A Study on Physicochemical Characteristics of Frozen Mulberry Fruit and the Quality and Sensory Characteristics of Bagel with Different Drying Conditions of Mulberry Powder (냉동오디의 이화학적 특성과 건조조건을 달리한 오디 분말을 첨가한 베이글의 품질과 관능적 특성에 관한 연구)

  • In this study, frozen mulberries were dried with the methods of freeze-drying and hot-air drying and powdered to make healthy functional bagels by adding 0% (control), 1%, 3%, 5%, and 7% of mulberry powder. After measuring the general ingredients, physiochemical property, total polyphenol content and DPPH radical scavenging of frozen mulberries, the physiochemical property test and sensory test of manufactured bagels were carried out. The pH of the bagels appeared to be higher in the group with the addition of hot-air dried mulberry powder than in the group with the addition of freeze-dried mulberry powder. Luminosity (value L) and yellowness index (value b) appeared to be higher in the group with the addition of hot-air dried mulberry powder than in the group with the addition of freeze-dried mulberry powder. Redness index (value a) appeared to be higher when freeze-dried mulberry powder was added than when hot-air dried mulberry powder was added. Hardness showed a significant difference in the group with the addition of freeze-dried mulberry powder while the group with the addition of hot-air dried mulberry powder showed the opposite result. Elasticity did not have any significant difference in the group with the addition of hot-air dried mulberry powder while it showed a significant difference in the group with the addition of freeze-dried mulberry powder. Cohesiveness did not show any significant difference and gumminess showed the tendency of decrease as the added quantity of freeze-dried mulberry powder and hot-air dried mulberry powder increased. The preference of the group with the addition of 5% freeze-dried mulberry powder and the group with the addition of 3% hot-air dried mulberry powder appeared to be the highest.

Quality Characteristics of Cold-air and Infrared-dried Peaches (냉풍 및 적외선 건조에 따른 건조 복숭아의 품질 특성)

  • This study was conducted to investigate the pH, soluble solid contents, color difference, mineral contents, free sugar contents, and sensory quality of infrared- and cold-air-dried peaches. The pH, soluble solid contents, and free sugar contents of the infrared-dried peaches were higher than those of the cold-air-dried peaches. In the Hunter's color value, the L and ${\Delta}E$ values of the infrared-dried peaches were higher than those of the cold-air-dried peaches; but the a and b values of the cold-air-dried peaches were higher than those of the infrared-dried peaches. The major organic acids of the dried peaches were citric acid, malic acid, and oxalic acid. The minerals with the highest to lowest contents, in that order, were K, Mg, Ca, Na, Fe, Zn, Cu, and Al. The mineral contents of the cold-air-dried peaches were higher than those of the infrared-dried peaches. The appearance and taste of the infrared-dried peaches were better than those of the cold-air-dried peaches. These results indicate that infrared drying is the effective drying method for the production of high-quality dried peaches.

Comparative Antioxidant Enzyme Activity of Diploid and Tetraploid Platycodon grandiflorum by Different Drying Methods

  • The antioxidant enzyme and DPPH radical scavenging activity with variations in drying methods of diploid and tetraploid in Platycodon grandiflorum were determined. Antioxidant enzyme activities were measured as superoxide dismutase (SOD), catalase (CAT), peroxidase (POX), and ascorbate peroxidase (APX). The roots of Platycodon grandiflorum were freeze-dried, indoor-dried, hot-air dried, and microwave dried. The root extract of P. grandiflorum have shown the highest SOD enzyme activity of 92% in tetraploid of freeze-dried and indoor-dried while diploid of microwave dried showed the lowest SOD enzyme activity of 47.5%. The activity of CAT showed higher values in the root of tetraploid than in the diploid of P. grandiflorum in all drying methods. The APX activity showed relatively higher values in the root extract of freeze-dried both the diploid and tetraploid, but the difference in comparison with other extracts was not significant. The POX activities according to drying methods of diploid and tetraploid in P. grandiflorum showed relatively high values in freeze-dried and indoor-dried compared with other drying methods, and the POX activity between the diploid and tetraploid was not significant difference in each drying method. The DPPH radical scavenging activity with variation in drying methods of diploid and tetraploid in P. grandiflorum was the highest in the freeze-dried, and was higher in tetraploid than diploid in all the concentrations. In conclusion, the root of P. grandiflorum had the potent biological activities in both diploid and tetraploid. In particular, the tetraploid root of P. grandiflorum showing high antioxidant enzyme activity could be good materials for development of source of functional healthy food.

