Fatty Acid Modified Eggs as a Delivery System for Functional Lipids

  • The chicken egg provides a perfectly packaged, portion controlled, highly nutritious food containing vital nutrients essential for maintaining human health. However, concern by health professionals over the possible association of diets high in fat and cholesterol to chronic diseases has led to a decrease in egg consumption. Several different strategies have been adopted by the poultry food industry to enhance the nutritional value of eggs. The major emphasis has been focused on the modification of polyunsaturated fatty acid composition and fat soluble vitamins. This review briefly describes the composition, lipid nutrient content and the positive health effects of egg lipid nutrients.

입자 크기에 따른 난황죽의 이화학적 및 영양학적 특성 (Effect of Particle Size on the Physicochemical and Nutritional Properties of Egg Yolk Porridge)

  • The study was conducted to investigate the effect of particle size on the physicochemical properties of egg yolk-rice porridge. The pH of egg yolk-rice porridge was decreased when compared to that of the control, while the lightness and yellowness was increased as the rice particle size increased. The viscosity of whole particle egg yolk porridge was highest among the three porridges at $40^{\circ}C$. The protein content of the egg yolk-rice porridge was increased three-fold, when compared to that of the rice porridges. The total amino acid content of egg yolk-rice porridge was 1,500.6 mg/100 g, while that of rice was 1,147.5 mg/100 g. The Lys and Thr content of the amino acid content of egg yolk-rice porridge were also increased. Sensory evaluation results revealed that the half particle size rice egg yolk-rice porridge had the highest scores in color, taste and over-all preference. Based on these results, the half particle size egg yolk-porridge had good quality with respect to both the physicochemical and nutritional properties.

계란 함량과 비중이 Sponge cake의 품질에 미치는 영향 (Effects of the amount of egg and specific gravity on the quality of sponge cake)

  • This study was designed to observe the effect of the amount of egg and the specific gravity on the quality of sponge cake. There was a little difference of the moisture content by the specific gravity when the amount of egg was same. However, as the amount of egg was increased at the same specific gravity, the moisture content and baking loss was significantly increased(p<0.05). At 100% of egg amount, the largest specific loaf volume was gained at 0.55 of specific gravity, in the same way 150% at 0.45, 200% at 0.35, 250% at 0.45, The hardness of sponge cake was increased as the specific gravity was increased at the same amount of egg(p<0.05). The specific gravity which the lowest hardness was gained was 0.55 with 100% of the amount of egg, in th same way 0.45 with 150%, 0.35 with 200%. As the period of storage was longer, the increase of hardness was increased as the specific gravity went up at the same amount of egg(p<0.05). Therefore, in the case of sugar content 166%, the specific gravity with maximum specific loaf volume and minimum hardness was gained 0.55 at the amount of egg 100%, 0.45 at 150%, 0.35 at 200% and 0.35 at 250%.

난각막 분해물의 식품 소재로서 기능적 특성 (Functional Properties of Egg Shell Membrane Hydrolysate as a Food Material)

  • 본 연구는 난각막(egg shell membrane)에 keratinase를 생성하는 Bacillus licheniformis를 배양하여 제조한 효소분해 난각막분해물(enzyme-degradation egg shell membrane hy-drolysate, EESMH)과 IN NaOH-Ethanol로 분해한 알칼리분해 난각막분해물(alkalic-degradation egg shell membrane hy-drolysate, AESMH)을 제조하여 식품소재로 활용하고자 성분분석 및 분해물의 유화성, 거품형성력, 항산화력 등의 식품학적 기능을 확인하였다. 즉, EESMH의 생산수율은 약 15% 였고 AESMH의 경우 약 70%의 수율로 가수분해물이 생성됐으며 아미노산 분석 결과 EESMH와 AESMH의 아미노산 구성은 주성분이 aspartic acid, glutamic acid, cystine으로 큰 차이가 없었으나 EESMH의 경우 histidine이 18.69%로 AESMH의 2.56%에 비해 6배 정도 함량이 높게 나타났다. 단백질의 기능적 특성 측면에서 용해성은 EESMH와 AESMH 모두95%이상의 높은 용해성을 나타내었다. 유화 활성의 경우 EDESDBB가 더 효과가 있었으며, 유화 안정성도 EESMH가 AESMH보다 약 8% 안정하였다. 거품 형성력은 AESMH가 EESMH보다 모든 pH범위에서 약 2배 정도 높았으며 안정성도 우수하였다. 항산화력의 경우AESMH가 항산화력이 높은 것으로 확인하였고 EESMH의 경우 전체적으로 매우 약하게 나타났다.

