A Comparison Study on Perception of Body Image and Dietary Habits of High School Students between Urban and Rural Areas (일부 도시와 농촌지역 고등학생의 체형에 대한 인식, 식습관 비교 연구)

  • The objective of this research was to study the differences between urban and rural areas high school students in body image and dietary habits. The number of subjects in Seoul and Kyungkido were 902. Based on self-reported height and weight, there was no significant difference between the urban and rural students. However, the rate of obesity was significantly higher in males, whereas the rate of underweight was significantly higher in females, especially for urban females (p < 0.05). Their ideal body image ratio as skinny or slender-type was 91.6% (urban) and 95.7% (rural) for male category while 100% (urban) and 99.4% (rural) for females. Urban females had a strong preference for a skinny body (p < 0.05). Rural students were more highly interested in weight control than urban students were, but they appeared not to care their health. In addition, they had significantly lower levels of weight control knowledge and dietary attitude score (p < 0.001). Subjective assessment of body weight appeared to be more important in terms of body satisfaction, weight control knowledge and dietary attitude than actual measurement of body mass index. Significant test revealed that weight control knowledge was related to dietary attitude (p < 0.01). (p < 0.01).

Bone Health-Related Nutritional Knowledge and its Association with Calcium-Related Dietary Behaviors and Nutrition Education of Women in their 20s and 30s (경기지역 20~30대 여성의 골 건강 관련 영양지식 수준과 칼슘 섭취 관련 식행동 및 영양교육과의 연관성)

  • Osteoporosis is a major health problem confronting middle-aged women today. Enhancing calcium intake in early adulthood can increase the rate of calcium gain in bone. In this study, we investigated the association of bone health-related nutritional knowledge levels with calcium-related dietary behavior and nutrition education among women. Data were collected using questionnaires from 347 women aged 20~30 residing in Gyeonggi-do. Subjects were categorized into two groups according to their bone health-related nutritional knowledge (high or low-knowledge group). Knowledge related to bone health and calcium, and dietary habits was assessed, and the preference for and intake frequency of calcium-rich food were collected and analyzed using food frequency questionnaires. The high-knowledge group showed a significantly higher rate of nutritional education experience (33.9%) when compared with the low-knowledge group (18.9%). Not only were the perceptions regarding milk and dairy products more positive in the high-knowledge group (P<0.05), but the intake frequency of calcium-rich foods, such as tofu, soybean, and anchovies, was also higher in this group compared to the low-knowledge group (P<0.05). Overall, the preference for all calcium-rich foods was positively correlated to their intake frequency (P<0.05). Nutrition education experience and the recognition of the need for such education were positively correlated with the bone health-related nutrition knowledge score (P<0.05). In conclusion, bone health-related nutritional knowledge can affect calcium-related dietary behavior and increase the intake of calcium-rich food of 20~30-year-old women and this can contribute to the prevention of osteoporosis. To improve bone health-related nutritional knowledge among young women, it may be important to provide nutrition education.

General Characteristics and Eating Styles by Gender and Nutrition Knowledge Level in Upper-Grade School Children in Gyeongbuk (경북 일부 초등학교 고학년생의 성별과 영양지식에 따른 일반적인 특성 및 식생활의 차이)

  • The purpose of this study was to obtain the basic information needed for an effective program of nutrition education and the establishment of desirable dietary attitudes in elementary school children. The study was conducted using a self-administered questionnaire, and the participants were 281 elementary school children. The data were analyzed in terms of the participants' gender and level of nutritional knowledge, and group differences were assessed using chi-square and Duncan's multiple range tests. The results were as following: Male and female students did not differ in nutritional knowledge. In terms of health-related life style, there were significant differences according to gender and nutrition knowledge. In terms of dietary habits, there were significant differences in the regularity of meal times according to gender and nutrition knowledge. With regard to food preferences, there was a significant gender difference in taste preferences with the male students preferring a salty taste more than the female students.

The Research in Actual State of Food Consciousness of Male, Female College Students by Major, Non-major in Food Dietetics (식품영양학 전궁 비전공에 따른 남녀대학생의 식의식 실태조사)

  • By the research of the actual state of food consciousness as the object of male, female 421 college students by major, non-major in food dietetics, the results are as follows. The validity degree of the guestion article appeared at the analysis of the knowledge of nutrition(the figure of Cronbach "${\alpha}$" overall 0.58, major 0.62, non-major 0.57). In the interest degree about nutrition knowledge of the major students were significant(P<0.05), but the non-major students were not significant, and there was a difference between two groups of the male and female, major and non-major students in the information about knowledge. The knowledge of the major students mostly get from school education, non-major from mass communication as TV and rodio, etc. There was not significant difference in self-consciousness degree of health of all the male, female students by major, non-major, and the self-consciousness degree about health of should not be significant to the food habit. Therefore deviating from acquirement of nutrition knowledge by the wrong medium of food consciousness of home dietary life, improvement plans should be activated for the right knowledge to practice in actual life. Taking the opportunity of food and nutrition education through literary subject in the curriculum of the college for students, good food consciousness must be properly applied all the part of dietary life, and it is urgent for them to carry out scientific and reasonable curriculum and educational material development.