Effects of Dried Green Tea Leaf Powder of Serum on Lipid Concentrations in Rats Fed High Fat (녹차 건분이 고지방식이 급여에 의한 흰쥐의 지질 농도에 미치는 영향)

  • The effects of dried green tea leaf powders on serum lipid concentrations were evaluated in rats. Sixty male Sprague-Dawley rats weighing $100{\pm}10g$ were divided into six groups and fed high fat diets for six weeks. Experimental groups were administered with following diets; Normal fat diet and normal and high fat diets with 1% dried green tealeaf powders. Tissue weights of liver, lung, stomach, heart, kidney and spleen of high fat diet exposed rats were reduced by dried green tea leaf powders groups. The concentrations of serum triglyceride in rats fed the dried green tea leaf powders were lower than those in other groups. The concentrations of total cholesterol in green tea leaf powders the were lower than those in high fat diet groups. The concentrations of HDL-cholesterol in serum of the dried leaf powders green tea were significantly higher than those of other groups. The levels of LDL-cholesterol in serum of the dried green tea leaf powders groups were tended to be lower than those of other groups. GPT and GOT were decreased in dried green tea leaf powders groups and than in the high fat group. LDHase was lower in the dried green tea leaf powders groups than in the high fat group. These results suggest that dried leaf powders green tea groups may reduce elevated levels of serum lipid concentrations in rats fed high fat diets.

Sulfites Contents Survey on Dried Marine Products in Market (시판 건 해산물 중 아황산염류 함량 조사)

  • This study was performed to investigate the contents of sulfites in 2, 770 dried marine products in Seoul Chung-Bu market from March to October in 1999. Sulfites of the samples were determined by Zn powder reduction method and Monnier-Williams's modified method. Eight samples of 2, 770 (0.29%) were detected over 30ppm in SO2 contents by Monnier-Williams's modified method. In samples detected over 30ppm, six dried filefishes(130.2~573.4ppm) were imported from Vietnam, same kind of other one(114.2ppm) was from China and the other one Alaska pollack(196.3ppm) was domestic. By Zn powder reduction method, 259 dried marine products (259/2, 770=9.35%) were positive reaction (1-30ppm). These were 93 dried shrimps, 53 filefish meats, 34 dried squids, 33 slices of dried pollacks and 17 sea mussel meats. So sulfites must be use commonly to prevent black spot and preserve for many dried shrimps, filefishes meats, dried squids etc. According to results, the quality test for the imported dried marine products must be reinforced to supply safety food for the citizens.

Sanitary Characterization of Commercial Boiled-dried Pacific Herring Clupea pallasi and Boiled-dried Anchovy Engraulis japonicus and Proposal of Quality Standards (시판 마른청어(Clupea pallasi) 및 마른멸치(Engraulis japonicus)의 위생 특성 비교 및 품질기준 제시)

  • The objective of this study was to estimate the food quality of commercial boiled-dried Pacific herring Clupea pallasi as a substitute for boiled-dried anchovy. Standards for controlling quality of boiled-dried Pacific herring were suggested based on international (US FDA and CODEX) and domestic (Korean FDA, Standards on Quality of Seafood and Seafood Products, KS) standards for boiled-dried anchovy. The standards included requirements for moisture [less than 30% (less than 35 in very tiny sizes)], water activity (less than 0.85), salinity (less than 10%), water-phase salt (less than 20%), acid-insoluble ash (less than 1.5%), yeast and mold (fewer than 1.0×103 CFU/g), and different size and breakage (less than 5%). Based on the standards suggested, commercial boiled-dried Pacific herring passed nine levels (all levels) in water activity, acid-insoluble ash, mold and yeast concentrations; seven levels (L-1, 2, 3, 4, M-1, 2, S) in water-phase salt, and three levels (L-1, 3, 4) in the ratio of different size and breakage categories. These results suggest that the quality of commercial boiled-dried Pacific herring is similar to that of commercial boiled-dried anchovy.

Effects of Freeze-Drying Time on Quality of Freeze-Dried Kimchi (동결건조 시간이 동결건조김치의 품질에 미치는 영향)

  • Effects of freeze-drying time on the microbiological, sensory, and other characteristics of freeze-dried kimchi were investigated to optimize freeze-drying time for kimchi. Quality attributes of freeze-dried kimchi, including number of lactic acid bacteria (LAB), pH, sensory properties, brittleness, rehydration property, moisture content, and microstructure of Chinese cabbage were observed for 24, 48 and 72 h, respectively. Number of LAB and pH of the kimchi freeze-dried for 24 h were significantly changed in comparison with those of the kimchi not freeze-dried. However, further freeze-drying did not change markedly number of LAB and pH. Overall acceptability of the sample freeze-dried for 48 of 72 h was better than that of the sample freeze-dried for 24 h. As freeze-drying time increased, brittleness of the dried sample increased, and rehydration property was improved while dried weight and moisture content of the sample decreased. In conclusion, the sample freeze-dried for 48 h was better than the sample freeze-dried for 24 or 72 h, based on sensory properties and other characteristics.