Association between Egg Consumption and Metabolic Disease

  • The effect of high egg intake on metabolic syndrome (MetS), a major risk factor for cardiovascular disease (CVD), has not been clearly elucidated. This study was conducted to review the literature related to egg consumption and the risk of metabolic disease as well as to examine the association between high egg intake and MetS in Korean adults. A literature review was conducted using published papers in PubMed and EMBASE through December 2017. We have reviewed 26 articles, which were associated with egg consumption and metabolic diseases, and found that the results were controversial. Therefore, we analyzed data from 23,993 Korean adults aged 19 yrs and older. MetS was defined based on criteria from the Adult Treatment Panel III. Egg consumption of 4-6 times/wk and 1 time/day were significantly associated with reduced prevalence of MetS (Odds ratio (OR)=0.82; 95% Confidence interval (CI)=0.71-0.95 for 4-6 times/wk, OR=0.83; 95% CI=0.69-0.99 for 1 time/day) compared to those who consumed eggs less than once monthly. However, consuming two or more eggs per day was not associated with MetS. As for the components of MetS, an egg intake of once daily decreased the prevalence of abdominal obesity and an intake of 2-7 eggs weekly was shown to prevent a reduction in the high-density lipoprotein cholesterol levels. This study suggests that while consuming eggs 4-7 times weekly is associated with a lower prevalence of MetS, consuming two or more eggs daily is not associated with a reduced risk for MetS.

생난황, 삶은 난황 및 난황분에서 방사선 조사에 의해 유도된 2-Alkylcyclobutanone류의 정량적 비교 분석 (Quantitative Comparison of 2-Alkylcyclobutanones from Raw Egg Yolk, Boiled Egg Yolk, and Egg Yolk Powder)

  • 생난황, 삶은 난황 및 난황분을 방사선 조사시켜 생성된 2-alkylcyclobutanone류를 분리하기 위하여 Soxhlet 장치를 이용하여 지방을 추출한 뒤, florisil column chromatography하였으며, GC/MS 분석기기로 성분을 확인하였다. 0.5∼10 kGy의 선량별로 조사된 시료에서 방사선 조사에 의해 생성된 각각의 2-alkylcyclobutanone류 함량이 조사선량에 따라 증가하였으며, 동일한 선량으로 조사된 시료임에도 불구하고 방사선 조사에 의해 생성된 2-alkylcyclobutanone류의 함량이 각각 다르게 정량되었고, 생난황, 삶은 난황, 난황분의 순서로2-alkylcyclobutanone류의 생성량을 확인하였다. 생난황, 삶은 난황 및 난황분의 방사선 조사에 의해 생성되는 2-alkylcyclobutanone류는 0.5 kGy 이상 조사시료에서 모두 검출되었으며, 비조사 시료에서는 검출되지 않았다.

Effects of Egg Yolk from Hens Fed with Acanthopanax senticosus Extract on Physical Endurance and Reproductive Parameters in Rats

  • Acanthopanax senticosus, a member of the Araliaceae used as an invigorant in traditional Korean medicine, is known to relieve physical fatigue. The principal objective of this study was to evaluate the effects of eggs laid by hens fed on Acanthopanax senticosus extracts on physical endurance and reproductive parameters. Male Sprague-Dawley rats at 4 wk of age were divided into 3 groups of 15 rats each: group A (14% egg yolk powder from hens fed with Acanthopanax senticosus extracts+86% AIN-93G), group B (14% plain egg yolk powder + 86% AIN-93G) and group C (7% fat source + 93% AIN-93G), and studied for 5 wk. The rats' physical endurance was measured via forced swimming tests. According to the results, 53.3% rats of group A swam for longer than 20 min, in group B and C, only 48.9% and 46.7% of the rats achieved this. In terms of reproductive parameters, sperm motility was significantly higher in group A than in groups B and C (p<0.05). However, no differences in sperm count were detected among the groups. Additionally, the serum testosterone levels of groups A and B were higher than that of group C. Our findings suggest that rats fed with egg yolk powder from hens fed on Acanthopanax senticosus extracts may improve athletic endurance and reproductive parameters in rats.

