수삼의 첨가가 섞박지의 품질특성에 미치는 영향 (The Effect of Fresh Ginseng on the Quality Characteristics of Seukbakjee)

  • This study was conducted to investigate the effect of fresh ginseng on the physicochemical, microbiological and sensory properties of Seukbakjee during 45 days of fermentation. Seukbakjee with various levels(0, 2, 4, 6%) of fresh ginseng were fermented at $4^{\circ}$. During fermentation, the pH values were lowered in all Seukbakjee samples, however, those with fresh ginseng were a little higher than control Seukbakjee. Acidity increased continuously during the entire fermentation, in which those of added fresh ginseng increased less than control. As the concentration of fresh ginseng increased, the pH of Seukbakjee were increased. Saltiness was maintained at 1.37~2.62% levels during the whole fermentation. The degree of degradation of reducing sugar and free sugar was much delayed in Seukbakjee added with fresh ginseng. Total vitamin C content of Seukbakjee with fresh ginseng was higher than that of Seukbakjee without fresh ginseng. The number of total bacteria and lactic acid bacteria in Seukbakjee with fresh ginseng was higher than control during the entire fermentation period. In sensory evalution, Seukbakjee with 4% fresh ginseng was the best for taste and flavor. Seukbakjee with 2% fresh ginseng was the best for texture and overall acceptability. Above results suggest that the addition of fresh ginseng improves the quality of Seukbakjee.

찹쌀떡의 저장중 텍스쳐 변화 (Textural Changes of Glutinous Rice Cakes during Storage)

  • 일반 및 통일 찹쌀 전분의 성질 및 찹쌀떡의 저장에 따른 텍스쳐의 변화를 조사하였다. 일반 찹쌀 전분 입자는 통일 찹쌀 전분보다 동그란 형태였으며 크기가 작았다. 일반 찹쌀 전분의 물 결합 능력 및 swelling power는 통일 찹쌀 전분보다 높았다. 통일 찹쌀떡의 호화도는 일반 찹쌀떡에 비하여 낮았으며, 일반 찹쌀떡의 호화도는 저장 2일까지 직선적으로 감소하였고, 통일 찹쌀떡은 저장 1일까지 직선적으로 감소하였다. 이 경향은 떡의 단단함의 증가와 밀접한 관계가 있었으며, 관능 검사 결과 단단함의 변화는 저장 시간의 변화와 품종의 차이에 따라 고도의 유의차를 보였다.

  • 능동적 시간지원 데이터베이스 시스템은 시간지원 데이터베이스 시스템에 능동규칙 시스템을 통합하여 구성한 진보된 데이터베이스 시스템이다. 이 시스템은 추세 분석, 상태 관찰을 통한 경보,고장에 대한 예측, 금융 시스템 및 공정 제어 등과같은 고도의 응용에 효과적으로 대응할수 있다. 그러나 능동적 시간지원 데이터베이스 시스템은 시간 차원을 갖는 다차원 데이터공간에 대해 처리해야 하므로 그 처리비용이 매우 높으며, 규칙 처리에 의한 시스템 부하가 매우 증가할 수 있다. 따라서 효과적 규칙 처리방법에 대한 연구가 수행되어야 한다. 한편 규칙의 성능에 대한 문제는 일반적으로 조건 평가 방법의 효율성에 달려있다. 특히 데이터의 시간차원을 고려한 시간지원 능동규칙의 경우 시간 영역에 따라 규칙에 의해 처리되어야 할 데이터 량의 증가하고 이에 다라 성능의 차이가 많이 나므로 더욱 문제가 된다. 따라서 이 논문에서는 능동적 시간지원 데이터베이스 시스템을 위한 시간지원 능동규칙의 성능향상을 위해 조건 평가를 검토하고 시간지원 차분에 의한 시간지원 점진적 평가연산을 제시하였다. 아울러 이 시간지원 점진적 연산자를 적용한 조건 평가 예를 보이고 이 연산자의 효율성을 증명하였다.

  • 선진 각국에서는 방화안전의 구현과 소방기술의 발전을 위하여 화재실험을 통하여 화재현상을 관측, 공학적으로 파악하려는 노력을 경주하여 왔다. 실물화재 실험은, 건축 공간의 안전을 확보하기 위한 공법개발과, 계획방법의 발전, 소화시스템 성능 기준의 결정을 위하여 시행되어 왔다. 본 연구에서는 국내거주상황을 대표하는 공동주택을 대상으로 실물화재 실험을 시도하여, 실험기술 자체를 확보함과 동시에, 공간화재예측에 요구되는 기초데이터를 획득하고, 취약부위를 도출하므로써 소기의 결과를 이끌어 내었다.

석류 농축액을 첨가한 장어 데리야끼 소스의 개발 (A Study Development of Ell Teriyaki Sauce with Added Pomegranate Concentrate)

  • The test results of Teriyaki sauce produced adding pomegranate concentrate are as follows: pH of Teriyaki sauce adding pomegranate concentrate showed significant difference among all samples (p<0.05). In case of sugar content, the higher the amount of pomegranate concentrate rose, the higher in sugar content it was. The test result of the amount of water showed significant difference among all samples (p<0.05). As the amount of added pomegranate concentrate was increased, the amount of water in the sauce was decreased. For viscosity, as the amount of added pomegranate concentrate was increased, viscosity of Teriyaki sauce was increased. The test result of chromaticity showed that as the amount of added pomegranate concentrate was increased, brightness (L), redness (a), and yellowness (b) were increased. According to the result of sensory evaluation, overall-acceptability was 7.5 highest at 6% compared to the control group. In view of the above results, it is advised to produce Teriyaki sauce with 6% pomegranate concentrate for its practical use.

