  • To elucidate the effect of exercise on blood concentrations of ethanol, lactate and glucose in men who show facial flush after ethanol ingestion, 59 healthy male college students were studied. After 6 or more hours of fasting, the subjects were administered 3 ml of 25% ethanol solution(Soju) per liter of total body water. For control experiment Soju was replaced with the same dose of water. Exercise performed was vertical jumping on a rebounder for 3 min immediately after drinking. The subjects were classified into 6 groups: water ingestion(W), flushed (F) and non-flushed (N) groups after ethanol ingestion, water ingestion and exercise(WE), flushed(FE) and non-flushed (NE) groups after ethanol ingestion and exercise. Blood ethanol concentration in the exercise groups(NE, FE) was lower until 60 min after drinking than that in the non-exercise groups(N,F). Factor k representing the rate of ethanol absorption was markedly lower in the exercise groups than in the non-exercise groups. The flushed groups(F,FE) showed higher blood ethanol level than the non-flushed groups (N,NE) from 30 to 120 min after drinking. Blood lactate concentration in WE group was elevated immediately after exercise and returned to the resting level at 60 min after exercise. Ethanol increased blood lactate level from 30 to 120 min after ethanol drinking, Exercise after ethanol ingestion produced a sharp increase and then drop in blood lactate level which was stilled significantly higher than the resting level all the way through 120 min. Blood glucose concentration was decreased at 15 min after exercise. Ethanol-administered groups except F group showed a steady decrease in blood glucose level from 30 through 120 min. Heart rate was elevated by ethanol only in the flushed groups. Heart rate in F group was significantly increased at 4 min after ethanol and was maintained at high level until 120 min. In WE and NE groups, heart rate was significantly increased immediately after exercise and returned to the resting level at 60 min. The FE group, however, showed a consistently elevated heart rate throughout the 120-min experimental period. Taken together, the exercise alone produced a delayed ethanol absorption, a prompt increase in heart rate and blood lactate level and a decrease in blood glucose level early in the recovery period from exercise. After ethanol administration, blood lactate was elevated and blood glucose was lowered from 30 to 120 min. Flushed subjects showed rapid increase in heart rate after ethanol drinking and higher blood ethanol level than non-flushed ones from 30 to 120 min after drinking.

  • Various factors affecting the supercritical carbon dioxide extraction of daidzein from soybean were studied. Daidzein was not extracted with pure supercritical carbon dioxide. The ethanol was an efficient modifier for supercritical carbon dioxide to extract daidzein. The extraction efficiency increased as the pressure increased up to 300 bar. At $35^{\circ}C$ and 300 bar, 93% of daidzein was extracted with supercritical carbon dioxide modified with 15% of ethanol.

  • In ethanol fermentations with Saccharomyces sake, phosphatidylcholine-egg albumin as a supplement in fermentation media was much more effective in enhancing ethanol production than linoleic acid-ergosterol. It came from the differences in alcohol-tolerance between egg albumin and ergosterol. The egg albumin was supposed to function as a nutrient rather than to form protective layers around the cells against ethanol.

Content of phenolic compounds extracted with water and 50% ethanol extracts were 3.29 mg/g and 4.14 mg/g, respectively. 1,1-Diphenyl-2-picrylhydrazyl free radical scavenging activities of water and ethanol extracts were 98.45% and 91.20%, respectively, at $200{\mu}g/mL$ of phenolics. 2,2'-Azinobis-(3-ethylbenzothiazoline-6-sulfonic acid) radical decolorization activity was 97.28% for water extracts and 97.83% for ethanol extracts at $100{\mu}g/mL$ of phenolics. Antioxidant protection factor (PF) was 1.77 PF for water and ethanol extracts at $200{\mu}g/mL$ of phenolics. Thiobarbituric acid reactive substances of water and ethanol extracts were 94.77% and 95.64%, respectively, at $100{\mu}g/mL$ of phenolics. Tyrosinase inhibitory activity, which is related to skin-whitening, was confirmed to be 34.96% for ethanol extracts at $200{\mu}g/mL$ of phenolics. Elastase inhibitory activity and anti-wrinkle effect of 50% ethanol extracts were 78.9% at $200{\mu}g/mL$ of phenolics. Collagenase inhibitory activity of ethanol extracts was 61.29% at $200{\mu}g/mL$ of phenolics. Astringent effect was not detected in water extracts but was 7.82% for 50% ethanol extracts at $200{\mu}g/mL$ of phenolics. Hyaluronidase inhibitory activity as a measure of anti-inflammation was confirmed to be 81.04% for water extracts at $200{\mu}g/mL$ of phenolics. • Effects of ethanol and/or some organic acid on the growth of some microorganism grown in Kimchi, Lactobacillus plantarum, Leuconostoc mesenteroides. Kluyveromyces marxianus, were identified and the cell injury was observed by measuring optical density at 260nm. When 0.0∼5.0% ethanol was added in the growth medium, the cell growth was inhibited depending on the concentration. Organic acids involving acetic, adipic and citric acid inhibited the growth of L. plantarum and Leu. mesenteroides, but K. marxianus, the yeast, was not at 0.1% of organic acid. When 2.0% of ethanol and 0.1% of organic acid were used, adipic acid was more effective on the growth inhibition. This inhibition of microbial growth seemed to be caused by the leakage of internal contents from microbes which were observed by the optical density at 260nm in the buffer supernatant. 5.0% of ethanol accelerated the optical density increase at 260nm in L. plantarum, Leu. mesenteroides and K. marxianus, but 2.0% of ethanol did not. 0.1% organic acid increased the absorbance of the supernatant in lactic bacteria, but not in yeast, K. marxianus. The measurement of absorbance at 260nm revealed that the cell injury increased when 2.0% of ethanol and/or 0.1% of organic acid. especially adipic acid were added.

