Quality Characteristics of Yanggaeng containing Various Amounts of Dried Persimmon (곶감 첨가량을 달리한 양갱의 품질 특성)

  • This study was performed to develop dried persimmon using Yanggaeng by addition of dried persimmon puree(0, 5.6, 11.2, 16.8 and 22.4%). L value, pH, sugar contents, hardness, chewiness, cohesiveness, gumminess, springiness were, moisture contents, a value, b value and adhesiveness were of dried persimmon puree. different attributes, dried persimmon puree content significantly affected properties including color intensity, gloss, dried persimmon flavor, dried persimmon taste, sweetness, moistness and after taste. In the acceptance test, dried persimmon puree was preferred appearance, flavor, taste, texture and overall quality. The optimal dried persimmon puree content for overall quality of dried persimmon Yanggaeng was 16.8%.

Physiological Activities of Dried Persimmon, Fresh Persimmon and Persimmon Leaves (곶감, 생감 및 감잎 추출물의 생리활성 효과)

  • Antioxidative, antidiabetes, antibacterial, anticancer and angiotensin-converting enzyme (ACE) inhibitory activities of methanol extracts of dried persimmon, fresh persimmon and persimmon leaves were investigated. Total polyphenol content of dried persimmon, fresh persimmon and persimmon leaves were 147.79, 301.45 and $315.90\;{\mu}g/mg$, respectively, of which fresh persimmon and persimmon leaves had significantly higher total polyphenol than dried persimmon. Activities of DPPH radical scavenging, lipid peroxidation inhibition and salivary $\alpha$-amylase inhibition were increased in persimmon leaves related to total polyphenol contents. Anticancer activities against AGS of fresh persimmon and persimmon leaves were $65{\sim}70%$; however, there were no significant differences between dried persimmon and fresh persimmon on free radical scavenging activity and inhibitory activity of salivary $\alpha$-amylase. Also, extracts of dried persimmon, fresh persimmon and persimmon leaves showed good ACE inhibitory activities. Dried persimmon and fresh persimmon showed antibacterial activities on E.coli O157:H7. Therefore, there are many difference activities by dried and parts of persimmon. From this result, it is suggested that persimmon leaves is believed to have possible antioxidative, antidiabetes and anticancer capacities by polyphenol, but further studies on the identification of the active compound(s) as antioxidant, antidiabetic, antihypertensive and antibacterial materials will be needed to develop a better understanding of its potency on persimmons.

Characteristics of Apple, Persimmon, and Strawberry Slices Dried with Maltodextrin

  • Apple, persimmon, and strawberry slices were dehydrated after treating with 30, 50, and 80% (w/w) maltodextrin solution. The dried apple, persimmon, and strawberry slices were compared with hot air-dried and freeze-dried samples in terms of rehydration ratio, ascorbic acid, color, and sensory evaluation. The rehydration ratio of maltodextrin-treated samples was greater than that of hot-air or freeze-dried samples. Maltodextrin-treated samples had higher content of ascorbic acid than other dried samples. Additionally, maltodextrin-treated apple, persimmon, and strawberry slices had better color and sensory evaluations than those of freeze-dried or hot-air dried samples. These results suggest that, compared to other drying methods, dehydration of apple, persimmon, and strawberry slices using maltodextrin is very efficient, resulting in good rehydration capacity, minimal destruction of ascorbic acid, and good color and sensory evaluation.

Effects of Dried Persimmon Snacks on Alcohol Metabolism in Men

  • Persimmon has been known to help alcohol intoxication in Korea for a long time and is prepared as a processed food. The effect of dried persimmon snacks on alcohol metabolism was determined in vivo. Eight Korean men (25~27 years old) were administered 3.5 mL/kg of alcohol (22.5%, w/v) with or without a dried persimmon snack (2g/kg). The levels of alcohol in the blood and of acetaldehyde in the blood and the urine were determined by alcoholmeter and assay using alcohol dehydrogenase and HPLC, respectively. All subjects showed decreased levels of alcohol in blood, and six subjects showed a decrease of alcohol in urine after consumption of ethanol with dried persimmon snacks. Concentration of acetaldehyde in the blood an urine decreased significantly in three and five of the eight subjects, respectively. Reduction was more significant for alcohol than for alcohol than for acetaldehyde with administration of ethanol and dried persimmon snacks. This in vivo result suggests that dried persimmon snacks are effective in decreasing th concentration of alcohol after alcohol intake.

Quality characteristics of domestic dried persimmon and imported dried persimmon (국내산과 수입산 시판 곶감의 품질특성)

  • The physicochemical quality characteristics of the domestic and imported commercial dried persimmons were investigated. The moisture content of dried persimmon was approximately 22.78~61.64%, while the moisture contents of the Chinese dried persimmon were 22.78 and 28.20%, respectively, and were lower than the domestic dried persimmon. The pH of the Chinese dried persimmon was 5.09~5.99, while the pH of the Haman dried persimmon has the highest value (pH 5.99). The Brix was approximately $25.07{\sim}42.93^{\circ}Brix$ and weight of dried persimmons were 29.77~77.95 g, while the weight of Yeongdong dried persimmon has the lowest (29.77 g), and the weight of the Sancheong dried persimmon has the highest value. The L values were 18.27~66.20. The a values were -1.26~10.70 and a value of the Sancheong dried persimmon was 10.70, which was the highest. The b values were 2.81~25.25, wherein the b value of the Cheongdo semi-dried persimmon and Sancheong dried persimmon were25.25 and 21.98, respectively, and were higher than others. The appearance score of the sensory characteristics were the highest in Cheongdo semi-dried persimmon, while the appearance score of Wanju black persimmon was 1.39, which was the lowest. The overall acceptability of the Chinese dred persimmons (No.2) was the highest, while that of the Yeongdong, Hadong and Sangju dried persimmons have higher values than the other dried persimmons. The sulfur dioxide content of the 9 kinds of commercial dried persimmon was lower than 10 mg/kg, but not detected.

