Xylooligo당이 고콜레스테를 식이 횐쥐에서 간조직 HMG-CoA Reductase 활성과 지질 초성에 미치는 영향 (Effects of Dietary Xylooligosaccharides on HMG-CoA Reductase Activity and Lipid Cmposition of Liver in Rat Fed High Cholesterol Diets)

  • 고콜레스테롤 식이 횐쥐에서 xylooligo당이 간장에서의 콜레스테롤대사에 미치는 영향을 관찰하였다. 실험동물은 100$\pm$10g의 Sprague-Dawley 횐쥐를 이용하여 정상 식이군과 1% 고콜레스테롤 실험군으로 나누고 다시 실험군은 1%의 고콜레스테롤 식이에 xylooligo당을 0%, 5%, 10% 및 15% 농도 첨가군(C, C5XO, C10XO 및 C15XO군)으로 나누어 4주간 자유섭식시킨 후 콜레스테롤 대사 개선효과를 알아보았다. 간조직중의 중성지방과 콜레스테롤함량은 정상군에 비해 C군에서는 각각 3.9배, 20배씩 증가되었으며 C군에 비해 C10XO군은 거의 절반으로 감소되었다. 간조직의 HMG-CoA reductase 활성은 정상군에 비해 C군은 45% 감소되었으나, xylooligo당 공급군에서는 정상군 수준이었다. 간조직중의 지방산 조성은 oleic acid( $C_{18:1}$)과 linoleic acid( $C_{18:2}$)은 정상군에 비해 C군에서 유의적(p<0.05)으로 증가되었고, ara chidonic acid( $C_{20:4}$)는 감소되었으나 xylooligo당 공급으로 증가되었다. 총포화지방산(SFA)은 정상군에 비해 고콜레스테롤 식이로 인해 감소되 었으나, xylooligo당 공급으로 정상화되었다. 고콜레스테롤군에서는 총 단일불포화지방산(MUFA)은 증가되었으나, xylooligo당 공급으로 감소되었다. 항혈전지수인 n-3/n-6 지방산 비는 정상군에 비해 C군에서 감소되었으나, xylooligo당 10% 공급군에서는 C군에 비해 유의적으로 증가하였다. 결론적으로 식이 xylooligo당은 고콜레스테롤 식이로 인한 고콜레스테롤 혈증이나 고지혈증의 위험인자인 콜레스테롤을 감소시킬 수 있는 콜레스테롤 대사 개선 기능이 우수하므로 기능성 식품 신소재나 식이섬유의 대용품으로도 활용될 수 있으리라 생각된다.다.

Effect of Perilla Oil Rich in $\alpha$-Linolenic Acid on Colon Tumor Incidence, Plasma Thromboxane B2 Level and Fatty Acid Profile of Colonic Mucosal Lipids in Chemical Carcinogen-Treated Rats

  • This study was designed to compare the effect of different dietary fats on the incidence of colorectal tumor, the level of plasma thromboxane B2(TXB2) and fatty acid profiles of platelet and colonic mucosal lipids in N - methyl - N - nitro - N - nitrosoguanidine(MNNG) - treated rats. Male Sprague Dawley rats, at 8 weeks old, were divided into 2 groups and infused intrarectally with saline(control group) or with 2mg MNNG(carcinogen-treated group) twice a week for 3 weeks. Each group was again divided into 4 groups and fed one of four diets(BT, CO, PO, FO) containing dietary fat at 9%(w/w) level for 37 weeks, Dietary fats were beef tallow(7.2%)+corn oil(1.8%) for BT, corn oil(9.0%) for CO, perilla oil(9.0%) for PO, fish oil (6.5%)+corn oil (2.5%) for FO diets. MNNG-treated rats had colonic tumor, while no tumors(adenocarcinoma and adenoma) than others. Tumor sizes in BT-MNNG rats ranged from 2mm papillary form to 15mm of polypoid. However, the size of tumors in PO-MNNG or FO-MNNG rats could not be measured by gross examination. BT-MNNG and CO-MNNG groups were higher in the level of plasma TXB2 and the ratio of c20 : 4/c20 :5 platelet. PO-MNNG groups were lower in the ratio of c20 : 4/c20 : 5(p<0.05) in fatty acid of colonic mucosal lipids suggesting that perilla oil and fish oil could reduce the level of PGE2 and TXB2 by modifying its precursor content and restrain tumor promotion in colon. Effect of perilla oil rich in $\alpha$-linolenic acid on colon carcinogenesis was similar to that of fish oil and thus perilla oil could have a protective effect against colon cancer possibly by inhibiting the production of arachidonic acid metabolite.

