콩가루를 첨가한 고추장의 품질 특성에 관한 연구 (Quality Characteristics of Kochujang Prepared with Soy Powder)

  • To improve the sensory acceptability of Kochujang with added Meju powder, Kochujang was prepared with added raw soy powder and roasted soy powder were added instead of Meju powder. These Kochujang were fermented for 45 days at $25{\pm}3^{\circ}C$ and examined for changes in their physicochemical properties and sensory characteristics. Results were as follows. In the moisture content and acidity of Kochujang, the group with added Meju powder was the highest. There were no significant differences in the lightness (L value), although the group with added with Meju powder and raw soy powder were decreased in lightness over days of storage. For redness (a value), the group with added raw soy powder was the highest, and the group with added raw soy powder was decreased with increasing storage days. For yellowness (b value), the group with added roasted soy powder was the highest, and there was no significant difference over storage days. The reducing sugar content of Kochjang to which roasted soy powder was added was the highest, and the amino-nitrogen contents of Kochjang to which Meju powder was added was the highest In sensory evaluation, the Kochjang with added roasted soy powder had the best score in taste and overall acceptability. Therefore, these results suggest that roasted soy powder can be applied to Kochjang for enhanced sensory preference.

실크 세리신 단백질 가수분해물을 이용한 유기 칼슘제의 제조 및 칼슘 결핍 쥐에서의 생체 이용률 (Manufacturing of Calcium Binding Peptide using Sericin Hydrolysate and Its Bioavailability in Calcium Deficient Rat)

  • Silk sericin protein was hydrolyzed by seven proteolytic enzymes in order to examine the effectiveness of the hydrolysates in binding calcium. The amino acid nitrogen content of hydrolysates from Flavourzyme was higher than that for other enzymes, and its calcium binding capacity showed a dose-dependent increase. We examined the effects of calcium binding peptide from sericin hydolysates on the bioavailability of Ca-deficient rats. Three-week-old male rats were fed an Ca-deficient diet for three weeks. Rats were divided into four groups (DD: non-treated group on calcium deficient diet; DD+MC: milk-calcium treated group; DD+OC: organic calcium made using sericin hydolysates; and DD+IC: inorganic calcium ($CaCl_2$). After oral administration of calcium supplements for one week, the calcium content of the serum and liver were significantly higher in DD+OC ($101.7{\mu}g$/mL and $49.3{\mu}g$/mL) and DD+MC ($83.6{\mu}g$/mL and $42.8{\mu}g$/mL) than DD ($86.3{\mu}g$/mL and $43.4{\mu}g$/mL). The alkaline phosphatase (ALP) content in the treated groups was significantly lower than DD, but no significant difference among groups was shown. Aspartate aminotransferase (AST) levels did not show any significant difference between groups. Alanine aminotransferase (ALT) levels were significantly reduced compared to the DD group. In conclusion, binding calcium to peptides from sericin hydrolysates seems to improve its bioavailability, and to hasten the cure of calcium deficiency in experimental rats.

  • This study investigated the effects of dietary monobasic potassium phosphate (MKP) on the growth of the far eastern catfish Silurus asotus and four leafy vegetables in a hybrid biofloc technology aquaponic system. To an experimental diet containing 45% protein and 7% lipid, 1, 2, 3 or 4% MKP was added and was designated as MKP1, MKP2, MKP3, and MKP4, respectively. The optimum MKP levels were determined for the growth of fish and four leafy vegetables over 10 weeks. After the 10-week feeding trial, weight gain, feed efficiency, specific growth rate and protein efficiency ratio were higher in the fish groups fed MKP2 and MKP3 than in the other groups (P<0.05). The growth of the four leafy vegetables was also higher in the fish groups fed MKP2 and MKP3. Water quality [dissolved oxygen, pH, water temperature, electrical conductivity, turbidity, total ammonia nitrogen (TAN), $NO_2-N$, $NO_3-N$ and $PO_4-P$] was measured six times a week using a portable water quality meter and reagent measurements. The TAN (4.58-20.40 mg/L), $NO_3-N$ (24.12-52.40 mg/L) and $PO_4-P$ (20.38-48.48 mg/L) levels increased with time, while the $NO_2-N$ level remained below 0.1 mg/L throughout the study.

