Comparative Analysis of the Physicochemical Properties of Sun-dried and Natural Cyclic Freeze-Thaw Dried Alaska Pollack

  • The physicochemical properties of sun-dried and cyclic freeze-thaw dried Alaska pollack were analyzed to compare the 2 drying processes. The moisture content and water activity of sun-dried Alaska pollack were higher than cyclic freeze-thaw dried and 1 year-aged cyclic freeze-thaw dried Alaska pollack (hwangtae). The relatively low temperatures used in cyclic freeze-thaw drying retards lipid oxidation compared to sun drying based on the acid and peroxide values, and the levels of thiobarbituric acid-reactive substances (TBARS) in the dried fish. The water holding capacity of cyclic freeze-thaw dried Alaska pollack aged for 1 year (hwangtae) under ambient conditions at the drying location was higher than that of sun-dried Alaska pollack. The swelling of myofibrilar filaments during cyclic freeze-thaw drying may be responsible for the softening of the dried muscle protein. Aging the cyclic freeze-thaw dried Alaska pollack for 1 year contributed to an increased yellowish color of the hwangtae.

건어물 저장 중 미생물 증식상태에 관한 연구 (Microbial Growth in Dried Fishes During Preservation)

  • 전통조리식품에 널리 이용되어 왔고 현재에도 한국인의 식생활에 있어서 중요한 건어물로 알려진 건명태, 건오징어, 뱅어포, 건멸치와 건대구에 대한 저장성 향상을 위하여 각 시료를 접합 polyethlene 주머니로 함기 포장하고 그동안 많은 연구 결과 공인된 적정선량인 7kGy의 감마선을 조사한 뒤 비조사 시료와 함께 12개월간 저장하면서 미생물의 증식상태를 실험하였따. 저장초기에 비조사 시료는 g당 전호기성 세균의 오염도가 건명태 $3.9{\times}10^{3}$, 건오징어채 $5.6{\times}10^{5}$, 뱅어포 $1.2{\times}10^{5}$, 건멸치 $1.2{\times}10^{4}$, 건대구가 $1.2{\times}10^{4}$마리가 검출되었으나 7kGy의 방사선 조사로서 멸균되었거나 1~3 log cycle 감소되었고 저장기간 중 증식되지 않았다. 비조사 시료의 곰팡이 오염도는 건명태가 g당 $4.0{\times}10^{2}$, 건오징어채 $1.3{\times}10^{5}$, 뱅어포 $2.5{\times}10^{5}$, 건멸치 90, 건대구가 $1.2{\times}10^{2}$마리였으며 방사선 조사시료는 전부 멸균되었고, 비조사 시료의 저장기간 중 생육도는 모든 시료에서 감소하는 경향이었다. 비조사 시료에 있어서 효모 오염도는 건명태가 g당 $1.4{\times}10^{3}$, 건오징어채 75, 뱅어포 $1.1{\times}10^{3}$, 건멸치 50, 건대구가 $1.6{\times}10^{2}$마리였으며 7kGy 조사로 모든 시료의 효모는 멸균되었다. 저장기간 중 효모의 증식상태는 건명태와 뱅어포는 감소하는 경향이었으나 건오징어채, 건멸치, 건대구에서는 증가하였으며 특히 건오징어채에서는 현저하게 증식하였다. 방사선 조사로서 모든 시료의 대장균군은 저장기간중 건 멸치는 현저하게 증식되었으나 기타 시료는 저장 중 감소하는 경향이므로 대중균군의 오염도는 크게 문제가 되지 않는 것으로 생각된다.

