The aim of this study was to investigate the oxidative status and quality characteristics of four animal skin-derived fats extracted using an identical extraction method. Pressurized hot water extraction, a green extraction method, was used to extract animal skin fats (duck, chicken, swine, and bovine skin). Multiple experiments were performed during accelerated storage at $60^{\circ}C$ for 90 days. Quality characteristics, such as extraction yield, iodine value (IV), fatty acid composition, and fat viscosity were determined. In addition, indicators for oxidative status, including acid value (AV), peroxide value (PV), p-anisidine value (p-AV), thiobarbituric acid reactive substances (TBARS), conjugated dienes (CD), and total oxidation (totox) values were evaluated. The fat extraction yield was highest in bovine fat, followed by duck, swine, and chicken fats. The IV was higher in duck and chicken fats. Duck fats contained the most unsaturated fats and the least saturated fats. Fat oxidation indicators, such as PV, TBARS, and totox values, were relatively higher in duck fats during storage compared to the other fats. Other indicators, including AV, p-AV, and CD, were similar in duck, chicken, and swine fats. Viscosity was similar in all the tested fats but markedly increased after 70 days of storage in duck fats. Our data indicate that duck skin fat was more vulnerable to oxidative changes in accelerated storage conditions and this may be due to its higher unsaturated fatty acid content. Supplementation with antioxidants might be a reasonable way to solve the oxidation issue in duck skin fats.

Oil and fats has been using as the important raw materials in the coating industry from ancient time to date. This article was prepared with the aim of helping to the forward development trend for coating uses of oil and fats, as understand together the history using oil and fats for coatings, composition and classification coatings, types and composition of oil and fats using for coatings nowaday, how to use oil and fats for coating, film for coatings, film forming mechanism.
This study was carried out to obtain the information concerning the perception and utilization patter of the housewives about the edible oil and fats. Data were obtained through questionnaires from 442 housewives in Chonbuk area. The eating frequency of food that used oil & fat was affected by age, residing area and educational level. family's preference score of food that used oil & fats was 3.34 point in the 5 point scale. 47% of the subjects answered that the intake rate of oil & fats had more from vegetable oils than animal sauces. Most of the subjects had negative response such as increased cholesterol and body weight for psychological state after the intake of food that used oil & fats. The main reason why some housewives did not use frequently oil & fats was inconvenience of tidying up. The kinds of the oil & fat used frequently were soybean oil, sesame oil, com oil and perilla oil. The nutrition knowledge score rotated to oil & fat was 7.62 point in the 10 point scale. The eating frequency of food that used oil & fats and its preference were positively correlated. These results indicate that the housewives haute a widespread tendency to pursue a health and convenience in the utilization of edible oil & fats.
Knowledge and attitudes on current selection of fats and oils were surveyed among college students and USDA extension off campus faculties. The objective of this survey was to obtain information about the nutrition knowledge and attitudes toward fats and to assess relationships between the nutrition knowledge, general attitudes toward dietary fats, and specific attitudes toward the eating of certain foods. The attitudes toward and nutrition knowledge of dietary fat sections consisted of 22 and 39 statements respectively. Avoiding red meat and eggs and avoiding fats as a flavoring were attitudes whose maintenance may require special, long-term intervention strategies. Replacing high-fat foods with low-fat foods, modification(cutting fat off any meat) and substitution were easily adopted and maintained low-fat habit. The responses to wanting to lose some weight and feeling better if increasing exercise were favorable. The attitudes toward the possible relationships between fat consumption and health were favorable. Respondents on the nutrition knowledge test attained a mean score of 129.69 and a median score of 127 our of the highest possible score of 200. Extension off campus faculties, nutrition majoring/majored subjects, and over 41-year-olds tended to have more favorable general attitudes and specific attitudes toward the consumption of certain foods and higher knowledge. Senior students had more negative general attitudes and specific attitudes, and college graduates and graduate students had more nutrition knowledge. Nutrition know-ledge was related to general attitudes toward dietary fats, but not to more specific attitudes toward the eating of certain foods. Nutrition education will not be effective in modifying the intake of dietary fats in the population because nutrition knowledge related to general attitudes toward dietary fats and general nutrition practice but not the eating of certain foods.
Biodiesel was produced by "transesterification" of vegetable oils and animal fats as an alternative to petroleum diesel. The research analysed the fuel characteristics of biodiesel, the yield of by-products and biodiesel, using several vegetable oils - rapeseed oil, camellia oil, peanut oil, sesame oil, perilla oil, palm oil, olive oil, soybean oil, sunflower oil and animal fats such as lard, tallow, and chicken fat. The results showed the yields of biodiesel made from the vegetable oils and animal fats were $90.8{\pm}1.4{\sim}96.4{\pm}0.9%$ and $84.9{\pm}1.1{\sim}89.6{\pm}1.5%$ respectively. Production rates and oxidation characteristics were different depending on the fats applied.