Isolation and identification of blacken spoilage inducing bacteria from Korean dried persimmon

  • Blacken spoilage is one of the common problems during the cold storage of dried persimmon in Korea. We collected the spoiled dried persimmon in the refrigerator and classified them to 4 types depending on their appearances. Furthermore we isolated blacken spoilage inducing bacteria from type D of dried persimmons. Among the isolates we identified the seven blacken spoilage inducing bacteria. They are Aeromonas hydrophila DP1, Cedecea davisae DP2, Ewingella americana DP3, Flavimonas oryzihabitans DP4, Providencia rettgeri DP5, Providencia rustigianii DP6 and Serratia plymuthica DP7. Strains were identified based on their morphological, cultural and physiological properties. We also found that Ewingella americana DP3, Flavimonas oryzihabitans DP4 were the major blacken spoilage inducing bacteria during dried persimmon storage.

Studies on Persimmon Wine (감술제조에 관한연구)

  • The possibility of wine making from soft and dried persimmon and the effects of treatment for persimmon on the quality of wine have been investigated. Soft persimmon was pretreated by two method of heat and hydrochloric acid treatment. Fermentation mash was composed of 12% persimmon and 15% of sucrose and was fermented at 17$^{\circ}C$ for 36 days. The fermentation using persimmons which were untreated and treated by acid was not successful because of contamination caused by lactic acid and acetic acid bacteria. Acidity of the fermented broth produced from boiled dried acid treated and untreated persimmon was 4,4, 5.0, 5,8 and 13.5ml(0.1N NaOH/10ml broth) respectively. Ethanol concentration of the fermented broth produced from boiled dried acid treated and untreated persimmon was 11.2, 10.0, 9.4 and 6.1% v/v respectively. The wine fermented for 28day's fermentation using boiled persimmon as substate had the best quality and stability. After 36day's fermentation using boild persimon following composition was obtained: 4.65% of total sugar 3.65% of reducing sugar 0.03mg/ml of protin 0.17$\mu$/ml of amino acid and 13.02 $\mu$g/ml of pectin. The pH and yeast cell of the boiled persimmon broth were 3.4 and 5.75 logCFU/ml. Fermented wine using dried persimmon had aslo good quality but the fermentation rate was slow.

Properties on the Quality Characteristics of Selgidduck with Various Concentrations of Dried Persimmon Extract (곶감 추출물의 첨가비율에 따른 설기떡의 품질 특성)

  • This study tried to investigate the best mixing ratio by reviewing the quality characteristics such as moisture content, chromaticity and texture, and sensory characteristics of Seolgidduk made of different ratios of persimmon extracts. A and b color values appeared to increase and L value (lightness) to decrease according to the increase of persimmon extracts ratio. In the case of texture, hardness, adhesiveness, springiness, cohesiveness, gumminess and chewiness increased according to the increase of added amount of dried persimmon extracts. The inside section of Seolgidduk was investigated through scanning electron microphotograph, and the $15\%$ of dried persimmon extracts had the smallest and uniform air cells. Seolgidduk with $15\%$ persimmon extracts showed the highest color, flavor and chewiness scores of 3.85, 3.65, and 3.80 from sensory evaluation, respectively. The moistness displayed significant differences according to the increment of the extract Seolgidduk with $15\%$ persimmon extracts displayed the highest overall acceptability of 3.95, while that of the control 3.10. From the above results, $15\%$ mixing ratio of dried persimmons extracts seems to be the most desirable for making Seolgidduk.

Quality Changes in Dried Persimmons Processed by Different Pretreatment and Drying Method (전처리 및 건조방법에 따른 곶감의 품질변화)

  • This study was performed to improved the quality of dried persimmon. For this, the investigation of quality factor and processing experiments were performed. The moisture contents of dried persimmons were 30 to 36% and it was the most important component of the quality. Tannin contents were 0 to 20% and non-treated persimmon had higher tannin contents than treatment of carbon dioxide and alcohol. Total sugar contents were 55 to 60% and it was composed in glucose and fructose. Processing of dried persimmon by artificial-drying seemed to be useful when it needed to shorten the drying time or it continued rainy day during sun-drying. From the result of quality evaluation, sliced dried persimmon was better than whole dried persimmon in quality, so the sliced dried persimmon was expected that it has a little marketability.

The Quality Characteristics of Yogurt Add Supplemented with Low Grade Dried-Persimmon Extracts (하품곶감 추출물 첨가 요구르트의 품질특성)

  • The principal objective of this study was to evaluate the quality characteristics of yogurt to which had been added extracts of low quality dried persimmons, in an attempt to expand the range of use of low-quality dried persimmons. In the results of our sensory evaluation, our optimal results were attained with the addition of 5 g of dried persimmon extracts, 90 g of water, 20 g of oligosaccharide, and 50 g of fructose at a specific level of 1000 mL. During the 20-day storage period, the pH value of the dried persimmon yogurt was lowest on the 15th day in the control group and the 20th day in the yogurt to which 0.5% extract had been added. The titratable acidity was lowest by a significant margin on the 10th day for all types of yogurt. Viscosity assays showed a stable level of acidity over different storage periods. The number of viable cells demonstrated a trend toward increase with passing time, and the number of viable cells in the dried-persimmon yogurt was higher than that in the control yogurt.
