Accuracy of the 24-hour diet recall method to determine energy intake in elderly women compared with the doubly labeled water method (에너지 섭취 조사를 위한 24시간 회상법의 정확도 평가: 여자노인을 대상으로 이중표식수법을 이용하여)

  • Purpose: This study evaluated the accuracy of the 24-hour diet recall method for estimating energy intakes in elderly women using the doubly labeled water (DLW) method. Methods: The subjects were 23 elderly women with a mean age of 70.3 ± 3.3 years and body mass index (BMI) of 23.9 ± 2.8 kg/㎡. The total energy expenditure (TEEDLW) was determined by using the DLW and used to validate the 24-hour diet recall method. The total energy intake (TEI) was calculated from the 24-hour diet recall method for three days. Results: TEI (1,489.6 ± 211.1 kcal/day) was significantly lower than TEEDLW (2,023.5 ± 234.9 kcal/day) and was largely under-reported by -533.9 ± 228.0 kcal/day (-25.9%). The accurate prediction rate of elderly women in this study was 8.7%. The Bland-Altman plot, which was used to evaluate the TEI and the TEEDLW, showed that the agreement between them was negatively skewed, ranging from -980.8 kcal/day to -86.9 kcal/day. Conclusion: This study showed that the energy intake of elderly women was underreported. Strategies to increase the accuracy of the 24-hour diet recall methods in the elderly women should be studied through analysis of factors that affect underreporting rate. Further studies will be needed to assess the validity of the 24-hour diet recall method in other population groups.

  • According to the 4th and 5th assessment of the Intergovernmental Panel on Climate Change (IPCC), global climate has been rapidly changing because of the human activities since Industrial Revolution. The perceived changes were appeared strongly in temperature and concentration of carbon dioxide ($CO_2$). Global average temperature has increased about $0.74^{\circ}C$ over last 100 years (IPCC, 2007) and concentration of $CO_2$ is unprecedented in at least the last 800,000 years (IPCC, 2014). These phenomena influence precipitation, evapotranspiration and soil moisture which have an important role in hydrology, and that is the reason why there is a necessity to study climate change. In this study, Asia region was selected to simulate primary energy index from 1951 to 2100. To predict future climate change effect, Common Land Model (CLM) which is used for various fields across the world was employed. The forcing data was Representative Concentration Pathway (RCP) data which is the newest greenhouse gas emission scenario published in IPCC 5th assessment. Validation of net radiation ($R_n$), sensible heat flux (H), latent heat flux (LE) for historical period was performed with 5 flux tower site-data in the region of AsiaFlux and the monthly trends of simulation results were almost equaled to observation data. The simulation results for 2006-2100 showed almost stable net radiation, slightly decreasing sensible heat flux and quite increasing latent heat flux. Especially the uptrend for RCP 8.5 has been about doubled compared to RCP 4.5 and since late 2060s, variations of net radiation and sensible heat flux would be significantly risen becoming an extreme climate condition. In a follow-up study, a simulation for energy index and hydrological index under the detailed condition will be conducted with various scenario established from this study.

Effects of Screw Speed, Moisture Content, and Die Temperature on Texturization of Extruded Soy Protein Isolate (스크루 회전속도, 수분 함량과 사출구 온도가 압출성형 분리대두단백의 조직화에 미치는 영향)

  • The aim of this study was to investigate the effects of screw speed, moisture content, and die temperature on the physical properties of extruded soy protein isolate. Extrusion conditions were moisture content (20 and 25%) and die temperature (120, 130, and $140^{\circ}C$) at a fixed screw speed of 250 rpm. The other extrusion conditions for screw speed (150, 200, 250, 300, and 330 rpm) were a fixed moisture content and die temperature of 30% and $140^{\circ}C$, respectively. Specific mechanical energy input decreased as die temperature increased from 120 to $140^{\circ}C$, whereas specific mechanical energy input increased as screw speed increased from 150 to 330 rpm. Expansion ratio and specific length increased as die temperature increased. Breaking strength decreased as die temperature increased and moisture content decreased. A lower moisture content resulted in a greater color difference. Integrity index increased as die temperature increased from 120 to $140^{\circ}C$ and moisture content decreased from 25 to 20%. Nitrogen solubility index decreased as screw speed increased from 150 to 330 rpm. Nitrogen solubility index was lowest at $2.83{\pm}0.51%$ as screw speed decreased to 150 rpm. In conclusion, moisture content was a more important factor than die temperature for texturization of soy protein isolate.