냉동 동결 건조 머큐베리 분말 첨가 파운드케이크의 항산화 활성과 품질 특성 (Antioxidant Activity and Properties Characteristics of Pound Cakes Prepare using Freeze Dried Maquiberry (Aristotelia chilensis [Mol.]) Powder)

  • A study was undertaken to examine the effect of adding freeze dried maquiberry powder on the quality of pound cakes. Freeze dried maquiberry was added to the flour at a ratio of 0.5, 1, 1.5 and 2.5%. The antioxidant activity was estimated by DPPH free radical scavenging activity, the total phenolic compounds content, and flavonoid content in freeze dried maquiberry powder of pounds cakes. Antioxidative activity was highly correlated with the total phenolic and total flavonoids contents of freeze dried maquiberry powder of pound cakes (r=0.9126, p<0.001, r=0.8366, p<0.001, respectively). The quality characteristics of freeze dried maquiberry powder of poundcakes were estimated. The specific volume decreased significantly with increased substitution level of freeze dried maquiberry powder (p<0.01). The lightness significantly decreased with increased freeze-dried maquiberry powder of pound cake crust and crumb (p<0.01, p<0.01). The hardness and adhesiveness increased, while gumminess tended to reduce with increased maquiberry powder. The consumer acceptability score of 0.5~2.5% freeze dried maquiberry powder of pound cakes ranked significantly (p<0.01) higher than those of the other groups in overall preference. These results showed that freeze dried maquiberry powder is a good ingredient to increase consumer acceptability and health.

수입식품의 품질조사연구원(1) -중국산을 중심으로- (A Study on the Quality Evaluation of Imported Processed Foods(1)- With Special Reference to Chinese Products-)

  • The purpose of present paper is to compare and analyze the quality of imported Chinese products with the Korean local products in terms of proximate composition, character of external appearance , ingredient composition of dried bracken , dried radish cubers, meju , dried pollack, dried mussel , and dried brown seaweed(Undaria puinnatidifida) which were imported between Oct., and Dec. 1992 and distributed in the market. Moisture recovery of dried products resulted in changed shape and incomplete moisture recovery due to an excessive drying in consideration of hygroscopic property in the course of distribution. The amounts of water soluble brown pigment were two times greater in Korean dried pollack and bracken than those of Chinese products. The content of volatile basic nitrogen (VBN) were twice in Chinese dried pollack, and this may be due to foregin odor from a long transport time and distribution process. The contents of aflatoxin in Korean products were not detectable and these of Chinese products were 5 $\mu\textrm{g}$(%) in dried pollack, bracken and radish cuber. the remaining agricultural chemicals were not detectable in all products. Because of poor technique and facilities, the external appearance of Chinese products especially dried mussels and dried pollack were not uniformed in size and color. Discoloration and foregin substance such as hair, dust were checked , Korean products were mostly packed in small size in PP or bag, and Chinese products were packed in bulk size and distributed as a bulk.

전통 밑반찬의 인지도와 이용실태에 관한 조사연구 (II) -마른반찬 및 자반류- (A Study on the Knowledge and Utilization of Korea Traditional Basic Side Dishes (II) -Dried Side Dishes and Jabans-)

  • This study was undertaken to investigate the knowledge and the use of Korean traditional basic side dishes, dried side dishes and Jabans, by housewives. Among the 59 kinds dried side dishes and Jabans, the most well-known food (above 90% of subjects) turned out to be squid Po (dried strip), kong Jaban (seasoned bean), pollack Po, dried yellow croacker, build -dried anchovy Jaban and laver Boogag in the order. In cooking experience of dried side dish and Jaban, over 40% of subjects for build-dried anchovy Jaban, squid Po, dried yellow croacker and kong Jaban have cooked frequently. The proportion of subjects who has bought the marketed dried side dishes and Jaban products was 61.5%. Major problem of that products was pointed out for a sanitary condition and high price. If marketed dried basic side dishes and Jabans were improved over the aspects, the proportion of subjects who would buy the products was 70.0%. Preparation ability of these basic side dishes was influenced by age and educational level. The working housewives had higher frequency in use than the non-job housewives. The interesting degree for basic side dishes was not significantly different from age, resident area and educational level.