Comparison of energy and nutrient utilization in the aged laying hens with different eggshell strengths or different intensities of brown eggshell color

  • The current experiment was conducted to compare nutrient utilization in the aged laying hens with different eggshell strengths or different intensities of brown eggshell color. Two metabolic trials with 96-week-old Hy-Line Brown laying hens were conducted. Twelve hens with a strong eggshell strength (SES) and 12 hens with a weak eggshell strength (WES) were selected and used in the first experiment, whereas 12 hens with dark brown eggshells (DBE) and 12 hens with light brown eggshells (LBE) were selected and used in the second experiment. All hens were fed a common commercial layer diet. Diets included chromic oxide as an indigestible marker to determine the apparent total tract retention (ATTR) of the gross energy (GE), dry matter, acid-hydrolyzed ether extract, nitrogen, neutral detergent fiber, acid detergent fiber, ash, and minerals. The results indicate that the ATTR of Ca in the aged laying hens with SES (59.7%) was greater (p < 0.05) than in the aged laying hens with WES (48.6%). However, the ATTR of the GE and other nutrients was not different between the hens with SES or WES. There were no differences in the ATTR of GE and nutrients between the hens with DBE or LBE. In conclusion, aged laying hens with SES have a greater ability to utilize dietary Ca than those with WES, indicating that the extent of dietary Ca utilization determines the eggshell strength of aged laying hens. However, nutrient utilization in diets may have little impact on eggshell brown coloration in aged laying hens.

New roughage source of Pennisetum purpureum cv. Mahasarakham utilization for ruminants feeding under global climate change

  • Objective: As the climate changes, it influences ruminant's feed intake, nutrient digestibility, rumen methane production and emission. This experiment aimed to evaluate the effect of feeding Sweet grass (Pennisetum purpureum cv. Mahasarakham; SG) as a new source of good quality forage to improve feed utilization efficiency and to mitigate rumen methane production and emission. Methods: Four, growing crossbred of Holstein Friesian heifers, 14 months old, were arranged in a $4{\times}4$ Latin square design to receive four dietary treatments. Treatment 1 (T1) was rice straw (RS) fed on ad libitum with 1.0% body weight (BW) of concentrate (C) supplementation (RS/1.0C). Treatment 2 (T2) and treatment 3 (T3) were SG, fed on ad libitum with 1.0% and 0.5% BW of concentrate supplementation, respectively (SG/1.0C and SG/0.5C, respectively). Treatment 4 (T4) was total Sweet grass fed on ad libitum basis with non-concentrate supplementation (TSG). Results: The results revealed that roughage and total feed intake were increased with SG when compared to RS (p<0.01) while TSG was like RS/1.0C treatment. Digestibility of nutrients, nutrients intake, total volatile fatty acids (VFAs), rumen microorganisms were the highest and CH4 was the lowest in the heifers that received SG/1.0C (p<0.01). Total dry matter (DM) feed intake, digestibility and intake of nutrients, total VFAs, $NH_3-N$, bacterial and fungal population of animals receiving SG/0.5C were higher than those fed on RS/1.0C. Reducing of concentrate supplementation with SG as a roughage source increased $NH_3-N$, acetic acid, and fungal populations, but it decreased propionic acid and protozoal populations (p<0.05). However, ruminal pH and blood urea nitrogen were not affected by the dietary treatments (p>0.05). Conclusion: As the results, SG could be a good forage to improve rumen fermentation, decrease methane production and reduced the level of concentrate supplementation for growing ruminants in the tropics especially under global climate change.

