Protection by native edible plant extract MK-104 against kainate-induced neurotoxicity in mouse brain

  • The neuroprotective effect of solvent fraction of native edible plant MK-104 in the mice administered with kainate was evaluated using behavioral sign, neuronal injuries and biomarkers of oxidative stress. Mice, ICR male, were administered with the BFME through a gavage for 4 days consecutively, and on the 3rd day, kainate (450 mg/kg) was i.p. administered. The fraction(400 mg/kg) delayed the onset time of neurobehavioral change (p<0.01), reduced the severity of convulsion and lethality (p<0.05), and restored the level of GSH and lipid peroxidation in brain to control value. A similar protective action was also expressed by fraction-I (200 mg/kg), which showed a prominent protection against the neuronal damage in hippocampal CA1 and CA2 regions (p<0.01) caused by kainate injection. of TBARS value. Based on these results, BFME-I is suggested to contain a functional agent to prevent against oxidative stress in the brain of mice.

제조 방법을 달리한 갈색거저리 유충 탈지 분말의 물리화학적 특성 및 저장 안정성 (Physicochemical Characteristics and Oxidative Stabilities of Defatted Mealworm Powders under Different Manufacturing Conditions)

  • Mealworm, a type of edible insect, is a superior food material suitable for industrial products. In this study, four different defatted mealworm powders were prepared to determine proper manufacturing conditions. Solvent extraction method reduced lipid contents of mealworms more than pressed mealworms, and lowered lipid contents caused bright colors and good physicochemical properties for powders. In comparison, differences among milling machines used for making powders were strongly related with average size of particles. Meanwhile, the predicted shelf-life of defatted mealworm powders judged by accelerated experiments was 1 year or longer. To enhance shelf-life of mealworm powders, addition of tocopherol to mealworm powders at a concentration of 0.2% could intensify oxidative stability and microbial inhibition.

Comparison of Trace Element, Metal, and Metalloid Contents in North and South Korean Plants

  • When relations improve between North and South Korea, there will be demand for North Korean edible plants because of the low labor cost and similar environmental conditions. However, there is no reliable information about trace elements, metals, and metalloids in edible plants from North Korea. Selenium (Se) and germanium (Ge) have positive effects on basic human health and are therapeutical in diverse illnesses. Metal and metalloid (Cd, Pb) poisoning, on the other hand, can cause many health problems. Plants collected from North Korea had higher selenium content than those from South Korea. Although none of the collected species exceeded the permissible levels of cadmium and lead, their content in plants was significantly higher in North Korea than in South Korea. The high metal contents in plants collected from North Korea may be associated with the soil physicochemical properties as well as the accumulated amounts of elements in the soil.

새고막(Scapharca subcrenata) 가식부 일반성분의 계절변동 (Seasonal Variation of Proximate Composition in Edible Portion or Ark Shell (Scapharca subcrenata))

  • In order to investigate the harvest time for the production of high value added ark shell(Scapharca subcrenata) cultured at the south coast of Korea, the seasonal variations of proximate composition(mois ture, protein, fat, ash and glycogen) in the edible portions of ark shell were measured from December 1994 to December 1995. Moisture contents were the lowest in spring, but the highest in summer season being the spawning season of the S. subcrenata. The other hand, protein contents were a maximum in spring and minimum in summer. In June, just before the spawning season, fat and glycogen content was the highest, and ash content was little changed through a year. After spawning season, glycogen contents, showed decrement. In evaluating the seasonal variation of protein, moisture, and glycogen content in ark shell, the relationships of moisture protein content, moisture glycogen content and glycogen protein content show to be reverse.

The culture conditions for the mycelial growth of Auricularia auricula-judae

  • Auricularia auricula-judae is an edible mushroom, which is known as wood ear, free ear, black ear mushroom, and free jelly fish. This study was carried out to obtain the basic information for mycelial culture conditions of Auricularia auriculajudae. According to colony diameter and mycelial density, the media for suitable mycelial growth were PDA and MCM. The optimum temperature for mycelial growth was $25{\sim}30^{\circ}C$. Carbon and nitrogen sources were mannose and malt extract, respectively. The optimum C/N ratio was in the range of 10 to 1 with 2% glucose. Other minor components for the optimal growth were thiamine-HCl and biotin as vitamins, succinic acid and lactic acid as organic acids, and $MgSO_4{\cdot}7H_2O$ and $KH_2PO_4$ as mineral salts.