  • 최근의 철근콘크리트 교량의 부식과 노후화에 대한 관심이 많다. 콘크리트 안의 부식되어진 철근은 교량구조의 안전뿐만 아니라 철근콘크리트 부재의 휨강도에도 영향을 준다. 기존의 성능평가를 고려한 철근콘크리트속의 부식율 및 휨강도 특성 경제성 분석은 명확하지 많았다. 본 연구의 목적은 철근의 부식감소에 따라서 철근콘크리트 교량의 저항강도기능과 생애주기비용을 연구하고자 한다 따라서 현재의 부식 및 휨강도 산출공식을 제시하고 부식된 철근 콘크리트 교량의 잔여수명을 정확히 평가하고자 한다.

수냉식변압기 냉각튜브의 부식특성 평가에 관한 연구 (A Study on Evalution of Corrosion Properties in cooling tube of water cooling transformers)

  • Most of the thirteen substations in operation in the metropolitan area were installed around the year 2000, and since water cooling methods are used to directly withdraw heat from transformer oils, a stable supply of electric power is required through optimal maintenance of facilities. The water cooling tower installed outdoors, which uses the water supply as sprinkler water, experiences the most problems. Since more than 90% of the cooling water is reused, the dissolved composition in the water becomes concentrated due to long operating hours, and impurities dissolve in the water due to air flowing in from the outside, forming hard scales on the outer surface of the cooling tube, and in extreme cases, reacting with the tube material composition, leading to corrosion. As a result, not only is cooling efficiency lowered, but in extreme cases the cooling tube must be replaced. In this study, the characteristics and composition of the scales formed on the cooling tube were analyzed and corrosion characteristics of material types were identified in order to find an efficient maintenance method for cooling tubes. In addition, the degree of dissolution of various chemicals were investigated during the removal of scales that have been formed.

하수도 기술의 평가 인증제도 운영현황 및 방향 (Current Status of Sewerage Technology Evalution Verification System and Direction for Improvement of the System)

  • As sewerage works has become one of the major public works in Korea, the employment of advanced and more appropriate sewerage technology has become essential to improve the efficiency of sewerage works. During last 10 years, the Korean Government has made tremendous amount of investment on sewerage works so that treatment plants in 58 cities have treatment capacity which is equivalent to 52.8% of total daily sewage generation in Korea. This remarkable development, however, has heavily depended on one technology, the conventional activated sludge process as more than 95% of the existing plants employ this process, Recently, the Korean Government and local authorities have plans to introduce more appropriate sewage treatment technologies and research and development in this area has become very active. To encourage employing new and appropriate technologies, however, the proper technology evaluation and verification program for new process is needed. The public sector should play a key role in this program since the sewerage works is one of the major public works. In this paper, the technology evaluation and verification programs related with sewerage facilities in the US and Japan are briefly reviewed. The Innovatived and Alternative Technology programs which was operated by US EPA until recently and Environmental Technology Verification(ETV) program which was commenced in 1995 are introduced. The technology verification programs operated in Japan and also in Korea are also reviewed in this paper to propose a future direction for development of the appropriate evaluation and verification system.

정유조건이 옥로차 품질에 미치는 영향 (Effect of a Final Rolling Process on Okro Tea Quality)

  • 옥로차 제조에 쓰인 차나무 잎은 백아중이 29.4 g,출개도 77.8%, 엽수분이 79.5%였다. 75$^{\circ}C$, 30분 처리가 다른 처리 조건에 비해 완제품의 수율이 높았으며, 총질소, theanine, glutamic acid, arginine 엽록소 함량이 많았고, 탄닌함량이 낮았다. 또한 75$^{\circ}C$, 30분 정유처리가 관능평가에서 타처리보다 6~12점 더높아 양호하였다. 결론적으로 75$^{\circ}C$, 30분 정유처리가 제다품질 및 관능평가에서 우수하여 가장 양호한 정유조건이었다.

고속도로변 사면경관의 인지적 관계분석 (Analysis on Perceptual Relationship in the Slope Scene of Highway)

  • The perceptual characteristic on the slope scenery around highway is very similar as the general perceptual characteristic in the landscape. This process determines by the relationship between the scenery observers and the characteristics of its place. It is very important to have a analysis on highway slope scenery in our particular culture in Korea since our country's highways are done by cutting mountains : therefore, we have a lot of slopes around highways. The physical characteristics on the highway scenery determines how we should build scenery around highway to a satisfactory level. The results drawn from this research work are as follow: 1) The satisfaction for slope scene had been affected by sex, native and experience of travel. I thought that the slope scene having peculiar form will offer the highest satisfaction. 2) Psychological factor, reflected satisfaction of slope scene, 몽 a grip of three factors as the factor of evaluation, texture, formation, and presumption formula is : Satisfaction=1.04(Evauluation factor)+0.83(Texture factor)+0.15(Formation factor)+4.28)R2=0.69). 3) Vine among the vegetation componeents of slope scene highly correlated with the evaluation factor and grass, shrub correlated with the texture factor. 4) Rock among the structual components of slope scene highly correlated with the formation factor, and stockade, lattice correlated with the evalution factor. 5) Gradient among the properties which determined slope form, highly correlated with the formation factor.