The rise in plant-based food consumption is propelled by concerns for sustainability, personal beliefs, and a focus on healthy dietary habits. This trend, particularly in alternative meat, has attracted attention from specialized brands and eco-friendly food companies, leading to increased interest in plant-based alternatives. The dominant plant-based proteins, derived mainly from legumes, include soy protein isolates, which significantly impact sensory factors. In the realm of plant-based fats, substitutes are categorized into fat substitutes based on fats and fat mimetics based on proteins and carbohydrates. The production of these fats, utilizing gums, emulsions, gels, and additives, explores characteristics influencing the appearance, texture, flavor, and storage stability of final plant-based products. Analysis of plant-based proteins and fats in hamburger patties provides insights into manufacturing methods and raw materials used by leading alternative meat companies. However, challenges persist, such as replicating meat's marbling characteristic and addressing safety considerations in terms of potential allergy induction and nutritional supplementation. To enhance functionality and develop customized plant-based foods, it is essential to explore optimal combinations of various raw materials and develop new plant-based proteins and fat separation.
Although traditional Korean diet consists of Very little fats and oils, the increase of their consumption, especially vegetable oil, has been truly remarkable in recent years and this increase is attributed to the improvement of their dietary habit and the development of Korean food industry. On the other hand, domestic production of the edible vegetable oil did not increase at all. Naturally, foreign exchange (over a several hundred million U.S. dollars) is annually used in importing oil seed and/or oil per se. Under these circumstances, it is of utmost importance to maximize the domestic production of edible vegetable oil, although its complete self-sufficiency cannot be achieved. In this seminar, intake of fats and oils by Korean people, status and outlook of the domestic production and consumption of fats and oils will be discussed, with. emphasis on the utilization of agricultural by products and waste as a source of fats and oil.
Many synthetic antioxidants are now used to prevent the oxidation of oils and fats. Among the synthetic and tioxidants, it was known that those of HQ(Hydroquinone), BHA(Butyl hydroxyanisole), IG(isoamyl gallate), and NDGA(Nordihydro guaiaretic acid) are most efficient as the antioxidizing agent. In this work, Degree of antioxidation was investigated on the some such antioxidans BHA, CI(citric acid), AA(Ascoric acid) for several kinds of oils and fats which are most available in Korea by determining Acid value and Iodine Value. The results of experiments were as follows 1. The decreasing order of antioxidizing action by acid value is BHA, AA, CA. 2. The order of antioxidizing action by Iodine value is almost same as the case of Acid Value. 3. It is effective to add the antioxidants to kep oils and fat. 4. Oxidation is accelerated by standing oils and fats after boiling in the from fry pan. 5. Sesame oil is little oxidized without antioxidant.

Evidence from recent studies in several laboratories indicates a relationship between type or level of fat in the diet and occurance of tumor at specific sites. The essential fatty acids in fat and degree of their unsaturation are important to determine the influence of a dietary fats on carcinogenesis. Alteration of dietary fat can also change carcinogenesis of cell in several tissues. Dietary fats appear to be important in both initiation and promotion stages of carcinogenesis. Several possible mechanisms have been investigated how dietary fat could affect to carcinogenesis at cellular level. One potential mechanism of dietary fat on carcinogenesis is through modulation of protein kinase C activity in the cell.
