Quality Characteristics of Sulgidduck Using Dry Rice Powder Added with Different Amounts of Milk (우유를 첨가한 건식 쌀가루 설기떡의 품질 특성)

  • The purpose of this study was to investigate the quality characteristics of Sulgidduck made with commercial dry rice powder, providing an optimal milk ratio and soaking time for dry powder in water to make Sulgidduck using dry rice powder. The Sulgidduk samples with dry rice powder were prepared with two soaking times (0, 30 min) and different amounts of milk (0, 20, 40, 60%), and analyzed for moisture content, Hunter's color value, texture characteristics and sensory evaluation. The moisture content of the samples ranged from 36.37% to 39.80% and the highest moisture quantity was showed in the group with 20% of milk and 30min of soaking time(SM20). The L-value was the highest in the group with 20% of milk and 0min of soaking time(M20). The b-value was increased with the amount of milk and soaking time increased, showing the highest in the group with 60% of milk and 30min of soaking time(SM60). TPA showed that SM20 had the lowest hardness and the highest adhesiveness. Chewiness, gumminess and cohesiveness were the highest in the group with 60% of milk and 0min of soaking time(M60). Based on quantitative descriptive sensory evaluations, the score of white color and moistness was showed high in the group with 0% of milk and 0min of soaking time(M0), and white powder on the surface was shown the most in the group with 20% of milk and 30min of soaking time(SM20). The score of moistness, springiness and chewiness were highest in the group with 20% of milk and 0min of soaking time(M20). Sulgidduk made with 20% of milk and 0min of soaking time(M20) was the most preferable in color, flavor, taste, and overall acceptability.

Prediction of the content of white clover and perennial ryegrass in fresh or dry mixtures made up from pure botanical samples, by near infrared spectroscopy

  • Pasture composition, an important attribute determining sward condition and value, is normally assessed by hand separation, drying and measuring weight contribution of each species in the mixture. This is a tedious, time and labour consuming procedure. NIRS has demonstrated the potential for predicting botanical composition of swards, but most of the work has been carried out on dry samples. The aim of this work was to evaluate the feasibility of developing NIR models for predicting the white clover and ryegrass content in fresh or dry mixtures artificially prepared from pure samples of both species. Mixtures from pure stands of white clover(Trifolium repens) and perennial ryegrass (Lolium perenne) were prepared with different proportions (0 to 100%) of each species (fresh weight). A total of 55 samples were made (11 mixtures,5 cuts). Spectra (400 to 2500 nm) were taken from fresh chopped (rectangular cuvettes, transport sample module) samples, in a NIR Systems 6500 scanning monochromator controlled by the software NIRS 3 (Infrasoft International), which was also utilized for calibration development. Different math treatments (derivative order, subtraction gap and smooth segment) and a scatter correction treatment of the spectra (SNV and Detrend) were tested. Equations were developed by modified partial least squares. Prediction accuracy evaluated by cross-validation, showed that percentage of clover or ryegrass, as contribution in dry weight, can be successfully percentage of clover or ryegrass, as contribution in dry weight, can be successfully predicted either on fresh or dried samples, with equations developed by different math treatments. Best equations for fresh samples were developed including a first, second, or third derivative, whereas for dry samples best equations included a second or third derivative. Standard errors of ross validation were about 6% for fresh and 3.6% for dry samples, Coefficient of determination of cross validation (1-VR) were over 0.95 times the value of SECV for fresh samples and over 8 times the value of SECV for dry samples. Scatter correction (SNV and Detrend) in general improved prediction accuracy. It is concluded more precise on dried and ground samples, it can be used with an acceptable error level and less time and labour, on fresh samples.

The Effect of Corn Bran as a Fiber Source on the Utilization of Thiamin Niacin and Pantothenic Acid in Humans (옥수수겨가 티아민, 나이아신, 판토텐산의 생체이용율에 미치는 영향)

  • The study was performed to investigate the effect of corn bran as a fiber source on the utilization of thiamin niacin and pantothenic acid in human subjects for 8 weeks. Four different corn bran diets were fed : dry milled fine(DF) dry milled coarse(DC) wet milled fine(WF) and wet milled coarse(WC) Basal diet no corn bran bread added was employed as a control Apparent recovery of each B complex vitamin in urine was estimated to evaluate the vitamin and compared. The utilziation of three B vitamins was affected by the corn bran treatment. Dry milled corn bran had a higher recovery rate of thiamin(dry milled : 233% wet milled : 1.70%) than those receiving wet milled corn bran. Similar recovery pattern of niacin(dry milled : 1.94% wet milled : 1.50%) to that of thiamin was also observed. Particle size seemed to affect the vitamin utilization regardless of type of corn bran. Coarse bran gave a lower recovery value than fine corn bran in genreral. For pantothenic acid the recovery of the vitamin was affected to a greater extent by particle size of corn bran than by type of corn bran milling(fine: 60.22% coarse : 51.51%) Groups consuming wet milled corn bran\ulcorner(5`.57%) excreted more NDF than those fed dry milled corn bran(42.29%) Dry milled corn bran showed little or no water holding capacity poor fecal bulking properties and increased fecal transit time. The results suggest that corn bran supplementation exerts an negative effect on three B vitamin utilization.