방사선 조사 난백이 엔젤 푸드 케이크의 특성에 미치는 영향 (Effects of irradiated egg white on the quality of angel food cake)

  • 조사 달걀의 난백이 엔젤 푸드 케이크의 물리적특성 및 텍스쳐 특성에 미치는 영향을 비교, 검토하였다. 엔젤 푸드 케이크 반죽의 비중은 IkGy 이상의 방사선을 조사한 달걀의 난백을 사용함에 따라 유의적으로 낮아졌다(p〈0.05). 조사 달걀의 난백을 사용하면 엔젤 푸드 케이크의 비용적과 팽화율이 조금 증가하는 경향을 보였으나 케이크간에 유의적 차이는 나타나지 않았다. 엔젤 푸드 케이크의 표면색도는 내부의 색에 비해 케이크 간에 큰 차이를 나타내었으며, L 및 a, b값이 케이크간에 유의적 차이를 보였다(p<0.05). 조사 달걀의 난백을 사용하면 엔젤 푸드 케이크의 명도는 낮아지고 적색도와 황색도는 높아져 갈색화 반응이 증가했음을 알 수 있었다. 엔젤 푸드 케이크의 텍스쳐 특성을 검토한 결과, 견고성, 응집성, 탄력성, 검성, 부서짐성 등이 케이크간에 유의적 차이를 나타내었다(p〈0.05). 조사달걀의 난백을 사용하면 엔젤 푸드 케이크의 견고성과 검성이 감소하여 더 부드러운 엔젤 푸드 케이크가 만들어짐을 알 수 있었다. 한편 조사 달걀의 난백을 사용한 엔젤 푸드 케이크는 비조사 달걀의 난백을 사용한 엔젤 푸드 케이크에 비해 응집성과 탄력성은 증가하였고 부서짐성은 감소하였다. 이와 같이 엔젤 푸드 케이크의 제조에 조사 달걀의 난백을 사용하면 케이크의 색도, 텍스쳐 특성 등이 비조사 달걀의 난백을 사용한 엔젤 푸드 케이크의 특성과 차이를 나타내었다. 이러한 차이는 관능적 특성에 영향을 주게 되므로 방사선 조사 달걀을 케이크 제조에 이용하기 위해서는 관능적 특성에 대한 검토가 실시되어야 할 것으로 생각된다.

Quantitative risk assessment of foodborne Salmonella illness by estimating cooking effect on eggs from retail markets

  • In this study, we performed a quantitative microbial risk assessment (QMRA) of Salmonella through intake of egg consumption after cooking (dry-heat, moist-heat, and raw consumption). Egg samples (n = 201) from retail markets were analyzed for the presence of Salmonella. In addition, temperature and time were investigated during egg transit, storage, and display. A predictive model was developed to characterize the kinetic behavior of Salmonella in eggs, and data on egg consumption and frequency were collected. Eventually, the data was simulated to estimate egg-related foodborne illnesses. Salmonella was not found in any of the 201 egg samples. Thus, the estimated initial contamination level was -4.0 Log CFU/g. With R2 values of 0.898 and 0.922, the constructed predictive models were adequate for describing the fate of Salmonella in eggs throughout distribution and storage. Eggs were consumed raw (1.5%, 39.2 g), dry-heated (57.5%, 43.0 g), and moist-heated (41%, 36.1 g). The probability of foodborne Salmonella illness from the consumption of cooked eggs was evaluated to be 6.8×10-10. Additionally, the probability of foodborne illness not applied cooking methods was 1.9×10-7, indicating that Salmonella can be reduced by cooking. Therefore, the risk of Salmonella infection through consumption of eggs after cooking might be low in S. Korea.

난백의 첨가수준에 따른 약과의 품질특성 (Quality Characteristics of Yackwa Prepared by Different Amounts of Egg White)

  • Yackwa was prepared by the addition of different amounts of egg white, and the samples were analyzed by texture profile analysis, Hunter's colorimetry and sensory evaluation during 5 days of storage. Tn texture profile analysis, the hardness, gumminess and chewiness of Yackwa were increased in all the samples during storage and the texture parameters were increased by increasing egg white level. No significant difference was observed in the lightness, redness and yellowness (p〉0.05), but Hunter's color values were slightly increased during storage in all the samples. In sensory evaluation, no significant difference was observed among the samples during storage except the increase of crispiness and overall acceptance by the addition of egg white. The results showed that Yackwa prepared with 10 g of egg white/(100 g of other ingredients ---약과재료 얼마당 10g 첨가인지 명확히 해야 함) had an acceptable sensory quality.
