Effects of Pre-rigor Salting on the Physicochemical and Textural Properties of Ground Duck Breast Muscle

  • The pre-rigor salting effects on physicochemical properties of ground duck breast muscle were evaluated in this study. The pre-rigor salting treatments were prepared within 30 min after slaughter, the duck breast muscles after post mortem 48 h were used to prepare the post-rigor treatments. The pre-rigor salting treatment had significantly higher pH value than post-rigor salting treatment (p<0.001), and all pre-rigor salting treatments showed a significant higher pH value. As a result, the pre-rigor salting treatment showed increased water holding capacity and decreased cooking loss compared to those in the post-rigor salting treatment. No significant differences in redness and yellowness were observed among the treatments (p>0.05). The increased solubility of salt-soluble proteins in the pre-rigor salting treatment leads to increase the hardness, gumminess, and chewiness. Also, the pre-rigor salted duck breast muscle had similar textural properties compared to those of post-rigor duck breast muscle containing sodium tri-polyphosphate (STPP). The 2-thiobarbituric acid (TBA) values of all treatments were ranged from 0.121 to 0.177 mg/kg. The lowest TBA value was observed for post-rigor duck breast muscle containing STPP, however, pre-rigor salting did not influence lipid oxidation of ground duck breast muscle. Therefore, the pre-rigor salting method, especially a single addition of sodium chloride to pre-rigor muscle, is more efficient method for improving cooking loss.

Comparison of carcass and meat quality traits between lean and fat Pekin ducks

  • Objective: According to market demand, meat duck breeding mainly includes 2 breeding directions: lean Pekin duck (LPD) and fat Pekin duck (FPD). The aim of the present study was to compare carcass and meat quality traits between 2 strains, and to provide basic data for guidelines of processing and meat quality improvement. Methods: A total of 62 female Pekin ducks (32 LPDs and 30 FPDs) were slaughtered at the age of 42 days. The live body weight and carcass traits were measured and calculated. Physical properties of breast muscle were determined by texture analyzer and muscle fibers were measured by paraffin sections. The content of inosine monophosphate (IMP), intramuscular fat (IMF) and fatty acids composition were measured by high-performance liquid chromatography, Soxhlet extraction method and automated gas chromatography respectively. Results: The results showed that the bodyweight of LPDs was higher than that of FPDs. FPDs were significantly higher than LPDs in subcutaneous fat thickness, subcutaneous fat weight, subcutaneous fat percentage, abdominal fat percentage and abdominal fat shear force (p<0.01). LPDs were significantly higher than FPDs in breast muscle thickness, breast muscle weight, breast muscle rate and breast muscle shear force (p<0.01). The muscle fiber average area and fiber diameter of LPDs were significantly higher than those of FPDs (p<0.01). The muscle fiber density of LPDs was significantly lower than that of FPDs (p<0.01). The IMF of LPDs in the breast muscle was significantly higher than that in the FPDs (p<0.01). There was no significant difference between the 2 strains in IMP content (p>0.05). The polyunsaturated fatty acid content of LPDs was significantly higher than that of FPDs (p<0.01), and FPDs had higher saturated fatty acid and monounsaturated fatty acid levels (p<0.05). Conclusion: Long-term breeding work resulted in vast differences between the two strains Pekin ducks. This study provides a reference for differences between LPD and FPD that manifest as a result of long-term selection.

침탕방법을 달리한 오리근육의 Actomyosin의 추출성과 특성에 관한 연구 (Studies on the Extractability and Characteristics of Actomyosin of Duck Muscle by Difference Scalding Method)