건조방법에 따른 고사리와 취나물의 이화학적 및 관능적 특성 (Physicochemical characteristics and sensory evaluation of bracken (Pteridium aquilinum) and Aster scaber dried by different methods)

  • 본 연구에서는 건조방법을 달리하여 수화복원 전후 건조된 고사리와 취나물의 이화학적 및 관능적 특성을 조사하였다. 수분함량에서 동결건조 된 취나물이 천일건조와 열풍건조 된 취나물보다 낮은 값을 나타내었으며, 수화복원력은 동결건조 된 고사리와 취나물이 천일건조와 열풍건조 된 고사리와 취나물보다 모두 높은 복원력을 나타내었다. 색도 $L^*$값에서는 동결건조 된 고사리와 취나물이 천일건조와 열풍건조 된 취나물보다 유의적으로 높은 값을 나타내었으며, 반면에 동결건조 된 취나물의 경우 가장 낮은 $a^*$값을 나타내었다. $b^*$값에서는 동결건조 된 고사리와 취나물이 모두 높은 값을 나타내었다. 수화복원 된 고사리와 취나물의 색도에서는 동결건조 된 고사리의 $L^*$, $a^*$$b^*$값이 높은 값을 나타내었고, 취나물의 경우 $L^*$$b^*$값이 높은 값을 나타내었으며, $a^*$값은 가장 낮게 나타내었다. 관능평가에서는 수화복원 전 후 동결 건조된 고사리와 취나물의 색, 향, 외관 및 전체적인 기호도에서 천일건조와 열풍 건조된 고사리와 취나물보다 모두 유의적으로 높은 값을 나타내었으나, 결론적으로 동결건조 고사리와 취나물이 열풍건조와 천일 건조된 고사리와 취나물 보다 수화복원력이 가장 빠르고, 나물의 고유 색상을 유지하며 또한 관능적으로도 아주 우수한 것으로 보아 만약 상품화한다면 비록 가격은 비싸지만 바쁜 현대인들을 대상으로 빨리 섭취 할 수 있는 간편식 제품으로 이용 가능할 것으로 사료된다.

학교급식에서 제공되는 건포류 조리식품의 미생물적 품질평가 (Assessment of Microbiological Quality of Cooked Dried-Seafoods in School Foodservice Operations)

  • This study was aimed to provide safety management guidance by evaluating the microbial quality of cooked dried-seafoods in school foodservice operations. Nineteen seafood items were collected from six elementary schools, those were dried-anchovy, dried-seaweed and dried-fish, which were classified as cooking process. The temperatures at receiving and after cooking were measured and the analyses of cooking processes and microbial quality were performed. The temperatures of all foods after cooking were higher than the temperature limit of $74\^circC$. The number of total aerobic bacteria and S. aureus in dried-anchovy over the limit of $10^5$ and even the level of S. aureus was found to be unsatisfactory. The count of total aerobic bacteria was 2.1x$10^8$ CFU/g and the number of total aerobic bacteria after cooking was over the limit in one school. The level of E. coli (3.1x$10^3$ CFU/g) was over the limit at one school and the number of S. aureus (1.2×$10^4$ CFU/g) was considered as unacceptable. Dried- tangle and green laver were contaminated with total aerobic bacteria showing the over the limit. The numbers of total aerobic bacteria in dried- filefish, pollack and squid were 4.3x$10^6$, 3.4x$10^6$-3.9x$10^7$ and 4.6x$10^5$-4.1x$10^7$ CFU/g, respectively, which were in acceptable or unsatisfactory level. The E. coli in dried- filefish and pollack were over the limit. The total aerobic bacteria levels, 4.6x$10^5$-1.5x$10^6$ CFU/g in dried-pollack and 8.0x$10^5$-2.2x$10^7$ CFU/g in dried-squid, were over the limit after cooking except dried-filefish. The E. coli levels, 4.3x$10^3$ CFU/g in dried-filefish and 2.5x$10^2$ CFU/g in dried-pollack, were over the limit of $10^2$ CFU/g. The numbers of Enterobacteriaceae were either acceptable (3.3x$10^3$ CFU/g) or unsatisfactory (1.6x$10^4$ CFU/g) level in dried-pollack. S. aureus was unsatisfactory level (6.5x$10^4$ CFU/g) in dried-filefish while unacceptable in dried-pollack both before and after cooking. Unacceptable levels of S. aureus, 2.4x$10^4$ and 1.3x$10^5$ CFU/g were found from two schools, respectively. These results suggest that the contamination of raw materials and the seasonings added after cooking should be controlled to manage the microbial safety of cooked dried-seafoods.