Evaluation of Spatial and Temporal Variations of Water Quality in Lake Shihwa and Outer Sea by Using Water Quality Index in Korea: A Case Study of Influence of Tidal Power Plant Operation (수질평가지수를 이용한 시화호 내측 및 외측 해역의 시·공간적 수질 변화 평가: 조력발전소 가동에 따른 영향 연구)

  • The basin of Lake Shihwa is one of highly industrialized region of Korea and a current environmental issue of study area is the operation of tidal power plant (TPP) to improve water quality. The application of water quality index (WQI) which integrates five physiochemical parameters (transparency, DO, DIN, DIP and chlorophyll-a) of water quality in Lake Shihwa and outer sea during 2011~2012 were performed not only to evaluate the spatial and temporal distribution of the water quality but also to assess the effect of water quality improvement by the operation of tidal power plant. The higher WQI values were observed in monitored sites near the industrial complexes in Lake Shihwa and the outfall of wastewater treatment plants (WWTPs) in outer sea. This indicates that the quality of seawater is influenced by diffuse non-point sources from industrial, municipal and agricultural areas in Lake Shihwa and by point sources from the effluence of municipal and industrial wastewater throughout WWTPs in outer sea. Mean WQI value decreased from 53.0 in 2011 to 42.8 in 2012 of Lake Shihwa. Water quality has improved significantly after TPP operation because enhancement of seawater exchange between Lake Shihwa and outer sea leads to improve a hypoxic condition which is primarily a problem in Lake Shihwa. Mean WQI of outer sea showed similar values between 2011 and 2012. However, the results of hierarchical cluster analysis and the deterioration of water quality in summer season indicate that the operation of tidal power plant was not improved the water quality in the upper most area of Lake Shihwa. To successfully improve overall water quality of Lake Shihwa, it is urgently necessary to manage and reduce of non-point pollution sources of the basin of Lake Shihwa.

Relation Between Obesity Indices and, Nutritional Knowledge Nutritional Status and Blood Parameters in Obese Middle-School Students (비만 중학생의 비만도와 영양지식, 영양섭취상태 및 혈액성상과의 상관성)

  • The purpose of this study was to investigate the relationship between obesity indices, nutritional knowledge, nutritional intake status, and some blood parameters in obese middle-school students. Anthropometric measurement, 24-hour recall for dietary intake, blood analysis and Questionnaire response including nutritional knowledge, nutritional attitude, and self-satisfaction were conducted in 42 obese middle-school students (28 male and 14 female) participated in the nutritional camp program carried by Bucheon district public health center in Kyunggi-do. The mean age of subjects was 13.9 years. The average body weight, BMI, obesity index, WHR and percent body fat were 75.5 kg, 29.1 kg/$m^2$, 30.1, 0.89 and 33.3% in male subjects, and 67.8 kg, 27.5 kg/$m^2$, 25.3, 0.81 and 34.6% in female subjects. The average nutritional attitude, the self-satisfaction and the nutritional knowledge scores were no significant difference between male and female subjects. Average intake of energy were 85.5% of RDA in males and 98.1% of RDA in females. The percentage of energy from fat was higher in both male (29%) and female (26%) subjects than recommended level. Calcium, iron, zinc, vitamin A, vitamin B$_2$, vitamin C, niacin and folate intakes were below the RDA for them. In the results of correlation analysis, body weight, BMI and obesity index were positively correlated with systolic blood pressure and cholesterol intake. There was a negative correlation between percent body fat and nutritional knowledge. Body weight was negatively related to HDL-cholesterol, whereas it has positive relation with RBC, hemoglobin and hematocrit. BMI and obesity index were negatively related to HDL-cholesterol, but positively related to RBC, respectively. WHR showed positive relationship with serum GPT, glucose and MCV.