  • 오리를 고온침탕법과 중온침탕법에 의해 털을 제거하고 다리 및 가슴부위의 골격근에서 actomyosin을 추출하여 몇가지 특성을 비교하엿다. 고온침탕 처리한 근육으로부터 추출된 actomyosin의 추출성은 다리와 가슴근육이 각각 7.84, 39.48mg/g, 중온침탕한 것은 각각 4.79, 28.04mg/g고온침탕법의 추출성이 더 높았다. Actomyosin의 $Ca^{2+}-ATPase$ 활성은 고온침탕법이 다리근육의 경우에서는 중온침탕법보다 낮았으나 가슴근육은 이온강도 0.08 이하에서 중온침탕법이 높았고 그 이상에서는 고온침탕법이 높았다. Actomyosin의 $Mg^{2+}-ATPase$ 활성은 저이온강도에서 활성이 컸으며 가슴근육이 다리근육의 경우보다 침탕법에 의한 활성의 차이가 크게 나타났다. 용해도는 침탕방법과 부위에 관계없이 용해시점과 완료시점이 비슷하였다. 그리고 고온침탕 처리한 근육과 다리보다 가슴근육이 thin filament에 있는 단백질이 많이 추출되어 나오는 현상을 보였다.

양파의 급여가 오리고기의 이화학적 특성에 미치는 영향 (Effects of Dietary Onion Supplementation of on the Physicochemical Properties of Duck Meat)

  • 오리 농법으로 재배되고 있는 논에 양파를 급여한 오리를 배치하여 38일간 사육한 생체중 1,500 g인 60수의 오리고기에 대한 이화학적 품질특성을 조사하였다. 처리구는 교잡종오리(청둥오리${\times}$집오리)를 3처리구로 나누어 20수씩 총 60수를 배치하였고, 시험사료는 대조구(C, 0%), 처리1구(Tl, 3%)및 처리2구(T2, 6%)로 나누었다. 시험에 공시된 시료는 4$\pm$1$^{\circ}C$ 냉장고에서 12시간 보관한 후에 분석에 이용되었으며 그 결과는 다음과 같다. 일반성분 분석에서 가슴육은 양파의 첨가량이 증가할수록 수분, 조단백질, 조회분이 높았으나(p<0.05), 조지방은 낮았다(p<0.05). 다리육에서는 양파의 첨가량이 증가할수록 수분과 조단백질은 높았지만(p<0.05), 조지방과 조회분은 낮았다(p<0.05). pH는 양파의 첨가량이 증가할수록 가슴육은 낮았고(p<0.05), 다리육은 T1구가 가장 높았다(p<0.05). 보수력(WHC)은 가슴육과 다리육에서 양파의 첨가량이 증가할수록 높았다(p<0.05). 육색은 양파의 첨가량이 증가할수록 가슴육의 L*값(백색도)은 낮았고(p<0.05), b*값(황색도)은 높았다(p<0.05). 지방산조성에 있어서 단일불포화지방산(MUSFA)는 낮아졌지만(p<0.05), 다가불포화지방산(PUSFA)과 필수지방산(EFA)는 양파의 첨가수준이 증가할수록 높았다(p<0.05).

A comparative study of carcass characteristics and meat quality in genetic resources Pekin ducks and commercial crossbreds

  • Objective: The study was aimed to compare carcass traits, physicochemical and textural properties of meat in two different genotypes of Pekin ducks with regard to sex effect. Methods: The study involved 120 Pekin ducks: 30 males and 30 females of strain P33 (Polish native Pekin ducks) and 30 males and 30 females of Star 53 HY (commercial hybrid Pekin ducks). At 49 d of age, 48 birds (12 males and 12 females of each genotype) were selected for dissection. After the dissection, meat samples were collected to determine meat quality traits. Results: The studied Pekin ducks of different genotype showed significant differences in body weight, carcass weight, dressing percentage, as well as percentages of breast muscles, skin with subcutaneous fat, abdominal fat, neck, and remainders of eviscerated carcass with neck. Duck genotype influenced the content of crude protein, crude fat, Na, K, P, Zn, $pH_{24}$, electric conductivity ($EC_{24}$), cooking loss, $L^{\star}$, $a^{\star}$, most textural traits of breast muscle, and also Na, Mg and Fe content, $EC_{24}$, drip loss, cooking loss and $L^{\star}$, $a^{\star}$, and $b^{\star}$ colour coordinates of leg muscles. Regardless of genetic origin, males exhibited higher BW, carcass weight and carcass neck percentage, as well as lower redness, hardness, chewiness and gumminess of breast muscle compared to females. The genotype${\times}$sex interaction was significant for the crude fat content and cooking loss of breast muscle, and for the yellowness of leg muscle. Conclusion: Star 53 HY ducks are more suited for broiler production due to their higher body weight and dressing percentage. Their breast and leg meat are characterized by more beneficial chemical composition but has poorer sensory and textural properties compared to the meat of P33 ducks.

