Nitrite Scavenging and Superoxide Dismutase-like Activities of Herbs, Spices and Curries (향신료 및 Curry의 Nitrite 분해와 Superoxide Dismutase 유사활성)

  • The superoxide dismutase(SOD)-like activities for 26 kinds of herbs and spices and 10 kinds of instant curry products were determined by measuring their abilites to reduce nitroblue tetrazolium. All samples showed the SOD-like activities. Rosemary, cassia, tarragon, allspice, oregano, bay leaves, basil, marjoram, thyme and star anise had higher activities than $10^5\;unit/g$ and clove had highest activity of $232,143{\pm}19.989\;unit/g$. The SOD-like activities for 10 kinds of instant curry products were in the range of $400{\sim}700\;unit/g$ when measured after heat treatment at $100^{\circ}C$ for 10 min. The water extracts of spices, herbs and curries were obtained by heat treatments of $25^{\circ}C$ for 60 min or $100^{\circ}C$ for 10 min, and their nitrite scavenging activity was measured at different pH conditions(1.2, 4.2 or 6.0). The nitrite scavenging activities were higher at acidic pH. However, the effects were not different from two heat treatments. The water extracts from cassia, bay leaves, allspices, oregano, staranise, rosemary, clove and tarragan had high nitrite scavenging activity(>90%) when they were measured at pH 1.2, and those from clove was highest $(97.58{\pm}0.88%)$. The pure curry used as raw materials for instant curry products had the nitrite scavenging activity in the range of $50{\sim}60%$ at pH 1.2 and the activity was not changed during the aging period$(0{\sim}12weeks)$. The ten brands of instant curry products had the nitrite scavenging activities of $12{\sim}28%$ at pH 1.2

  • Since blasting noise is impact noise, it will give a sudden shock to the human. In the case, such as the blast vibration, it has given aging buildings and livestock great damage to move the vibration along ground in nearby regions. In this study, the influence of the blasting generated during excavation was analyzed for effects on regional. A couple of field and laboratory surveys about geological were carried out to figure out the geological ratio in the study-performed area. Blast vibration noise was compared to the domestic and abroad case studies and each of the institutions permissible standards established the most appropriate criteria in site condition. The vibration velocity of blasting vibration exploits the values which were measured from test blasting on the ground in order to examine blasting effect. Considering the blasting point as the shortest distance from safety facilities (farms, private houses, etc.), the examination of the influence range, which was derived from the vibration velocity of blasting vibration, was performed to figure out how the point affected the safety facilities. Three-dimensional numerical analysis was performed a time history analysis in order to analyze the behavior of the structure for a dynamic blast load, which was determined in three directions of the blast vibration value. The results of three-dimensional numerical analysis and the blasting effect of blasting vibration estimation equation blasting vibration of impact circle with accompanying test blasting were compared. And the analysis confirmed similar results figures.

Effects of Supplementation with Needles of Pinus densiflora on the Fermentation Characteristics of Honey Wine (솔잎 첨가 벌꿀주의 발효 특성)

  • The goal of this study was to evaluate the effects of supplementation with the needles of Pinus densiflora on the fermentation characteristics of honey wine (Pinus densiflora-honey wine). Honey without supplementation with needles of Pinus densiflora (honey wine) was included as a control. Physiochemical changes were investigated during 30 days of fermentation at $20^{\circ}C$, and following aging. At the beginning of fermentation, pH and viable cell counts of Pinus densiflora-honey wine changed rapidly, while $^{\circ}Bx$ decreased gradually. Viable yeast counts reached maximum levels at 5 to 10 days of fermentation. At day 0, the pH of Pinus densiflora-honey wine was 3.8, while the non-supplemented honey wine had a pH of 3.4. Decease in $^{\circ}Bx$ was faster in Pinus densiflora-honey wine than in non-supplemented honey wine. Supplementation of honey with needles of Pinus densiflora prior to fermentation shifted the initial pH to a more neutral pH, and the presence of Pinus densiflora needles increased the fermentation speed. The final $^{\circ}Bx$, pH, ethanol content, and total titratable acidity of Pinus densiflora-honey wine were $13.7^{\circ}Bx$, pH 3.05, 13.5%, and 0.37%, respectively. A sensory evaluation demonstrated that addition of 4% (w/v) fructose to honey wine supplemented with neddles of Pinus densiflora raised the level of product acceptability.

Quality Characteristics of Soy Sauces containing Gastrodia elata during Fermentation (천마가 함유된 간장의 발효 중 품질 특성)

  • This study investigated changes in quality characteristics of soy sauce (Kanjang) with Gastrodia elata (GK) in aged for 6 months, and developed new soy sauce products with improved sensory characteristics. The pH level was maintained in all samples. The salinity slowly increased, and then decreased in GK 10% after 5 months. The sugar content (Brix) increased after 2 months, except in GK 10%. Crude protein and amino nitrogen contents increased with time. The optical density showed significant differences after 5 months in GK 5%. The total polyphenol contents were highest in GK 5% aged for 5 months up to 31 mg/mL. The flavonoid contents of GK 5% were highest after 5 months up to 122 mg/mL. Finally, sensory tests of GK 10% showed higher total acceptance after 2 months. The results show that an aging period of 5 months in GK 5% greatly enhanced quality characteristics.