Benefits of adherence to the Korea Healthy Eating Index on the risk factors and incidence of the metabolic syndrome: analysis of the 7th (2016-2018) Korea National Health and Nutrition Examination Survey (제7기 (2016-2018년) 국민건강영양조사 자료를 이용한 식생활평가지수 준수와 대사증후군 위험요소 및 대사증후군 발생 관계 연구)

  • Purpose: The purpose of the study was to investigate whether adherence to the Korea Healthy Eating Index (KHEI) was associated with metabolic syndrome and risk markers. Methods: The participants included 8,345 adults, aged 20-59 years, who took part in the 7th Korea National Health and Nutrition Examination Survey (KNHANES). The data were analyzed using a complex-sample t-test, the Rao Scott χ2-test, and logistic regression analysis on the SPSS v. 26.0 software. The participants were divided into four groups by quartiles of KHEI scores. Results: The average KHEI score was 61.06 points out of 100, and the women's score (62.50 points) was significantly higher than that of men (59.63 points). The KHEI quartiles status showed significant differences by age (p < 0.001), household income (p < 0.001), smoking status (p < 0.001), and food security. Specifically, the KHEI quartiles in the men showed significant differences in education (p < 0.001) and economic activity (p < 0.001) whereas those of women showed significant differences in alcohol-consumption (p < 0.001), depression (p < 0.01) and eating-out (p < 0.001). As the KHEI scores increased, the proportion of subjects with an energy intake below the estimated energy requirement (EER) was lower, and significantly better levels of intake were observed for carbohydrate, protein, vitamin C, calcium, vitamin B1, vitamin B2, and niacin. The incidence of the metabolic syndrome risk factors, hypertriglyceridemia and hyperglycemia for men and hypertension, and hyperglycemia for women showed significant differences. The KHEI scores were inversely associated with abdominal obesity, hypertriglyceridemia, low high-density lipoprotein cholesterol, hyperglycemia, hypertension, and metabolic syndrome. Conclusion: Based on these results, we conclude that higher adherence to the KHEI was associated with lower metabolic syndrome risk factors and incidence of the metabolic syndrome.

Effects of Bar Deformation Height on Bond Degradation Subject to Cyclic loading (반복하중시 철근 마디높이에 따른 부착 손상특성)

  • One of the reasons for brittle failure in reinforced concrete structures subjected to severe earthquake is due to large local bond-slippage of bars resulting in fast bond degradation between reinforcing bars and concrete. This study aims to evaluate effects of bar deformation height on bond performance, specially, bond degradation under cyclic loading. Bond test specimens were constructed with machined bars with high relative rib areas. The degree of confinement by transverse bars is also another key parameters in this bond test. From test results, amounts of energy dissipation are calculated and compared for each parameter. Test results show that bond strength and stiffness drops significantly as cycles increases. The confinement and high relative rib area are effective to delay bond degradation, as the reduction of bond strength of cyclic loading compared to monotonic loading decreased for bars with large confinement and high relative rib areas. The energy dissipation also increases as the degree of confinement and relative rib area increases. However, tested bars with very high rib areas show that the bond may be damaged at relatively small slip because of high stiffness. The study will help to understand the bond degradation mechanism due to bar deformation height under cyclic loading and be useful to develop new deformed bars with high relative rib areas.

Influence of Ionophore Supplementation on Growth Performance, Dietary Energetics and Carcass Characteristics in Finishing Cattle during Period of Heat Stress

  • Forty-eight crossbred heifers ($378.1{\pm}18$ kg) were used in a 56-d feeding trial (four pens per treatment in a randomised complete block design) to evaluate the influence of ionophore supplementation on growth performance, dietary energetics and carcass characteristics in finishing cattle during a period of heat stress. Heifers were fed a diet based on steam-flaked corn (2.22 Mcal $NE_m/kg$) with and without an ionophore. Treatments were: i) control, no ionophore; ii) 30 mg/kg monensin sodium (RUM30); iii) 20 mg/kg lasalocid sodium (BOV20), and iv) 30 mg/kg lasalocid sodium (BOV30). Both dry matter intake (DMI) and climatic variables were measured daily and the temperature humidity index (THI) was estimated. The maximum THI during the study averaged 93, while the minimum was 70 (THI average = $79.2{\pm}2.3$). Compared to controls, monensin supplementation did not influence average daily gain, the estimated NE value of the diet, or observed-to-expected DMI, but tended (p = 0.07) to increase (4.8%) gain to feed. Compared to controls, the group fed BOV30 increased ($p{\leq}0.03$) daily gain (11.8%), gain to feed (8.3%), net energy of the diet (5%), and observed-to-expected DMI (5.2%). Daily weight gain was greater (7.6%, p = 0.05) for heifers fed BOV30 than for heifers fed MON30. Otherwise, differences between the two treatments in DMI, gain to feed, and dietary NE were not statistically significant (p>0.11). Plotting weekly intakes versus THI, observed intake of controls was greater (p<0.05) at THI values ${\leq}77$ than ionophore groups. When THI values were greater than 79, DMI of control and MON30 were not different (p = 0.42), although less than that of groups fed lasalocid (p = 0.04). Variation in energy intake was lower (p>0.05) in the ionophores group (CV = 1.7%) than in the control group (CV = 4.5%). Inclusion of ionophores in the diet resulted in relatively minor changes in carcass characteristics. It is concluded that ionophore supplementation did not exacerbate the decline of DM intake in heat-stressed cattle fed a high-energy finishing diet; on the contrary, it stabilised feed intake and favoured feed efficiency. Ionophore supplementation reduced estimated maintenance coefficients around 10% in finishing cattle during a period of heat stress. This effect was greatest for heifers supplemented with 30 mg lasalocid/kg of diet.