Relationship of Nutritional Knowledge, Dietary Self Efficacy and Change of Dietary Behavior of Nutrition Professional (영양전공자의 영양지식, 식이 효능감, 식행동 변화간의 관련성)

  • The purpose of this study is to investigate the relationship of nutritional knowledge, dietary self-efficacy and dietary behavior of nutritionist. Total 190 dieticians of middle and high schools in Daejeon metropolitan city(44.2%) and Chungnam area(55.8%) were surveyed by questionnaires. The change of dietary intakes was used as an index of dietary behavioral change, and dietary self-efficacy are categorized into 4 sub groups of general dietary habit, choice of food, environmental stimulus and emotional conditions. Overall nutritionl knowledge of school dieticians was relatively high as 80.3 score, but specific and detail knowledge about food and nutrition yet have to be strengthened. Dietary self-efficacy of 'choice of food' was the highest with 85.4 and self-efficacy of 'environmental stimulus' was the lowest with 69.7 in the subjects. There was no influence between nutrition knowledge and dietary self-efficacy of school dieticians. According to the level of dietary self-efficacy, the intake of desirable food showed no significant difference, but the intake of undesirable foods decreased as dietary self-efficacy increased(p<0.001). In the analysis of correlation of change in intake of desirable and undesirable foods with nutrition knowledge and 4 different variables of dietary self-efficacy, a nutrition knowledge variable did not show any correlation with other variables. While, total dietary self-efficacy or each 4 sub items showed negative correlation with the intake of undesirable foods. And all 4 sub items of dietary self-efficacy could be the principal factors to constrain the intake of undesirable foods, but 2 items of dietary habits and emotional condition of 4 sub items are the factors to increase the intake of desirable food. Accordingly, it is suggested that dietary self-efficacy could be a powerful factor to induce the behavioral change of professional dieticians.

A Study on the Actual State of Nutrition Knowledge, Dietary Attitude, Eating Behavior, Physical Ability and Locomotion of Children Aged 5 Years in Siheung-city (시흥시 만 5세 유아들의 영양지식·식태도·식행동 및 신체·기본운동능력 실태조사)

  • The purpose of this study was to measure the nutrition knowledge, dietary attitude, eating behavior, physical ability and locomotion of 5-year-old-children, and thereby to provide the fundamental information necessary to develop a nutritionrelated physical education program. A survey was performed on 143 5-years-old boys and 113 girls. The results were as follows. The average score in the nutrition knowledge item, was 7.22 out of a possible 10 points; in the dietary attitude item, 32.46 out of 50 points; in the eating behavior item, 26.67 out of 40 points. According to body measurement, there was a significant difference in height by gender (p<0.05), Significant differences in muscle mass and basal metabolic rate were also observed by gender (p<0.001). Gender also influenced the flexibility and reflexibility (p<0.001), with significant difference in balance of the right side (p<0.01). Although this study was limited by its cross-sectional study design, the body muscle (p<0.05) and basal metabolic rate (p<0.05) were observed to have a positive relation with nutritional knowledge. In addition, there was a significant positive correlation between nutritional knowledge and dietary attitude (p<0.01). According to the results, it is necessary to develop a long-term and systematic program with the combination of nutrition and physical education to develop correct dietary habits and for the balanced growth of children.

A Comparative Study of Nutrition Knowledge, Dietary Attitude and Nutrient Intakes of Dietitians and Non-Dietitians Working in the Chonnam Area (전남 일부지역 영양사와 비영양사의 영양지식, 식생활태도 및 영양소 섭취량의 비교 연구)

  • This study was performed by a comparative analysis of nutritional knowledge, dietary attitudes and nutrient intakes of dietitians and non-dietitians. The subjects of this study were 103 dietitians and 166 non-dietitians working in the Chonnam area. The general characteristics, nutrition knowledge and dietary attitudes of the subjects were surveyed using a self-administered questionnaire, and nutrient intakes were examined using 24-hour recall method. The results were as follows: Dietitian group ($15.17{\pm}3.88$) scored significantly (p<0.0001) higher than non-dietitian group ($13.34{\pm}3.31$) in nutrition knowledge. Dietitian group ($69.58{\pm}10.67$) scored significantly higher on dietary attitudes than the non-dietitian group ($63.97{\pm}11.18$). The correlation between nutritional knowledge scores and dietary attitudes scores were statistically significance on job, age ($20{\sim}39$), education level (below university), marital status and work experience ($2{\sim}5$, above 10). The dietitian group was significantly higher than the non-dietitians in body weight and BMI of anthropometric data. The prevalence of obesity was 5.8% from the dietitian group and 6.6% from the non-dietitian group when judged by BMI and therefore obesity rate was significaltly (p<0.001) different between the two groups. In case of the dietitian group, the average intake of vitamin A, vitamin $B_1$, vitamin $B_6$, niacin, vitamin E, phosphorous, zinc were above the Korean RDA whereas the average intake of vitamin C, calcium, iron, folic acid were below the Korean RDA. The average intake of most nutrients, except vitamin $B_1$, vitamin $B_6$, phosphorus, were below the Korean RDA in the non-dietitian group. Therefore the non-dietitian group needs nutrition education in order to improve their nutritional status.

