The purpose of the study is to investigate the factors affecting the quality life of oral health according to the knowledge and behavior related with oral health and childcare teachers. Total 205 childcare teacher who working in Busan participated in this survey. The knowledge on oral health has an effects on oral health practice with ${\gamma}$=.155 and t=2.539 but this doesn't show meaningful effects on dietary pattern. Oral health is not affected by oral health practice with ${\beta}$=-.001, t=-.008 but dietary patterm has an effects on oral health impact profile with ${\beta}$=.172, t=2.560. Oral health impact profile show meaningful effects on total health index with ${\beta}$=.582, t=10.275. The results show that the oral health program for childcare teacher should be developed to prevent oral disease and oral health impact profile should be improved for not only childcare teachers but also children.
Purpose: This study investigated the eating behaviors of Chinese children using the Nutrition Quotient for Children (NQ-C). Methods: The research subjects were 336 students (166 boys and 170 girls) in the 5th and 6th years at two elementary schools in Shandong Province and Jiangsu Province. Results: The average score of the Children's NQ was good, reaching 69.6 points. The factor scores for balance, moderation, diversity, regularity, and practice were 58.8, 84.9, 63.6, 76.1, and 73.6 points, respectively. Compared with the diagnostic cut-off points of the factors, mean balance, moderation, regularity, and practice scores were above the cut-off points, but diversity score did not meet the cut-off points. Fathers' education level showed positive correlation with the balance, regularity, and NQ scores of the students. Mothers' education level also showed positive correlation with the balance and regularity scores and mother's employment showed positive correlation with regularity score. As the exercise hours per day increased, the NQ score also increased. Conclusion: The questionnaire of NQ-C developed in Korea can be used in assessment of nutrition behavior of Chinese elementary students who have similar eating patterns.
To supply basic data for systemic nutrition education, perception of nutrition education and nutrition knowledge was investigated in elementary school students (4~6th grade) in Chungnam province. Forty-six percent of students had a normal level of interest in nutrition, and 43.8% of students had a normal level of nutrition knowledge. Male students (56.1%) and female students (43.7%) wanted nutrition education via lectures in class (p<0.001), with a significant difference based on gender. In addition, most students wanted 'cooking' as nutrition education content, with a significant difference based on gender (p<0.001). Approximately 59% of students (boys 53.7% and girls 64.6%) responded that the reason not to practice the contents of nutrition education is 'not interested' (male 44%, female 34.1%) (p<0.05). For necessity of nutrition education, 38.1% of subjects answered 'normal', and 42.8% of students responded that nutrition education is not helpful since there is no interest. On the contrary, necessity of nutrition education was recognized by 30.8% of male students and 30.8% of female students for prevention of obesity and health life with a balanced diet, respectively. Students (66%) wanted a nutrition teacher, and 33.2% of male students wanted nutrition education once a month, whereas 34.5% of female students wanted it once a week (p<0.01). And 54.8% of students responded that current frequency of nutrition education is adequate. The average score of nutrition knowledge for female students was higher than that of male students, and a higher grade received a higher score of nutrition knowledge. The level of nutrition knowledge was not relevant to the actual score of the individual. Based on this result, it is necessary to activate and expand nutrition education in elementary schools to emphasize the importance of nutrition education. Additionally, future nutrition education should be more available to practice in life as well as improvement of nutrition knowledge. Investigation into nutrition knowledge according to gender and grade is necessary for continuous and systemic nutrition education.
This paper focused on providing the groundwork for the development of proper nursing interventions to enhance the quality of life for the elderly by identifying the factors that may affect their health beliefs and behaviors. A survey was conducted on a group of people aged between 60 and 86 years residing in S and K cities from January to March of 2003, who agreed to participate in the research. Data was collected using instruments measuring health beliefs and health behaviors, and was analyzed by using SPSS. The results of this study are as follow. 1) Those in the group were aged between60 and 86 years, and the average age was 66.94 years old. Most of them were living together with their spouses. From the survey, 83.5% replied "above average" on the question regarding their current health condition, whereas, 46.0% mentioned that they had some sort of diseases. 2) Overall average score of the health belief was 516.05, with a mean $3.71{\pm}4.07$. This indicates that the studied group held a high level of health belief, which affects their attitude and intention to lead a healthy life by placing the present life under control in harmony with nature. 3) Overall average score of the health behaviors was 392.24 with a mean $2.82{\pm}.52$. For health purposes, the behaviors that the elderly people were taking were mostly static ones requiring a low level of activity. The analysis showed that they generally were involved in self-trained, individualized health care. Thus, the elderly place a higher priority on regular dietary behaviors than on physical activity. 4) The correlation between health belief, a cognitive aspect on health, and health behaviors, a behavioral aspect showed a very high linear relationship (r=.520, p<.000). Consequently, it is found that those who have higher cognitive health belief are involved in higher level of behavioral health practice. These findings concluded that the Korean elderly have good health beliefs, well controlling their minds and being harmonious with nature. Health behaviors that they are engaged in are mostly static, requiring low level activity, while they place higher priority on regular dietary habits and conducting self-trained individualized health care. Important factor affecting their health beliefs and health behaviors was found to be their health practice. Since higher health belief is highly related with good health behaviors, development of health activity programs is in need as a means for an efficient health improvement, where motivating environment may be established to enhance the health belief of the elderly and to satisfy individual values.