Amino acid digestibility in diets containing copra meal with β-mannanase fed to growing pigs

  • Objective: The objective of this study was to estimate standardized ileal digestibility (SID) of amino acids (AA) in growing pigs fed diets containing increasing levels of copra meal (CM) with β-mannanase supplementation. Methods: Twenty barrows (initial body weight: 34.43±0.11 kg) surgically fitted with T-cannulas at the distal ileum were individually housed in metabolism crates. Pigs were allotted to 5 dietary treatments in a completely randomized design with 4 replicates per treatment. The dietary treatments were: i) NC, negative control, corn-soybean meal (SBM) based diet, ii) PC, positive control, basal diet + 0.10% β-mannanase supplementation (800 IU/kg), iii) CM6, PC diet with 6% CM supplementation, iv) CM12, PC diet with 12% CM supplementation, and v) CM18, PC diet with 18% CM supplementation. A nitrogen-free diet was used to estimate basal endogenous losses of AA for SID calculation. All experimental diets contained 0.5% chromic oxide as an indigestible marker. Each period consisted of a 4-d diet adaptation period and a 3-d ileal digesta collection period. Results: There were no differences in apparent ileal digestibility (AID) and SID of all AA between the NC and PC treatments except that the PC treatment had lower AID and SID of glycine than the NC treatment (p<0.05). There were linear decreases in AID and SID of lysine (p<0.05) and aspartic acid (p = 0.06; tendency) with increasing levels of CM in the diets with β-mannanase. Conclusion: The β-mannanase supplementation had no effect on AA digestibility in pigs fed the corn-SBM based diet but increasing levels of CM reduced SID of lysine and aspartic acid.

Effects of dietary supplementation with different fermented feeds on performance, nutrient digestibility, and serum biochemical indexes of fattening lambs

  • Objective: The effects of adding fermented feed to a pelleted total mixed ration (PTMR) on the growth performance of lambs remain unclear. The present study aimed to investigate the feed efficiency and productivity of lambs that were fed PTMR containing fermented soybean meal (FSM) or wheat bran (FWB). Methods: Sixty 90-d-old hybrid lambs were randomly allocated into 12 pens (5 lambs/pen) that were randomly assigned to 4 dietary treatments (3 pens/treatment) with PTMR (basal diet), 2% FSM, or Lactobacillus- or yeast-FWB (L-FWB or Y-FWB) addition in the basal diet. Results: The findings showed that lambs fed 2% FSM supplemented diet had enhanced (p<0.05) average daily gain (ADG) and carcass yield (p = 0.015), while they had a decreased (p = 0.006) feed conversion ratio compared to that of other three groups. Inclusion of FSM or FWB in PTMR improved (p<0.05) the nutrient digestibility, while it reduced the urea nitrogen content in serum compared to the PTMR group. Additionally, the decreased ratio of N excretion to ADG (p<0.01) was observed with FSM and L-FWB supplementation compared with the PTMR and Y-FWB groups. Conclusion: In conclusion, feeding the fermented feed-supplemented diet improved nutrient digestibility and growth performance, and 2% FSM-supplemented diet exhibited superior production-promoting efficiency to lambs.

Effect of dietary supplementation of Sargassum meal on laying performance and egg quality of Leghorn layers

  • Objective: Seaweeds could be an alternative and functional feed resource. The purpose of this experiment is to investigate the effect of dietary supplementation of Sargassum meal on laying performance and egg quality of layers. Methods: Two hundred 36-wk-old layers were divided into five treatment groups. Each treatment had four replicates with 10 hens per experimental unit. The corn-soybean meal basal diet was formulated as control group. Sargassum meals were included 0%, 1%, 2%, 3%, or 5% to diets for five treatment groups, respectively. Treatment groups were isocaloric-isonitrogenous diets. Laying performance and egg quality were measured for eight weeks. Results: Sargassum meal supplementation did not affect daily feed intake. Supplementation 1% to 3% of Sargassum meal in diets increased daily laying rate and egg mass compared with those from control group (p<0.05). Egg qualities among five groups were all similar. Supplementation of 3% Sargassum meal increased the lightness of egg yolk (p<0.05). Eggs produced from layers fed 1% and 2% Sargassum meal had a higher consumer's acceptability than the control group (p<0.05). In blood characteristics, contents of glucose, nitrogen, triiodothyronine (T3) and thyroxine (T4) increased as the increase of supplementation ratio of Sargassum meal (p<0.05). In serum antibody titers, supplementation of 2% Sargassum meal stimulated a higher immunoglobulin M (IgM) level than that from control group (p<0.05). However, IgM content of layers fed diets with Sargassum meal ≥3% were decreased (p<0.05). There was no difference in IgA and IgG titers among groups. Conclusion: Supplementation of 1% to 3% Sargassum meal has shown to increase egg laying rate and egg mass of Leghorn layers. However, high supplementation (5%) would negatively affect laying performance. In consideration of laying performance, egg quality, consumer responses, and blood antibody, supplementation of Sargassum meal was suggested 2% in the diet for layers.