A STUDY ON THE VICKER'S HARDNESS AND DIAMETRAL TENSILE STRENGTH OF HYBRID GLASS IONOMER (Hybrid Glass Ionomer cement의 비커스경도와 간접인장강도에 관한 연구)

  • The objective of this investigation was to compare the effects of water storage on the aspect of hardness and diametral tensile strengths of four hybrid glass ionomer cements(two compomers and two resin-reinforced glass ionomers) with a resin composite material. One composite resin(Degufill Ultra), two compomers(Dyract, Compoglass Cavifil), and two resin-reinforced glass ionomers(Fuji Duet, Vitremer) were used in this study. Cylindrical specimens were prepared and stored at $36{\pm}1^{\circ}C$ in distilled water for 10 minutes after set, and then tested on an Instron testing machine(No.4467) at 1.0 mm/min displacement rate. Vicker's hardness and diametral tensile strengths as time elapsed were measured after aging in water for 10 minutes, 1 hour, 3 hours, 1 day, 3 days, 5 days and 7 days at $36{\pm}1^{\circ}C$. During the test of diametral tensile strength, stress-strain curves were obtained, from which the compressive modulus were calculated and compared. The structure of four set glass ionomer cement mass was observed on SEM(Hitachi, S-2300) after being etched with 9.6% hydrofluoric acid for 1 minute. The results were as follows; 1. The hardness of the experimental group(compomer and the resin reinforced glass ionomer cement) did not exceed the value of control group(Degufill Ultra). 2. Vicker's hardness of the Fuji Duet tended to increase succeedingly, Dyract was decreased after 3 hours in water, and Vitremer was the lowest. 3. The control group(Degufill Ultra) presented progressively on increased diametral tensile strength with time, Fuji Duet were decreased after 3 days, Compoglass Cavifil and Vitremer were decreased after 5 days in water storage. 4. Compressive modulus of the control group(Degufill Ultra) and Dyract were increased sharply timely, Fuji Duet and Vitremer were increased smoothly by lapse of time in water. Fuji Duet were stronger than Vitremer. On the other hand, Vitremer exhibited the lowest toughness. 5. The microstructure of compomer was similar with that of the composite resin(Degufill Ultra), and the fillers in resin-reinforced glass ionomer cements were noticed. It can be concluded that mechanical properties of hybrid glass ionomer cements is weaker than composite resin, and that the compomers or the resin-reinforced glass ionomers can not substitute the composite resins. A plenty of considerations should be done on the application of them to the area under the loading and high wear has a little adverse effect on the mechanical properties on the water storage for 7 days. The further research should be needed to confirm the advantage of the compomer.

Effects of Fructose-containing Drinks on Cardiopulmonary Function, Lactate Levels, and Inflammatory Markers during Maximal Exercise Testing (과당음료 투여가 최대운동부하시 운동수행력, 심폐기능, 젖산 및 염증반응에 미치는 영향)

  • The use of fructose-containing sports beverage drinks has increased in recent years, especially at sport events, because of their reported ergogenic effects. However, the ingestion of low to moderate doses of caffeinated energy drinks has been associated with adverse side effects such as insomnia or increased nervousness. The purpose of this study was to investigate the effects of fructose beverage supplementation on cardiopulmonary function, blood lactate levels, and inflammatory reactions. We recruited 8 young adult subjects from D university and measured their cardiopulmonary functions before and after supplementation with sports beverage drinks. We also measured blood lactate and inflammatory reactions after a 20 min recovery period. Exercise time, maximal oxygen uptake (V02max), and AT HRmax were significantly increased (p<0.05) in the period of before and after sports beverage supplementation. However, no significant differences were observed in RPE, AT RER, V02max RER, AT V02max, and maximum heart rate (HRmax). Lactate levels also significantly decreased after 20 min recovery with sports beverage supplementation. Sports beverage supplementation therefore may enhance maximal V02max and increase the exercise duration time. These drinks may also be helpful in promoting rapid recovery of fatigue variables and increasing exercise performance time.