Quality Characteristics of Functional Dasik Prepared with Mixture of Freeze-dried Mealworm (Tenebrio molitor) Powder and Dried Pollack Powder (밀웜(Tenebrio molitor L.) 분말과 북어 분말을 혼합하여 제조한 기능성 다식의 품질평가)

  • This study was performed to evaluate the quality characteristics of functional Dasik prepared with a mixture of freeze-dried mealworm (Tenebrio molitor) powder and dried pollack powder along with assessment of the general and fatty acid compositions of mealworms. General compositions, except for moisture content of freeze-dried mealworm powder, were higher than those of raw mealworms. The ratios of saturated fatty acids and unsaturated fatty acids of freeze-dried mealworm powder and raw mealworms were 1:3.31 and 1:3.19, respectively. Amounts of oleic acid, which was the most abundant among unsaturated fatty acids, of freeze-dried mealworm powder and raw mealworms were 41.12 and 37.84%, respectively. For color values, greater content of freeze-dried mealworm powder in functional Dasik resulted in lower L and b scores, whereas a value increased. In the case of mechanical properties, greater content of freeze-dried mealworm powder resulted in significant reduction of hardness, chewiness, and gumminess. In the case of sensory evaluation, color, taste, and overall quality of DPMD50, which was prepared with a 1:1 ratio of freeze-dried mealworm powder and dried pollack, were the highest. It was concluded that DPMD50 is a nutritious combination of edible insects and fish for protein fortification for growth and the elderly.

The Effect of Hwangryunhaedoktang on the Toxicity of Dried Mylabris phalerata Extract (황련해독탕(黃蓮解毒湯)이 반묘(斑猫)의 독성에 미치는 영향)

  • Objectives : This study was carried out to investigate the anti-toxicity effect of Hwangryunhaedoktang on the dried Mylabris phalerata extract containing cantharidin in ICR mouse. Methods : Dried Mylabris phalerata extracts were orally administered at dosage level 2000, 1000, 500, 250 and 125mg/kg, respectively with and/or without administration of Hwangryunhaedoktang 200mg/kg. During 2 weeks, the changes of body weight, mortality, $LD_{50}$, macroscopic changes of gastrointestinal tract and liver, changes of serum gastrin and somatostatin levels were observed. Results : Decrease of body weight gains was observed in dried Mylabris phalerata extract-dosing groups, but it was significantly developed in Hwangryunhaedoktang extract-dosing groups after dosaging. Increase of mortality rates was observed in dried Mylabris phalerata extract-dosing groups, but it was significantly developed in Hwangryunhaedoktang extract-dosing groups after dosaging. The $LD_{50}$ of dried Mylabris phalerata extract in male mice significantly increased in a case of concomitant used of Hwangryunhaedoktang 268.86 vs 662.05mg/kg. Clinical signs were observed in dried Mylabris phalerata extract-dosing groups, but it was significantly developed in Hwangryunhaedoktang extract-dosing groups after dosaging after dosaging. Increase of number of hemorrhagic and/or erythematous spots in the gastrointestinal tracts, enlargement and congestion in the liver were observed in dried Mylabris phalerata extract-dosing groups, but it was significantly developed in Hwangryunhaedoktang extract-dosing groups after dosaging. Increase of serum gastrin level was observed in dried Mylarbis phalerata extract-dosing groups, these state of abnormal increase was significantly developed in Hwangryunhaedoktang extract-dosing groups after dosaging. Decrease of serum somatostatin level was observed in dried Mylabris phalerata extract-dosing groups, these state of abnormal decrease was significantly developed in Hwangryunhaedoktang extract-dosing groups after dosaging. Conclusions : We could conclude that the Hwangryunhaedoktang has anti-toxicity effect on the dried Mylabris phalerata extract containing cantharidin.

Effects of Drying Methods on Anthocyanin Contents of Colored Barley (Hordeum vulgare L.) cv. Boanchalbori

  • This study investigated the effects of drying methods and drying time on the changes in anthocyanin content in colored barley. Colored barley cultivar Boanchalbori was harvested at a time when the anthocyanin content was the most and dried in afield. The harvested barley was then treated by two methods, sun drying and shade drying, for 4, 8, 24, and 32 h. The moisture content of the sun-dried barley decreased slightly faster than shade-dried samples, but the difference was not statistically significant. Chemical analysis indicated that the samples dried under shaded conditions had slightly higher crude fiber and lower nitrogen free extract, but the difference was not statistically significant. There was no difference in the total digestible nutrients between the two methods. In the case of sun-dried barley, the anthocyanin content decreased compared to the control and shade-dried samples after drying for 4 h (p < 0.05), was maintained at a constant level at 24 h, and then decreased at 32 h. In case of shade-dried barley, the anthocyanin content decreased gradually with the drying time, and a significant decrease was found at 24 h of drying (p<0.05) as compared to the control. The shade-dried method was more successful in reducing anthocyanin loss than the sun-dried method (p<0.05). There was a slight decrease in 1,1-Diphenyl-2-Picrylhydrazyl radical scavenging with drying time in the shade-dried method, and a significant decrease after 4 h with the sun-dried method. These results showed that covering with a two-layer awning was advantageous to dry colored barley in the field conditions.