Silymarin seed extract supplementation enhances the growth performance, meat quality, and nutrients digestibility, and reduces gas emission in broilers

  • Objective: A feeding trial was carried out to determine the effect of dietary inclusion of silymarin seed extract on growth performance, nutrient digestibility, excreta microbiota, excreta gas emission, blood profiles, and meat quality in broilers. Methods: A total of 1,088 one-day-old Ross 308 broiler chicks (mixed-sex) with an initial body weight of 42.34±0.82 g, were randomly allocated into 1 of 4 dietary treatments with 17 replicates of 16 chicks per cage and fed a basal diet supplemented with 0%, 0.02%, 0.04%, and 0.06% of silymarin. Results: The inclusion of silymarin supplementation linearly increased the body weight of broilers during days 7 to 21 and 1 to 35 days. On day 35, broilers fed a diet containing graded levels of silymarin supplementation linearly increased the nutrient digestibility of dry matter, gross energy, and nitrogen and cecal Lactobacillus counts (p = 0.038). While silymarin supplement linearly reduced the methyl mercaptans (p = 0.039) and acetic acid (p = 0.007) emission in broilers. No significant effects were observed on the blood profile. Relative weights of organs such as breast muscle, bursa of fabricius were increased (linear effect, p<0.05), water holding capacity was enhanced by increasing the silymarin level from 0% to 0.06%. A linear reduction (p>0.05) in drip loss from meat samples during days 1, 3, 5, and 7 by the addition of graded level of silymarin to the diet. Conclusion: An increasing level of silymarin supplementation to the diet of broiler would be beneficial to enhance growth performance, nutrient digestibility, excreta microflora, blood profile, and meat quality traits.

Effect of sodium stearoyl-2-lactylate (PROSOL®) supplementation on growth performance and nutrient digestibility in growing pigs

  • The aim of this study is to evaluate the effects of supplementation of low-energy diets with PROSOL® (sodium stearoyl-2-lactylate) as an emulsifier on the growth performance and nutrient digestibility of growing pigs. A total of 120 crossbred ([Landrace × Yorkshire] × Duroc) growing pigs with an average initial body weight of 23.80 ± 4.87 kg were used in a 56-day feeding trial and were sorted into three dietary treatments. Each treatment utilized eight replications with five pigs per pen. The dietary treatments were as follows: PC (high, net energy diet [NE] = 2,488 kcal·kg-1 [weeks 1 to 4] and NE = 2,477 kcal·kg-1 [weeks 5 to 8]); NC (low, NE = 2,472 kcal·kg-1 [weeks 1 to 4] and NE = 2,468 kcal·kg-1 [weeks 5 to 8]); NC1 (NC + 0.05% PROSOL® emulsifier). Growth performance outcomes were measured at the initial point and at weeks 4 and 8 while nutrient digestibility parameters were measured at weeks 4 and 8. From weeks 1 - 8, body weight and the average daily gain of the NC1 group pigs showed significant increases (p < 0.05) compared to those of the PC and NC treatment groups. At the end of the trail, pigs fed a diet containing low net energy with 0.05% of the emulsifier showed reduced feed conversion ratio (FCR) levels. However, the average daily feed intake and nutrient digestibility of dry matter and nitrogen remained unaffected throughout the experiment. In summary, the addition of a low-net-energy diet with 0.05% sodium stearoyl-2-lactylate as an emulsifier enhanced the body weight and daily gain with no adverse effects on nutrient digestibility in growing pigs.