건조방법에 따른 우육포의 유리아미노산 및 Dipeptide 함량, 물성 및 관능 특성 비교 (Comparison of Free Amino Acids and Dipeptide Contents, Warner-Bratzler Shear Force and Sensory Property of Beef Jerky Manufactured with Different Drying Methods)

  • 육포 제조시 건조방법을 양건, 음건 및 열풍건조방법으로 하여 제조하였을 때의 맛과 관련된 유리아미노산, dipeptide, 지방산 조성의 차이 및 색상, 조직감 및 관능적 차이를 분석하여 정미성분에 따른 최적의 건조 조건을 검토하였다. 양건한 육포에서의 총 유리아미노산 함량은 277.45 mg/100 g이었으며 음건은 206.43 mg/100 g, 열풍건조의 경우, 111.88 mg/100 g으로 건조 방법에 따라 유리 아미노산의 함량 차이가 많았으며 양건에 의한 건조가 가장 많은 유리아미노산을 함유하는 것으로 나타났다. 분석한 dipeptide의 총 함량은 음건이 2,904.73 mg/100 g으로 가장 많은 함량을 함유하고 있었으며 그 다음으로는 양건, 열풍건조의 순이었으나 열풍건조의 경우, 양건 및 음건한 육포에서의 함량과는 큰 차이를 보이는 것으로 나타났다. 지방산 조성의 경우, 세 건조방법 모두 유사한 지방산 조성으로 구성되어 있었다. 색도의 경우, 명도는 열풍건조시 감소하였고 적색도에서는 양건이 높은 값을 보였으며 황색도에서는 음건한 육포에서 낮은 값을 나타내었다. 조직감에서는 열풍건조 제품보다 양건과 음건에서 낮은 전단력을 보이는 것으로 나타났다. 관능검사 결과, 열풍건조한 육포가 가장 낮은 기호도를 보였고 양건과 음건한 육포는 유의적인 차이를 보이지 않는 것으로 나타났다. 따라서 육포 제조시 이화학적 품질 특성이 우수한 제품을 제조하기 위해서는 양건 또는 음건하는 것이 바람직할 것으로 판단되었다.

명태건조방법에 따른 갈변화 관련 물질의 변화 (Effects of Different Drying Methods on Fatty Acids, Free Amino Acids, and Browning of Dried Alaska Pollack)

  • 건조된 명태들은 전반적으로 다가불포화지방산이 감소하고 단일불포화지방산은 증가하는 경향을 보였다. 특히 주기적인 자연냉동과 해동을 반복하면서 건조된 명태(미숙성황태)를 장기간 숙성하여 완성한 황태의 지방산 조성은 북어나 미숙성황태와 비교해 볼 때, 원료시료(명태)간의 차이를 감안하더라도 특징적인 차이를 보였다. 총 유리아미노산 함량도 황태가 북어나 미숙성황태보다 낮게 나타나 불포화지방산과 유리아미노산의 반응에 의한 점진적인 갈변화 현상을 설명해 주는 것으로 판단된다. 황태의 수용성 갈변물질은 주로 숙성단계에서 많이 형성되는 것으로 추정되었다.

Preparation and Quality of Dried Yam Chip Snack Coated with Ascorbic Acid Cocrystallized Sucrose

  • The specific objectives of this study were to dry yam chips using microwave vacuum drying, freeze drying and hot air drying, then to coat the dried yam chips with ascorbic acid cocrystallized sucrose, and finally to compare the quality of yam chip snack foods with respect to drying and coating characteristics. The microwave vacuum dried sample showed the highest drying rates and much less surface damage than the hot air dried one did. The shape and color of the microwave vacuum dried/coated sample were allocated between those of the freeze dried/coated sample and the hot air dried/coated sample. The freeze dried/coated sample scored excessively low in organoleptic hardness and chewiness to be suitable as a snack. The hot air dried/coated sample was too deep in color, wrinkled, excessively high in organoleptic hardness and chewiness, and excessively low in mouthfeeling. Therefore, the microwave vacuum dried/coated sample presented the best overall attributes as a snack, with respect to organoleptic characteristics, shape, color, and drying rates.