  • In this work, effect of the culture medium composition on the fermentation process of Clostridium ljungdahlii, which is acetogenic bacteria to product ethanol from synthesis gas, was examined to improve the microbial growth and ethanol production. Components of the culture medium such as yeast extract, fructose, $NH_4Cl$, and $K_2HPO_4$ were selected as influence factors for the cell growth and ethanol production. As the concentration of yeast extract increased, both of the cell growth and ethanol production increased. And the ethanol productivity was the highest at an yeast extract of 0.05 g/L, which is lower than that of base medium. As the concentration of fructose increased, the cell growth increased, but the ethanol production decreased when the concentration of fructose was higher than that of base medium (5 g/L). In an experiment with the yeast extract of 5 g/L, produced ethanol concentration was the highest (0.297 g/L) when fructose concentration was 5 g/L, however, the specific ethanol productivity was higher (0.281 g/g DCW) when the fructose was not added due to very low cell mass. The cell growth and ethanol production were not significantly influenced by $NH_4Cl$ concentration, however the growth inhibition was observed at a 30 g/L of $NH_4Cl$. When the concentration of $K_2HPO_4$ increased, both of the cell growth and ethanol production increased. In experiments with $NH_4Cl$ and $K_2HPO_4$, specific ethanol productivities were higher when the low concentration of yeast extract was used.

  • To increase the production of ethanol by using sugar from lignocellulosic biomass, pentose and hexose have to be fermented simultaneously by yeast. The effects of mixed sugar and nitrogen on ethanol production by immobilized Pichia stipitis KCCM 12009 were investigated. When optimal mixed sugar and nitrogen concentration were 5% (Glucose/Xylose = 3:1) and 1%, respectively, ethanol concentration produced by immobilized P. stipitis was 19-20 g/L. In repeated fed-batch by immobilized P. stipitis, all glucose was consumed very quickly at 1-3% mixed sugar concentration. But, xylose consumption was decreased as the mixed sugar concentration increased. Also, ethanol (5.6 g/L) was stably produced and ethanol production rate was 0.13 g/$L{\cdot}h$ in immobilized cell reactor (ICR) with 1% mixed sugar (Glucose/Xylose = 3:1) as feeding media.

  • A spectrofluorimetric methods has been developed for the determination of carbaryl in an aqueous solution. The effects of excitation wavelength, concentration of surfactant, concentration of ethanol as cosurfactant and emission wavelength on the fluorescence intensity were investigated to find the optimum experimental conditions to determine carbaryl. The emission intensity of the carbayl was increased with addition of sodium dodecyl sulfate (SDS) as a surfactant. The emission intensity of the carbaryl was further increased with addition of ethanol as a co-surfactant. The optimum conditions were 281 nm for excitation wavelength, $1.0{\times}10^{-2}mol/L$ SDS, 20% (v/v) ethanol and 349 nm for emission wavelength. Under the optimum conditions, the emission intensity increased with the carbaryl concentration in the range of $5{\times}10^{-7}$ to $1.0{\times}10^{-4}mol/L$ with a detection limit ($3{\sigma}$) of $1.1{\times}10^{-8}mol/L$. The resulting correlation coefficient of the working curve was 0.9996.

  • Optimal extraction conditions for yield, browning color, electron donating ability, nitrite scavenging effect, total polyphenol content and tyrosinase inhibitory activity of Lyophyllum ulmarium were determined by using response surface methodology (RSM) through the central composite design. The extraction yield of Lyophyllum ulmarium was effected by ethanol concentration and browning color was improved with the increase of ethanol concentration than microwave power. The nitrite scavenging effect was improved with the increase of ethanol concentration and decrease of microwave power The electron donating ability, browning color, tyrosinase inhibitory activity and total polyphenol content were improved with the increase in ethanol concentration and microwave power. The optimal ranges of extraction conditions for effective components of Lyophyllim ulmarium were predicted as 60.05~102.75 watt of microwave power, 53.20~64.01% of ethanol concentration and 7.77 min of extraction time.

  • The growth characteristics of Candida sp. JY-5 were examined on ethanol, acetic acid, or acetaldehyde as sole source of carbon by batch culture. The specific growth rates ($\mu$) of this strain on an ethanol during tile exponential period were changed depending upon the initial concentrations at above 0.5 g/l, but not in the proportion. The highest $\mu$ value was 0.291 hr$^{-1}$ and the maximum growth yield was 61.2% at the concentration of 10 g/l. The $\mu$ values on an acetic acid substrate were constant regardless of the initial concentrations presenting 0.106 hr$^{-1}$ in the highest value. The maximum growth yield was shown as 46.8% at the initial concentration of 10 g/l. The $\mu$ value on an acetaldehyde during the exponential period was 0.063 hr$^{-1}$ and the maximum growth yield was 44.9% at the initial acetaldehyde concentration of 0.2 g/l.