Selection response and estimation of the genetic parameters for multidimensional measured breast meat yield related traits in a long-term breeding Pekin duck line

  • Objective: This study was conducted to estimate the genetic parameters and breeding values of breast meat related traits of Pekin ducks. Selection response was also determined by using ultrasound breast muscle thickness (BMT) measurements in combination with bosom breadth (BB) and keel length (KL) values. Methods: The traits analyzed were breast meat weight (BMW), body weight (BW), breast meat percentage (BMP) and the three parameters of breast meat (BB, KL, and BMT). These measurements were derived from studying 15,781 Pekin ducks selected from 10 generations based on breast meat weight. Genetic parameters and breeding value were estimated for the analysis of the breeding process. Results: Estimated heritability of BMW and BMP were moderate (0.23 and 0.16, respectively), and heritability of BW was high (0.48). Other traits such as BB, KL, and BMT indicated moderate heritability ranging between 0.11 and 0.28. Significant phenotypic correlations of BMW with BW and BMP were discovered (p<0.05), and genetic correlations of BMW with BW and BMP were positive and high (0.83 and 0.66, respectively). It was noted that BMW had positive correlations with all the other traits. Generational average estimated breeding values of all traits increased substantially over the course of selection, which demonstrated that the ducks responded efficiently to increased breast meat yield after 10 generations of breeding. Conclusion: The results indicated that duck BMW had the potential to be increased through genetic selection with positive effects on BW and BMP. The ultrasound BMT, in combination with the measurement of BB and KL, is shown to be essential and effective in the process of high breast meat yield duck breeding.

Effect of Ginger Extract and Citric Acid on the Tenderness of Duck Breast Muscles

  • The objective of this study was to examine the effect of ginger extract (GE) combined with citric acid on the tenderness of duck breast muscles. Total six marinades were prepared with the combination of citric acid (0 and 0.3 M citric acid) and GE (0, 15, and 30%). Each marinade was sprayed on the surface of duck breasts (15 mL/100 g), and the samples were marinated for 72 h at 4℃. The pH and proteolytic activity of marinades were determined. After 72 h of marination, Warner Bratzler shear force (WBSF), myofibrillar fragmentation index (MFI), pH, cooking loss, moisture content, sodium dodecyl sulfate-polyacrylamide gel electrophoresis (SDS-PAGE), and protein solubility were evaluated. There was no significant (p>0.05) difference in moisture content or cooking loss among all samples. However, GE marination resulted in a significant (p<0.05) decrease in WBSF but a significant (p<0.05) increase in pH and MFI. In addition, total protein and myofibrillar protein solubility of GE-marinated duck breast muscles in both WOC (without citric acid) and WC (with citric acid) conditions were significantly (p<0.05) increased compared to non-GE-marinated duck breast muscles. SDS-PAGE showed an increase of protein degradation (MHC and actin) in WC condition compared to WOC condition. There was a marked actin reduction in GE-treated samples in WC. The tenderization effect of GE combined with citric acid may be attributed to various mechanisms such as increased MFI and myofibrillar protein solubility.

