The estimation of the pre-processing condition of oyster is of great importance for distributors and processors. This study was attempted to establish the basic data for evaluating the processing suitability of oyster, which is the most important shellfish for domestic use and export. The data were analysed by measuring the condition index, chemical composition and heavy metal content of oysters. In order to eliminate the manual work that has to be done on a tightly closed oyster shell and avoid shrinkage in the oyster meat which is attendant on the steaming process, chemical means to open oyster were examined. finding the method of pretreatment of polyphosphate for frozen oysters were attempted to improve the product quality. The prevention of undesirable color change of the canned oyster meat is another problem to solve. The important results are as follows : 1. The ratio of meat volume and meat weight to the holding capacity by shells may be useful as an index to measure the condition index of oysters. 2. As a whole, monthly changes of moisture and fat content in oysters were reversely correlated. Protein content slightly decreased from April and rapidly decreased in July, and again rapidly increased in August but from September to November decreased slightly. In April, the content of glycogen was 4 percent. From this period to September, glycogen was rapidly decreased. From July to September, it was only 0. 7 to 1 percent but increased from October. There were little seasonal changes in pH value. The pH value of oyster meat was 6.0 to 6.2. The crude ash content was slightly decreased from June to August. 3. The range of monthly change of heavy metal content are as follows: Total mercury was 0 to 0.019 ppm, cadmium was 0.026 to 0.053 ppm, copper was 0.111 to 0.594 ppm, and lead_was 0.061 to 0.581 ppm. 4. By the results of condition index, chemical composition and heavy metal content of oysters, the suitable harvest season as raw materials for processing was the end of December to the end of May of next year. 5. The pretreatment of 10 percent polyphosphate in 5 percent salt solution of oyster meat appeared effective to reduce thawing drip during cold storage. 6. The pretreatment of $Na_2EDTA$ and BHA did not show the color prevention effect to the canned oyster meat during storage. 7. Magnesium chloride affected to open the valves of oysters.
A study was conducted to evaluate seasonal variations in chemical composition of food waste (FW) and its feeding effects on growth performance and pork quality in finishing pigs. FW was collected for 1 year (6 times a month) to establish a database for use of FW as a feed ingredient. For a feeding trial (8 weeks), a total of 117 pigs ${\times}$D; 54.80$\pm$4.60kg) were used to evaluate the processing effects of FW. Treatments were: Control (a corn-soybean meal diet without FW), simple dried FW (SD) and vacuum fermented FW (VF). The gross energy, crude protein, crude fat, ash, calcium and phosphorus in FW (DM, average of 4 seasons) were 5,111kcal/kg, 22.92%, 14.31%, 15.48%, 2.7% and 1.05%, respectively. Among seasons, the energy and crude protein contents were the highest (p<0.05) in winter and summer, respectively. In lactic acid bacterial counts, there was no difference between SD and VF. Pigs fed the control diet grew faster (p<0.05) than those fed diets containing food wastes, but not feed conversion ratio. There were no differences in production traits between SD and VF. No differences were also found in dressing percentage, backfat thickness, and pork quality (color, drip loss and TBARS) among treatments. The feed cost (₩/kg body weight) was lower in pigs fed FW than those fed a control diet. In conclusion, a pelleted diet containing food waste less than 20% would reduce feed cost in finishing pigs. However, it seems that a vacuum fermentation of food waste is not necessary for diet processing.
This study was performed to develop a more rapid and simple nutrient diagnosis method of plants than the conventional leaf analysis method. tomato (Lycopersicon esculentum Mill. cv. super momotaro) was planted in the mixed media produced by mixing perlite and rock wool at 1 . 1 (v/v) ratio. The Yamazakki nutrient solutions for cucumber and tomato were supplied to the media using the micro-drip irrigation system. Experimental plots produced consisted of no fertilization, deficient fertilization, adequate fertilization and surplus fertilization for N, P and K, respectively. Each experimental plot was replicated four times. Specific color different sensor values (SCDSV) measured by the chlorophyll meter were closely related to total-N concentrations in the leaves measured by the conventional method. Nitrate, $PO_4$ and K concentrations in petiole sap measured by test strips #(Reflectoquant^{\circledR},\;Merck,\;Germany)$ showed a significant relationship with total-N, p and K concentrations in leaves. The linear regression equations between $NO_3,\;PO_4$ and K concentrations in petiole sap and total-N, p and K concentrations in the leaves were prepared. The optimum levels of $NO_3,\;PO_4$ and K in petiole sap were obtained by plugging the optimum concentrations of total-N, p and K in the leaves by other researchers into the equations. In conclusion, the SCDSV by the chlorophyll meter and concentrations of NO3, p and K in petiole sap measured by the test strips would be suitable for rapid estimation of plant nutrient status.

