  • The gelatin film containing grapefruit seed extract (GSE) was prepared by incorporating different amounts (0, 0.02, 0.05, 0.08, 0.1%) of GSE into the film. The tensile strength (TS) of the film increased by the addition of GSE, and water vapor permeability (WVP) of the film decreased. In particular, the gelatin film containing 0.1% GSE had a TS of 10.28 MPa, while the control had 8.68 MPa. WVP of the film containing 0.1% GSE decreased to 2.18 ng m/m2 s Pa, compared to 2.48 ng $m/m^{2}s$ Pa of the control. In addition, incorporation of 0.1% GSE to the gelatin film decreased the populations of Escherichia coli O157:H7 and Listeria monocytogenes by 2.67 and 3.15 log CFU/g, respectively, compared to the control. These results suggest that as a packaging material, gelatin film containing GSE can have antimicrobial activity against pathogenic microorganisms in foods.

  • It has long been recognized that wild vegetation are sort of improving fitness. Many peoples are now ingesting them instead of the vegetables that are grown in green house. In this regard, Parasenecio firmus, which is considered to be one of the rare species in Korea, has been given a lot of attentions as edible green plants recently. Hence it may be necessary to provide the information people who want to commercially cultivate the plants. Regarding appropriate forest stands that are fit for the cultivation. Firstly, we collected the seeds from 4 natural habitats to find out how many seeds are fully matured in the natural conditions. The quality of the seeds collected were found to be very low. However, it appeared as clear differences when screened seeds were grown in covered seed beds over winter. In this case the germination rate of the seeds was 95%, indicating that there may be no difficulty for mass production of plantlets. Secondly, in the field of planting test in an appropriate cultivating site among 6 of forest stands, those in Pinus koraiensis stand were the highest in survival rate, but somewhat low with those in Quercus mongolica and broad-leaved stands. Thus, it was demonstrated that forest stands dominated with conifer like P. koraiensis are more appropriate for the cultivation of P. firums.

  • This study was conducted with the intention of providing basic data that are essential for establishing compensation standards for forest products and diagnosing forestry management in the future by investigating the cultivation process of major wild edible greens such as Pteridium aquilinum var. latiusculum, Ligularia fischeri, and Allium victorialis and analyzing related incomes. According to the result, the cultivation was generally divided into the open filed cultivation and mountain cultivation by the cultivated item. The annual average income by unit area ($3.3m^2$) for each item was 6,500 won for Pteridium aquilinum var. latiusculum cultivated open filed, 3,200 won for Pteridium aquilinum var. latiusculum cultivated in the mountain, 20,400 won for Ligularia fischeri cultivated open filed, 20,900 won for Allium victorialis cultivated open filed, and 7,300 won for Allium victorialis cultivated in the mountain. Particularly, while consumer demand for Allium victorialis and Ligularia fischeri are increasing phenomenally recently, the annual average income per unit area ($3.3m^2$) for these wild edible greens grown open filed was distinctively higher than that for Pteridium aquilinum var. latiusculum. This can be explained by very high working expenses (land rent and labor cost) required for the cultivation of Pteridium aquilinum var. latiusculum compared with other items. As for Ligularia fischeri and Allium victorialis yielding high annual average income, the initial investment costs including the cost of purchasing seeds and seed stocks account for 40% of the working expenses or over and thereby requiring proper support from the government for solidifying the income source and promoting cultivation in the agricultural and mountain regions in the future.

  • The effectiveness of three kinds of enzymes (chitinase, ${\beta}$-glucuronidase, and lysing enzyme complex), employed as elicitors to enhance the ${\beta}$-glucan content in the sawdust-based cultivation of cauliflower mushroom (Sparassis latifolia), was examined. The elicitors were applied to the cauliflower mushroom after primordium formation, by spraying the enzyme solutions at three different levels on the sawdust-based medium. Mycelial growth was fully accomplished by the treatments, but the metabolic process during the growth of fruiting bodies was affected. The application of a lysing enzyme resulted in an increase in the ${\beta}$-glucan concentration by up to 31% compared to that of the control. However, the treatment resulted in a decrease in mushroom yield, which necessitated the need to evaluate its economic efficiency. Although we still need to develop a more efficient way for using elicitors to enhance functional metabolites in mushroom cultivation, the results indicate that the elicitation technique can be applied in the cultivation of medicinal/edible mushrooms.

  • Background: Ginseng essence (GE) is a formulation comprising four medicinal and edible herbs including ginseng (Panax ginseng), American ginseng (Panax quinquefolius), lotus seed (Nelumbo nucifera), and lily bulb (Lilium longiflorum). This study was aimed at investigating the hepatoprotective effect of GE against carbon tetrachloride ($CCl_4$)-induced liver injury in rats. Methods: We treated Wistar rats daily with low, medium, and high [0.625 g/kg body weight (bw), 1.25 g/kg bw, and 3.125 g/kg bw, respectively] doses of GE for 9 wk. After the 1st wk of treatment, rats were administered 20% $CCl_4$ (1.5 mL/kg bw) two times a week to induce liver damage until the treatment ended. Results: Serum biochemical analysis indicated that GE ameliorated the elevation of aspartate aminotransferase and alanine aminotransferase and albumin decline in $CCl_4$-treated rats. Moreover, $CCl_4$-induced accumulation of hepatic total cholesterol and triglyceride was inhibited. The hepatoprotective effects of GE involved enhancing the hepatic antioxidant defense system including glutathione, glutathione peroxidase, glutathione reductase, glutathione S-transferase, superoxide dismutase, and catalase. In addition, histological analysis using hematoxylin and eosin and Masson's trichrome staining showed that GE inhibited $CCl_4$-induced hepatic inflammation and fibrosis. Furthermore, immunohistochemical staining of alpha-smooth muscle actin indicated that $CCl_4$-triggered activation of hepatic stellate cells was reduced. Conclusion: These findings demonstrate that GE improves $CCl_4$-induced liver inflammation and fibrosis by attenuating oxidative stress. Therefore, GE could be a promising hepatoprotective herbal formulation for future development of phytotherapy.

  • We identified how plants affected by the human behavior of crushing plants respond and what kind of plants responded sensitively. We investigated Lactuca sativa "Gaesebadak", Syneilesis palmata and Peucedanum japonicum as plants that humans use for edible purposes, and Achyranthes japonica and Bidens bipinnata as wild plants that stick to people's clothes and disperse seed. Plants exposed to human breathing air were compared with those exposed to human breathing air after being crushed. Methyl jasmonate (MeJA), a chemical word, was measured using Syft/MS, which detects real-time VOC, and related genes were analyzed. The amount of MeJA of Syneilesis palmata and Peucedanum japonicum as edible plants was greater than that of non-edible plants that disperse seeds using humans. The amount of MeJA ranged from 0.20 ppb to 0.35 ppb when the control group were not exposed to human breathing air. On the other hand, MeJA decreased after increasing for the first hour in human breathing air. Also, MeJA affected by human breathing after crushing plants was higher than that affected by just human breathing air. Peucedanum japonicum showed the most distinctive difference between the treatment with human breathing after crushing plants and the treatment with just human breathing. In addition, the gene activity of JAR1 and JMT increased 3 hours after the treatment with human breathing after crushing plants. Therefore, in the treatment with human breathing after crushing plants, the concentration of MeJA and the activity of related genes showed the same tendency to increase. As a result, the plant that responded sensitively to human behavior was Peucedanum japonicum. Plants released MeJA as a chemical word in the treatment with human breathing air after crushing plants.