Ruminal Behavior of Protein and Starch Free Organic Matter of Lupinus Albus and Vicia Faba in Dairy Cows

  • Faba beans (vicia faba) (FB) and lupin seeds (Lupinus Albus) (LS) were dry roasted at three temperatures (110, 130, $150^{\circ}C$) for 15, 30 or 45 min to determine the effects of dry roasting on rumen degradation of crude protein and starch free organic matter ($^{PSF}OM$). Rumen degradation characteristics of $^{PSF}OM$ were determined by the nylon bag incubation technique in dairy cows fed 60% hay and 40% concentrate. Measured characteristics of $^{PSF}OM$ were undegradable fraction (U), degradable fraction (D), soluble fraction (S), lag time (T0), and the rate of degradation (Kd). Based on the measured characteristics, rumen availability ($RA^{PSF}OM$) and bypass $^{PSF}OM$ ($B^{PSF}OM$) were calculated. Dry roasting did not have a greater impact on rumen degradation characteristics of $^{PSF}OM$ (p>0.05). S varied from 32.1 (raw) to 30.0, 27.8, 30.8% (LS) and 15.4 (raw) to 14.4, 20.8, 20.9% (FB); D varied from 65.4 (raw) to 66.3, 66.9, 55.9% (LS) and 54.9 (raw) to 55.0, 51.0, 64.7% (FB); U varied from 2.6 (raw) to 7.3, 7.0, 7.7% (LS) and 29.7 (raw) to 30.6, 28.2, 14.4% (FB); Kd varied from 6.0 (raw) to 7.3, 7.0, 7.7% (LS) and 22.4 (raw) to 24.4, 21.1, 7.9% (FB); $B^{PSF}OM$ varied from 35.5 (raw) to 33.8, 36.6, 38.2% (LS) and 41.3 (raw) to 41.5, 39.7, 47.6% (FB) at 110, 130 and $150^{\circ}C$, respectively. Therefore dry roasting did not significantly affect $RA^{PSF}OM$, which were 353.7, 367.9, 349.6, 336.9 (g/kg DM) (LS) and 12.82, 127.0, 133.7, 117.1 (g/kg DM) (FB) at 110, 130 and $150^{\circ}C$, respectively. These results alone with our previously published reports indicate dry roasting had the differently affected pattern of rumen degradation characteristics of various components in LS and FB. It strongly increased bypass crude protein (BCP) and moderately increased starch (BST) with increasing temperature and time but least affected $^{PSF}OM$. Such desirable degradation patterns in dry roasted LS and FB might be beneficial to the high yielding cows which could use more dry roasted $^{PSF}OM$ as an energy source for microbial protein synthesized in the rumen and absorb more amino acids and glucose in the small intestine.

  • An apparatus for continuous measurements of sorption isotherm of dried food was manufactured to shorten the time required for equilibration. The apparatus was so designed that the temperature, air velocity and relative humidity in the experimental chamber could be controlled. The use of dynamic stream of conditioned air with a velocity of 0.2m/sec, instead of static atmosphere, allowed a faster equilibration of dried filefish muscle at $25^{\circ}C$. The mean time necessary for the equilibration of dried filefish muscle at the water activity of a given state to a higher water activity was about 45 hours. The monolayer moisture content of dried filefish muscle calculated from BET-equation was 0.092 kg water /kg dry matter at $25^{\circ}C$.

A Dry-patterned Cu(Mg) Alloy Film as a Gate Electrode in a Thin Film Transistor Liquid Crystal Displays (TFT- LCDs) (TFT-LCDs 게이트 전극에 적용한 Cu(Mg) 합금 박막의 건식식각)

  • The annealing of a Cu(4.5at.% Mg)/$SiO_2$/Si structure in ambient $O_2$, at 10 mTorr, and $300-500^{\circ}C$, allows for the outdiffusion of the Mg to the Cu surface, forming a thin MgO (15 nm) layer on the surface. The surface MgO layer was patterned, and successfully served as a hard mask, for the subsequent dry etching of the underlying Mg-depleted Cu films using an $O_2$ plasma and hexafluoroacetylacetone [H(hfac)] chemistry. The resultant MgO/Cu structure, with a taper slope of about $30^{\circ}C$ shows the feasibility of the dry etching of Cu(Mg) alloy films using a surface MgO mask scheme. A dry-etched Cu(4.5at.% Mg) gate a-Si:H TFT has a field effect mobility of 0.86 $\textrm{cm}^2$/Vs, a subthreshold swing of 1.08 V/dec, and a threshold voltage of 5.7 V. A novel process for the dry etching of Cu(Mg) alloy films, which eliminates the use of a hard mask, such as Ti, and results in a reduction in the process steps is reported for the first time in this work.