A total of 100 pigs were used to investigate the effects of pig breed on proximate, physicochemical, cholesterol, amino acid, fatty acid and sensory properties of loins. Crossbred pigs were alloted into one of five experimental groups [×Duroc(LYD), ×Berkshire (YBB), British Berkshire(BB), Kagoshima Berkshire(KB), Korean native black pig×Wild boars(KW; Sus coraanus)]. Pigs were slaughtered at 110 kg live weight. Moisture content was significantly(p<0.05) higher in KW than those of other pig breeds. Crude protein content was significantly(p<0.05) higher in YBB and KW than in LYD, BB, and KB. Cholesterol content was significantly(p<0.05) higher in YBB than those of other pig breeds. WHC and pH value had lower and shear force had higher(p<0.05) in YBB than those of other pig breeds. In color, LYD was significantly(p<0.05) higher in L* than those of other pig breeds. There was no significant different in a* and brittleness value among the breeds. In fatty acid and amino acid composition, KW had a higher(p<0.05) UFA/SFA, EFA/UFA ratio and EAA content but lower (p<0.05) SAAA. Total amino acid content was significantly(p<0.05) higher in LYD(20.44%) and BB (20.81%) than those of other pig breeds. In fresh meat, breeds affected meat color, drip loss, marbling score, and overall acceptability(p<0.05). Purple rice is a strain of glutaneous rice rich in anthocyanins and ${\gamma}$-oryzanol. Both types of compounds are involved in antioxidant and lipid metabolism of mammals. Three experimental diet types were used which consisted approximately by half either of purple rice, white rice or corn. Diets were fed to $3{\times}10$ pigs growing from about 30 to 100 kg. Meat samples were investigated either as raw or cured loin chops or as smoked bacon produced from the belly. Various physicochemical traits were assessed and data were evaluated by analysis of variance. Traits describing water-holding capacity (drip, thaw, and cooking losses) and tenderness (sensory grading, shear force) of the meat were mostly not significantly affected by the diet type. However, purple rice feeding of pigs resulted in lower fat and cholesterol contents of loin and smoked bacon compared to white rice, but not compared to corn feeding except of the fat content of the loin. The shelf life of the raw loin chops was improved by purple rice as well. In detail, the occurrence of thiobarbituric acid reactive substances after 9 days of chilled storage was three to four times higher in the white rice and corn diets than with purple rice. The n-6:n-3 ratio in the raw loin chops was 9:1 with purple rice and clearly higher with 12:1 with the other diets, meat lipids. Level and kind of effect of purple rice found in raw meat was not always recovered in the cured loin chops and the smoked bacon. Still the impression of flavor and color, as well as overall acceptability were best in the smoked bacon from the purple-rice fed pigs, whereas this effect did not occur in the cured loin chops. These findings suggest that purple rice has a certain, useful, bioactivity in pigs concerning meat quality, but some of these effects are of low practical relevance. Further studies have to show ways how transiency and low recovery in meat products of some of the effects can be counteracted.
To obtain information for the proper fertilization management of cut-flower roses, the amount of macro and micro elements absorbed by cut-flower roses from soil for a year was investigated. Three cut-flower rose cultivars which are called 'Grandgara', 'Nobless', and 'Centina' were transplanted to a sandy loam soil, N-P-K standard fertilization was applied to the soil, and drip irrigation was done at the level of 10 kPa soil moisture tension. There was not significantly different in the harvest amount of cut-flower rose between 'Grandgara' and 'Nobless', but the harvest yield of 'Centina' was about 63% level when compared to that of 'Grandgara'. Considering seasonal changes in the content of nutrients in plant, parts, the uptake of untrients was higher in winter season than that in spring and summer seasons. Except for 'Centina', the nutrient amount removed from plant parts of 'Grandgara' and 'Nobless' increased with the sequence of floral part < stem < leaf, indicating that it is more dependent on biomass yield than on the content of nutrients in each plant part. The ratio of N/K amount absorbed by 'Nobless' and 'Centina' was 1.13 and 1.28. respectively, lower than 1.68 of 'Grandgara', showing that the requirement for K is greater in 'Nobless' and 'Centina' than in 'Grandgara'. The use efficiency of nutrients by cut-flower roses ranged from 39 to 64% in nitrogen, 5 to 9% in phosphorus, and 37 to 67% in potassium. It suggests that the requirement for P in cut-flower roses is very low.

