Effect of Dietary Fish Oil on Lipid Peroxidation and Antiperoxidative System in Rat Liver and Brain -Sex-related Differences- (어유(魚油)섭취가 흰쥐의 간과 뇌조직의 지질과산화물 형성과 항산화계에 미치는 영향 -성(性)의 차이를 중심으로-)

  • In order to examine the effect of dietary fish oil on lipid peroxide formation and antiperoxidative efficiency in liver and brain, a group of male and female rats weighing about 70 grams were fed for three months, diet containing mackerel oil(MO) at the level of 10% (w/w). Results were compared, according to sex and source of dietary fat, i.e., in addition to MO, perilla oil(PO), soybean oil(SO), rapeseed oil(RO) or beef tallow(BT). Liver lipid peroxide level was significantly higher and levels of ${\alpha}-tocopherol$ and reduced glutathione(GSH) were lower in MO group than in other groups. This phenomenon was less clear in male than in female. Liver GSH level was lower in male, compared to female, but oxidized glutathione (GSSG) level did not vary, depending on either sex or dietary fat source. Brain lipid peroxide and ${\alpha}-tocopherol$ levels were not different among five experimental groups. Activities of liver and brain glutathione peroxidase and superoxide dismutase were not changed by dietary fat source, but glutathione peroxidase activity was higher in female than in male. The present study shows (a) that there is sex-related difference in antiperoxidatiye activity and (b) that fish oil containing $C_{20-22}({\omega}3)$ fatty acids, increases body lipid peroxide level and consumes more of cellular antioxidant, although it has lower total PUFA content than perilla or soybean oils.

Influence of the homogenizing grade and meathematical treatment on the determination of ground beef components with near infrared reflectance spectroscopy (식품의 근적외선 반사분광분석법에서 균질의 정도가 흡광도에 미치는 영향 및 수학적 처리방법에 관한 연구)

  • This study was conducted to determine the effect of the homogenizing grade of sample on absorbance of near infrared reflectance spectrophotometer with which chemical compositions of food were rapidly and effectively analyzed. By the mathematical treatment of absorbance values standard error of prediction was reduced as follows. 1. The absorbance values of various samples ground for the same periods of time were calibrated before or after treatment with first or second derivative in an attempt to accurately predict the components of samples ground for the different periods of time. The standard error of prediction for moisture content were 1.478%, 0.658% and 0.580%, respectively, those for fat content 0.949%, 0.637% and 0.527%, respectively, and those for protein content 0.514%, 0.493% and 0.394%, respectively. Calibration of absorbance values after second derivative treatment showed the highest accuracy in predicting sample components. 2. The absorbance values of various samples ground for the different periods of time were calibrated before or after treatment with first or second derivative in order to accurately predict the components of samples ground for the different periods of time. The standard error of prediction for moisture content were 1.026%, 0.589% and 0.568%, respectively, and those for protein content 0.860%, 0.557% and 0.399%, respectively. The standard error of prediction were lower in the order of calibrations before and after first and second derivative treatments. As a result, calibration of absorbance values after second derivative treatment showed higher accuracy regardless of grinding time of samples.

Effects of Different Levels of Crushed Bamboo Chip on Performance and Carcass Characteristics in Holstein Steers (파쇄 대나무 급여수준이 젖소 거세우의 성장과 도체특성에 미치는 영향)

  • Twenty eight Holstein steers 12 months old and weighing about 300kg were andomly allotted into one of four groups being fed ammoniated rice straw(ARS) and substituted 30%, 40% and 50% crushed bamboo chip for ARS to determine the effects of different levels of bamboo chip on performance, digestibility and carcass characteristics. Daily weight gain was reduced as the substitution levels of bamboo chip for ARS as a roughage source increased but there were no differences in daily weight gain between steers fed ARS alone and 30% bamboo chip for ARS. Concentrates intakes were not different between treatments by the substitution levels of bamboo chip for the whole fattening period. Roughage intake tended to increase as the substitution levels of bamboo chip increased. Total feed intake was not affected by the substitution levels of bamboo chip. However, feed efficiency got worse with increasing levels of bamboo chip. Animals fed the roughage substituting 30% bamboo chip for ARS were higher in profit by 13% than animals fed ARS alone as a roughage source. Digestibilities of Dry matter(DDM) and crude fiber(DCF) were highest in animals fed ARS alone as a roughage source. DDM's were lower in higher substitution levels of crushed bamboo chip but there were no differences in DCF among animals fed different levels of bamboo chip as a roughage source. Crude protein digestibility was not affected by ammoniated rice straw or by the different levels of bamboo chip. Dressing percentage and backfat thickness were not affected by ammoniated rice straw or by the levels of bamboo chip but ribeye area was narrowed as the levels of bamboo chip increased. Beef color, fat color, texture, maturity and marbling score were not affected by feeding of ammoniated rice straw or by the levels of bamboo chip. According to these results, it may be concluded that profit can increase when Holstein bulls are castrated and roughage containing ammoniated rice straw plus 30% bamboo chip is offered.