The Effects of Total Mixed Ration Feeding with High Roughage Content on Growth Performance, Carcass Characteristics, and Meat Quality of Hanwoo Steers

  • This study investigated the dietary effect of total mixed ration (TMR) based on high roughage content on the growth performance, carcass characteristics, and meat quality of Hanwoo steers. Twenty-four Hanwoo steers (average body weight, 195.3±4.7 kg; age, 8.5 mon) were randomly allocated to three experimental groups according to forage and concentrate ratio (DM basis): 25:75 (control), 50:50 (T50), and 70:30 (T70). Productivity in the fattening period and final body weight were significantly higher in the control. Average daily gain and feed conversion ratio were the same among treatments. Serum parameters, cholesterol, blood urea nitrogen, and total protein were higher in the control. Carcass weight was comparable in the control and T50 but feeding more roughage was significantly correlated with a higher intramuscular fat. Shear strength and drip loss were higher while n-6/n-3 was lower in T70 compared to the other groups. However, meat color was not significantly different among treatments. In terms of free amino acid contents, glutamic acid and glycine were higher in the control than T50 and T70. Overall, feeding Hanwoo steers with high forage content TMR had the lowest n-6/n-3 ratio of fatty acid content but highest intramuscular fat, shear strength, and drip loss. High forage content TMR is the best feed for Hanwoo steers that gives more benefits for human health and consumption but also provides the best meat grade and quality, which is important in the beef market in Korea.

30~50대 여성의 연령별 신체조성분과 식행동, 생활습관 관련 요인 연구 (Analysis of Body Composition, Dietary Behaviors and Life style of 30~50 year old Women Living in Seoul)

  • This study was carried out to investigate the distribution of body composition, and to analyze its relationship to dietary behaviors and life style. The study subjects were divided into 3 age groups; 30' years (n = 78) 40' years (n = 71) and 50' years (n = 44). The data was collected by physical measurement (Inbody 230) and questionnaires. The rate of disease and general characteristics were higher in the 50 year old group than in the other groups. Average amount of body water, protein, mineral and body fat were 29.0 kg (50.4%), 7.7 kg (13.4%), 2.8 kg (4.8%), 18.7 kg (31.5%), respectively. The rate of menopause was significantly different with increasing age. Menopause was 1.3%, 9.1%, 79.6% by age respectively. Body fat percent was significantly increased and body water decreased with age (p < 0.01). The fat composition was higher and the mineral content was lower in 50' year old group. Dietary behavior scores of 30' year old group was significant lower than in the other two groups (p < 0.001). The means of salty eating, skipping meals, fruit intake and food habits total point were significantly higher in the 50 year old group than in the other groups. There were significant positive correlations between age, BMI, waist hip ratio respectively (p < 0.01). There were significant negative correlations between age and body water, body mineral, skeletal muscle (p < 0.01, p < 0.05, p < 0.01). The results of this study suggested that nutritional management and education for adult women differ by age group.

Early Growth Response of Broilers to Dietary Lysine at Fixed Ratio to Crude Protein and Essential Amino Acids

  • The effects of dietary lysine (Lys) at a fixed ratio to crude protein (CP) and essential amino acids (EAA) on early growth response of broilers were studied. Four diets were formulated to contain similar metabolizable energy (ME, 2,950 kcal/kg) but contained graded levels of incremental Lys (1.1, 1.2, 1.3 and 1.4%) while also increasing the dietary CP and EAA (methionine, methionine+ cystine, threonine and tryptophan) to maintain a constant ratio with Lys. Each diet was fed at random to 10 replicates of 6 chicks each throughout the experimental period (1-21 d). At the lowest concentration of Lys of 1.1% (19.04% CP), body weight gain (BWG) was lowest and feed conversion ratio (FCR) was poorest. The BWG increased and FCR decreased linearly as dietary Lys increased upto 1.3% (22.5% CP). Lowest feed consumption was observed in the dietary group that contained 1.1% Lys (19.04% CP) in the diet. Increasing the concentration of Lys to 1.2% (20.77% CP), significantly increased the feed consumption. The concentrations of protein, calcium, phosphorus and cholesterol in serum were not influenced by the variation in Lys contents in the diet. The humoral immune response as measured by antibody titre in response to SRBC inoculation was significantly lower in the diets containing 1.1% Lys compared to 1.4%. It is concluded that the Lys requirement of broilers is 1.3% (22.5% CP) during 0 to 21 days of age for eliciting optimum performance when a fixed ratio of Lys to CP (1:17.31) and essential AA is maintained (1:0.47 Met; 1:0.56 Thr; 1:0.17 Try).