인천지역 집단급식소의 식용유 소비실태 (Consumption of Edible Oil Food Service Institutions in Inchon)

  • Consumption of edible oil at food service institutions in Inchon was surveyed to provide basic data for continuous education of dietitians. Manufacturing industry was the major food service institution(78.8%) in Inchon followed by schools, hospitals and social welfare service centers. Most dietitians were at the age of twenties and college graduates with professional careers of 1-5 years. Oil was purchased on the basis of its quality within 1-3% of total food costs four times a month. Proper frying temperature was determined by dropping salt or food coating materials into the oil. Soybean oil was the most frequently used and commercial frying mix powder and flour and eggs in water were the most common food coating materials. Fish and commercial frozen foods were the most frequently used materials for frying. Fried foods were stored with covers in a basket and consumed within 30 minutes after cooking. Frying oils were used one more time after filtering and color was the index for determination of re-use.

Effect of chitosan and chitosan-nanoparticles on post harvest quality of banana fruits

  • In this study, we evaluated the effect of different concentrations of chitosan and chitosan nanoparticles as edible coating in extending shelf life and maintaining the quality of banana fruits (Musa acuminata AAA group). The fruit treated with 1.15% chitosan, 1.25% chitosan and chitosan nanoparticles then store at ambient temperature ($25{\pm}1^{\circ}C$). The shelf-life of banana, starch content, weight loss, pulp to peel ratio, total soluble solid, surface morpholgy of banana peel and sensory evaluation were analysed. Molecular analysis on the effect of chitosan was also conducted. Results showed that the application of chitosan nanoparticles and chitosan could extend shelf-life and maintain quality of banana fruits.

Defatting and Sonication Enhances Protein Extraction from Edible Insects

  • Edible insects are attracting growing interest as a sustainable source of protein for addition to processed meat and dairy products. The current study investigated the optimal method for protein extraction from mealworm larvae (Tenebrio molitor), cricket adults (Gryllus bimaculatus), and silkworm pupae (Bombyx mori), for use in further applications. After defatting with n-hexane for up to 48 h, sonication was applied for 1-20 min and the protein yield was measured. All samples showed a total residual fat percentage below 1.36%, and a 35% to 94% improvement in protein yield (%). In conclusion, defatting with n-hexane combined with sonication improves the protein yield from insect samples.

Nutrigenomics Approach-A Strategy for Identification of Nutrition Responsive Genes Influencing Meat Edible Quality Traits in Swine

  • In the last 20 years, meat quality, especially meat edible quality has become a more intriguing topic in the field of swine production. In this paper, we briefly review the progress of meat quality research from the aspects of genetic selection and nutritional modulation, and propose a possible approach -nutrigenomics- to explore the nutrition-responsive major genes that affect meat quality formation during the growing and fattening of pigs.

버섯 배지를 이용한 tyrosinase 저해제 발효

  • Tyrosinase is an enzyme which catalyzes an enzymatic browning of some foods and in vivo synthesis of melanin. In order to produce natural and edible inhibitor of the enzyme which is expected to have whitening effect on melanogenesis, a microorganism was selected from fermented foods. It was named as NU-7, and cultured in mushroom (Lentinus edodes, Shiitake) media. Optimal media to produce tyrosinase inhibitor was formulated by varing nitrogen or carbon content. If glucose content was in a range of 3-20% and ammonium sulfate was in a range of 0-0.25%, production of inhibitor was independent of cell mass. Addition of ammonium sulfate as a nitrogen source had little effect on inhibitor production. Production of inhibitor (Y) was proportionally related to shiitake content (X) with a regression equation of Y= -0.96X$^{2}$ + 13.07X + 14.43 (R = 0.96). These results indicate that shiitake and glucose are necessary for the production of tyrosinase inhibitor. In the analysis of mycotoxin in culture broth, aflatoxin was not detected, suggesting that it would be probably edible.