Nutritional Status of the Oldest-elderly Population in Sunchang County (순창군 장수인의 영양섭취 실태)

  • This study was investigated nutrient intakes and dietary evaluation index of the healthy subjects over 85 of Sunchang County to explore the improved dietary pattern for healthy aging of the elderly. The survey was conducted by personal interview to 161 elderly subjects (59 males and 102 females over 85) in 2006, and their daily dietary intake was assessed by 24-hr recalls and weighing one meal. The daily energy intakes of males were 1,335 ${\pm}$ 67 kcal, and those of females were 1,095 ${\pm}$ 38 kcal comprised of 66.8% and 68.4% of the EER for the age group of 75. The proportions of energy from carbohydrate : protein : lipid were 70.7 : 14.6 : 14.6 for males and 68.6 : 14.0 : 17.4 for females. The average protein intakes were 95.4% for males and 85.0% for females of RI, and the average calcium intakes were 54.3% for males and 43.6% for females of RI. The daily vitamin intakes were below 70% except vitamin A, vitamin $B_6$, and vitamin E. The proportion of the relative risk groups of protein, phosphate, iron and vitamin A ranged 40-49% of RI over 75 year groups. The other nutrient intakes showed that there were over 50% risk groups. Especially for nutrients such as calcium, vitamin $B_1$, vitamin $B_2$, vitamin C, folate and niacin over 70% of the subjects were under risk. The median value of all nutrient intakes did not reach AI. The INQ of nutrients were over 0.8 except for folate and vitamin C. Calcium intakes were relatively low and needed attention. However, the ratio of calcium and phosphate showed 1 : 1.6, which appeared to be superior to the other districts. The DVS were higher as the dietary balance scores, KDDS were higher, and the groups with high KDDS had high intakes of nutrients compared to the groups with low KDDS. The high risk groups as judged by simple nutrition screening test had lower nutrient intakes than the groups of middle risk or low risk groups. The subjects in Sunchang area had relatively low intakes of several nutrients. However, judging from the desirable patterns of the energy proportion from three major nutrients, ratio of calcium and phosphate and INQ of nutrients there is a possibility that extended healthy aging might be related to the quality of nutrients and relative ratio between nutrients. To improve nutrient status of the elderly of the surveyed area further application involving KDDS and DVS appeared to be required.

Estimation of design parameters of TBM using punch penetration and Cerchar abrasiveness test (압입시험 및 세르샤 마모시험에 의한 TBM의 설계변수 추정)

  • Linear cutting test is known to be very effective to determine machine parameters (i.e. thrust force and torque) and to estimate penetration rate of TBM and other operation conditions. Although the linear cutting test has significant advantages, the test is expensive and time-consuming because it requires large size specimen and high load capacity of the testing machine. Therefore, a few empirical prediction models (e.g. CSM, NTNU and QTBM) alternatively adopt laboratory index tests to estimate design parameters of TBM. This study discusses the estimation method of TBM machine parameters and disc cutter consumption using punch penetration test and Cerchar abrasion test of which the researches are rare. The cutter forces and cutter consumption can be estimated by the empirical models derived from the relationship between laboratory test result with field data and linear cutting test data. In addition, the estimation process was programmed through which the design parameters of TBM (e.g. thrust, torque, penetration rate, and cutter consumption) are automatically estimated using laboratory test results.