Linking growth performance and carcass traits with enterotypes in Muscovy ducks

  • Objective: Enterotypes (ETs) are the clustering of gut microbial community structures, which could serve as indicators of growth performance and carcass traits. However, ETs have been sparsely investigated in waterfowl. The objective of this study was to identify the ileal ETs and explore the correlation of the ETs with growth performance and carcass traits in Muscovy ducks. Methods: A total of 200 Muscovy ducks were randomly selected from a population of 5,000 ducks at 70-day old, weighed and slaughtered. The growth performance and carcass traits, including body weight, dressed weight and evidenced weight, dressed percentage, percentage of apparent yield, breast muscle weight, leg muscle weight, percentage of leg muscle and percentage of breast muscle, were determined. The contents of ileum were collected for the isolation of DNA and 16S rRNA gene sequencing. The ETs were identified based on the 16S rRNA gene sequencing data and the correlation of the ETs with growth performance and carcass traits was performed by Spearman correlation analysis. Results: Three ETs (ET1, ET2, and ET3) were observed in the ileal microbiota of Muscovy ducks with significant differences in number of features and α-diversity among these ETs (p<0.05). Streptococcus, Candida Arthritis, and Bacteroidetes were the presentative genus in ET1 to ET3, respectively. Correlation analysis revealed that Lactococcus and Bradyrhizobium were significantly correlated with percentage of eviscerated yield and leg muscle weight (p<0.05) while ETs were found to have a close association with percentage of eviscerated yield, leg muscle weight, and percentage of leg muscle in Muscovy ducks. However, the growth performance of ducks with different ETs did not show significant difference (p>0.05). Lactococcus were found to be significantly correlated with leg muscle weight, dressed weight, and percentage of eviscerated yield. Conclusion: Our findings revealed a substantial variation in carcass traits associated with ETs in Muscovy ducks. It is implied that ETs might have the potential to serve as a valuable biomarker for assessing duck carcass traits. It would provide novel insights into the interaction of gut microbiota with growth performance and carcass traits of ducks.

오리 가슴육의 발골시간과 저장온도가 육질 특성에 미치는 영향 (Effect of Boning Time and Storage Temperature on Meat Qualify of Duck Breast)

  • 도압 후 오리 가슴육의 발골시간과 취급방법이 육질에 미치는 영향을 알아본 결과, 처리구 간의 pH는 유의적인 차이가 없었으나 냉동해동 처리구가 냉도체 발골구에 비해 높은 명도($L^*$)와 황색도($b^*$)를 나타내었을 뿐만 아니라 짧은 근절길이와 높은 가열감량을 보였고, 그 결과 높은 전단가를 나타내었다. 이 같은 결과는 냉동해동 처리구의 근원섬유 단백질 용해성이 낮은 것과 관련이 있었으며, 낮은 용해성은 nebulin과 같은 고분자 단백질이 사후초기에 냉동에 의해 분해되지 않은 결과로 사료된다. 따라서 오리고기는 도압 후곧바로 발골하여 냉동 또는 냉장 유통하는 것보다 냉도체 발골하여 냉장 유통하는 것이 육질향상을 위해 바람직할 것으로 사료된다.

  • The fatty acid composition of muscle were investigated to compare muscle composition among the 9 domestic animals including cattle. In major domestic animals, analyzed the effects of age, part and sex of the animal on their fatty acid composition. The content of 4 types of major fatty acids of muscle was determined and calculated their ratio. Myristic acid and palmitic acid levels were high in chicken and sheep. Besides dog muscle contained a lot of stearic acid. Linoleic acid content showed evident difference in the content depending on the animal species. The ratios of linoleic acid/palmitic acid (L/P ratio) and linoleic acid/stearic acid(L/S ratio) were characteristically high in horse and pig, whereas the ratio of palmitic acid/stearic acid(P/S ratio) was $0.71{\pm}0.17$, showing very low level in dog. As for the content of stearic acid, in cattle and chicken it was higher in young animal than adults. In duck, the contents of all fatty acids and ratio were increased by the age. As for the content of fatty acids according to the part of chicken, high level was shown in thigh than in breast and wing, while there was no remarkable variation by the part in other animal. The differences in the content of myristic acid, palmitic acid and linoleic acid among some animal could be verified in muscle lipid composition. The L/P ratio which maintained certain level regardless of age, part, sex shown distinctive pattern between the species.