Utilization of Steam-treated Oil Palm Fronds in Growing Goats: 1. Supplementation with Dietary Urea

  • Five male dairy goats (Saanen), 4.6 month old with a body weight of 21.4 ($SD{\pm}1.6$) kg, were used to examine 5 dietary urea treatments in a $5{\times}5$ Latin Square experimental design. The five levels of urea were 10, 20, 30, 40 and 50 g urea/kg DM of steam-treated oil palm fronds (OPF) and dry matter intake tended (p>0.05) to increase with increasing urea supplementation up to 30 g/kg OPF (77.7 g/kg $BW^{0.75}$), but decreased (p<0.05) with 40 and 50 g urea/kg OPF (67.4 and 63.7 g/kg BW0.75, respectively) supplementation. Similarly, dry matter, organic matter, crude protein, neutral detergent fiber and hemicellulose digestibilities increased (p<0.05) with the addition of urea to 30 g/kg OPF but thereafter decreased (p<0.05) with 40 and 50 g/kg OPF. Ruminal pH, ruminal $NH_3$-N concentration and plasma urea concentration increased linearly (p<0.01) and quadratically (p<0.01) as a consequence of addition of urea to the diet. Excretion of total purine derivatives (PD) by goats fed 30 g of urea/kg OPF was highest (p<0.05) followed by goats fed 20, 40, 10 and 50 g of urea/kg OPF. Microbial N (g N/day) and efficiency of microbial N supply expressed as g N/kg organic matter apparently digested in the rumen were higher (p<0.05) in goats fed 30 g of urea/kg OPF (5.5 g N/day and 22.0 g N/kg DOMR, respectively) than in goats on 10 and 50 g of urea/kg OPF treatments. However, the former did not differ from goats fed 20 g of urea/kg OPF (3.9 g N/day and 16.6 g N/kg DMOR, respectively). Ruminal VFA concentration, protein/energy ratio, N absorption and N retention increased (p<0.05) with the addition of urea to the diet up to 30 g/kg OPF but decreased (p<0.05) with 40 and 50 g/kg OPF. This implies that the optimal level of urea supplementation in an OPF based diet was about 30 g urea/kg OPF.

Studies on Intake and Serum Concentrations of Fatty Acids in Korean Adolescents

  • In this study, we evaluated the dietary fatty-acid pattern and serum fatty-acid composition of middle school students (total, 355 ; male, 182 ; female, 173), who are vulnerable to excessive and unbalanced food intakes such as fatty acids and energy. In serum lipid levels, total Chol (p<0.05) and HDL-Chol (p<0.001) levels of female students were significantly higher than those of mal, students. The average fat intake was 23-26 energy % which falls in with the current recommendation level (15-25%) for adults. Although the average P/M/S ratio of dietary fat was 1.1/1.2/1.0 which approaches the recommended ratio, the average range of $\omega$6/$\omega$3 fatty acid ratio of dietary fat was found to be 12.0-16.5, which is higher than the presently recommended range of 4 -10. Some of the very high values found in this study were partly explained by the fact that the range of individual variation of $\omega$6/$\omega$3 ratios was very large. Mean daily intake of Chol was 357-361 mg. The n3 fatty acid intake of middle school students was higher in the LFHM (high fish low meat) group than in the LFHM (low fish high meat) group. EPA and DHA intakes appeared to be significantly higher (p<0.01) in the HFLM group than in the LFHM group as expected. Dietary total $\omega$3 fatty acids (p<0.05) and EPA (p<0.01) were also negatively associated with serum AA($\omega$6) levels. Interestingly, energy intakes and dietary SEAs such as 12 : 0 (p<0.05), 14 : 0 (p<0.01) and 16 : 0 (p<0.05) were negatively associated with serum AA ($\omega$6) levels. To lower the $\omega$6/$\omega$3 ratio of dietary fatty acids for children, frequent consumption of $\omega$3 series fatty-acid rich foods such as soy bean, bean products and fish is recommended. Detailed guidelines should be developed in recommending balanced food intake and qualitative fat intake for Korean adolescents taking heterogeneous groups into consideration. In accurately evaluating fatty acid intake, it is also necessary to have the fatty acid composition data of all foods consumed in each country.

사료의 영양수준에 따른 재래흑돼지의 산육능력 및 육질비교 (Effect of Nutritional Levels on the Growth and Meat Quality of Korean Native Black Pigs)