Implementation and Evaluaion of Nutrition Education Program for Elementary School Children

  • This study was designed to develop, implement and evaluate a nutrition education program for elementary school children. Subjects consisted of 47 children in the 6th grade in Seoul, Korea. They received five sessions of nutrition education from June to July, 1999. Topics for nutrition education included function of nutrients, food sources of nutrients, balanced diet, meal planning, and adequate energy intake. Each session lasted 40 minutes. To evaluate program effectiveness, one group pretest-posttest design was used. Subjects were given a pretest and a posttest on nutrition knowledge, eating attitudes, eating behavior, and dietary intake. All data were statistically analyzed mainly using the paired t-test and $\chi$$^2$-test. There was a significant difference between pretest and posttest score on nutrition knowledge(p<0.001), subscales of nutrition knowledge including food sources of nutrients, function of nutrients, and balanced diet(p<0.001). These changes in nutrition knowledge were also shown both in boys(p<0.001) and in girls(p<0.001). Eating attitudes, subscales of eating attitudes, and eating behavior were not significantly changed after nutrition education, although some changes were observed in these variables. Dietary intakes were not significantly were not significantly changed after nutrition education for all subjects ; however, different patterns in dietary intakes were observed when examined by sex. There was an increase in nutrient intakes among boys, while there was a significant decrease in nutrient intakes among girls after program implementation. Especially, it was noted that girls had diets deficient in iron, calcium, and vitamin A, even after nutrition education. It was concluded that a five-week nutrition education program can improve nutrition knowledge or some dietary intake, but this might not be enough to induce changes in food attitudes, eating behavior or dietary intakes. It might be necessary to incorporate diverse approaches, targeting sub-groups of children, and follow-up in nutrition education for elementary school children. The Effect of Nutrition Education on Food Habits, Dietary Behaviors, Nutritional Knowledges and Nutrient Intakes of Middle-aged Women (중년기 여성의 영양교육이 식습관, 식행동, 영양지식 및 영양섭취에 미치는 영향)

  • This study investigated the effect of nutrition education on food habits, dietary behaviors, nutritional knowledges and nutrient intakes of middle-aged women. The subjects were 209 females aged $30{\sim}64yrs$. The subjects helped by trainers filled the questionnaire about demographic information, food habits, dietary behavior, nutritional knowledge and dietary intake before and after three months of nutrition education. All data were analyzed by chi-square test and paired t-test using the SAS program. The subjects who didn't drink alcohol significantly increased after the education(p<0.001). The largest meal of the day was lunch and the amount consumed was significantly different before and after the nutrition education(p<0.05). Dietary attitude scores significantly increased after the nutrition education(p<0.001). The percentages of subjects who didn't have processed foods, sweets and salty foods frequently significantly increased after the education(p<0.05). The subjects who answered correctly significantly increased in ten out of fifteen nutrition knowledge items related to obesity and in four out of five nutrition knowledge items related to nutrients after the education. There were significant differences in protein(p<0.01), calcium(p<0.05) and cholesterol intakes(p<0.01) before and after the nutrition education. This study suggests that nutrition education can improve dietary attitudes and nutritional knowledge.

A Study on Health-related Lifestyle, Dietary Habits, Nutritional Knowledge and Food Intake of the Elder in Gyeong-gi Area (일부 노인들의 건강관련 생활습관, 식습관, 영양지식 및 식품섭취에 관한 비교 연구)

  • This study was designed to provide the basic data of an effective nutrition education for desirable lifestyle and dietary habits to improve the nutritional status for the elderly by investigating health-related lifestyle, dietary habits, nutritional knowledge, and food intake of the elderly. The subjects included 58 elderly men and 146 elderly women. 35.8% had no more than an elementary school education. Most subjects (54.4%) were widows/widowers. Most subjects (71.0%) made over 150,000 won. 52.5% of subjects lived in houses. Smoking, drinking, exercise, the average sleeping time were significantly difference between the gender (p<0.05). In terms of dietary habits, our results showed that 80.9% of respondent eat regularly meals, including breakfast (83.5%). Both sexes prefer soft and salty food. Women enjoys more spicy and salty food compared with men and then shows meaningful difference (p<0.05). Their favorite meals are soup, stew, salad and boiled vegetables. Compared to women, men have a higher rate of correct answers about questions related to nutrition knowledge as showing significantly difference (p<0.05). In a study of dietary habits, they take in carbohydrates with the highest percentage and following by vegetables and fruits. The amount of meat, first and egg they eat is more than the previously. Eating meat is higher men as showing significant difference (p<0.05). In summary, nutritional status for the elderly shows healthy lifestyle and diet about half of those and most them try to live healthy life in future. It is hope that the elderly may need to learn proper nutrition knowledge for healthy lifestyle and nutrition education and counseling for building up healthy lifestyle and desirable dietary habits. Furthermore, it is necessary to start work to establish a baseline nutritious evaluation for the elderly and at a time to study the development of standard eating tool proven reliability and validity, consequently to provide a basic framework for the evaluation of nutritional status.