Milling and Rice Flour Properties of Soaking in Water Time on Moisture Content of Rice (쌀의 수침 시간별 제분 및 쌀가루의 특성)

  • Power consumption, mesh size, moisture content, color difference, amylogram of rice flour milled with water soaked rice were compared with that of rice using dry pin mil process. Maximum water absorbance of rice was 35% for 2.5 hr. Power consumption to mill the soaked rice was less than of dry rice by 6.9kW/100Kg. Moisture content of rice flour from the water soaked rice was 2% higher than that of rice flour from dry rice. Population of flour particle was 52.9% of 60 mesh and 32.6% of 60∼80mesh. Gelatinization temperature of rice flour from the water soaked rice was 30C lower than that of rice flour from dry rice. Maximum and minimum viscosity of rice flour from the water soaked rice after boiling were 296 cps and 158 cps, independently. Brightness and whiteness of the rice flour from the water soaked rice were increased upto 10hr soaking and decreased after 17hr soaking. Brightness and whiteness of the rice flour were 96.17 and 96.02, independently.

  • Korea's traditional house type, the Hanok, has been the essence of Korean domestic culture for hundreds of years. However, Hanok, have begun to disappear as result of urbanization. Because mud walls are crude and weak in water walls are also easily broken by impact. There are further problems in that construction cost is expensive and takes more time than modern house construction, and that the maintenance of Hanok is more difficult than people sometimes predict. Despite much interest in Hanok construction, there is a lack of in younger generation. Thus seeking new ways of maintaining Korea's traditional housing culture and extending Korean traditional houses is important. This study proposes directions for creating new residential environments for the future generation of Korea. A Dry-wall alternative to the Korean traditional mud wall is particularly needed. Dry-walling, made by sustainable materials such as mud board and wood, can strengthen the advantages and make up for the weaknesses of the Korea traditional mud wall. In this study, both wall types underwent various evaluations in terms of their performance in insulation testing, freezing and thawing testing, impacting testing and weight measuring (the size of material in this experiment was $69cm{\times}105cm$). On all of these tests, findings revealed that the dry-wall alternative performed better than traditional mud wall.

Solvent Washing Dry Method for Aqueous Tape Casting

  • For the fast dry of the aqueous tape, the process which water was replaced by organic solvent was proposed. Socalled, it was the solvent washing dry. Three organic solvents (methanol, ethanol and acetone) were selected for the washing solvent. The weight loss of the washed tapes was measured to evaluate the dry rate of the tapes and dried tapes were examined the generation of the cracks with the variations of the organic solvent and the washing time. Methanol, ethanol and acetone were available organic solvents for this method. The tapes washed in methanol, ethanol and acetone were dried rapidly for twenty minutes. After thirty minutes, the weight losses were not found any more. The solvent of the lower surface tension can decreases the crack of dried tape. If solvent substitutes water completely, though it was fast dried, crack can be eliminated.

Germination Percentages of Different Types of Sweet Corn in Relation to Harvesting Dates

  • Germination of sweet and super sweet corn is lower than normal corn due to the higher sugar and lower starch contents of kernels. Sweet corn seeds are easily deteriorated in the field under the unfavorable condition, therefore it is important to identify the optimal harvesting time for seed production. This trial was conducted to investigate the responses of germination percentage of shrunken-2(sh2), brittle(bt), sugary(su), and sugary enhancer(se) hybrids in relation to harvesting dates. Eight hybrids of four different gene sweet corns were harvested at 15, 20, 25, 30, 35, 40, 45, and 50 days after silking(DAS). Germination test was performed using paper towel method. Mean germination percentages across eight hybrids showed the highest value at 45 DAS. There were significant differences among genes and within gene for germination. Shrunken-2 hybrid Mecca was higher than su hybrids for germination, indicating that sh2 would not be poorer than su Late harvesting beyond the optimal harvesting date might not be desirable because of more lodging and ear rots. Theoretical optimal harvesting date estimated from the regression equation was 40.9 DAS, however, practical date for harvesting would be a few days later than the estimated date if seedling vigor might be considered. Kernel dry weight per ear showed similar response to germination. Regression equation showed the highest kernel dry weight at 40.7 DAS. Significant correlations between kernel dry weight and germination were observed, impling that kernel dry matter accumulation would be an important factor for germination.