  • 본 연구는 재래흑돼지의 육질특성과 생산성 구명을 통해 소비 및 생산 활성화를 위한 기초자료로 활용할 목적으로 사료내 에너지(ME, kcal/kg)사이신(%)수준을 달리한 3처리구, 즉 상(H), 중(M), 하(L)로 나누어 사양시험을 한 후 성장 및 육질평가를 실시하였다. 본 연구결과, 사양시험기간 동안 재래흑돼지에 있어 에너지아이신 수준이 높을수록 일당증체량과 사료요구율이 향상되는 경향을 보이고 출하일령이 짧아지는 경향을 보였다(p<0.05). 도체성적의 경우 도체율, 등지방두께, 배최장근단면적, 살코기 생산량에서 처리구간에 유의적 차이를 보이지 않았으나(p>0.05), 거세돈이 암퇘지에 비해 등지방이 두꺼운 것으로 나타났다(p<0.05). 재래흑돼지 등심육의 일반조성분, 근내지방함량, 근절길이 및 근섬유 비율은 처리구별로 유의적 차이는 없었으나, 근내지방은 영양수준이 높은 H 처리구가 M, L 처리구보다 포화지방산은 높고, 불포화지방산은 낮게 나타났으며, n-3비율은 에너지/라이신 수준이 높아질수록 낮았으나, n-6/n-3 비율은 영양수준이 높아질수록 낮아지는 경향을 보였다. 근절길이 및 근섬유 비율도 유의적인 차이는 없었으나 영양수준이 증가됨에 따라 근절길이는 다소 증가하는 경향을 보였고, 적색근 비율은 L처리구가, 백색근 비율은 M 처리구가 각각 다른 처리구보다 높았다.

Fatty Acid Profiles of Supraspinatus, Longissimus lumborum and Semitendinosus Muscles and Serum in Kacang Goats Supplemented with Inorganic Selenium and Iodine

  • Fat and fatty acids in muscle and adipose tissues are among the major factors influencing meat quality particularly nutritional value and palatability. The present study was carried out to examine the effects of supplementing inorganic selenium (Se), iodine (I) and a combination of both on fatty acid compositions in serum, and supraspinatus (SS), longissimus lumborum (LL), and semitendinosus (ST) muscles in goats. Twenty-four, 7 to 8 months old, Kacang male goats with a mean live weight of $22.00{\pm}1.17kg$ were individually and randomly assigned into four groups of six animals each for 100 d of feeding prior to slaughter. The animals were offered the same concentrate (basal) diet as 1% of body weight with ad libitum amount of fresh guinea grass. The four groups were as follows: T1 (control) - basal diet without supplementation; T2 - basal diet with 0.6 mg Se/kg DM; T3 - basal diet with 0.6 mg I/kg DM; T4 - basal diet with combination of 0.6 mg Se/kg DM and 0.6 mg I/kg DM. The major fatty acids (FAs) detected in the serum were palmitic (C16:0), stearic (C18:0), oleic (C18:1n9) and linoleic (C18:2n-6), while the major FAs in the selected muscles were C16:0, C18:0 and C18:1n9 acids. The main polyunsaturated fatty acids (PUFA) detected in muscles and serum were (CI8:2n-6), linolenic acid (C18:3n-3), and arachidonic acid (C20:4n-6). No significant differences (p>0.05) were observed in the concentration of total saturated fatty acids (SFA) among the four groups. PUFA concentrations in the goats supplemented with Se (T2) were significantly higher (p<0.05) than the goats of the control group (T1). The PUFA: SFA ratio was significantly higher in the animals supplemented with dietary Se (T2) than those of control ones (T1). It is concluded that dietary supplementation of inorganic Se increased the unsaturated fatty acids in muscle. The supplementation of iodine with or without Se had negligible effects on muscle fatty acid content of Kacang crossbred male goats.

Determination of Optimal Dietary Sulfur Amino Acids Ratio Relative to Lysine for Growing Barrows and Gilts

  • This experiment was conducted to investigate the effects of dietary SAA (sulfur-containing amino acids) on growth performance, nutrient digestibility and blood urea nitrogen (BUN) content, and to determine the optimal SAA:lysine ratio for growing barrows and gilts. A total of 150 pigs (75 barrows and 75 gilts, Landrace${\times}$Yorkshire${\times}$Duroc) were assigned to 6 treatments with 5 replicates of 5 pigs per pen. All pigs were fed diets containing either 1.12 (for barrows) or 1.33% (for gilts) dietary lysine with increasing SAA levels (50, 55 and 60% of dietary lysine) in a $2{\times}3$ factorial design. Throughout the whole experimental period (15 to 54 kg body weight), there was no interaction between sexes and SAA:lysine ratios on ADG, ADFI and FCR. However, increasing the SAA:lysine ratio from 50 to 60% in a diet showed a trend to increase ADG and ADFI of barrows. None of differences in nutrient digestibilities except for calcium and phosphorus were observed and gilts showed higher digestibility of calcium and phosphorus (p<0.05). Among dietary SAA:lysine ratios, there were no differences in apparent nutrient digestibility. Mean values of the essential amino acids (EAA), non-essential amino acids (NEAA) and total amino acids (TAA) digestibilities were higher in gilts than barrows (p<0.01). However, no differences in mean value of EAA, NEAA and TAA digestibilities were observed among dietary SAA:lysine ratios. Between sexes and among SAA:lysine ratios, no significant difference in BUN concentration was observed. This study demonstrated that the optimal inclusion ratio of SAA:lysine was 55% and below 50% in barrows and gilts, respectively.