Weight reduction behavior is common among adolescent girls. The present study examined the status of weight reduction behavior and factors affecting the behavioral intention of weight reduction using the Health Belief Model (HBM) for female middle school students by weight category. Survey data was collected from three girl's middle schools in Gyeongju, Korea. A total of 299 female middle school students participated in this study. The questionnaire had questions about general characteristics, weight reduction behavior, and variables of HBM (perceived threat, perceived benefits, perceived barriers, cues to action, self-efficacy in dietary life and exercise, and behavioral intention of weight reduction). Descriptive statistics, Chi-square tests, ANOVA, and multiple regression analysis were applied to analyze the variables. A higher percentage of students in the overweight group attempted weight reduction than those in the underweight and the normal weight groups (P < 0.001). Among students who had attempted weight reduction, 73% tried diet therapy, while 78% tried exercise. Students in the normal and overweight groups showed significantly higher threat (P < 0.01) and cues to action (P < 0.001) than those in the underweight group. As for perceived benefits, barriers, and self-efficacy in dietary life and exercise, there were no significant differences among weight groups. Students in the overweight group showed the strongest intention of weight reduction and there were significant differences among the three weight groups (P < 0.001). Perceive threat (P < 0.01), cues to action (P < 0.001), and perceived self-efficacy (P < 0.01) were significantly associated to behavioral intention of weight reduction for all respondents. For the underweight group, perceived threat (P < 0.05) and perceived self-efficacy (P < 0.01) were the significant variables. For the overweight group, cue to action was the significant variable (P < 0.05).
This study was peformed to evaluate the served menu and investigate the management of food service in Korean Buddhist temples. Among the available temples in the nation, 34 temples were carefully selected considering practice type, location and the gender characteristics. A survey about meal preparation and management was conducted to the cooking staff in each the temple using questionnaire by interview between Jan 2004 and Aug 2004. The menus over A five consecutive days menu was were also collected for analysis to analyse. Civilian cooking staffs were preparing meals in 23(67.6%) of the temples and the proportion 18(52.9%) of the temples were planning their own the menus was 52.9%. Most kitchens in the temples were equipped with modernized kitchen appliances. The major food supply was the conventional market Even though the majority of the temples were using processed food, Korean fermented sauces as the most traditional temple food products were prepared by themselves. There were 114 menu patterns and the most frequently served meal pattern was ${\ulcorner}Rice+Soup+Kimchi+3{\sim}4\;side\;dishes{\lrcorner}$. Analyzing from the cultural characteristics point of view, the most frequently served dish type was 'Korean'(90%), while other types were 'modified Korean'(3.7%) and 'Western'(2.7%). The varieties of Various 438 different dishes provided were 438 provided and with Kimchies (19.8%), Seasoned vegetables(16.8%) and Rice(11.0%) being the highest were high in frequency when dishes were categorized into dish classes. BACKGROUND/OBJECTIVES: The main objective of this study was to evaluate the effects of a high cholesterol (HC) dietary challenge on cholesterol tissue accumulation, inflammation, adipocyte differentiation, and macrophage infiltration in guinea pigs. A second objective was to assess whether macronutrient manipulation would reverse these metabolic alterations. MATERIALS/METHODS: Male Hartley guinea pigs (10/group) were assigned to either low cholesterol (LC) (0.04g/100g) or high cholesterol (HC) (0.25g/100g) diets for six weeks. For the second experiment, 20 guinea pigs were fed the HC diet for six weeks and then assigned to either a low carbohydrate (CHO) diet (L-CHO) (10% energy from CHO) or a high CHO diet (H-CHO) (54% CHO) for an additional six weeks. RESULTS: Higher concentrations of total (P < 0.005) and free (P < 0.05) cholesterol were observed in both adipose tissue and aortas of guinea pigs fed the HC compared to those in the LC group. In addition, higher concentrations of pro-inflammatory cytokines in the adipose tissue (P < 0.005) and lower concentrations of anti-inflammatory interleukin (IL)-10 were observed in the HC group (P < 0.05) compared to the LC group. Of particular interest, adipocytes in the HC group were smaller in size (P < 0.05) and showed increased macrophage infiltration compared to the LC group. When compared to the H-CHO group, lower concentrations of cholesterol in both adipose and aortas as well as lower concentrations of inflammatory cytokines in adipose tissue were observed in the L-CHO group (P < 0.05). In addition, guinea pigs fed the L-CHO exhibited larger adipose cells and lower macrophage infiltration compared to the H-CHO group. CONCLUSIONS: The results of this study strongly suggest that HC induces metabolic dysregulation associated with inflammation in adipose tissue and that L-CHO is more effective than H-CHO in attenuating these detrimental effects.