Changes of Vacuum Packed Pork Quality during Storage after Aging with Korean Traditional Sauces

  • Sixteen somimembranosus muscles were seamed out from sixteen left carcasses. They were cut into $7{\times}10{\times}2cm$ pieces and mixed randomly. Samples were assigned to four treatments: (T1) soy-based sauce; (T2) Kimchi-based sauce; (T3) pickled shrimp-based sauce; and (T4) onion-based sauce. Each treatment was aged in plastic box at $1^{\circ}C$ for 10 days. These samples were vacuum-packaged after treatment with sauces and held in a chill at $1^{\circ}C$ for 28 days. The pH of aged port in general, was decreased significantly (p<0.05) with storage in all treatments. Its falling rate was the slowest in T4 of all treatments, while it was faster in T2 and T3 than in T4. The salinity of aged pork was decreased (p<0.05) for T2 with increased storage days, but increased (p<0.05) for T1. The salinity showed T2 to be significantly higher (p<0.05) than T1 and T4 on 1 day, but to be lower(p<0.05) than T1 on 28 day. The saccharinity of T3 was significantly higher (p<0.05) on 1 day than those of T1 and T4, but decreased (p<0.05) on 14 and 28 day. While saccharinity of T1 was significantly the lowest(p<0.05) of all treatments on 1 day and increased (p<0.05) with increased storage days. For T1 and T2, the WHC (water holding capacity) results showed higher (p<0.05) on 14 day than on 1 and 28 day. On 28 day, the WHC result showed T4 to be the highest(p<0.05) of all treatments, but T2 to be the lowest (p<0.05). On 28 day, the shear force results showed a big difference (p<0.05) among treatments, being in order of T4>T3>T2>T1. Panelists rated T1 as having higher(p<0.05) aroma, flavor and overall acceptability than other treatments.

Effects of Water Content and Storage Temperature on the Aging of Rice Starch Gels (쌀전분겔의 노화에 수분함량과 저장온도가 미치는 영향)

  • Gels of rice starches isolated from jinmibyeo, llpoombyeo and Dongjinbyeo were prepared with $60{\sim}65%$ water content (based on the total weight) and stored at $-18^{\circ}C,\;4^{\circ}C,\;20^{\circ}C,\;30^{\circ}C,\;and\;37^{\circ}C$ for 6 days. The effects of varieties, water content and storage temperature on the degree of retrogradation (DR) of gels were measured by ${\alpha}$-amylase-iodine method. DRs of rice starch gels increased rapidly during the initial stage of storage, but slowly after that. DRs were highest with 60% water content and lowest with 65% water content at any storage temperature. Regarding the storage temperature, DRs of gels increased in the following order : $4^{\circ}C>20^{\circ}C>30^{\circ}C>37^{\circ}C>-18^{\circ}C>$. As the storage temperature was increased, DR per $10^{\circ}C$ increased above refrigerated temperature decreased in the following order : jinmibyeo>llpoombyeo>Dongjinbyeo.

Effect of Electrical Stimulation on Physico-Chemical Properties of Korean Native Cattle Meat (전기자극이 저장중 한우육의 이화학적 변화에 미치는 영향)

  • Nine Korean native cattle were purchased from a beef cattle farm. Immediatly after slaughtering and skinning, each carcass was split into left and right sides and the one half was kept as a control, the other one was electrically stimulated by using 400v stimulator for 1 min. All samples were analyzed for shear force value, ATP and biochemical changes to investigate the effect of electrical stimulation during storage at $5^{\circ}C\;and\;15^{\circ}C$. The amount of lactate of electrically stimulated (E.S.) meat showed a rapid increment compared with that of control (p<0.01). E.S. treatment caused a rapid drop of pH value. Initial pH decreased from 6.85 to 6.38 in M. semitendinosus and from 7.0 to 6.58 in Triceps brachii by E.S. treatment (p<0.01). Electrically stimulated muscle showed decrease (34.67%) in ATP to $5.74{\mu}mole/g$ from $8.78{\mu}mole/g$ of unstimulated meat. ATP of the electrically stimulated muscle stored at $15^{\circ}C$ and $5^{\circ}C$ was degraded faster than that of control until 6 hours post-mortem (p<0.05). The tenderness of meat after aging was improved significantly by electrical stimulation with lower shear force value than that of untreated meat (p<0.01).

Determination of Microbial Community as an Indicator of Kimchi Fermentation (김치발효의 지표로서 미생물군집의 측정)

  • Attempts were made to define the characteristics of microbial community as an indicator of Kimchi fermentation. Determination of communities was carried out by simple Gram-stain, followed by direct microcopic counts. In room-temperature $(15^{\circ}C)$ fermentation, microbial succession was occurred in the order of communities of Gram-positive bacteria, yeasts and Gram-negative bacteria. It was characteristic that Gram-positive bacterial community was developed during the production of lactic acid, yeasts community was developed to cause rancidity, and Gram-negative bacterial community was relevant to maceration (or softening) as well as rancidity. The fluctuation of apparent Gram-negative reaction group might be used as a criterion of death or aging of Gram-positive bacterial populations. In low-temperature fermentation $(5^{\circ}C)$, however, it was found that yeasts and Gram-negative bacterial communities did not developed but only Gram-positive bacterial community did. It follows from these results mentioned above that maturity of Kimchi depends on the development of Cram-positive bacterial community. Thus, the size and occurrence of microbial community are avaiable for an indicator of Kimchi fermentation, and also determination of community could be a useful method to predict the maturity.
