22 :6(n-3)) on modulating plasma triglyderides. Male CD-1 mice were maintained for 15 days on identical diets containing either docosahexahexaenoic acid ethyl ester(1.5%, w/w) or linoleic acid(18 : 2(n-6)) ethyl ester (1.5%, w/w) . Plasma triglycerides were 40% lower in the docosahexaenoic acid group than in the linoleic acid group. Hepatic carnitine palmitoyltransferase activity (a key regulatory enzyme for mitocondria $\beta$-oxidation) was not significantly different between the dietary groups. However, plasma acid soluble acylcarnitine levels (which increase with increasing $\beta$-oxidation )were significantly higher in the decosahexaenoic acid group. This data suggests that plasma triglyceride levels are lower in mice fed diets containing moderate levels of docosahexaenoic acid compared to linoleic acid, but this effect on plasma triglycerides is not modulated through an augmentation of mitochondrial $\beta$-oxidation.
Flax seed(Linseed, Linum usitatissimum L.) and its oil, a richest source of alpha-linolenic acid(ALA)(${\omega}-3$), contain saturated fatty acids, neurotoxic cyanogen glycosides and immuno-suppressive cyclic-nonapeptides. Present paper describes the development of two chemical processes, Process-A and -B, to remove saturated fatty acids and to destroy cyclic nonapeptides and cyanogen glycosides from flax seed oil. Process-A consists of three major steps, i.e., extraction of fatty acid mixture by alkaline saponification, removal of saturated fatty acid by urea-complexation, and triglyceride reconstruction of unsaturated fatty acid via fatty acyl-chloride activation using oxalyl chloride. Process-B consists of preparation of fatty acid ethyl ester by transesterification, elimination of saturated fatty acid ester by urea-complexation, and reconstruction of triglyceride by interesterification with glycerol-triacetate (triacetin). The destruction of lipophilic cyclic nonapeptide during saponification or transesterification processes could be demonstrated indirectly by the disappearance of antibacterial activity of bacitracin, an analogous cyclic-decapeptide. The cyanogen glycosides were found only in the dregs after hexane extraction, but not in the flax seed oil. The reconstructed triglyceride of flax seed oil, obtained by these two different pathways after elimination of saturated fatty acid and toxic components, showed agreeable properties as edible oil in terms of taste, acid value, iodine and peroxide value, glycerine content, and antioxidant activity.
Camellia oil과 palmitic, 그리고 stearic ethyl ester를 기질로 하고 Lipozyme TLIM을 촉매로 이용하여 interesterification을 통한 POS를 많이 함유한 반응물을 합성하고자 하였다. 반응 조건(반응효소비율, 반응시간, 기질의 비율)을 독립변수로 하여 중심 합성 계획에 의한 반응 표면 분석을 통하여 POS의 함량은 높이고, sn-2 position의 acyl migration을 낮추어 합성하는 최적화 조건을 얻었다. POS를 많이 함유한 반응물의 합성 최적화 조건은 반응 효소양($X_1$)= 5.9%, 반응시간($X_2$)= 60 min, 그리고 기질비율($X_3$)= 1:3(1 mole의 camellia oil: 3 mole의 palmitic ethyl ester + 3 mole의 stearic ethyl ester)이었다. 이와 같은 조건으로 획득된 실재 효소반응 합성물의 TAG-P/O/S(palmitic, stearic과 oleic 지방산을 각각 1 분자씩 어느 위치이던지 함유한 TAG, 즉 POS 및 PSO/OSP/OPS/SPO)의 합성율($Y_1$)은 20.19%이었고, 이때 acyl migration 등에 의하여 sn-2 위치에 결합(이동)한 palmitic과 stearic acid의 양(P/S-sn-2)인 $Y_2$는 12.71% 이었다.