BACKGROUND/OBJECTIVES: The type of sweet snack incorporated into an energy-restricted diet (ERD) may produce differential effects on metabolic improvements associated with body weight (BW) loss. This study compared effects of incorporating either twice daily energy-controlled dark chocolate snacks plus once daily sugar-free cocoa beverage (DC) to non-chocolate snacks plus sugar-free non-cocoa beverage (NC) into an ERD on BW loss and metabolic outcomes. MATERIALS/METHODS: In an 18-week randomized comparative trial, 60 overweight/obese premenopausal women were assigned to DC (n = 30) or NC group (n = 30). Dietary intake was measured at baseline and week 18, and BW, anthropometrics, blood pressure (BP) and serum glucose, insulin and lipid concentrations were measured at baseline, and weeks 6, 12 and 18. Data were analyzed using repeated measures ANOVA. RESULTS: Using intention-to-treat analysis, women in DC and NC groups reduced energy intake (both P < 0.001) and lost $4.4{\pm}0.6kg$ and $5.0{\pm}0.9kg$ (both P < 0.001), respectively. Both groups lowered systolic and diastolic BP [DC = 2.7 (P < 0.05), 2.7 (P < 0.01); NC = 3.4 (P < 0.01), 4.2 (P < 0.01) mmHg, respectively]. Glucose and insulin concentrations decreased by 0.72 mmol/L (P < 0.001) and 13.20 pmol/L (P < 0.01) in DC group and by 0.83 mmol/L (P < 0.001) and 13.20 pmol/L (P < 0.01), respectively, in NC group. Total cholesterol increased in NC group (P < 0.05), with no significant lipid changes in DC group. There were no significant differences in biomarker outcomes between groups. CONCLUSIONS: Overweight/obese premenopausal women following an 18-week ERD that included either DC or NC sweet snack and sugar-free beverage lost equivalent amounts of BW and improved BP measurements and glucose and insulin concentrations.
This study was conducted to evaluate the overall dietary habits and nutritional status of 294 elementary school students located in Gwangju using the NUTRILITE nutrition quotient (NQ). The NQ score of the subjects was 59.5 out of 100, which corresponds to the level requiring "monitoring". Compared to the 64.4 score of students in the 5th and 6th grades of six metropolitan cities, the scores of the present subjects were lower. The NQ components were 57.4 for balance factors, 52.4 for moderation factors, 55.0 for diversification factors, 57.6 for practice factors, and 80.1 for environmental factors. Regarding the characteristics according to the NQ level, the score (61.5 in 7 times/wk vs. 55.3 in 1-2 or none times/wk) tended to be higher in subjects who frequently eat with their families (p<0.001). In conclusion, nutrition education should be provided to students to increase the frequency of meals with their families, to develop a habit of exercising regularly, and reduce the consumption of ramen, cookies, and processed drinks that are frequently consumed. These results can be used as basic data to develop nutrition education programs to improve the dietary habits and nutritional status of students in Gwangju.
The purpose of this study was to figure out the characteristics of dietary habits and lifestyles related to the development of insulin resistance syndrome(IRS). The participants in this study were 595 adults with one or more abnormal data from a health examination and 215 normal adults. When IRS was defined as a condition in which the subjects have 2 or more abnormalities among obesity, hyperlipidemia, hypertension and hyperglycemia, the prevalence rate was 37.8%. We classified the 595 adults by the number of components of IRS components they had, the higher age and obesity index they had. Total cholesterol and glucose levels in the blood were also positively related to the number of IRS components. IRS subjects tended to practice less habitual drinking and more exercise and weight control. Coffee consumption and dining out frequency were also lower in the IRS group. An analysis of food habits by odds ratio indicated that total food score was better in the IRS group. However, it appeared that food habits such as \"frequent snacking\" and \"never rejecting offered foods\" need to be improved in IRS subjects. Other undesirable food habits were related to the consumption of eggs, dairy products, fried foods, garlic and onion. Dietary intake of Ca, Fe, riboflavin, Vit A, and energy were less than 75% of the Korean recommended allowance for more than half of the subjects. Nutrient intake was lower, Ca/P ratio from food intake was worse in the IRS group. Our results indicated that nutrition counseling for IRS need to be focused on balanced food intake to supply sufficient amount of each nutrient.nt of each nutrient.