This study was conducted to investigate the effects of bio-ion water on growth performance, blood characteristics and meat quality in pigs. Ninety nine crossbreed pigs $(Landrace{\times}Yorkshire{\times}Duroc)$ were randomly allotted to three treatments; CON (basal diet), T1 (basal diet with bio ion water from growing period), T2 (basal diet with bio ion water from finishing period). There were no significant differences in growth performance and carcass characteristics of pigs among treatments. The red blood cell and white blood cell were significantly higher (P<0.05) in diet added with bio ion water than the control. Proximate analysis (%), meat color, pH, drip loss (%), cooking loss (%) and shear force $(kg/cm^{2})$ were not significantly different (P>0.05) among treatments. The treatment 1 had lower saturated fatty acid (SFA) to unsaturated fatty acid ratio, but higher UFA concentration than those of control. The aroma of cooked meat in T1 was higher than other treatments. Thereby, overall acceptability sensory score of cooked meat in T1 tended to be higher than other treatments.

Objective: This study was conducted to assess the effect of potassium humate and enzymes (Xylanase+Amylase+Protease) inclusion in diets on carcass characteristics, meat quality and fatty acid profiles of broilers fed canola-based diets. Methods: Two hundred and twenty broilers randomly allotted to 5 dietary treatments: the control (commercial broiler diet); CM (17.5% canola meal inclusion); CMEnz (17.5% CM inclusion+0.3 g/kg Axtra XAP); CMPh (17.5% CM inclusion+1.5% Potassium Humate, PH); and CMEnzPh (17.5% CM inclusion+1.5% PH+0.3 g/kg Axtra XAP) were slaughtered at day 42 for assessment of carcass and meat quality parameters. Results: Diet had no effect on carcass traits apart from breast muscle weight and breast muscle index. The highest breast muscle weight was observed in broilers fed CMEnz ($487.6{\pm}17.5g$) followed by those fed the control diet ($474.37{\pm}17.5g$). Diet also had no significant dietary effect on pH, temperature, drip loss and shear force values of the breast muscle. However, diet significantly affected meat colour and water-holding capacity. Broilers in the control and CMPh groups ($52.94{\pm}0.67$ and $52.91{\pm}0.67$) had the highest (p<0.05) values for lightness ($L^*$), whilst those fed CMEnzPh had the lowest value ($47.94{\pm}0.67$). In contrast, CM group had the lowest (p<0.05) value for redness ($a^*$) with CMEnzPh group having the highest values. The proportion of polyunsaturated fatty acids (PUFAs), n-6 and n-3 fatty acids and the PUFA/saturated fatty acid ratio were increased in CM-based diets containing enzymes and humic acid. Conclusion: It can, therefore, be concluded that CM can be included in broiler diets in the presence of enzymes and humic acid with positive effects on meat quality and important fatty acids that are beneficial to the health of consumers.
The following informations are known from physical and chemical characteristics of orchard soils and nutritional diagnosis of orange leaves in Jeju. 1. Most orange orchards are located on terrace and cindercone thus soil moisture and microclimate of an orchard will greatly be affected by its topography. 2. Excessive well drainage, shallow soil depth, high content of gravels, low solid phase ratio and strong wind will give severe problem of soil moisture and wind errosion, thus the exte- nsion of soil depth is necessary for maintain nutrients, water and sufficient root volume. 3. Available soil water was significantly and positively correlated with organic matter content and clay content also contributes to available soil water. Vinyl mulching was greatly helpful for soil water conservation, wind errosion prevention, soil temperature increases during winter. 4. Abundant amphoteric amorphous allophane take a key role to fix phosphorus and also rations and thus it is the major factor to determine fertilizer efficiency. Lime and phosphorus must be applied in deeper soil layer. Release of filed phosphorus must be reevluated for availability. 5. Organic matter such as see weeds will greatly increase fertilizer efficiency and low fertilizer efficiency during spring may be related to available soil water. 6. Nitrogen was in superoptimum and Mg was enough but P and Ca were somewhat deficient according to leaf analysies while K was deficient according to fruit analysis. Phosphorus application increased sugar/acid ratio and potassium decreases rind percentage. 7. Manganese deficiency and toxicity appeared in a few places. Iron and boron were enough. Most places showed tendency of copper excess but some places showed copper deficiency. 8. Soiling after elimination of rock base, application of slow release fertilizer and abundant organic matter, vinyl mulching and drip irrigation will increase fertilizer efficiency greatly and fruit yield drastically.
