  • This study was conducted during two separate periods, from April to December 2008 and from April to November 2013, to identify the folk plants growing in Jeollanam-do which are used daily. A total of 1,200 questionnaires were distributed to 120 residents living in 14 counties and cities. From the results of the survey, 172 taxa of folk plants (77 families, 153 genera, 154 species, 2 subspecies, 14 varieties, and 2 forma) were identified. By regions, the city of Suncheon yielded 82 taxa, followed by 67 taxa from Gurye county, 65 taxa from Hampyeong county, 64 taxa from Jangseong county, 62 taxa from city of Naju, and 61 taxa from Jangheung county. Uses of the identified folk plants were: as edibles (117 taxa), for medicinal purposes (66 taxa), tea (15 taxa), for starch (6 taxa) for vegetable fat and oil (3 taxa), for nectar (2 taxa), for sap (2 taxa), for spice (2 taxa), for aroma (1 taxa), for fiber (1 taxa), and others (14 taxa). Thus, edible and medicinal uses of the plants appeared higher than other uses. The consistency of the local names of plants with the standard botanical nomenclature was 23.2% (40 taxa), while the proportion of local plant names analogous to the standard names was 18.6% (32 taxa). The consistency of the local plant names with the same plants in different cities and counties was 28.5% (49 taxa) and the proportion of local plant names analogous to each other in this category was 25.6% (44 taxa). Therefore, 54% of the folk plants growing in Jeollanam-do are known by location specific names. The usage types of the local folk plants were mostly collected through verbal communications.

  • Tremella fuciformis, one of edible and medicinal mushroom belonging to Tremellaceae of Basidiomycota, has been known to have a curative effect on sarcoma 180 of mice and lowering high blood pressure of human beings. Neutral salt soluble [0.9% NaCl (Fr. NaCl)], hot water soluble (Fr. HW) and methanol soluble (Fr. MeOH) substances were extracted from Tremella fuciformis. In vitro cytotoxicity tests, Fr. HW and Fr. NaCl were not cytotoxic against cancer cell lines such as NIH3T3, Sarcoma 180, and HT-29 at the concentration of $2000{\mu}g/ml$, while Fr. MeOH was cytotoxic to NIH3T3 and Sarcoma 180. Intraperitoneal injection with Fr. NaCl showed antitumor effect with life prolongation of 53% in mice inoculated with Sarcoma 180. Fr. NaCl improved the immunopotentiation activity of B lymphocyte by increasing the alkaline phosphatase activity by $3.0{\sim}8.1$ folds, respectively. Intraperitoneal injection with Fr. NaCl increased the numbers of peritoneal exudated cells and circulating leukocytes by 7.4 folds and 1.6 folds, respectively, than in the control group. The antitumor effect of T. fuciformis against Sarcoma 180 of mice was likely due to immunopotentiation activity.

  • Physicochemical and sensory characteristics of turnip pickle prepared with different pickling spices were investigated. Turnip root slices(4${\times}$1${\times}$0.5 cm) were salted with NaCl and CaCl$_2$, and then soaked into pickling solution added to commercial (pickle P) or manufactured (pickle M) pickling spice, and then stored at 2$0^{\circ}C$. Throughout the whole storage periods, the acidity, pH, saltiness and reducing sugar content of two pickles were 3.1∼3.5%, 1.4∼1.7, 0.2∼0.6% and 25.2∼30.4 mg/mL, respectively. There were no significant differences between two pickles in saltiness, anthocyanin, reducing sugar content, color(Hunter L, a and b value) and hardness. However, acidity of pickle M was higher than that of pickle P throughout the storage time. Sensory results showed that the best edible time was the 14th day of storage, and at that time, scores of pickle M was higher in 리avor(7.3 and 6.9), taste(7.8 and 5.4) and over-all preference(8.0 and 6.1) than those of pickle P, and pickle M maintained good sensory qualities until 28th day of storage, compared to pickle P(p<0.05).

  • To develop soybean cake as a functional food material, the anti-oxidative and cytotoxic activities against human colon cancer cells of crude saponins isolated from 70% (v/v) ethanol extracts of cake were investigated. The Diaion HP-20 adsorption method was used for isolation of crude saponins, which were then eluted with 100% ethanol. The non-saponin fraction was removed by elution with $H_2O$ and 20% (v/v) ethanol. The results of thin layer chromatography (TLC) analysis confirmed that crude saponins were present in the 100% ethanol extract of soybean cake. The hydrogen-donating properties of saponins were more than 60% at a concentration of $1,000\;{\mu}g/mL$. malondialdehyde(MDA) production was $1,200\;{\mu}mol\;MDA/g$ in mouse liver homogenate treated with crude saponins at the concentration of $1,000\;{\mu}g/mL$. This value was lower than that of the control, which was $3,700\;{\mu}mol\;MDA/g$. Saponins inhibited the growth of colon cancer cells in a dose- and time-dependent manner. Saponins also resulted in a decrease in the proportion of cells in the G1 phase of the cell cycle, whereas the cell proportion in G2/M phase was increased with $1,000\;{\mu}g/mL$ saponins. Thus, we conclude that saponins may induce G2/M cell cycle arrest.

  • This study carried out to determine the physicochemical components of Cynanchi wilfordii Radix (CWR) fermented with Rhizopus delemar. The physicochemical components such as changes on moisture content, pH, total acidity, reducing sugars, and the contents of free sugars, free amino acid, cynandione A were investigated. The moisture content of fermented CWR was increased after 4 days of fermentation. The pH value of fermented CWR was decreased after 4 days of fermentation. The reducing sugars contents were in the range of 1.42-1.69%. The major free sugars were identified as rhamnose, glucose, fructose and sucrose. The content of free sugars was decreased during fermentation process of CWR while the glucose contents in 80% ethanol and water extracts were increased. In addition, the free amino acid increased significantly during fermentation. Finally, The content of cynandion A of the fermented CWR was highest at the level of 14.09 mg/g on the $8^{th}$ day. These results are indicated that fermentation with Rhizopus strains could be used to increase the bioactivity of CWR and the fermented CWR can be used as a functional material and edible resource in the food industry.

  • With the increase in the level of national income, the interest and demand of the wild edible plants have been increased. Aralia elata Seem is highlighted as a new income source for farmers in Korea. This study was conducted to determine the optimum planting density enhancing the commercial yield and quality in Aralia elata Seem. Yield of new shoots per 10a was increased in the dense planting of $1m\times30cm$ by three years of planting, but it was decreased after four years of planting, which was mainly caused by the factors such as high mortality rate. The income per 10a in the planting density of $1m\times50cm$(2,000 plants/10a) was higher by $27\%$ than that in the planting density of $1m\times30cm$(3,300 plants/10a) which was 968,00won per 10a.

  • Atopic dermatitis is a chronic, allergic inflammatory skin disease that is accompanied by pruritic chronic eczema and markedly increased levels of inflammatory cells in endothelial cells. Arctium lappa L. is a popular edible vegetable cultivated in Asia. This study examined the effect of butanol extracts of A. lappa (ALBE) on the expression of adhesion molecule, ICAM-1 and the production of NO-iNOS induced by TNF-alpha in A549 endothelial cells. We also studied the effects of ALBE on the proliferation of keratinocyte. We observed significant inhibition of NO-iNOS production in dose-dependant manners and ALBE at $100\;{\mu}g$/mL suppressed the expression of ICAM-1 in TNF-${\alpha}$-induced A549 cells. In addition, the treatment of ALBE for 48 hrs increased the proliferation of HaCaT keratinocytes. These results support that ALBE has an anti-inflammatory effects for the treatment of atopic dermatitis.
